125th Anniversary Review: Developments in brewing and distilling yeast strains
ABSTRACT
Progress during the past 25 years regarding our knowledge of brewer's yeast strains is considered. This is not a comprehensive review but rather focuses on some specific areas. These areas include a brief description of genomics, proteomics and metabolomics as applied to brewer's yeast strains. This review subsequently considers differences between ale and lager yeast strains, the uptake and metabolism of wort sugars and amino acids, yeast flocculation, yeast management between fermentations and yeast strain genetic stability. The question of process intensification, with particular attention to high-gravity brewing, is also addressed. USA: Barley prices continue to fall
|
Following the lead of corn, feed barley prices continued to fall during the past two weeks, and feed barley’s current price puts the crop in a unique situation, according to Valley Grain Milling’s Randy Brag quoted on August 9 by Farm & Ranch Guide.
“When you look at barley prices right now, there is actually a premium for feed barley over corn,” Brag said. “Feed barley has 90 percent the feed value of corn and in some parts of the country we are seeing $2.50 to $2.30 corn and feed barley at some elevators is at a $2.50 level.”
Brag feels producers are finally starting to see a true market price for the various commodities, including barley, that were impacted earlier in the year by lack of grain movement.
“We had a market held up by freight,” Brag said. “If we would have had rail cars moving on an orderly fashion all winter long and if we would have had enough truck drivers to move this crop, this market would have been in the tank in March.”
Brag wouldn’t be surprised to see the feed market dip even lower now that we are moving into harvest and everybody is full of grain.

USA, OR: Oregon’s brewers produce 8% more beer in 2013
|
The Oregon Brewers Guild announced this week that Oregonians bought more than 500,000 barrels of beer produced in Oregon in 2013, setting a new record in Oregon craft beer history and leading the U.S. in percentage of dollars spent on craft beer.
Oregon’s breweries crafted a little more than 1,400,000 barrels of beer during 2013, an 8 percent increase from the previous year. Oregon employment figures continue to strengthen, with the state’s brewing companies adding more than 200 jobs in 2013 and directly employing more than 6,600 people.
“We live in a unique state where we have the largest number of breweries per capita and also the highest percentage of dollars spent on craft beer in the U.S.,” says Brian Butenschoen, executive director of the Oregon Brewers Guild. “Oregon is also a destination for beer tourists where in Bend, 40 percent of its visitors said visiting a brewery or doing the Ale Trail was something they did when they visited. We have a city that just launched the fourth Ale Trail in Oregon in Eugene with the Eugene Ale Trail. Hood River has a brewery for every 1,433 residents and Portland has more breweries than any other city in the world.”

USA, CO: Denver Beer Co opens new production facility
|
Just three years after opening in a former garage on Platte Street, Denver Beer Co has just tapped a huge new production facility in the Sunnyside neighborhood, making the brewery a perfect symbol for the rapid rise of craft brewing's third wave, Denver Westword reported on August 8.
Denver Beer Co's Canworks in located inside a cavernous 11,000-square-foot warehouse, at 4455 Jason Street, and includes a thirty-barrel brewing system - making it the fourth largest in Denver - and four sixty-barrel fermenters. It also boasts a large canning line from Boulder's Wild Goose Engineering, which the brewery will use to package six-packs of Graham Cracker Porter, Incredible Pedal IPA and other beers.
"This is what we've been waiting for," said co-owner Charlie Berger. "This is crunch time, but I guess it's always crunch time."
So far, Denver Beer Co has brewed six batches of beer, Graham Cracker and Incredible Pedal, on its new system, though it had to dump one because it didn't meet expectations, Berger says. "There's a learning curve to every piece of equipment in here."
In September, Denver Beer Co plans to can its Hey! Pumpkin, followed by a rye ale, tentatively named Snow Ride, in December, and Kaffir Lime Wheat

Canada, ON: Outlaw Brew Co. already operational in Southampton
|
The worlds of country music and craft beer have come together in the small south-western Ontario town of Southampton with the recent opening of Outlaw Brew Co., Canadian Beer News reported on August 8.
Located in an historic building at the corner of Highway 21 and High Street, Outlaw is owned and operated by Deborah Leon & Andrew Woodley, with Woodley describing it as “a country/honkeytonk/live music brewpub that reflects the Outlaw Brew Co. lifestyle.”
The 10,000 square foot building includes a bar and restaurant area, a stage and dance floor for live music, and a second floor with an additional bar and seating.
What it doesn’t have yet is an on-site brewery – that’s planned for early 2015 – but in the meantime, the Outlaw house beers are being brewed under contract at Niagara College Brewery.

