From hops to coffee?

ABSTRACT
Analytical tools to easily differentiate hop varieties are still not established. These US researchers looked into the possibilities of NMR (nuclear magnetic resonance) to characterise hop varieties in beer. They found that though the spectra of Magnum and Cascade hops are not distinctly different, each single dry-hopped beer contained various peaks that were absent in the late hopped version. Among these they were able to identify trigonelline in hops and beer, a compound of importance as a flavour precursor in coffee! Further work will focus on identifying and assigning metabolites to unknown peaks in beer brewed with late hopping and/or dry hopping.

Brewery news USA, NM: Los Alamos Beer Co-Op seeks 300 member-owners in order to open
Los Alamos, New Mexico will soon be among only a handful of cities in the country to open the first cooperative craft brewery, and is brewing up several rich and tasty incentives to attract 300 new member/owners and investors to make that happen. Without more capital, the brewery will have to delay opening, brewbound.com reported on October, 23.

The Los Alamos Beer Co-op (LABC) estimates that the future brewery will open its new location early in 2015. With 300 more memberships in the next few months, the Co-op hopes to hire a professional brewer and eventually produce four varieties of beer, along with root beer and cider.

A co-op brewery is different from traditional breweries in that members own part of the business. Therefore, each member has the power to vote on how the business should be run, what types of beers should be offered, and other decisions which independently-owned craft breweries don’t allow anyone other than the owners to make. Unlike traditional breweries, any revenue has to be reinvested or returned to the members/owners.

There are currently only three co-op breweries in the country and the idea is fast becoming the preferred business model for startup breweries that are tapping their communities ...More info on site

Brewery news USA, NC: Sycamore Brewing to open in South End
Justin Brigham and his wife, Sarah, have spent the last year turning what used to be an old automotive garage into a brewery. Sycamore Brewing in South End will have its grand opening Nov. 1, charlotteobserver.com reported on October, 23.

Justin comes from a long line of craftsmen, which has helped when trying to figure out how to assemble steam pipes, wrestle glycol lines or dig trenches.

Justin started homebrewing after working in a grain elevator at Coors Brewing Company. He will brew alongside Jordy Smith, a homebrewer for many years who – before joining the Brighams – worked at Charlotte’s Alternative Beverage, a local homebrew shop.

Rather than distributing their beers all over Charlotte, the Brighams will keep most of it in house so they can offer a wide variety of styles.

At the grand opening, they will have their first five batches on tap. Southerly Oat Pale Ale and Peak Farm Pale will be core beers for the brewery. The other three don’t yet have names, but expect a strong extra special bitter, a blonde ale brewed with lemongrass and a cream stout brewed with smoked malt.

More styles will come as soon as they build up the pipeline.

Brewery news USA, WI: Company Brewing to open in Riverwest
The former director of coffee at Colectivo roasters and the owner of Bavette la Boucherie will open Company Brewing, a brewpub and restaurant in Riverwest, in what is now Stonefly Brewing, the Journal Sentinel reported on October, 22.

Stonefly remains open while loose ends are tied up, said owner Julia LaLoggia. She said the goal is to close it by the end of the month.

Karen Bell, the chef who owns the Third Ward butcher shop and restaurant, said she and George Bregar hope to open Company Brewing in February after some remodeling.

Bregar, a home brewer, said Company Brewing would open with five or six of its own beers and will add seasonal beers as well.

Beers will include takes on American and Belgian styles. Bregar said styles he's considering for the opening include an American pale ale, a riff on a Belgian wit, an IPA and a lightly oaked red ale. He's also working on a rum barrel-aged Belgian quad.

For summer, he expects to brew beers with wild yeast, "something crisp and complex and refreshing," he said.

The site has about a dozen draft lines, and some would be given over to other brewers, such as 3 Sheeps; Bregar noted he has ...More info on site

Brewery news Canada, BC: Moody Ales opens in Port Moody
The small city of Port Moody in Metro Vancouver is now the homebase of one of BC’s newest breweries, with the opening of Moody Ales, Canadian Beer News reported on October, 20.

Founded by homebrewers Adam Crandall and Dan Helmer, Moody Ales debuted with a launch party at The Burrard Public House on October 9th, followed by the public opening of the brewery taproom and retail store in Port Moody last Thursday October 16th.

Moody Ales is open for tasting and growler sales daily with the exception of Tuesdays, with plans to expand into bottles and liquor store distribution in the future.

Russia’s State Duma on October 21 approved in the first reading a bill freezing excise duties on beer and strong alcohol, The Union of Russian Brewers reported.

Barley news Ukraine: 92% of winter crop area already planted
Ukrainian government has announced that 92% of the winter crop area for 2014/15 had been planted as of October 20.

Planting of winter crops began 12-15 days later than usual this year, as a result of a drop in temperature and night frosts occurring for most of the country at the beginning of the month. Weather conditions improved around 11-13 October, which consequently allowed planting to progress.

Winter barley was planted on 779 thousand ha, or 73% of the forecast area.

Construction of a new brewery has begun in Mabuia, at around 70 km from Luanda, Agencia Angola Press reported on October 22.

The brewery’s promoters have signed an investment contract with ANIP, Angola’s national agency for private investments, it is reported.
