Scientific Digest

What about the aroma potential of glycoside-linked compounds?

ABSTRACT
US and German researchers used spent hops from CO2 extraction to brew beers that only differed in the point of addition of the spent hop material (in the boil, end of fermentation, after filtration) hoping that enzyme activity would produce different amounts of different monoterpenes. Though analytical differences were not significant, the sensory data showed that each beer was significantly different. While the addition at end of fermentation yielded in stronger tropical/melon like aroma, the addition after filtration showed stronger herbal/ice tea, grassy/hay and earthy/tobacco aroma. So yes, spent hops add to your hop aroma and beer, but scientists have not yet quantified what it is!

Brewery news USA: Anheuser-Busch and MillerCoors unveil ingredients of their beers on food blogger’s demand
Anheuser-Busch and MillerCoors, two of the world's biggest beer makers, are posting online what's inside bottles of Budweiser and Miller Lite after pressure from a food blogger, ABC News reported on June 13.

The two companies on June 12 posted the ingredients of some of their most popular brands, and promised to be more transparent in the future. The announcements come a day after blogger Vani Hari posted a petition on FoodBabe.com to get major brewers to list what's in their beverages.

Anheuser-Busch posted the ingredients for its two top-selling brands on its website, tapintoyourbeer.com. It lists the same ingredients for Budweiser and Bud Light: Water, barley malt, rice, yeast and hops. The company, which also makes Beck's, Busch and Michelob beers, said it will list the ingredients for all of its other brands online "in the coming days." It's the first time Anheuser-Busch has detailed the ingredients of its beers.

MillerCoors posted the ingredients of Miller Lite, Coors Light and six other brands on its Facebook page. Most are made from water, barley malt, corn, yeast and hops, the company said.

"We also value transparency and are happy to comply with the request for additional information," MillerCoors said in a statement. The company ...More info on site

Brewery news Canada, ON: Stack Brewing set to undertake major expansion
With Stack Brewing's one-year anniversary coming up at the end of the month, the Sudbury, Ontario-based microbrewery is set to undertake a major expansion, Sudbury Northern Life reported on June12.

Owner Shawn Mailloux just received a delivery of C$250,000 worth of new brewing equipment last month. Once it's fully installed, he'll have the ability to boost his beer production by about 500 per cent.

In advance of the expansion, Mailloux has been securing dispensing contracts with bars throughout the northeast, and is even in talks with the LCBO.

During Stack Brewing's first year of operation, it sold beer out of its Kelly Lake Road location and at Sudbury bars.

Mailloux said he'll only know once he gets his new equipment fired up how much beer he can actually sell.

“We still don't know what the beer market is in Sudbury because we weren't really doing a whole lot, volume-wise,” he said.

It was a trip to Montreal, where the craft brewing industry is strong, that inspired Mailloux to start his own microbrewery in Sudbury — the only one in the city right now.

“In general, the comments have been really positive,” Mailloux said. “A lot of people are grateful we took on this venture ...More info on site

Barley news Canada & South Korea: The Barley Council of Canada supports government’s efforts to move forward on free trade deal with South Korea
The Barley Council of Canada (BCC) supports the federal government's efforts to move forward on the Canada-Korea Free Trade Agreement (CKFTA), Ein News reported on June 12.

"We need a level-playing field to be competitive in South Korea," said BCC Chair Brian Otto. "By moving this agreement forward, Canada's barley industry is poised to capitalize on this growing market."

With the text for the agreement now formalized, it is imperative that the CKFTA remains a priority. Upon implementation, the CKFTA is expected to gradually remove historically high tariffs on Canada's agri-food exports. Currently, Canada exports over C$600 million worth of agri-food products to South Korea every year-down from nearly C$1 billion in 2011.

"The CKFTA will put us in line with the European Union, the United States and Australia, who already have trade agreements with Korea," added Otto. "The Korean market needs access to quality feed, malt and food barley, and Canada's value chain can fill that need."

The CKFTA is also expected to result in considerable benefits for the beef and pork industries. Canada's barley industry will reap the rewards of this as over 80 per cent of harvested barley goes towards feed production for livestock. This will also have a positive impact ...More info on site

Brewery news USA, MI: Boatyard Brewing Co. to launch in Kalamazoo on June 21
Kalamazoo's newest microbrewery, Boatyard Brewing Co., will hold its grand opening this month, Mlive reported on June 12.

