How to assess the sensory impact of hop varieties used in the boiling process
ABSTRACT
We all know the dilemma of estimating the contribution of a hop variety to the beer flavor when used during boiling. These Japanese researchers propose a standardized protocol for a sensory evaluation of single variety hop samples boiled in water. Using PCA they found that fruity descriptors could be connected to the varieties
Citra and a new Japanese variety called Fuano Beauty whereas Saaz and Mittelfrueh hop samples were connected with herbal, tea and spicy flavours. This protocol may help to forecast the flavour contribution of different varieties in the final beer when used as late hop in the wort boiling process.

UK: Biggest alcohol brand sales falling faster than total drinks market
|
Sales of Britain's biggest alcohol brands are falling faster than the total drinks market, according to a new study.
The overall alcohol market has fallen 2.3% by volume year-on-year – but the nation's biggest players have been hit even harder, with the total volume sales of Britain's 100 largest drinks brands down by 2.8%, research for The Grocer found.
In terms of retail sales, the trend is the same – the major brands have grown an average of 1.3% against a market-wide increase of 2.1%.
The top beer and wine labels have been hardest hit, both dropping 4% by volume year-on-year, with retail sales down 0.3% and 0.7% respectively.
However, there were exceptions with Foster's, Corona, Coors Light, Cobra, McGuigan, Yellowtail and Barefoot recording strong growth.
Meanwhile, the average litre price of the top 100 brands has risen 2.7% year-on-year.
The research also revealed that new products are making the difference between growth and decline for some top brands, such as Jack Daniel's and Strongbow, which both launched new drinks.

Mexico: Craft brewers welcome federal officials’ decision to open up the tightly controlled beer market
|
July 11 may not ever become as momentous as other Mexican holidays, but for beer enthusiasts like Francisco Nuñez, the date is worthy of remembrance, Imperial Valley Press reported on July, 22.
“It was like our beer independence day,” Nuñez, of Mexicali-based 686 Cervecería, said. “July 11 is going to be remembered for years to come by Mexican craft breweries.”
On that historic date, Mexican federal officials opened up the tightly controlled beer market, and put a cap on the number of exclusive contracts its major brewers — Grupo Modelo and Cuahtémoc Moctezuma — could hold. To date, the two major brewers hold exclusive contracts with more than 90 percent of the nation’s point of sales, a figure that must be brought to 20 percent within five years at the risk of financial penalties.
The ruling will allow the country’s burgeoning craft breweries unrestricted access to all restaurants, bars and cantinas, the Mexican Federal Trade Commission announced.
“That’s going to help us (microbrewers) a lot,” Nuñez said.

Germany & North Korea: Paulaner Brewery declines Kim Jong-un’s proposal to open a beer garden with a brewery in North Korea

North Korean leader Kim Jong-un has asked Paulaner to open a beer garden with a brewery in North Korea, but the Bavarian brewer declined, German daily Bild reported on July, 19.
The brewer told Bild that it cannot afford another store in North Korea because it already plans to open 12 new beer gardens around the world, including one in the U.S. and one each in Moscow and St. Petersburg, Russia in August.
Based in Munich, Paulaner is Germany's leading wheat beer brewer and has beer gardens around the world including 21 in Asia. Bild said Kim Jong-un has "outed himself as a beer lover" though his father was notoriously fond of cognac.
Bild said that it is not certain why Kim came up with the idea amid the regime's chronic food shortage, but added, "Man does not live by bread alone, but beer alone does not fill the stomach."
The UN Food and Agriculture Organization in a recent report said that North Korea needs food assistance from the international community to feed an estimated 2.8 million vulnerable people "until the next harvest in October."

South Africa: Hearing into South African Breweries’ alleged anti-competitive behaviour resumed by the Competition Tribunal

The Competition Tribunal resumed on July, 22 a hearing into allegations of anti-competitive behaviour by South African Breweries (SAB), the local division of SABMiller, BusinessReport said.
The complaints against SAB, which controls about 90 percent of the South African beer market, were first brought to the Competition Commission back in 2004 by a group of liquor wholesalers and retailers led by the Big Daddy group.
The commission investigated the complaint and in 2007 announced that it would proceed with a case against SAB and its appointed distributors.
On the basis of its investigation, the commission alleged that SAB’s agreements with its appointed distributors had the effect of dividing the market between competitors in contravention of the Competition Act. The commission also alleged that SAB favoured its own distributors at the expense of independent distributors and, in that way, placed independent distributors at a disadvantage.
Nico Pitsiladi, the director of Big Daddy, said it had been “almost impossible” for him to compete with SAB’s appointed distributors because they benefited from more attractive discounts than he was able to secure from SAB.

Japan: Asahi and Orion develop new “third-category” quasi-beer
|
Asahi Breweries Ltd. and Orion Breweries Ltd. have jointly developed a “third-category” quasi-beer, The Japan Times reported last week.
The product, Asahi Orion Okinawa Dayori, was launched on July, 23 throughout Japan except in Okinawa, where Orion is based, and in the Amami region of Kagoshima.
Only 50,000 cases of the sparkling low-malt beverage will be sold. Each contains the equivalent of 20 633-milliliter bottles.
The quasi-beer is being produced at Orion’s plant in Nago and the marketing is being handled by Asahi. The beverage combines the light taste of Orion’s beers with a clear flavor developed using Asahi’s brewing technology, the two companies said.
The price will likely be set at around ¥140 per 350-milliliter can.
Asahi and Orion formed a partnership in 2002. Asahi has a stake of about 10 percent in Orion.
At a news conference in Tokyo, Orion official Masakazu Miyazato said more joint products were in the pipeline with Asahi.

UK: Molson Coors interested in new winter barley variety
|
Winter barley may see a resurgence in rotations as growers increasingly see its value in enabling an early entry for oilseed rape, and one new malting type has caught the eye of a global brewer, Farmers’ Weekly reported on July, 23.
Molson Coors has a greater reliance on winter barley than its competitors, which means the firm pays close attention to the introduction of new malting varieties when they first appear on the HGCA Recommended List.
So the announcement last month that three winter barley varieties have all moved on to the next stage of the rigorous testing procedure is just what the company's head of raw materials, Jerry Dyson, wanted to hear, as he considers securing future supplies of farm assured grain.
Of immediate interest is Syngenta's SY Venture, which is now fully approved for brewing use, he confirms. But he is also keeping an eye on Talisman from Senova, which has just entered its first year of provisional approval, also for brewing.
"We trialled SY Venture this year, so we already know that it meets our processing requirements," he says.
