How spicy are oxigenated sesquiterpenoids really?
ABSTRACT
The short answer is: pretty spicy! Belgian
researchers took the sesquiterpene hydrocarbon
fraction from hops and boiled it. The resulting
oxygenated sesquiterpenoids were purified and
added to beer resp. pitching wort. After boiling of a
sesquiterpene hydrocarbon fraction from hops in
water, a high number of flavour-active oxygenated
sesquiterpenoids is formed. Even though their levels
decrease dramatically during fermentation, some
compounds are still detected via GC-O. Sensory
evaluation showed that the addition of this fraction
to beer intensified the ratings for woody and
hoppy/spicy. However the identification of the
flavour active compounds still needs to be done.

USA, IL: One of Chicago’s most renowned chefs plans to open organic brewery
|
Chicago's craft beer scene is getting an unlikely new player: one of the city's most renowned chefs, Chicago Tribune reported on June 18.
Homaro Cantu, founder and executive chef of Moto, has signed a lease on a 7,000-square-foot space on the city's Northwest Side, where he plans to open a full-scale organic production brewery by next summer. The partially titled project — the name will be crowd sourced — will, naturally, include food: a low-key Mexican concept inspired by Cantu's grandmother's cooking.
But at heart, the project at 4419 W. Montrose Ave. will be a production brewery. Cantu and his partners have ordered a 15-barrel brewing system (an average size for a young, ambitious brewery) to make "kitchen-focused" beer.
The brewery plans four year-round, food-focused beers, including a green tea and honey ale, an Earl Grey milk stout, an "old fashioned" ale (brown ale with orange peel aged in whiskey barrels) and, because it's essentially required by the craft beer police, an India pale ale. The plan calls for the beers to be packaged in 16-ounce cans and 22-ounce bottles.

USA, GA: Wild Heaven Craft Beers unveil new brewery and tasting room
|
Wild Heaven Craft Beers, which began contract brewing in Decatur in 2010 and signed a lease on a building on Maple Street in Avondale Estates in 2011, finally unveiled its new brewery and tasting room last week during a series of preview events, ajc.com reported on June 18.
Wild Heaven president Nick Purdy and brewer Eric Johnson had been friends for many years before Purdy came up with a plan for starting a beer company in 2007.
“I decided I couldn’t just be a fan anymore,” Purdy said, recently, while sitting down with Johnson in the barely furnished Wild Heaven office to talk about their brewery — which given how busy the duo has been with other pursuits took some time to become a brick-and-mortar reality.
Purdy is the founder of Paste magazine and On the Square Media. Johnson is a longtime musician, horticulturist, host of the PBS show “Garden Smart,” and former owner of Trappeze Restaurant and Pub in Athens.
In the beginning, Johnson mostly took a consultant role, designing and testing recipes for signature beers such as Invocation strong golden ale and Ode to Mercy imperial brown ale on an elaborate homebrew rig/pilot brewery.

USA, OH: Lineage Brewing to be opened in Clintonville next year
|
Clintonville continues its resurgence as a trendy neighborhood with the expected opening of its first brewery, Lineage Brewing, in 2015. The company's Facebook page has been active since 2013, but early in the morning on June 17 the first substantial clue about where the brewery would be located appeared, Columbus Alive reported.
According to its website, Lineage is owned by Carey Hall, who's also the assistant brewer, and Jessica Page, who's also the resident beer librarian, while Jessica (business and marketing manager) and Mike Byrne (brewing operations manager; previously at Buckeye Lake Brewery) round out the staff. Carey and Jess have local family roots dating back to the 1860s.

USA, AR: Core Brewing & Distilling Company tapping in to increased demand in Northwest Arkansas
|
Northwest Arkansas' craft beer scene is surging, and a Springdale company is tapping in to increased demand, ArkansasMatters.com reported on June 17.
Core Brewing & Distilling Company started in 2010 with just two employees: CEO Jesse Core and his Uncle Kit.
"Now we're 15 employees, and we really need more," Core says. "Last year at this time we did 31 barrels. This month we're going to do over 300 barrels, so we've grown... about ten times in the last 12 months."
The Springdale brewery is expanding far beyond Northwest Arkansas, heading to Tennessee and South Dakota. Core wants to be an international brand before the end of the year.
"We're approaching about 400 locations where our product is," he says. "We're hoping to be in Mexico in 2014."
The company spent a week in Mexico City, meeting with distributors, and says it's one of just a few breweries nationwide looking to tap the market south of the border.
The Springdale Chamber of Commerce is excited to see Core's success.
"It signals, not only to the region, but also the state, that Springdale is a player when it comes to this new area of economic development for our state," says Bill Rogers, VP of Communications

USA, ND & MN: Fargo Brewing Co. expanding sales to Duluth and other Minnesota markets
|
North Dakota’s Fargo Brewing Co. is coming to Duluth area with its craft beers, Prairie Business reported on June 16.
Established in 2010, the fast-growing North Dakota brewery is doubling its capacity to expand to Duluth and other Minnesota markets. The Twin Ports market’s love of craft beer and its support of craft breweries is one of the reasons the company is expanding its distribution to Duluth, co-founder Jared Hardy said in a news release.
Its tap beers are now offered at 7 West Tap House, Country Lanes North, Old Chicago and the Canal Park Grizzly’s. Among the liquor stores where its beers are available in cans are Super One Liquor, Mount Royal Liquor and Last Chance Liquor — with the brewery promising more to come.
Among the beers available on tap and in cans are Fargo Brewing’s Stone’s Throw Scottish Ale, Iron Horse American Pale Ale and, inspired by the 1996 film “Fargo,” Wood Chipper India Pale Ale. Its Sodbuster Porter and Wind Swept Belgian Witbier also are available on tap, the company said.
The Fargo-based company plans to continue its expansion into other Minnesota markets, including the Twin Cities and southern Minnesota, in upcoming months.

