The mystery of glycosidically bound hop aroma compounds and their sensory contribution
ABSTRACT
Only a few studies so far have looked into the flavour potential of glycosidcally bound hop aroma compounds in the case of release of aglycones. These US researchers did an extensive study looking into the effect of enzyme hydrolysis, the use of different yeast strains, acid hydrolysis, as well as different sample preparation methods. Depending on the different treatments, the amount of Linalool, Terpineol, Citronellol, Geraniol, Damascenone, Nerol and also Eugenol increased and significantly influenced the sensory attributes of the beers (mainly herbal, tea, citrus, fruity, piney). In conclusion, CO2 extraction proved to be an effective sample preparation, ale yeast liberate more aroma than lager yeasts, enzymatic treatments depend on the relevant compounds, and acid hydrolisis is very effective. So a couple of open question can be checked off with these results ! USA & India: Department of Justice joins investigation of AB InBev’s Indian affiliates
|
The Department of Justice has joined the Securities and Exchange Commission in an investigation of Anheuser-Busch InBev's Indian affiliates for possible violations of foreign bribery law, St. Louis Business Journal reported on August, 2.
In March, AB InBev said the SEC was investigating its joint venture InBev India Int'l Private Ltd. to determine whether "certain relationships" between agents and employees were compliant with U.S. laws that bar the use of bribes to foreign officials for business purposes.
"Our investigation into the conduct in question is ongoing, and we are cooperating with the SEC and the DOJ," the company said in its recent earnings statement.
Several U.S. companies’ ventures in India have come under the microscope recently, as the SEC ensures that businesses aren’t turning to unlawful measures in order to skirt the country’s rigid international regulations.

Canada, ON: Amsterdam Brewery launches Amsterdam De Wallen Barrel Aged Sour
|
Amsterdam Brewery has announced a surprise LCBO release for one of the beers in the limited edition Adventure Brews series, Canadian Beer News reported on August, 7.
Named after the largest and most famous red light district in the brewery’s namesake city, De Wallen Barrel Aged Sour Framboise is a version of an award winning Framboise and it is named after the red-light district in Amsterdam.
“Souring beer is a risky endeavour, much like venturing into the red-light district of Amsterdam. This beer reflects our dedication to innovation and adventure combining old world styles and techniques to bring you adventurous beers,” said the owners.
De Wallen is available now at select LCBO locations, where it retails for C$5.95 per 330 ml bottle while supplies last. Bottles are also available on the cellar list at the Amsterdam BrewHouse brewpub and restaurant on Toronto’s waterfront.

USA, LA: Tin Roof Brewing to expand
|
Tin Roof Brewing Co. has purchased a 0.89-acre piece of property at the intersection of Oklahoma Street and River Road, Baton Rouge, LA, which could serve as the eventual new home for Baton Rouge’s only craft brewery, The Advocate reported on August, 6.
Charles Caldwell, one of the co-founders of Tin Roof, said the brewery wants to be prepared for when it needs to open a larger facility. Tin Roof paid $115,000 for the property at 635 Oklahoma St.
“We would like to stay in this area,” Caldwell said. “But there’s nothing on the front right now about opening a new brewery.”
Instead, Tin Roof has been expanding and upgrading its current location. The brewery recently added 6,000 square feet of space to bring it up to 15,000 square feet. That will provide more room for Tin Roof’s cans of Blonde Ale, Perfect Tin Amber Ale and Voodoo Bengal Pale Ale.
By December or January, a new brew house and fermentation vessels should be installed. This will boost Tin Roof’s current brewing capacity from 5,000 barrels a year to 10,000 barrels. One barrel is 31 gallons of beer.
“This will open us up to canning all of our seasonal beers and allow us to

UK: Harvest of barley started in earnest in the last week of July
|
Great Britain’s harvest of winter barley started in earnest in the last week of July with an estimated 10% harvested by the end of the month, HGCA reported on August, 1.
There is good progress in the south and east, but most regions are still 7-10 days away from the main start of harvest. In Scotland crops range in growth stage from medium milk (GS 75) to some early harvested crops but most are still at early dough (GS 83). Secondary tillering is a widespread problem in more open crops and patchy areas and may require pre-harvest treatment. Weed control is good in most crops but some have higher levels of spring germinating weeds. Pest and disease pressure remains low.
Spring barley crops have a range of growth stages due to the protracted drilling window. Even the late February drilled crops have matured later than normal due to the cold March and early April so the earliest crops are still 10-14 days from harvest, while the majority are typically hard dough (GS 87). The later drilled crops are typically at boots swollen (GS 45). Weed control is generally good and pest and disease levels remain low. Some crops on lighter land

