After many months of recipe development and planning, Heady Brew Company has officially opened as Ontario’s first dedicated gluten-free brewing facility, Canadian Beer News reported on August, 9.
Founded by Robert Cundari, who has worked for several years as the operations manager for a gluten-free bakery, the brewery’s first product is Heady’s Honey Citrus, a beer made with sorghum and rice in place of barley, and flavoured with real honey and lime.
Heady’s Honey Citrus is currently available at Kensington Cornerstone, a gluten-free restaurant in Toronto’s Kensington Market, and at the Newmarket location of Gabby’s, where it accompanies an exclusive gluten-free food menu. Distribution to additional locations is in the works, and more styles are planned join the Heady line-up in the future.