USA, NY: Binghamton Brewing Co. launching in Johnson City on August 16
|
Kristen Lyons and Jason Gardner volunteered at Brewery Ommegang's Belgium Comes to Cooperstown celebration in 2004, which served as the couple's first in-depth exposure to craft beer.
But on Saturday August 9 — day two of this year's Belgium Comes to Cooperstown — Lyons and Gardner served their own craft beer at the celebration, Pressconnects reported.
And a week later, on Aug. 16, they will open Binghamton Brewing Co. in Johnson City.
"We've put a lot of blood, sweat and tears into this, and it's just crazy to see it happen," said Lyons, 37. "It's a little bit surreal at this point."
This past week, Lyons and Gardner, who wed in 2000 and live in Endwell, worked into the early hours of the morning to get their brewery, located at 15 Avenue B, ready for its grand opening. A ticket to the opening, which is scheduled for 2 to 10 p.m. Saturday, Aug. 16, costs $15 and includes admission, beer samplings, a special tasting glass and a tour of the brewery and taproom.

USA, TX: Ivanhoe Ale Works expected to open in Denison in December
|
A new business is brewing in Denison, TX, a micro-brewery that the city says will promote tourism and help the local economy, kxii.com reported on August 8.
The brewery Ivanhoe Ale Works will be located right on Main Street next to Homestead Winery and Divollis. It is planned to look like a mid 20th Century movie theatre, bringing back the building's original look, but behind the doors owner Gabe Parker says they will be serving up wine and brewing beer.
"All sorts of craft beers, but we know we will have a pale ale. We'll have India Pale Ale, which is IPA and we'll have some stouts, but we're going to do a bunch of different beers like gluten free and beer with different honey taste," Parker said.
Parker, owner of Homestead Winery, says his new business will bring something new to Texas.
"We'll be the only ones that will at the same location will have a winery and a brewery, but that will probably change once people see our success. We hope," Parker said.
Parker expects business will overflow to surrounding shops in Downtown Denison, something both many residents and business owners are excited about.

Canada, ON: Calgary’s Big Rock Brewery to open brewpub in Toronto in 2015
|
Calgary-based Big Rock Brewery has announced plans to open a brewpub in Toronto in the first half of 2015, Canadian Beer News reported on August 11.
Located at 60 Atlantic Avenue in Toronto’s Liberty Village neighbourhood, the restaurant and brewery will be Big Rock’s second out-of-province operation, following the Big Rock Urban Brewery & Eatery that is set to open in Vancouver later this year.
“The Liberty Village site, at the corner of Liberty Street and Atlantic Avenue, will provide a great opportunity to share our beers and demonstrate our beer innovation,” said Bob Sartor, Big Rock CEO, in a statement. “Over the past two years, we have produced over 40 unique and different beers, but very few have found their way into Ontario. With this brewpub, we will be able to showcase our beers and ciders and share them with everyone.”
Coincidentally, this new Big Rock location is situated just steps from a new outpost of The 3 Brewers brewpub chain that is currently under construction at 99 Atlantic Avenue, with an opening date TBC.

