An environmentally friendly method to hunt for polyfunctional thiols


ABSTRACT
It becomes more and more clear that sulfur containing aroma substances with extremely low flavor thresholds dominate unique flavor impressions in heavily hopped beers. However the analysis of these thiols often involves the use of mercury for sample preparation. These Japanese researchers propose a new method for the sample preparation. They use stir-bar sorptive extraction (SBSE) method followed by in-situ derivatization with ethyl propiolate, followed by the analysis using the triple quadrupole GC/MS (QQQ) system with thermal desorption unit. With the increase of craft beers with many unique sulfur related hop flavours, this method might help to correlate sensory impressions with specific compounds.

Brewery news USA: AB InBev to launch tequila-flavoured Oculto beer next year
Anheuser-Busch InBev NV is launching a tequila-flavoured beer called Oculto in the U.S. next year, hoping to attract younger consumers who increasingly choose liquor and Mexican beers, The Wall Street Journal reported on November 5.

Oculto, which will make its debut next spring, will be made with blue agave—the same plant used to make tequila—blended with beer aged with wood from tequila barrels.

The new lager won’t contain tequila, but it will have an alcohol content of 6%, more than the 4% to 5% typical of American beers. The product targets a U.S. market that AB InBev has had trouble pursuing since it bought Mexican brewer Grupo Modelo SAB de CV for $20.1 billion in 2013.

Mexican beers are among the most rapidly expanding parts of the beer industry. This year’s shipments of brands such as Modelo Especial and Dos Equis to the U.S. were up 17% through September, according to Beer Marketer’s Insights, a trade publication. Corona is the top-selling import.

Brewery news USA, OR: Craft Brew Alliance announces third quarter results
Craft Brew Alliance, Inc. (“CBA”), an independent craft brewing company, reported its financial results for the third quarter ended September 30, 2014, brewbound.com reported on November, 5.

The results for the third quarter are in line with management’s expectations, and the Company reconfirms previously tightened 2014 full year guidance as reported in a press release issued October 28.

“Our third quarter results represent another deliberate step forward in CBA’s long-term quest to continue sustainably growing our topline while driving significant gross margin improvements,” said Andy Thomas, chief executive officer, CBA. “In fact, taking into account the Memphis start-up costs and the tough comparisons over last year’s third quarter, our gross margin rate was in line with our expectations and shows solid growth, allowing us to tighten and even accelerate our long-term gross margin guidance by a full year.”

Depletion volume grew 6% from the third quarter in 2013, and 8% for the nine months ended compared to the same period last year, which is squarely within company’s tightened full year depletion growth estimate of 7-9.

Brewery news Canada, AB: Tool Shed Brewing opens in Calgary
Six months after signing a lease for the space, Tool Shed Brewing has brewed the first batch of beer at its own production facility in Calgary, Canadian Beer News reported on October, 31.

Launched in 2013 by Graham Sherman and Jeff Orr as a contract operation with its beers being made at Dead Frog Brewery in B.C., Tool Shed was expected to run under that model for several years, until changes to the minimum production requirements for beers in Alberta that were implemented in December 2013 allowed them to scale down their original vision for the brewery and speed up plans to open their own location.

Sherman and Orr are brewing on a 25 hectolitre brewing system commissioned from DME Brewing Solutions in PEI, and once the first batches of beer are ready and final approvals come through, they plan to open a tasting room and retail store at the brewery.


Brewery news USA, OH: Carillon Brewing Co. to start production
Carillon Brewing Co., which has been open since August in Dayton but has not yet served its first Carillon beer, will begin full scale production of its 19th-century style beers this week, bizjournals.com reported on November, 4.

Tanya Brock, manager of the brewery, said the beer will show up in the historic brewery's taps in about three weeks.

The long anticipated brewery is the first museum exhibit and brewery of its kind in the country, where staff dressed in historical attire are using historical processes and technology to brew beer the way it was done in the 1850s.

The 10,500-square-foot brewery includes a full-service restaurant serving a mix of fares representing the heritage of the historical brewers, including German, English and Irish.

Scarlet Lane Brewing Company announced Simon Sothras as the new Head Brewer and business partner to Scarlet Lane, brewbound.com reported on November, 5.

