How alcohol boosts aroma perception
ABSTRACT
While the influence on alcohol content on bitterness
perception has been studied, it has remained unclear what
increasing levels of ethanol do to hop aroma perception.
Researchers studied the effect with the compounds betadamascenone,
carophyllene, citronellol, geraniol, geranyl
acetate, humulene, linalool, myrcene, and nerol in alcoholic
solutions of 5, 10, and 15 percent. Results indicate that
Beta-damascenone, carophyllene, and humulene aroma
thresholds are significantly affected by ethanol content,
while other compounds are not! Just like with anything else

USA, MN: Fair State Brewing Cooperative opens as Minnesota's first cooperative brewery
|
Minnesota's first cooperative brewery opened its doors in Northeast Minneapolis, making it one of only three cooperative breweries the country, kare11.com reported on September, 8.
Minnesota is home to the largest number of cooperatives in the nation, with the most food cooperatives per capita in the United States, but Fair State Brewing Cooperative is now heralded as the state's debut cooperative of its kind.
Founders Evan Sallee, Niko Tonks and Matthew Hauck celebrated a "soft opening" at their taproom, inviting in new members and beer enthusiasts for the first taste.
"Our tagline is 'drink like you own the place' and we wanted members to come in and create the kind of taproom they wanted," said Sallee.
"The reason we came up with it is we were all home brewers and wanted to be more involved in the brewing industry but didn't really know how," said Tonks, who is now Fair State's brewmaster.
"None of us really came from money or had much in savings. We were thinking, let's start a brewery. How can we possibly afford it? This is a way to bring a group of people together to build the space we want and the co-op model really allows us to do that," said

USA, OH: Columbus Brewing Co. to expand production capacity with new location
|
The former Hill Distributing Co. warehouse will become Columbus Brewing Co.’s third home since its founding in 1988, The Columbus Dispatch reported on September, 5.
Eric Bean can’t make another drop of India pale ale at his 6,000-square-foot brewery on Short Street.
“We are not only at the boundary of our current tank capacity,” said Bean, the owner of Columbus Brewing Co. “We can’t squeeze another tank in.”
So Bean bought a big, empty building on the West Side.
The 50,000-square-foot facility will allow room for serious growth at Columbus’ largest craft brewer. Columbus Brewing Co. will make about 12,000 barrels of beer this year, Bean said, and the first phase of the new brewery will crank out 20,000 to 25,000 barrels with plenty of space to expand.
“This is going to let us dream big,” Bean said.
Big is what Ohio’s craft beer industry has become. The state will have 100 craft breweries by year’s end, according to Mary MacDonald, executive director of the Ohio Craft Brewers Association.
“There were 58 in 2012,” MacDonald said. “The whole industry has shown enormous growth.”

Brew Hub, a company led by a team of beer industry executives and craft-brewing experts, has opened its first brewery in Lakeland, Florida, brewbound.com reported on September, 5.
The 50,000 square-foot brewery is the first of a network of five new, state-of-the-art craft breweries the company is planning to build that will offer craft brewers the opportunity to partner brew their beers on site.
Partner brewing is a process that allows craft breweries to brew their beer to exact specifications under the supervision of their own brewmaster, and to package and distribute from Brew Hub. Brew Hub also offers its partners services including sales, marketing, logistics, legal, and government affairs. Partner brewing allows craft brewers to expand their distribution without the overhead costs of building a new brewery or the complexity of contract brewing at third-party facilities.

USA, MO: Brew Hub to open Chesterfield brewery by 2016

A new brewery is coming to the west St. Louis County suburb of Chesterfield, stltoday.com reported on September, 8.
Brew Hub plans to break ground this year on a $20 mln regional craft brewery, with an opening date in early 2016.
An address has not yet been identified, but it will be located near the Spirit of St. Louis Airport, said the company’s founder and CEO, Tim Schoen.
The new facility will be the second location for Chesterfield-based Brew Hub, a company led by Schoen, a former vice president of new product development at Anheuser-Busch in St. Louis and global head of its entertainment and marketing business. Schoen worked at A-B for 28 years and left in 2009 after the sale of the company to InBev.
“There are a lot of guys in this region that need quality capacity,” Schoen said. “We’ve been in touch with virtually all of the craft brewers in this region.”
In addition to contracting with local craft brewers to grow their capacity, Brew Hub also will seek to expand production here for out-of-state brewers who want to grow their reach in the Midwest. USA, WI: The 8th Street Ale Haus to quadruple brewing capacity

The 8th Street Ale Haus is hoping it'll have far more of its own beer on tap in the new year, sheboyganpress.com reported on September, 9.
The brewpub is in the process of building storage next door for its new brewing operations, which general manager Kurt Jensen says will hopefully quadruple its craft beer capacitiy starting in 2015. The brewery will operate during the day prior to the bar's service hour.
The 8th Street Ale Haus has been the meeting place of the local homebrew, Sheboygan Sudzzers, since 2010 and has been making small batches of its own beers to put on tap for about a year. The popularity of those beers has been evident in how quickly they disappear from the list of available taps.
"We've been making 20 gallons a week and pretty much selling it as fast as we can make it," said owner Randy Oskey. "So people come in and want to taste our beers and it's like, if you're not here the day it goes on tap, you're probably not going to be able to taste it."

