Bitter acids


ABSTRACT
The rule of thumb for the yield of bitter acids (specifically iso-alpha acids) in brewing is about 30%, which is not a lot. German researchers found out that reversible, pH dependent hop acid complexes including iron ions are mainly responsible for the loss of BU during brewing. The loss is mainly during hot break and at the beginning of fermentation. However it is possible to recover the bitter acids from the hot break and yeast under alkaline and high temperature conditions, which consequently transfers the lost alpha acids in isoalpha acids, which can be used for other beers. The good side-effect is that pro-oxidative acting iron ions are separated this way and don't ruin your beer.

Whisky news USA: Diageo planning new distillery in Kentucky
Diageo has revealed plans to spend US$115 mln on a new distillery in the US state of Kentucky to capitalise on American whiskey’s surging popularity.

The company is proposing to build a 1.8 mln proof gallon distillery and six-barrel storage warehouses in Shelby County, it announced on May 29. Diageo said it expects to break ground on the 300-acre site in “the coming months” with an aim to having the distillery operational by “late 2016”.

The facility will produce a number of “current and future” of Diageo’s Bourbon and North American whiskey brands, the company said. The $115 mln investment will be over a three-year period.

The plans remain subject to approval by local government.

Earlier this year, the company became embroiled in a war of words with Jack Daniel's producer Brown-Forman over proposed changes to relax the rules on what defines a Tennessee whiskey.


Brewery news USA, CO: Broken Compass Brewing officially opening on May 31
Broken Compass Brewing in Breckenridge hasn’t officially opened, but tell that to the people who have already begun trickling in off the street, lured in by word of mouth and general excitement about the newest brewery in Summit County, Summit Daily reports.

“We think it’s a great addition to the community, and we want to support our local businesses,” Ken Olendzki said.

Olendzki and his wife, Barb, split their time between Chicago and Breckenridge. They came into the brewery this week and walked out with a growler of Belgian Wit, though Ken’s favorite was the India Brown Ale and Barb was a fan of the Chili Pepper Pale Ale “because it has this nice zing to it.”

“Our friend wanted to try something light, and we went with the Belgian Wit,” Barb said, clutching the growler. “We’ll refill it as new options come in. We want to give them a taste. I think it’s neat that it’s that fresh, that’s one unique thing about it.”

“We’re having the neighbors over for dinner tomorrow,” Ken added. “Jerry’s a tough one. Jerry always brings Miller Lite over to my house.”

Brewery news USA, MA: Cape Ann Brewing Company to consolidate all its activities in Glocester
Cape Ann Brewing Company has led a bit of a divided existence since 2008, brewing and shipping its draft beer from its microbrewery on the Gloucester waterfront while contract brewing and packaging its bottled beer at a brewery in Saratoga, N.Y., Gloucester Times reported on May 30.

Soon, that will not be the case.

Cape Ann Brewing, which will retain its pub and brewing facilities on Rogers Street, is leasing another 5,000 square feet of space at the old Cape Ann Forge property, where Whittemore Street meets the Annisquam River, to consolidate all of its brewing, packaging and shipping operations in Gloucester.

“We’re very excited,” said Cape Ann Brewing co-owner Jeremy Goldberg. “It was tough to take the beer out of Gloucester and great to bring it back. By this summer, all Cape Ann Brewery beer will be made in Gloucester.”

The return of the brewery’s packaged beer line is part of a wider shift in the brewery’s business model. Working in concert with Boston advertising agency GYK Antler, Cape Ann Brewing has developed a new branding plan, which includes a reworked Fisherman logo that will help re-emphasize the Cape Ann in Cape Ann Brewing, according to Goldberg.

Brewery news USA, VT: Ground broken on new Paine Mountain Brewing facility in Northfield, VT
Last week, Kevin Pecor, owner of the Knotty Shamrock Irish Pub, broke ground on a new brewery adjacent to his 3-year-old pub in Northfield, VT, Seven Days reported on May 28.

The new space will house a four-barrel operation that — once up and running later this summer — will produce more than 100 gallons of suds weekly. With help from brewmaster Radley Herold, Pecor has been pouring small batches of housemade brew at the Knotty Shamrock since August 2013, experimenting with a variety of beers — ryes, Kölsches, ESBs, ales and stouts — to test pubgoers' palates. "We just keep playing around with things, and we're having a lot of fun with it," Pecor says.

Herold spent 15 years brewing in England and Germany, Pecor says, and was happy to take the lead at the new enterprise, called Paine Mountain Brewing. "When I was ready to make the jump [to brewing my own beer for the Knotty Shamrock], I reached out to him, and he jumped right up with his hand in the air to do it," Pecor recalls.

Brewery news USA: Homebrew sales increase in 2013
The American Homebrewers Association (AHA) released on May 28 the results of its fifth annual Homebrew Supply Shop Survey, detailing the current state of the home beer and wine supply retail industry. Examining data from 408 shops across 48 states, the survey—which had a 48 percent increase in participants from last year’s report—found that gross revenue grew for shops on average by 10 percent in 2013.

“Homebrewing is on the rise, both as a hobby and a business,” said American Homebrewers Association Director Gary Glass. “With the U.S. now home to some 1.2 million homebrewers, supply shops are experiencing solid growth. The growth in homebrew supply businesses means it is easier than ever for Americans to get into the hobby of homebrewing.”

There was a 24 percent increase in sales of beginner homebrew equipment kits. Beginner kits were most commonly purchased by 30-39 year olds.

For shops that primarily sell homebrew supplies, gross revenue grew on average by 10.5 percent in 2013. Additionally, the survey found that nearly 36 percent of businesses see homebrew/home winemaking supplies as a supplemental source of income, meaning a growing number of businesses are adding sales of home beer and wine making supplies to their existing portfolio.

Barley news UK: Malting Barley Committee updates approved barley varieties list
The United Kingdom’s Malting Barley Committee held its Spring 2014 meeting to discuss the progress of new varieties within the testing system.

The outcome was that Odyssey has been given Full Approval for malt distilling and brewing use, Talisman and Sanette have been promoted to Provisional Approval 2 for brewing.

Overture and Archer have been removed from the list for brewing.

Overture and Glassel have been removed from the list for malt distilling use.

KWS Irina has been added to the list at Provisional Approval 1 for brewing, it is reported.
