According to the Wisconsin Brewers Association there are more than 100 breweries in the state. That number will grow by one when a new brewery in Eau Claire will open early next year, wqow.com reported on October, 16.
"We originally had a location in the Phoenix Park area,” Will Glass said. “But then government shut down and our lease option ran out a week before we got government approval."
"There were a lot of days we weren't sure it was going to happen,” he said of the rocky journey.
The Brewing Projekt aims to produce bold unique beers not found in the area.
"We're not going to be doing the traditional pale ale, IPA's, stouts, and porters,” he said. “We're going to be doing some funny stuff. We're going to be brewing up some non-traditional styles, we're going to be going back in time and brewing some traditional styles that no one has done for a long time.”
Glass has started a kickstarter campaign to help cover initial operating expenses and reach out to beer drinkers for ideas on what to brew.
"We're going to do some test batches and those that contribute to the project will be invited to what we are calling ‘Projekt Parties' where people can come taste things before we mass produce it,” said Glass.
Glass is the owner of the Firehouse in downtown Eau Claire but will give up that ownership when the new brewery is up and running.
He hopes to have the brewery's taproom open early in 2015.