Sothras comes to Scarlet Lane from Ninkasi Brewing Company in Eugene, Oregon where he was one of the original brewers that helped launch Ninkasi into being one of the most popular breweries on the West Coast. Before starting at Ninkasi, Simon was a winemaker for Eugene Wine Cellars.

A long-time friend to Scarlet Lane, Sothras will relocate to Indiana mid-November. Eilise Lane, CEO/Brewer and Sothras have previously brewed together while Lane was in brewing school at the American Brewers Guild. Sothras brings a wealth of talent and experience to the Indiana brewing community and will immediately become a partner in the Scarlet Lane Brewing Company LLC. Sothras will be joining Eilise Lane, Doug Sheets, Nick Servies and a primarily female investment team in the management and operation of the business.

Brewery news USA, CA: Dust Bowl Brewing Co. to expand
Dust Bowl Brewing Co. plans an expansion with a 30,000-square-foot building that would include brewing, bottling, a tasting room and other operations at Fulkerth Road, modbee.com reported on November, 5.

It now operates out of a 2,100-square-foot building also on Turlock’s west side, and has a downtown tap room and restaurant.

Founder Brett Tate said in August that the expansion “will set us up to be a regional brewery.”

Dust Bowl, founded in 2009, would go from about 4,000 barrels a year now to about 17,000 at the new site.



Brewery news USA, CO: Tivoli Brewing to open its own brewery and taphouse
When the Tivoli Brewery and Taproom is complete, sometime in early 2015, Metropolitan State University of Denver's Hospitality, Tourism and Events program will use it to help train students in its beverage-management program, wewtword.com reported on November, 5.

The original Tivoli Brewing was founded in 1900 and eventually became one of the largest beer-makers in the nation, producing 150,000 barrels a year. It was sold in 1965, however, and went out of business four years later after suffering through both the devastating South Platte River flood and an employee strike.

In 2012, Marshall and his wife, Debbie, bought the lapsed trademarks to the name Tivoli - along with several other long-forgotten Denver beer brands like Sigi's, Zang's and Neef Brothers - and began brewing close approximations of the original German-style lagers at Prost Brewing, with help from the Tivoli's last brewmaster.

Around the same time, Metro began looking for a way to incorporate Colorado's burgeoning craft-brewing industry into its hospitality program. "They reached out to us and we started having discussions about it," Marshall says. "After a series of proposals, we finally got approval to move forward. Brewery news USA, VI: The Arlington Beer Company plans of opening face obstacles
The Arlington Beer Company is looking to start a manufacturing, bottling, and distribution facility in Arlington Hts. The business would be the first microbrewery in the village, journal-topics.com reported on November, 4.

The brewery came before the village’s plat and subdivision committee on Oct. 22.

Originally, the owners wanted to include a tap room for beer tastings and tours, according to village staff, but that idea is now scrapped. While the village would not require a liquor license for the production of alcohol, Arlington Beer Company would need one if they actually served beer. Arlington Hts. does not have a liquor license specific to tap rooms so the brewery would have to comply with existing liquor laws. That would mean having a full kitchen that would serve food along with the beer tastings, which was not included in the company’s plan for the site.

But that’s not the only potential issue facing the project. The brewery would be located in the Hickory-Kensington neighborhood. The village recently designated the area a tax-increment financing district to spur future redevelopment. Brewery news Australia: Coopers Brewery reports first profit drop in three years
South Australian brewer Coopers Brewery has seen its first profit drop in three years as costs associated with a new bottling line and beer sales shifting from kegs to less profitable packaged beer formats squeezed earnings, The Australian reported on November 6.

However, the family-owned Coopers said it continued to enjoy ongoing growth during the 2013-14 financial year with record sales and turnover figures.

Coopers, which is the largest Australian-owned brewer following the foreign takeovers of Lion and Foster’s, said on November 6 that full-year net profit dipped 9.1 per cent to A$28 million for fiscal 2014 from A$30.8 million recorded in 2013.

Coopers managing director, Tim Cooper, said total bulk or kegged beer sales fell 1.5 per cent during the year, while packaged beer sales were up 10.3 per cent.

“Total beer sales in 2013-14 grew 8.1 per cent to 75.3 million litres, continuing the steady growth Coopers has enjoyed since 1994,” Dr Cooper said.

Turnover for the year reached a record A$231 million, 6.9 per cent better than the A$216 million in 2012-13.
