Two Rivers Brewing Co. in Easton, Pennsylvania is confident its brewery will open this fall, Leigh Valley Live reported on July, 7.
Work should begin within three weeks and be completed within four to six weeks, co-owner Troy Reynard said. The brewery is scheduled to officially open in early fall, offering premise-made drafts.
"We're really excited to get to this phase," Reynard said. "It's taken us way longer to get the brewery opened than we thought."
Along with the brewery comes Wayne Milford. He is a former head brewer at the Delaware-based Dogfish Head Craft Brewery Inc., and will be putting to use his degree in intensive brewing science and engineering from the American Brewers Guild in designing regionally inspired beers at Two Rivers.
He is bringing a few new recipes to deliver local craft beers to drinkers. A few of Two Rivers' flagship beers are going to be Pine Street Blonde, a Belgian-style blonde; Banker's Brown, an American brown ale; and Getter's Island, an American pale ale.
Milford is adding a fourth flagship beer, a pre-Prohibition-style pilsner that pays homage to the old breweries.
"I think it's really important to remember the past and keep the past present," he said.
Milford, a Kingwood Township native, said he wants to "create beers for the community" and name them after the Easton-area's rich history.
Most of the beers will be between 4.5 and 6.5 percent alcohol by volume to give consumers the opportunity to try different flavours, but he's also planning to brew a 10 percent beer with unique ingredients not normally found in beers, he said.
In addition to brewing its own beers, Two Rivers plans to do collaborations with other local breweries, he said.
A Native American pale ale made its debut Sunday, 7th of July at Easton Heritage Day, Milford said.
Reynard said he wants to serve session beers that the community can be proud of.
"We think Easton is ready for some hand-made craft beers," he said.
