The mystery of glycosidically bound hop aroma compounds and their sensory contribution
ABSTRACT
Only a few studies so far have looked into the flavour potential of glycosidcally bound hop aroma compounds in the case of release of aglycones. These US researchers did an extensive study looking into the effect of enzyme hydrolysis, the use of different yeast strains, acid hydrolysis, as well as different sample preparation methods. Depending on the different treatments, the amount of Linalool, Terpineol, Citronellol, Geraniol, Damascenone, Nerol and also Eugenol increased and significantly influenced the sensory attributes of the beers (mainly herbal, tea, citrus, fruity, piney). In conclusion, CO2 extraction proved to be an effective sample preparation, ale yeast liberate more aroma than lager yeasts, enzymatic treatments depend on the relevant compounds, and acid hydrolisis is very effective.So a couple of open question can be checked off with these results !

World: SABMiller prices $1.1 bln bond issue
|
SABMiller Plc said on August 6 its wholly owned subsidiary, SABMiller Holdings Inc., successfully priced a $1.1 billion bond issue.
The notes would be guaranteed by the company and would be issued in two tranches:
- $750 million of 5-year, fixed-rate notes with a coupon of 2.20%
- $350 million of 5-year, floating-rate notes with a coupon of 0.69% over 3-month LIBOR.
"The net proceeds will be used by the Issuer to repay the remaining outstanding bank borrowings incurred to finance the acquisition of Foster's Group Limited in December 2011, and the balance for general corporate purposes," the company said.

The decision by Australia’s retailers to move away from aggressive, deep discounting of beer was welcome news for the entire liquor industry, according to Carlton & United Breweries (CUB) CEO Ari Mervis.
In an interview with TheShout on August 6, Mervis said his previously stated view that consumers were happy to pay more for beer had been borne out in recent months.
"Historically there has been a very fierce, competitive race to the bottom in terms of pricing," he said.
"Different retailers have always tried to ensure that they remain the cheapest retailer when in fact the consumer has been happy and willing to pay slightly more than the price they've offered it at."
"I think there has been a little bit more price discipline across the market and we've seen retailers have been charging slightly more and consumers have been prepared to spend a bit more," Mervis said.
"We need to ensure that there's a sustainable margin for all the participants through the value chain."
In any case, Mervis said it's important for retailers to consider their margins on mainstream beer in context.
"Sometimes they don't look at what is a blended margin," he said.

Mexico: Court agrees to consider SABMiller’s appeal
|
SABMiller PLC, the world's second-largest brewer by sales, said on August 7 that a Mexican federal court has accepted its case to consider overruling a July antitrust settlement on exclusive sales agreements that SABMiller believes "failed to truly address the monopolistic activities" in the Mexican beer market.
Mexico's Federal Competition Commission stopped short of prohibiting the beer contracts entirely, reaching an agreement with top brewers Anheuser-Busch InBev NV's Grupo Modelo unit and Heineken NV's Cerveceria Cuauhtemoc Moctezuma to limit their use of exclusivity contracts at small shops and some other points of sale, such as restaurants.
The Mexican beer market is the world's fifth biggest by volume sales, according to Euromonitor, although SABMiller claims a miniscule market share. Modelo brands including Corona account for about 58% of the 67 million hectoliters of beer sold here each year, while Cerveceria Cuauhtemoc brands like Tecate represent 41%.
"The commitments made by both brewers are limited by several significant exclusions, which still make it possible to deny access to a majority of retail sales and to large and important regions," SABMiller said in a statement this week.
The antitrust agreement will remain in effect while the federal court examines SABMiller's case, the brewer said.

Middle East: Non-acolholic beer popularity rising in the Middle East
|
Dedicated drinkers may struggle to see the point of non-alcoholic beer, but it is growing in popularity around the world. Last year 2.2 billion litres was downed, 80% more than five years earlier. In the rich world it is mainly consumed by a health-conscious minority. But in the Middle East, which now accounts for almost a third of worldwide sales, the target market is the teetotal majority. In 2012 Iranians quaffed nearly four times as much as in 2007. Consumers in Saudi Arabia, Egypt and the United Arab Emirates also have a growing taste for it (though across the region, alcoholic beer still outsells it), The Economist reported on August 3.
Delster, brewed by an Iranian company, Behnoush, turned alcohol-free in the wake of the 1979 Islamic revolution. After Hamas, an Islamist movement, won a landslide election victory in Gaza in 2005, a Palestinian brewer, Taybeh, launched an alcohol-free “Halal” version of its ale. Its label is green, the colour of Islam.

UK: About 30% of winter barley crop already in the barn
|
Farmers cut around 100,000 ha in the week to Tuesday, August 6, with about 5% of the UK’s total combinable crop area now harvested, Farmers Weekly reported on August 8.
According to the latest ADAS / HGCA crop report, that was well below the five-year mean of 20%.
However, early yields of both winter barley and oilseed rape were close to or better than farm averages.
About 30% of the winter barley crop was now in the barn, with yields ranging from 4.9t to 11.8t/ha, and averaging about 6.8t/ha, said the report.
“Initial quality data shows good specific weights (average 64kg/hl) and low grain nitrogen in malting samples (1.4-1.7%).”
Most grain was harvested at between 14% and 19% moisture, meaning some drying was required, although a few loads of malting barley were being sold straight off the farm at 19% moisture with only small deductions, it added.

South Korea & USA & Australia: South Korea’s Fair Trade Commission approves ADM’s purchase of GrainCorp

The Korea Fair Trade Commission has notified Archer Daniels Midland Company (ADM) of its approval of ADM’s proposed acquisition of GrainCorp Limited, ADM said on August 7.
This brings the number of government agencies that have cleared the acquisition to seven.
The European Commission, the Japan Fair Trade Commission, South Africa’s Competition Commission and Canada’s Competition Bureau cleared the acquisition in July; the Australian Competition and Consumer Commission did so in June. The U.S. Federal Trade Commission also approved the acquisition last November.
ADM continues to work with regulators in Australia and China.
