Hop aroma needs to breathe
ABSTRACT
US researchers are
exploring the idea that oxidized hops may be more
beneficial than once believed. The exposure to prooxidative
conditions led to an increase in the oxygenated
fraction of hop aroma compounds and a generalized
decrease in the hydrocarbon fraction. The researchers also
produced dry hopped beers (using 600g/hl) with oxidized
and non-oxidized hops. Panelists were able to detect the
flavor difference and the beer produced with the oxidized
hops was described as more fruity, floral, and herbal! This
may break a German brewer's heart, but maybe oxygen is
not always the bad guy... May this also have an impact on
flavor stability?

UK: Growing interest in locally brewed products helps revive UK’s ale industry

Discerning beer drinkers are increasingly turning to locally brewed products, helping to revive an ale industry hit by rising duty, pub closures and the growth of supermarket sales, The Financial Times reported on September 4.
At the beginning of the century, the UK was home to about 500 breweries, but by last year that figure had risen to 1,442, after increasing by a further 190 in 2012, according to figures released by the British Beer and Pub Association.
The growth in demand for cask ale and the sprouting of craft beer makers has been a notable feature of the beer industry in recent years.
“It has stimulated an enormous amount of interest in beer,” said Brigid Simmonds, chief executive of the BBPA.
Creating your own brewing business is helped by a tax break that gives a 50 per cent discount on duty to those who brew less than 5,000 hectolitres – almost 900,000 pints – a year.
Ms Simmonds is wary of the view that craft ale could be the saviour of the industry. It still comprises only a small proportion of the sector and the tax system is putting pressure on medium-sized breweries, she said.

Vijay Mallya, the embattled chairman of United Spirits in which global spirits major Diageo has majority stake, has told the company's board he will ensure operations are not affected after the United Bank of India's move to name him a wilful defaulter, Business Standard reported on September 5.
At a meeting that went on till late on September 3 in Mumbai, the newly constituted board of United Spirits took notice of United Bank of India's move to label Mallya a wilful defaulter.
"The RBI's master circular on wilful defaulters along with certain covenants in the loan agreements sanctioned by the company's bankers raise an uncertainty on the impact of this development on the availability of credit facilities to the company. The said director has assured the board that he will take appropriate steps to ensure that the operations of the company are not impacted. Having received such assurance from the said director and appropriate comfort from the controlling shareholders (Diageo) of the company, the financial statements have been prepared on a going concern basis," United Spirits said in a statement.

Denmark: Carlsberg’s shares up on news of Ukraine and Russia ceasefire agreement

Shares in Danish brewer Carlsberg jumped over 4 percent on September 3 after reports that Ukraine and Russia had reached a ceasefire agreement in the eastern Ukraine.
"That is definitely why the Carlsberg shares are going up," chief share trader at Danske Bank Mads Zink told Reuters. Reuters share price data also showed the jump after the news was announced by Ukrainian President Petro Poroshenko's office.
The Danish brewer has a large exposure to Russia through its market leading Baltika brand and its shares has been under pressure this year due to the crisis there.

China's most famous beer and probably its biggest global brand, Tsingtao has survived colonialism, civil war and Communist revolution. Now, it is relying on Japanese investment to help negotiate slowing growth and intensifying foreign competition, AFP reported on September 3.
Set up by German brewmasters in 1903, Tsingtao Brewery is today state-controlled but partly Japanese-owned, despite strained political ties between the two countries that were on display anew on September 3 as China marked the 69th anniversary of Japan's surrender in World War II.
"Tsingtao Beer has become a big international brand," said Xiao Shengxiong, who travelled with his family and colleagues from Hunan, three provinces away, to Qingdao -- the eastern Chinese city it is named after in an old transliteration.
"We all like to drink Tsingtao beer," Xiao said after touring the Tsingtao museum and brewery, across the road from restaurants serving fresh lager piped directly from the facility.
Nonetheless the company's high profile has not translated into dominance of China's beer market, the world's largest by volume but one that is highly fragmented.
Tsingtao is only the second-largest beer company in China behind Snow, analysts say, and claims a market share of only 17.2 percent.