USA, TX: Blue Owl Brewing to focus on sour mashing its beers
|
Perhaps the most intriguing detail about the fall arrival of Blue Owl Brewing in Austin, an eastside venture from former Black Star Co-Op employees Jeff Young and Suzy Shaffer, is that the beers — which have names and can designs displayed beautifully (and tantalizingly) on the brewery's Facebook page — will all be sour mashed, making Blue Owl the first brewery in the country to focus solely on that approach, austin360.com reported on August 11.
Sour mashing is a process that distillers use to produce most bourbon, but it's also sometimes a technique for brewers to make sour beers without the long amount of time that brewing those types of beers typically requires. As Young and Shaffer noted on Blue Owl's press page, "it's a non-traditional approach to producing highly approachable beer."
The brewing version of sour mashing results in “tart, fruit-forward beers that closely mimic their native style,” the press page said. In other words, a sour-mashed wheat beer still closely resembles a wheat beer, even though one part of the brewing process is altered to allow for some sourness to come through.

Canada, ON: Old Tomorrow Brewing to be launched this fall in Ontario
|
Canada’s first Prime Minister Sir John A. Macdonald will soon be honoured with a new brewing company being founded by a mother and son team that share his surname, Canadian Beer News reported on August 12.
Old Tomorrow Brewing – named for one of Macdonald’s nicknames – is the creation of Pat and Ian Macdonald, she a former Ontario Assistant Deputy Minister of Economic Development & Trade with executive experience in many leisure, hospitality and food & beverage companies, and he a marketing professor at George Brown College with an entrepreneurial background.
According to Ian, both he and his mother are passionate about craft beer and Canadian heritage, and decided to form Old Tomorrow to bring these two interests together. The first beer from the new company will be Old Tomorrow Canadian Pale Ale, a golden ale developed by Jamie Mistry, a brewmaster with experience at a number of breweries including Amsterdam Brewery and Cool Brewing.
Old Tomorrow CPA will be launched this fall, marking the 150th anniversary of the Charlottetown Conference, with promotion of the beer to be tied in with celebrations of the 200th birthday of Sir John A. Macdonald in January 2015.

USA, IN: 18th Street Brewery to double production by the end of this year
|
Less than one year after opening its doors, 18th Street Brewery has announced it will double its production by the end of 2014, while also becoming the first Northwest Indiana brewery to have its own canning facility, everythingontap.com reported.
Owner Drew Fox is investing in larger equipment and a canning line, combined moves that will allow the Gary brewery to increase production from roughly 500 barrels a year to more than 1,000. That growth will also mean an increased ability to distribute throughout the State of Indiana, as Fox has also reached an agreement with Starlight Distributors to deliver more of 18th Street’s beers in the Indianapolis area. 18th Street has also reached Europe, after a recent collaboration with Mikkeller, a Copenhagen, Denmark-based brewer. Fox said he is now working to identify a distributor to continue that relationship and keep 18th Street beers flowing in Europe.
The announcement comes just seven months after Rate Beer named 18th Street as the “Best New Brewer in Indiana.”
“Even before we opened our doors, we’ve had nothing but incredible support from so many people,” Fox said. “Since we opened last winter, that support has been overwhelming. We really can’t thank people enough for that. We’re ecstatic.”

USA, NV: The High Sierra Brewing Company moving to Sparks
|
The High Sierra Brewing Company is shifting their operations to the Baldini's Casino in Sparks, ktvn.com reported on August 13.
They're preparing to officially launch in the fall, and you can imagine they've been busy with construction.
“Everything's been moving very quickly and the contractor's been working well. The City of Sparks has been working very well with us. So, everybody's been working very hard to get us open as quickly as possible,” says Jim Phalan, High Sierra Brewing Company co-owner.
It's set to be at the site of the old Fallen Leaf Buffet.
Before this came to life in Sparks, it was on the main drag of downtown Carson City, and they decided to not renew their lease there. So, they partnered with Baldini's back in March, and they started construction within the last week.
When it's finished, it'll have 15-barrel production facility with more about a dozen original brews on tap, including their popular buzzed bee honey ale.
On top of that it'll feature a 180-seat restaurant with a pub-style menu.