The grand opening for Boatyard Brewing Co., 432 E. Paterson St., will start at 10 a.m. Saturday, June 21, company officials announced this week. A ribbon-cutting ceremony will start at noon.

Boatyard's regular hours will be from 2 to 9 p.m. Tuesdays through Fridays and noon until 9 p.m. on Saturdays.

The brewery, located a few blocks north of Bell's Eccentric Cafe, includes an 1,800-square-foot production facility and a 1,400-square-foot tap room, which has seating for 40 to 50 people. The brewery has a 10-barrel brewing system. The brewery distributes its beers through Imperial Beverage.

Owners Brian Steele and Dan Gilligan plan to produce about 1,400 barrels of beer this year.

Brewery news USA, CO: Mu Brewery already brewing in Aurora
Colfax Avenue may be the longest street in America, but until Mu Brewery opened last weekend in Aurora, none of its 26 miles was graced with a craft brewery. The last beer-maker with a Colfax address was an outlet of the Florida-based Hops Grill & Brewery chain, but that company pulled out of Colorado in 2013, Denver Westword reported on June 12.

Mu, which is located in the Aurora Cultural Arts District, ended the dry spell on June 7 when owner Nathan Flatland opened his doors. Named for a Greek letter - which also stands for "micro" - Mu is located inside a former office that hadn't been occupied since 2008. But the building had to be completely renovated to meet building codes.

"It's a fun distinction," says owner Nathan Flatland of having a brewery on Colfax, but he's more excited about being in the arts district, which is trying once again to reinvigorate itself. In fact, Mu's hours correspond to those of two neighboring theaters. The brewery is currently open Thursday from 4 to 10 p.m.; Friday from 2 p.m. to midnight; Saturday from 10 a.m. to midnight; and Sunday from 10 a.m. to 10 p.m.

Brewery news USA, UT & TX: Epic Brewing beers to be distributed in Texas
Epic Brewing has announced it will begin distributing its full range of beers in the state of Texas. Distribution will be handled by Andrews Distributing and Keg 1 LLC.

Andrews Distributing will cover the Dallas and Fort Worth areas while Keg 1 LLC will distribute in the Austin metropolitan area. Both distributors are nationally recognized with an emphasis on innovation and quality. They have a long standing history, commitment to service and match Epic Brewing’s craft centric philosophy.

As production from the Denver brewery continues to expand, additional counties will be opened with a priority on the Houston and San Antonio areas before the end of the year.

“We have had many requests for our beers in Texas the past few years,” said National Sales Manager Michael Malachowski, “and the increased capacity from Denver we can finally answer their call.”

Full product rollout will occur the beginning of August and the inaugural launch will be celebrated with a series of events. Announcements for the events will be made through Epic Brewing’s website, newsletter, and social media.

“I love reading the social media posts coming from Texas about our beers.” said Co-Founder, David Cole, “They have been waiting a long time for the full release and ...More info on site

Brewery news USA, MI & MA & CT: New Holland Brewing Co. expanding distribution in New England
New Holland Brewing Co. is expanding its reach into New England, Mlive.com reported on June 11.

The brewery and distiller announced a deal on June 11 for distribution of its craft beer and artisan liquor products to restaurants, bars and retail stores in Massachusetts and Connecticut starting this month.

The state of Rhode Island will be getting the brewery’s beer brands only.

New Holland is working with wholesaler L. Knife & Son, which has several craft beer distribution branches in New England. Launch events are scheduled next week in Pawtucket, R.I., and Boston.

According to brewery staff, New Holland made 25,575 barrels of beer in 2013 and is expected to produce 35,240 barrels in 2014. In 2013, the company produced 12,500 cases of spirits and is projected to produce 22,530 cases in 2014.

The brewery now distributes beer in 20 U.S. states and spirits in 15 states.

Brewery news USA, PA: Voodoo Brewery purchasing long-vacant building in Homestead with plans to set up operations there
A Meadville-based brewery is purchasing a long-vacant building in Homestead with plans to set up operations there, triblive.com reported on June 13.