Australia: CUB head shares plans on overhauling core beer brands
|
Brands including Pure Blonde, Carlton Mid and Cascade are next in line for the SABMiller treatment, Carlton & United Breweries (CUB) CEO Ari Mervis was quoted as saying by TheShout on August, 5.
Mervis, who also commented on CCA's return to beer, said CUB is progressing with the overhaul of its other core brands, following the recent relaunches of Victoria Bitter and Crown Lager.
He said these core brands were in various states of health when they were inherited by SABMiller.
"What we said initially is we want to focus on those initiatives and brands that are the most important in our portfolio, those that generate the most volume and the most value," he said.
"Of the others, Pure Blonde we're still working on, Carlton Mid I think we're getting to a really good position and we're going to be leveraging that through the summer with the one-day cricket series, and then Carlton Draught is in a good place, its positioning is healthy and strong."
Mervis echoed previous comments by former CUB marketing boss Andy Gibson that CUB needed to get its brands to occupy more distinct consumer areas rather than overlapping each other.
"What we have done is we've identified which brands need to participate

World: SABMiller plans bonds issue worth at least $500 mln - source
|
SABMiller plans to sell bonds in an offering that may include its first dollar-denominated floating-rate notes in seven years, The Irish Times reported on August, 6.
The world’s second-biggest brewer may issue five-year securities with fixed and floating coupons, according to a source. The deal will be of benchmark size, typically at least $500 million, and the bonds may be rated Baa1 by Moody’s Investors Service and an equivalent BBB+ at Standard and Poor’s, said the source.
In June 2006, the company issued $300 million of three- year, floating notes paying 30 basis points more than the three-month London interbank offered rate.
The $4.8 of similar-maturity, fixed-rate dollar debentures ranked investment grade and sold this year by food and beverage firms including Coca-Cola have an average yield of about 2 per cent.

Australia: Coopers defies flat beer market and raises market share in its past financial year
|
South Australian brewery Coopers has defied the flat beer market to report an 8.3 per cent sales lift for the past financial year, boosted by new brand licensing deals, The Australian reported on August, 7.
The privately owned company reported record sales of 69.7 million litres, lifting its share of the Australian beer market to 4.5 per cent from about 3.5 per cent in 2010. Sales were boosted by the addition of licensed international brands Sapporo and Carlsberg, which the company began brewing last year.
Carlsberg's Danish parent shifted its Australian licence to Coopers from previous licensee Foster's, under "change of control" provisions in its contract triggered by Foster's A$12.3 billion takeover by Britain-based brewer SABMiller in 2011.
In May SABMiller reported a 13 per cent decline in sales from Foster's for the 12 months to the end of March, or 5 per cent when the impact of losing third-party brewing contracts such as Carlsberg was stripped out.
Meanwhile the latest figures for Lion, Australia's biggest brewer and owner of brands including XXXX and Toohey's, showed a 3.2 per cent decline in sales by volume for the six months to the end of March. But when new brands poached from Foster's were included, volumes

Portugal: Exports help beer industry resist the crisis
|
Portugal’s brewing industry has so far been able to resist the crisis due to exports, Francisco Gírio, the Secretary-General of the Portuguese Brewers's Association (ACPV), was quoted as saying by Visao on August, 2.
However, to boost sales, the government must reduce the VAT rate on restaurants, he said.
The nation’s beer industry exports about 40% of its output, which represents about EUR 300 mln in money terms. Angola is the main export destination for Portuguese beer.

The Netherlands: Heineken introduces new reporting metrics
|
Heineken N.V. ('HEINEKEN') announced on August, 6 the introduction of new reporting metrics (non-IFRS) to provide greater transparency on Group performance. This new information will be disclosed for the first time in HEINEKEN's release on the first half of 2013 to be announced on 21 August 2013.
The key new metrics being introduced are:
•New volume and financial Group metrics to provide better insight into the contribution of HEINEKEN's joint venture and associate businesses to overall group performance. Group figures are calculated as the sum of all consolidated operations and HEINEKEN's attributable share in joint ventures and associates. New Group figures will be reported for total volume, beer volume, revenue and operating profit (beia). Consequently, the previously reported Group beer volume metric (defined as consolidated beer volume plus 100% of the beer volume sold by joint venture companies) will no longer be reported.
•An analysis of total growth split by consolidation impact, currency translation and organic growth at consolidated level.
•A breakdown of total volume into the following categories: beer, licensed & non-beer and third party products volume.