Japan: Three major brewers simultaneously launch new “happoshu” beer products
|
Three major brewers simultaneously launched new “happoshu” low-malt quasi-beer products on Tuesday, September 2 that contain no purine bodies or carbohydrates, The Japan News reported.
In the unusual move to release similar products at the same time, Kirin Brewery Co., Suntory Liquors Ltd. and Asahi Breweries Ltd. hope to catch up with Sapporo Breweries Ltd.’s “Goku Zero,” which has been popular among consumers since its July launch.
Purine bodies contained in beer can be transferred into uric acid, which causes gout, while an excessive intake of carbohydrates is said to trigger lifestyle-related diseases.
In the shrinking Japanese beer market, health products are one of the few growth areas. The brewers believe consumers have a growing interest in products free from purine bodies and carbohydrates, with over 10 million people facing the risk of developing gout.
Takayuki Fuse, president of Kirin Beer Marketing Co., distributed Kirin Brewery’s new “Tanrei Platinum Double” happoshu to shoppers free of charge at a supermarket in Tokyo.
“People’s health-consciousness grows year by year and we have had a considerable response from consumers,” Fuse said, expressing confidence in achieving the sales target of 1.2 million cases by the end of the year.
Each case contains the equivalent of 20 633-milliliter bottles.

South Korea: Beer industry competition leads to police raid

Police raided the offices of Korea’s No. 2 beer maker Hite Jinro Co. and one of its provincial agencies on September 3 in connection with suspicions that the company spread malicious rumors against its bigger rival Oriental Brewery (OB), Yonhap News reported.
Police investigators seized computer hard drives and other documents from Hite Jinro's headquarters in southern Seoul and the local sales agency based in the central city of Daejeon.
The raid came after OB, the No. 1 player in South Korea's beer market, requested a police investigation into allegations that some market forces are spreading ill-willed rumors against Cass, OB's best-selling beer brand.
Since June, OB has been gripped by online rumors that Cass beers smell of disinfectant.
Police reportedly found that Hite Jinro employees were involved in the circulation of the rumor against the No. 1 beer maker.
Following the raid, police plan to question some of the firm's employees over the case.
Amid the rampant rumor spreading through online social networking services, food and drug authorities have said that the cause of the particular smell in Cass beers is attributable to a chemical reaction made when the fat element of malt, used in making beer, meets with dissolved oxygen.

Hungary: Beer sales below targets this summer because on lack of continuously hot weather

Beer sales were below targets this summer, as there was no period of continuously hot weather, Hungarian Brewery Association leader Klara Kovacs said in an interview to Caboodle.hu on September 3.
If the autumn weather is mild, then September and October sales could help to produce 1-2% sales growth this year, she added.
Beer consumption fell 4.5% in 2013, but this year the football World Cup and music festivals helped, but were not enough to offset the cold weather.

Ireland: Guinness announces release of two new beers
|
Guinness has just announced the release of two new beers, inspired by authentic recipes from Guinness brewers’ historic diaries from 1796 and 1801, IrishCentral reported on September 4.
Guinness Dublin Porter and Guinness West Indies Porter are the first releases from a new brewing project at the St. James’s Gate brewery in Dublin. ‘The Brewers Project’ gives Guinness’ enterprising brewers license to collaborate, reinterpret old recipes and explore new ones.
The new Guinness Dublin Porter is sweet and smooth with malt and dark caramel notes. Originating from the diary entry of a Guinness brewer from 1796, the recipe is inspired by the ‘golden age’ of porter – the 1800s workingman’s beer in Dublin and London, where after a long day at work, this Guinness stout porter was always the choice.
The new Guinness West Indies Porter is hoppy with notes of toffee and chocolate, described as “complex yet mellow.” The recipe originates from an 1801 diary entry about brewing specifically to maintain freshness while Guinness is transported from one country to another. To guarantee the fresh quality, brewers created a porter with more hops and a higher gravity.