Homestead council on June 12 approved the sale of the old borough fire station located at the corner of Ninth Avenue and Amity Street to Voodoo Brewery.

Voodoo submitted a bid of $8,500 for the three-story brick building.

“There's living, breathing history in there,” Jake Voelker of Voodoo Brewery said after the meeting, noting the purchase is part of the brewery's plans to expand.

Voelker said Voodoo's operation in Meadville is located in a historically significant building, too. He said much work needs to be done to renovate the Homestead structure and plans for the building still are in the development phase.

Voelker said Homestead is a promising market with activity from the Waterfront and bike traffic along the Great Allegheny Passage. He said the brewery wants this location to become part of the community fabric.

This will be the second brewpub to open in the borough. The brewery and restaurant chain Rock Bottom has an operation in the Waterfront.

Homestead borough manager Ian McMeans said he is extremely excited about the sale of the building and Voodoo's plans to restore it.

“They're taking a historic, ...More info on site

Brewery news USA, LA: Courtyard Brewery gains federal approval to brew beer for sale in New Orleans
Courtyard Brewery, a nano-brewery planned for the Lower Garden District in New Orleans, just cleared another major hurdle by gaining federal approval to brew beer for sale, Nola.com reported on June 12.

Lindsay Hellwig, who owns the brewery with her husband, Scott Wood, said Courtyard received its federal Alcohol and Tobacco Tax and Trade Bureau permit, or "TTB" permit, early this week.

"That's usually one of the biggest hurdles," Hellwig said.

Considering the latest developments, Courtyard Brewery is now aiming to open in early August, Hellwig said.

The federal approval is the latest victory for Courtyard Brewery in an arduous drive to open a nano-brewery with a tap room at 1020 Erato St.

A brewery is considered a "nano brewery" if the brewing system involves three to four barrels or fewer (a barrel holds 31 gallons).

Courtyard Brewery's tap room would function much like a tasting room at a winery. The spot will sell only craft beer — with plans for a rotating selection of six to eight Courtyard beers along with four to six "guest" beers from other breweries. For details on this, see Todd A. Price's story from last fall.

The tap room will not sell liquor or food, though Courtyard plans to have food ...More info on site

Brewery news USA, CA: Mavericks Brewing to launch this month in Northern California
Mavericks Brewing, an independent craft brewery devoted to creating innovative premium American craft beer in cans, is launching this month in Northern California, Brewbound reported on June 11.

Mavericks Brewing is initially unveiling a line of three beers designed to provide maximum flavor and mouthfeel with an alcohol level of just 3.75%. Southern Wine & Spirits, the largest distributor in the United States, is now distributing the Mavericks Belgian Style Wit, Rye Pale Ale, and Chocolate Porter in six-packs of cans and in both 1/2 barrel and 1/6 barrel kegs to Beverages & More and many other retail and on-premise accounts.

Mavericks Brewing takes its name from the legendary big wave surf spot and invitational surfing contest which is located directly offshore from the host brewery, the Half Moon Bay Brewing Company, and is widely considered to be the most exclusive and daring in the world. Head Brewer Shane Aldrich leads the Mavericks Brewing team, with assistance from James Costa, Brewmaster at Half Moon Bay Brewing Company. Brewery news Brazil: New report suggests real winner of World Cup of soccer will be the alcohol industry
A new report published on June 11 in a British medical magazine suggests the World Cup of soccer (which began on June 12) is to a large degree about the beer being served in the stands as it is about the sport played on the pitch, Global News said.

“Whichever country hoists aloft the World Cup trophy, the real winner will be the alcohol industry,” Jonathan Gornall, the author of the report, which ran in the BMJ, formerly the British Medical Journal, said.

The report blasts FIFA for forcing the Brazilian government to lift a decade-old ban on beer sales within stadiums – a ban designed to end brutal and sometimes deadly violence between rival fan bases.

In May 2012, Brazil’s federal senate passed a series of rules required by FIFA for the country to host the global spectacle. Among them, the allowance of beer sales in stadiums and possible tax breaks for tournament sponsors.