USA, NY: Big Ditch Brewing enters Buffalo’s craft beer scene
|
Tuesday August 12 marked a milestone for the Queen City's newest entrant into the craft beer market. Big Ditch Brewing produced its first batch of beer, marking the realization of a dream come true for three local men, wgrz.com reported.
"It's a fantastic feeling to see our dream come to fruition, said company President Matt Kahn.
Kahn, along with his business partners, is part of a trio entrepreneurs who bring unique, and necessary sets of skills from prior employment to their new venture.
All three were also home brewers, and beer lovers who dreamed of opening their own craft brewery.
After meeting several years ago, they began pooling their resources and their business plans, resulting in the transformation of a former Verizon building on East Huron Street into a brewery that will have the capacity to produce 15,000 barrels a year.
Initially, they will sell their products to local taverns and specialty stores where it will be available in growlers. Eventually though, with the installation of a bottling line, Big Ditch products will be sold in supermarkets and convenience stores, as well as the restaurant the company plans to open at their brewing facility.

Northumberland Hills Brewery has opened in Cobourg, Ontario, Canadian Beer News reported on August 8.
Founded by homebrewer – and “legend in his own mind” – Rick Bailey, Northumberland Hills will be launching with two beers, Hoppy-Go-Lucky IPA and Long Weekend Lager. Future additions to the line-up will include Cold Springs Pale Ale and Honey Badger Wheat Ale.

UK: Great British Beer Festival expected to pour almost 1,000 different craft beers and ciders to more than 55,000 visitors

This month, the Kensington Olympia Exhibition Centre is hosting the Great British Beer Festival.
Some 55,000 people will attend the event and sample almost 1,000 different real ales, craft beers and ciders, International Business Times reported on August 8.
Scattered among the exhibitors will be up to 70 London craft breweries, demonstrating the enormous growth the sector has enjoyed in recent years.
"Six years ago when I got here it was still a lot of mainstream lagers, ales and cask which I didn't find very interesting. Now it's grown... there were only five or 10 breweries in London. Now you're up to 60ish roughly and within the next couple of years you'll be hitting the three figures, 100, which is fantastic," Durham Atkinson, the managing director of the Hops & Glory craft beer pub on the Essex Road said.
The pub brews a couple of its own beers to go along with the dozens of external beers it sells on premises. Atkinson is about to install a one barrel kit in the basement which will allow them to increase the amount they make and, all being well, sell their product elsewhere.
And it doesn't seem like there will be any issue with demand.

India: SABMiller revamps Foster’s beer to claw back ground lost to competitors
|
SABMiller, the world's second largest beer manufacturer by volume, has revamped its flagship international brand Foster's in India in a bid to claw back ground lost to European rivals Carlsberg Group and Anheuser-Busch InBev, The Times of India reported on August 13.
Post a massive, six-month long consumer research, the biggest of its kind done in India by SABMiller, the company re-launched Foster's recently, with the aim of putting its third biggest beer brand by revenue in India back on a high-growth trajectory. The two regional brands it acquired, Haywards and Knock Out, are its top two performers by revenue and volume, respectively.
"India is one of the most important markets for Foster's in terms of case volume after the US and UK. We relooked at literally everything in the brand. The taste of the brew has now been designed to be more refreshing and suited for the Indian palate," said Darioush Afzali, director, marketing, SABMiller India.

Malaysia: IS extremists planned to attack Carlsberg’s brewery in Malaysia

With more and more Malaysians and Indonesians becoming involved in the Syrian and Iraqi conflicts, western companies operating in the region, Carlsberg included, have suddenly found themselves in the crosshairs, The Copenhagen Post reported on August 11.
Over the past seven months, Malaysian security forces have arrested 19 Islamic extremists looking to launch terror attacks on a number of targets in Malaysia and Indonesia, including a Carlsberg factory near Kuala Lumpur.
“During questioning, they [the suspects] admitted one of their main objectives was to attack the government,” Ayub Khan, a senior official at Malaysia’s Special Branch Counter-Terrorism Division, told South China Morning Post.
“They also discussed planning attacks against a disco, pubs in Kuala Lumpur and a Carlsberg factory in Petaling Jaya.”
The Malaysian government revealed that 20 of its citizens had left for Syria to fight alongside the brutal militants of the Islamic State (IS), formerly known as ISIS. At least 56 Indonesians have also joined the IS ranks.
Some have been killed, but anti-terror experts fear that many will return home with plans to attack targets in the region.

