Scientific Digest

For your health, marinate your steak in beer!

ABSTRACT
This might sound as a joke but it is true! Portuguese researchers have looked into the effect of different beer types as meat marinates in regard to the formation of polycyclic aromatic hydrocarbons (PAHs). All beer types tested (Black Beer, Pilsner and a non-alcohol Pilsner) showed inhibitory effects on PAH formation (which are to see in context with cancer). The effect increased with the increase of their radicals-cavenging activity. Stay healthy, insist on beer marinated meat!

Brewery news South Korea: Oriental Brewery launches premium all-malt beer
Oriental Brewery, South Korea’s largest beer manufacturer, launched a new premium all-malt beer in a move to increase its stake in the fast-growing premium beer market, The Korea Herald reported on November 11.

At a news conference on November 11, it unveiled The Premier OB, a thick all-malt beer made of German noble hops and premium yeast.

“The Premier OB is the combined result of OB’s 80-year brewing history and its devotion to creating better taste,” said OB CEO Chang In-soo.

The new product is an upgraded version of OB’s Golden Lager, which is currently the third best-selling beer in Korea. The Premium OB also benchmarked rival all-malt beer brands such as Hite Jinro’s Max and Lotte Liquor’s Kloud.

“The Premier OB was created by applying a long-term aging technology to our OB Golden Lager to get a denser flavor and richer aroma,” said OB chief marketing officer Alex Song.

The company also used a different fort and logo for The Premier OB to distinguish it from OB Golden Lager, Song said.

“Korean consumers used to prefer light-flavored beer, but their palates seem to have changed and diversified over the years,” Song said. “Our No. 1 brand Cass fits the existing conventional customer needs, but it ...More info on site

Barley news United States: Malting firms still waiting to release malting barley contracts for next year
Although Busch Ag is still in the electronic bidding process for 2015 malting barley contracts, the other malting firms are still waiting to release malting barley contracts for next year's production, Farm & Ranch Guide reported on November 10.

The only exception to that is a small amount of acres were contracted by Miller/Coors in North Dakota, according to Kayla Burkhart, grain merchandiser for CHS Sun Prairie Grain in Minot, N.D. This action fulfils a decision that Miller/Coors made a couple months ago to spread out their contracted acreage to other barley producing areas.

It has been reported, Burkhart noted, that the prices for the electronic bidding have generally been in the $4.75 to $5 a bushel range.

"I don't think a lot of growers will want to take out a contract for less than $5 a bushel, but Rahr hasn't come out with their program yet," Burkhart said. "Each week we hear it should be coming out this week, but as of now, that hasn't happened."

The cash prices for both feed and malting barley are holding steady, according to Burkhart. In the case of malting barley, the maltsters are still evaluating their supply of barley, and focusing on malting some of the ...More info on site

Barley news Ireland: Malting barley growers protest against being “pressurized by Diageo”
Malting barley growers protested on November 10 outside Guinness in Dublin, saying they are ‘frustrated’ with how they are being dealt with over prices and specifications, Agriland reported.

Over 100 malting barley growers protested outside the Diageo-owned Guinness site in Dublin.

A spokesperson for the group said they were feeling “pressurised” by Guinness over changes to specifications to grain this year. “This is a last resort for us today, but we have to get the message to the people that we are supplying.

“The specification changes meant growers had no confidence in forward selling. Further, with contracts not being sent out until the end of May, farmers were in a difficult position. Seed was out in January, so contracts and changes should be presented to farmers before they sow a crop,” he said.

“Over 100 growers attended today and we handed in a letter outlining the issues for the growers, including the changes we have had to specification. We were there today out of frustration and not being negotiated with properly and we feel pressurised by Diageo.

“We outlined in the letter that specification changes are very difficult to deal with, including that we are using older seeds varieties that have limited yields.” He said ...More info on site