USA, CO: Smiling Toad Brewery opens new location
|
When doors opened at the new location last week, Smiling Toad Brewery officially lost bragging rights as the tiniest in Colorado Springs, gazette.com reported on September, 7.
"Yes, we're growing up. It's a good thing," said head brewer and co-owner Fred Davis. "It's a larger location, with more taps and more windows."
Homebrewer and founder Biff Morehead opened the original taproom in May 2013. The space was tight, with seating for about 10. "We were getting that every night," he said.
At first, a half-barrel system and twice-weekly brewing sessions provided enough suds to keep up with customer demand. A three-barrel system at the new location means more offerings - 10 beers on tap - and the renovated tasting area seats up to 50.
Even so, the Toad remains among the smaller brewing operations.
"Of the 10 in town, we're probably going to be number 8, but that's just a guess," said Morehead, who is sticking with the taproom format, which means no food.

USA, ID: Payette Brewing Co. plans expansion to new location
|
Payette brewery plans to expand to a 60-barrel, approximately 40,000-square-foot brewhouse with the long-term potential to pump out as many as 100,000 barrels of beer annually, idahostatesman.com reported on September, 9.
That site has not been chosen. But the beefed-up operation would catapult Payette, which sold 5,348 barrels of beer in 2013, into a new role as Idaho’s largest brewery. Victor-based Grand Teton Brewing Company, which generates about 10,000 barrels yearly in its 30-barrel brewhouse, currently resides in that throne.
“It’s definitely a big jump,” Payette founder Mike Francis says.
Payette sells about 65 percent of its product in cans, including the popular Outlaw IPA. With out-of-state distribution now reaching into Utah, Oregon, Nevada and Washington, the brewery has maxed out its 15-barrel, 11,000-square-foot location, Francis says.
“Where we’d like to go — just more states in the Mountain West and the West Coast — we need a bigger facility to do that,” Francis says.

|
Six Rivers Brewery is growing in popularity outside of Humboldt County, brewbound.com reported on Septemebr, 8.
A change with the company’s longtime beer distributor helped Nachshon and co-owner, Meredith Maier, regroup and evaluate their roles. They decided Maier needed to take more time to do sales while Nachshon would manage restaurant and catering exclusively. As the brewery’s new Brewhouse Coordinator, Maier’s efforts are already paying off.
“We are on track to be up over 20% from last year’s beer production. This equates to outside beer sales, as the bar sales stay pretty steady. We have picked up three new distributors outside of Humboldt County and now have solid distribution across California,” said Maier.

Ireland: Craft beer industry on course for sales of more than €15 million this year
|
The Irish craft beer industry is on course for sales of more than €15 million in 2014 with sales increasing by 50 per cent this year alone, The Irish Times reported on September 5.
A report, scheduled to be published later this week, will reveal that sales have increased by 180 per cent since 2011, albeit from a low base.
The craft beer industry now constitutes approximately 1.5 per cent of the entire beer market, still way behind countries such as the US or the UK. By the end of the year there will be more than 50 craft beer brewers in the whole of Ireland.
In the US, craft beer sales now account for 7.8 per cent volume of the total market last year and 14.3 per cent by dollar sales.
The Irish craft beer industry believes it can reach a similar level of market share in Ireland which would see a five-fold increase in sales.
Speaking at the launch of the Irish Craft Beer Festival in the RDS on September 4, festival organiser Seamus O’Hara of the Carlow Brewing Company said the recession had actually helped sales of craft beers.

Three decades after microbreweries faced near extinction in wine-dominated France, craft beer is finally taking off, The China Post reported on September 6.
With the number of small breweries nearly doubling since 2010, some craft beers are even making it onto the menus of some of Paris's best restaurants.
Former photographer and beer enthusiast Bruno Torres didn't hesitate to try his hand at brewing when he found himself looking for a new career in 2012.
The 42-year-old, whose La Baleine microbrewery opened last year in Paris, admits it might have seemed like a “mad” idea to some.
Two years on, however, he has his own range of beers and finds himself part of a small but rapidly expanding industry.
“I love the creativity, the freedom which exists with beer,” Torres said, explaining that he deliberately set out to make beer that could accompany food.
In addition to his peat-smoked and citrus-flavored beers, he also produces two others — a dessert beer and a fruity one that goes well with meat or seafood.
“When we do tastings people are always drawing parallels with different foods, especially women who are really keen on these beers,” he said.

Ireland: Diageo to open its new €168 million brewery in Dublin soon
|
Guinness producer Diageo is to open a new €168 million brewery St James’s Gate in Dublin, The Irish Times reported on September 10.
The new brewery, which was one of the largest construction projects to take place in Dublin in recent years, will consolidate all brewing by Diageo in Ireland at Victoria Quay, St James’s Gate.
The creation of the technologically advanced brewery was first announced in 2012 when Diageo said it would close its breweries in Kilkenny and Dundalk, with the loss of 100 jobs. The two plants manufactured Smithwick’s, Kilkenny ale, Budweiser and Harp Lager.
Diageo had originally planned a €650 million investment to overhaul its brewing activities in Ireland, but this was shelved as a result of the global financial crisis.

Vietnam: Ministry of Industry and Trade tries to control beer production and consumption but province authorities encourage people to drink local beer
|
While Vietnam’s Ministry of Industry and Trade (MOIT) attempts to control beer production and consumption, the leaders of many provinces and cities are encouraging people to drink beer, VietnamNet Bridge reported on September 8.
In a draft decree on beer production and consumption, MOIT stipulates that the activities of selling beer at schools, hospitals, offices, on the pavement, or to those who show “signs of getting drunk”, pregnant women, breast-feeding women, or to those who have abuse alcohol, will be considered illegal.
The ministry believes that if the beer production and market can be controlled with measures suggested in the draft decree, the brewery industry will develop well and increase revenue from beer for the state budget.
It estimates that once the decree takes effect, taxes will increase by VND3.1 trillion a year. The fee expected to be collected from beer production licensing would be about VND3.5 billion.
The draft decree which has been opened for public opinion has been described as “impractical” and “unfeasible”.