USA, WA: Chainline Brewing Company planning to launch in Kirkland
|
A new brewery will be opening up in Kirkland, Kirkland Reporter said on June 13.
The Chainline Brewing Company said it has signed a lease at 503 6th St. S, next to Google and the Cross-Kirkland Corridor. The brewery will specialize in ales and lagers. A date for grand opening has not yet been announced.
The company is run by Scott and Michelle Holm.

EU: EU environmental ministers allow member states to ban or approve use of GMO crops
|
EU environmental ministers (26 out of 28) backed a compromise deal on June 12 to allow member states the option to ban or approve the use of genetically modified crops, Euronews reported.
Under the proposal, the European Commission would retain the right to ban or approve any particular GM crop throughout the EU on the basis of a scientific assessment.
If agreed by the European Parliament, the proposal could potentially end years of indecision in the EU regarding GM cultivation.
Seven EU countries have already introduced their own ban.
A six-year, EU-wide ban on GMOs was lifted in 2004 by the European Commission, which insisted on strict traceability and labelling rules.
The US and Canada have previously challenged the bloc at the World Trade Organization over its reluctance to import and sell such products, arguing it was a barrier to free trade.

Russia: Government takes the first step to limiting the size of plastic beer bottles
|
Russia took the first step on June 11 to limiting the size of plastic beer bottles, part of a government effort to promote healthy lifestyles by reducing the supply of cheap alcohol, Reuters reported.
The lower house of parliament passed a bill on the first reading that says only beer with alcohol content of 6 percent or less can be sold in plastic bottles, and limits their size to 1.5 litres. The law would go into effect Jan. 1, 2015.
The bill, which faces three more votes in parliament before President Vladimir Putin can sign it into law, would gradually reduce further the alcohol content of beer sold in plastic bottles and the size of the containers.
From July 1, 2015, only beer with up to 5 percent alcohol content could be sold in plastic bottles, which must contain no more than 1 litre. From 2016, the limits would drop to 4 percent alcohol content and 0.5-litre plastic bottles.
The restrictions would augment a ban on the sale of beer in street kiosks at all times and in shops from 11 p.m. to 8 a.m., as well as advertising restrictions put in place after Putin began a campaign to improve Russia's demographics.

Germany: Fracking could spell end of existence of many German breweries

"Germany is a beer nation: if their beer has no flavour, people will mount the barricades," says Friederike Borchert. At her family's brewery in Lünne, Lower Saxony, about 800,000 litres of beer are produced a year: a light pilsner, a dark beer and a buckwheat brew. Borchert, 27, dreams of one day making her own India pale ale, though now fears she may have to put her aspirations on hold, The Guardian reported on June 17.
In spring 2011, US energy group ExxonMobil made a horizontal test drill into shale rock under a field down the road, so far the only one of its kind in Germany.
Many locals are now convinced that Lünne has been earmarked as the country's first site for fracking, the controversial method of extracting gas by injecting water, sand and chemicals into the rock at high pressure. Earlier this month, a leaked letter by the economy and energy minister, Sigmar Gabriel, hinted at permitting fracking from 2015, apparently confirming their suspicions.

India: Newly-increased excise duty in Delhi expected to lead to increased cross-border smuggling of alcohol from neighbour state
|
Delhi Lieutenant Governor Najeeb Jung has approved a steep hike of 50-55 per cent in excise duty across all segments of liquor, including beer and Indian-made Foreign Liquor (IMFL). This translates into a hike of about 30 per cent for beer and between 15 and 20 per cent for IMFL varieties, Mail Online India reported on June 17.
Officials say this is one of the highest jumps of recent years in the cost of beer and other liquor. The hike will be effective by next week.
A bottle of Kingfisher beer which used to cost Rs 60 will cost anything between Rs 75 and 80 now; a bottle of Blenders Pride whisky which comes for Rs 610 now is set to cost more than Rs 700 at city vends under the new excise tax regime.
Royal Stag whisky is to go up from Rs 350 to Rs 410 for a bottle, and Foster's Strong beer will cost Rs 90 per can now.

World: AB InBev and Syngenta enter into partnership on malting barley sourcing
|
Syngenta and Anheuser-Busch InBev (AB InBev) announced on June 17 a partnership to secure the sourcing of high-quality malting barley, MarketWatch reported.
Under the agreement, growers will have access to the best Syngenta malting barley varieties and a tailored growing approach, which includes training and advice on agronomy and sustainable farming practices. By following the protocol, growers will achieve superior yields when compared with current market standards, enabling them to supply AB InBev with consistently high-quality grain to meet the exacting standards for beer production.
Syngenta Chief Operating Officer, John Atkin, said: "We've announced a winning combination today. Growers will be able to consistently achieve higher yields of top-quality malting barley, which will increase their incomes and help Anheuser-Busch InBev meet growing demand for its products."
Tony Milikin, Chief Procurement Officer of AB InBev, commented: "We wish to keep barley relevant and interesting for growers by helping them develop their business in a qualitative, sustainable and profitable way.
