What about the aroma potential of glycoside-linked compounds?


ABSTRACT
US and German researchers used spent hops from CO2 extraction to brew beers that only differed in the point of addition of the spent hop material (in the boil, end of fermentation, after filtration) hoping that enzyme activity would produce different amounts of different monoterpenes. Though analytical differences were not significant, the sensory data showed that each beer was significantly different. While the addition at end of fermentation yielded in stronger tropical/melon like aroma, the addition after filtration showed stronger herbal/ice tea, grassy/hay and earthy/tobacco aroma. So yes, spent hops add to your hop aroma and beer, but scientists have not yet quantified what it is!

Brewery news South Africa: Surge in share price takes SABMiller past R1-trillion market capitalisation mark for the first time
A 5.58% surge in SABMiller’s share price in South Africa took it past the R1-trillion market capitalisation mark for the first time on June 10, Business Day reported.

The only other JSE company with a market cap over R1-trillion is another "sin stock", British American Tobacco (BAT).

SABMiller also led the London Stock Exchange higher on June 10. Reuters reported traders were citing fresh talks about the merger of the brewer with a major European beer company.

"Companies have got a lot of money and are looking at places to spend. SABMiller is just as likely a candidate as anyone else. I think it’s more chatter than substance at this moment," CMC Markets chief market analyst Michael Hewson told Reuters.

On the JSE, the brewing giant jumped 5.58% to R615.34, helping the R9.94-trillion all share index to another record close above the 50,000-point mark, as industrial stocks continued to tighten their grip on the local bourse.

BAT occupies the top spot on the JSE with market capitalisation of R1.28-trillion, followed by SABMiller and Glencore.

Brewery news India: United Breweries Holdings releases a pledge on 2.83% stake in United Breweries
United Breweries Holdings (UBHL), the parent company of Vijay Mallya's UB Group, has released a pledge on 7.5 million shares (2.83% stake) of beer major United Breweries (UBL), the company said in a communication to the stock exchanges on June 9.

UBHL also released a pledge on 46,000 shares of United Spirits (USL).

Both the events took place on May 30, the company said in a filing to Bombay Stock Exchange (BSE). The encumbrance for these shares had been made in favour of IFCI, an Indian government owned development bank.

Incidentally, USL's co-promoter, UK-based liquor major Diageo, is offering to buy 26% from public shareholders in an open offer worth around R11,500 crore.

Late last month, UBHL released pledges on 1.9 million shares of USL, which had been made in favour of Sicom, a financial institution owned by the Maharashtra government.

During the same period, UBHL also released pledges on nine million shares (7.59% stake) of Mangalore Chemicals and Fertilizers (MCF) which is currently in the midst of a battle for control. Mallya has teamed up with the Saroj Poddar-led Adventz Group to counter the Pune-headquartered Deepak Fertilisers' open offer to acquire majority stake in MCF.

Brewery news USA: TTB issues ruling on formulas for beer
On June 5, 2014 the Alcohol and Tobacco Tax and Trade Bureau (TTB) issued TTB Ruling 2014-4, exempting from TTB’s formula and pre-import approval (PIA) submission requirements beer made with dozens ingredients as well as beer subjected to wood aging processes. TTB now finds these ingredients and processes to be traditionally used in the production of beer. The Ruling stems from a Brewer’s Association Petition filed with TTB in 2006 with the assistance of McDermott Will & Emery. As the Ruling explains, TTB initially rejected the petition, but with continued industry interest and additional fact-finding the TTB has reversed its position. The Ruling includes an attached list of exempted ingredients and processes, as well as examples of acceptable label designations.

Materials that brewers (including for imported or PIA beer) can now use without the need for a formula include:

Fruits: Apples, apricots, blackberries, blueberries, cherries, cranberries, juniper berries, lemons, oranges, peaches, pumpkins, raspberries and strawberries.

Spices: Allspice, anise, pepper/peppercorns, cardamom, cinnamon, clove, cocoa (powder or nibs), coriander, ginger, nutmeg, orange or lemon peel or zest, star anise and vanilla (whole bean).

Brewery news Namibia: Namibia Breweries Limited officially starts producing Camelthorn Weizen beer
Namibia Breweries Limited has officially started producing the Camelthorn Weizen beer, after acquiring Camelthorn beer company, a Windhoek based struggling start-up small beer maker, All Africa reported on June 9.

Camelthorn produce weizen beer, which is a wheat malt beer.

"This unique, truly African, Bavarian Style wheat beer will complement the other beers in the NBL portfolio and provides the discerning beer drinker with yet another option of quality brewed Namibian beer. While Camelthorn Weizen is also brewed according to the strict Reinheitsgebot brewing standards, it differs from the current NBL beers as it is not a lager beer, because it contains wheat and malt. Camelthorn Weizen is Namibia's first locally brewed, premium weiss beer, with an alcohol by volume of 4.5 percent," said Thomas Hochreiter of Namibia Breweries Limited (NBL).

Namibia Breweries Limited is a subsidiary of the Ohlthaver & List (O&L) Group of Companies. The weiss beer is available in bars on tap as well as in 330ml bottles.

Whisky news UK & India: Diageo’s offer to acquire 26% stake in United Spirits begins
London-based liquor giant Diageo’s open offer to acquire 3.7 crore shares or 26% stake in United Spirits began on Friday, June 6. For a consideration of Rs 11,448 crore, Diageo’s stake in United Spirits will rise to 54.78% assuming full acceptance. The offer is priced at Rs 3,030/share, The Financial Express reported.

Currently, Diageo through its wholly-owned subsidiary Relay BV, holds 28.78% in United Spirits. United Breweries Holdings’ stake stands at 5.93%.

Analysts say that the offer is unlikely to see full acceptance. “We do not expect a full acceptance for the offer and believe longer-term investors will wait for the premiumisation theme to play out in USL over the next 18-24 months,” said IDFC Institutional Securities in a recent note.

“The market seems to be implying an acceptance ratio in excess of 70%, considering the current spread between the estimated fair price and the current market price,” Kotak Institutional Equities added. Currently, the total public shareholding in United Spirits stands at 60% or 8.8 crore shares.