The passage of the conditions came after Anheuser-Busch InBev, the world’s biggest brewer, extended its sponsorship of the FIFA World Cup through 2022.

Relations between FIFA and Brazil became strained when government officials delayed the bill’s passage, according to reports at the time.

A fear among some now is that the ...More info on site

Barley news Ukraine: Southern regions start 2014 grain harvesting a few weeks earlier than last year
Ukraine’s southern regions have started 2014 grain harvesting, a few weeks earlier than last year, analyst UkrAgroConsult said on June 12.

“First of all the initial mowing of winter barley should be made. Farmers note that harvesting has begun with prematurely ripened low-growing plants which had not received enough moisture,” the consultancy said in a report.

The Ukrainian agriculture ministry has said that farms had sown 2.6 million hectares of early spring grains, mostly spring barley.

Analysts and traders have said Ukraine is likely to harvest around seven million tonnes of barley this year versus 7.6 million tonnes in 2013.

They forecast that the harvest of wheat could remain at last year’s level of around 22 million tonnes.

Brewery news Kenya: Government bans sale of a popular German beer brand for not having an expiry date
Kenya’s government has banned the sale of a popular German beer brand from the Kenyan market, The Star reported on June 13.

In a circular, the Health ministry termed Burg Premium Extra Lager as "unfit for human consumption" and called for its withdrawal from the market.

Director of public health Kepha Ombacho said the beer brand does not have an expiry date, which is against the law.

“The alcoholic beverage that is brewed in Germany contravenes the provisions of the foods, drugs and chemical substances act,” he said.

Ombacho directed health officers in the country to confiscate the beer from the market and take legal action against anyone selling it.

He said the ministry is keen to address under-quality imported food and drinks in the country.

“The ministry will release names of more alcoholic drinks that do not meet the set standards in due course,” Ombacho said.

The company’s brewery is located in Bihar.

Brewery news Kenya: Keroche Industries accuses NACADA of omitting it from approved liquor and breweries list
Keroche Industries has accused NACADA (the National Authority for the Campaign against Alcohol and Drug Abuse) of engaging in a smear campaign against its product, The Star reported on June 10.

On June 9, Keroche said in an interview NACADA is driven by hatred.

CEO Tabitha Karanja said unnamed competitor is using the agency to fight its products in the market.

On June 5, NACADA listed all the approved liquor and breweries in the country but left out Keroche products.

On June 9, Keroche said it was among the firms that first handed over its products and documents to Kenya Bureau of Standards for approval.

Karanja said she was shocked when the names of the company products were omitted from the list published by NACADA in the local dailies.

“The Kenya Bureau of Standards collected samples of our products and approved them and we are wondering why our products were omitted from the NACADA list,” she said.

Karanja was speaking to the press in Naivasha town.

She said the firm has nothing to hide and can be scrutinised anytime.

“We are very keen on quality and we welcome government agencies to sample any of our products and test them so that the issue can be cleared,” Karanja said.

Brewery news Ghana: Accra Brewery Limited launches redeveloped Stone Lager
Accra Brewery Limited (ABL), Ghana’s premier brewing company and a subsidiary of SABMiller Plc, has launched a redeveloped Stone Lager at an impressive ceremony in Accra, GhanaWeb reported on June 13.

The new Stone Lager replaces Stone Strong Lager, one of the company’s well-known brands, which has won several awards since its introduction in 2006. With the launching of the new Stone Lager, ABL becomes the first ever brewery in Ghana to brew beer with high quality locally grown rice as one of the ingredients.

Mr Anthony Grendon, Managing Director of ABL, said the introduction of the new beer was necessary because Stone Strong Lager had been steadily losing its consumer appeal due to changes in beer consumption habits, from heavier strong alcohol beers to lower alcohol and more sessionable offerings.

“The new Stone Lager has been inspired by the need to satisfy the evolving expectations of our cherished customers and you our valued partner,” he said. The Stone Lager has no added sugar and has reduced 5.2% alcohol by volume.

Mr Grendon said through Stone Lager ABL was putting its support behind Ghanaian rice farmers, assuring them of a larger sustainable demand for their yields. The initiative by ABL, he said, reaffirmed the ...More info on site