Australia: New Charger barley variety expected to make it possible for beer to retain flavour for up to a year
|
Beer that retains its flavour for up to a year is expected to hit the shelves by the end of next month, after Australian scientists spent a decade developing a new type of malting barley, The Australian Reported on August 13.
Coopers Brewery estimates its first batch of Carlsberg lager featuring the new Charger malt barley variety developed by University of Adelaide scientists and the European brewing giant will be brewed this month.
Coopers managing director Tim Cooper said that using the new barley variety would not change the flavour of its product but it would slow down the deterioration of flavours into a “papery characteristic”.
“It’s just going to give the flavour more longevity, possibly postponing it by 50 per cent longer,’’ Mr Cooper said.
Adelaide University’s Plant and Food Science barley program leader Jason Eglinton said the new barley varieties were particularly important for delicate beer styles, where a slight off flavour is easily detected as a cardboard-type taste.
A typical light beer style stored in warm climates can go stale within four months but the new variety could extend a beer’s life for as long as 12 months, Professor Eglinton said.

Tsingtao Beer, one of China's biggest beer brands, launched a fruit-flavored beer on Chinese Valentine's Day, on August 2, in an effort to win over female followers with its cute design and sweet flavor, womenofchina.cn reported.
The new product, which is called "Peach Beer" or "Xuanqi" in Chinese, is the brewery's latest endeavour to attract certain targeted groups and create new products that fit special occasions, following its launch of tailored drinking packages during the Chinese New Year and the 2014 World Cup in Brazil.
The pink-canned drink won instant success as soon as it hit the market.

Saigon Binh Tay Beer Joint Stock Company introduced the first non-alcoholic beer brewed in Vietnam on August 10, saigon-gpdaily.com.vn reported.
The product contains less than 0.5 percent alcohol by volume.
In the first phase, the company will produce five million litres per year. The price of Sagota non-alcoholic beer is equal to 50-60 percent the price of import product, which is being sold at VND20,000-35,000 per can in the Vietnamese market.
Consumption trend of non-alcoholic beer is on the rise in the world. In Spain, it accounts for over 20 percent of total volume consumed.

East Africa Breweries could stop bottling low priced Senator Keg beer following a 75 per cent drop in sales after the government slapped tax on keg beer, AllAfrica reported on August 9.
Managing director Charles Ireland said the company "could take a hard decision on Senator" if the government does not revise its decision on the excise tax adding that already several jobs have been lost as a result.
"Senator consumers are extremely price sensitive consumers... the current position for Senator Keg is not a sustainable one," he said.
Speaking during the release of the company's financial results for the full year period ended June 2014, Ireland said sales growth grew by a modest four per cent, weighed down by Senator Keg performance.
Net sales stood at Sh61.29 billion with profit after tax hitting Sh6.86 billion, a five per cent rise from the previous year. Kenya accounted for 64 per cent of the company's sales, Tanzania 11 per cent, Uganda 18 per cent while South Sudan and Rwanda jointly contributed seven per cent.

South Korea: The Ministry of Food and Drug Safety investigating complaints about Oriental Brewery’s Cass beer

The Ministry of Food and Drug Safety of South Korea launched an investigation after it received consumers’ complaints that they noticed a strong smell of disinfectant when they opened a Cass can, Oriental Brewery’s flagship product. As it fuels fears among consumers, the rumor seems to have a bad effect on its sales, The Korea Bizwire reported on August 9.
On August 7, the beer brewer said consumers have complained that they felt or smelled disinfectant when they had Cass. Moreover, the news went viral on social media tools such as Facebook, Twitter or KakaoTalk.
As the problem persists, the ministry is carrying on scrutiny with experts to identify any problem on the 5th. In last June, the ministry already had conducted an investigation only to conclude that there was no problem in it. As complaints are continuously being brought up, however, the food safety agency resumed its investigation. As of late August 5, more than 10 complaints have been received.
