How does yeast affect hop aroma components?


ABSTRACT
This question has been around for a couple of years, however it has not been well addressed to this point. These US researchers have now shown, in a small scale production trials, how the presence of yeast influences the concentration levels of various hop aroma components. Linalool, geraniol and citronellol levels decreased in the presence of yeast, and the concentrations of nerol, caryophyllene, humulene and myrcene were also found to be significantly lower. To clarify the different mechanisms of those losses, more research is needed.

Brewery news USA & Spain: Founders Brewing Co. sells 30 percent stake to Mahou San Miguel group from Spain
Mahou San Miguel group of Madrid, Spain has purchased a 30-percent stake in Grand Rapids-based Founders Brewing Co, mlive.com reported on December, 18.

The Michigan brewery announced the Mahou San Miguel group of Madrid, Spain as the new minority investor on Wednesday, Dec. 17.

Founders said the partnership would help the brewery tap the growing international market for craft beer, as well as allow Mahou to become directly involved in the U.S. craft beer market.

“Mahou shares our family values and a commitment to their communities,” said Founders CEO Mike Stevens. “They also believe in the importance of long term partnerships. We are honored to be working with a brewer that commands so much respect.”

Robert W. Baird & CO. is serving as financial adviser for the transaction. The deal is expected to close in January.

Mahou San Miguel was founded in Madrid in 1890 under the name Hijos de Casimiro Mahou. It is a leading Spanish brand. Earlier this year, it purchased an Indian brewery, Arian Breweries & Distilleries.


Barley news Canada: The Canadian Malting Barley Technical Centre releases recommended malting barley varieties list for the 2015-16 crop year
The Canadian Malting Barley Technical Centre has released its list of recommended malting barley varieties for the 2015-16 crop year, Alberta Farmer reported on December 18.

The recommendations are based on varieties the industry has indicated will have the greatest likelihood of being selected by grain and malting companies for both domestic and export markets from the 2015 harvest. Members of the centre were consulted as well as grain companies, maltsters, brewers, and organizations such as the Brewing and Malting Barley Research Institute.

“Producers can select from a portfolio of newer, higher-yielding varieties,” said Peter Watts, the centre’s managing director.

Because some varieties are better suited to particular growing regions or end-use markets, producers should talk with their local malting barley buyer before deciding which to grow, he said.

The use of certified seed to ensure varietal purity and increase opportunity for selection is strongly recommended.

Growers should also be aware the end-use market is changing, he added.

“The emerging craft brewing industries in North America and globally now represent a significant market for malting barley and malt suppliers,” said Watts.

There are now about 2,700 craft breweries in the U.S., according to the U.S. Brewers Association.

Brewery news USA, TX: Craft Brewers sue the Texas Alcoholic Beverage Commission
Texas alcohol regulators unconstitutionally force craft brewers to give away their territorial rights to distributors for free, three beer brewers claim in court, courthousenews.com reported on December, 15.

Live Oak Brewing Company, Revolver Brewing, and Peticolas Brewing Co. sued the Texas Alcoholic Beverage Commission on Dec. 10 in Travis County Court, alleging violations of the Texas Constitution.

Definitions of craft breweries vary, but they produce less beer than mass market breweries. Live Oak describes craft beer as "full-flavored beer, brewed using simple ingredients without artificial additives, with direct involvement by the brewery's owners." There are more than 20 full-time craft breweries in Texas, and dozens of brewpubs.

"A growing number of consumers prefer craft beer to mass-market beer.

The reasons for this vary, but include: craft beer is more flavorful and complex; craft beer is often brewed using traditional brewing methods and without artificial additives; craft beer is brewed with the involvement and oversight of the individuals who own the brewery, which ensures higher quality; and craft beer is available in a striking array of styles and flavors," Live Oak says in the complaint.

Brewery news USA, MA: Jack's Abby Brewing to move and expand
In less than four years and after numerous expansions, Jack’s Abby Brewing has maxed out its space at its Morton Street brewery, metrowestdailynews.com reported on December, 16.

The owners of the Framingham brewery – brothers Jack, Eric and Sam Hendler – announced they have leased 67,000 square feet in the Dennison Building downtown and will be moving their fast-growing brewery there.

“Demand has exceeded production,” said Jack Hendler, the brewmaster at Jack’s Abby Brewing. “It gets us closer to downtown. We want to be part of the downtown revitalization.”

Currently, Jack’s Abby Brewing occupies two warehouse spaces on Morton Street for a total of 12,000 square feet. The new space will be more than five times larger, Sam Hendler said.

The new space will allow the brewery to grow immensely, as well as to offer services the brothers can't offer in their current location, Jack Hendler said.

One of the biggest changes is that the new brewery will reserve 5,000 square feet for a restaurant, Jack Hendler said.

Brewery news USA: American Homebrewers Association gives gift membership to President Obama for the holidays
This holiday season, in recognition of their support and participation in the popular American hobby of homebrewing, the American Homebrewers Association (AHA) has extended special lifetime gift memberships to President Obama—the first president to brew beer in the White House—and outgoing White House chef Sam Kass, the association announced on December, 17.

Though beer has long been part of the country’s history and traditions, Obama made history when, as president, he purchased a homebrewing kit and then—alongside chef Kass—spearheaded the effort to brew White House Honey Ale, the first beer known to have been brewed in the White House.

“Homebrewing is a model example of a bipartisan, pro-community and pro-business activity that all kinds of people can be passionate about and enjoy. Brewery news USA, CA: 21st Amendment to expand
Plans for a new, $21 mln production facility in San Leandro by San Francisco-based brewing company 21 st Amendment just got bigger, bizjournals.com reported on December, 15.

After breaking ground last May on 95,000 square feet at the former Kellogg Cereal factory, 21 st Amendment has signed a lease for an additional 58,648 square feet at the same location, according to real estate firm Cassidy Turley, which brokered the deal.

That brings the brewery's space at the site to 148,348 square feet.

21 st Amendment owners Nico Freccia and Shaun O'Sullivan said in May that the facility would open in phases, starting this year. The first phase of the opening will launch the production area for 21st Amendment, so that the company can move its brewing process from Minnesota back to the Bay Area.

Having started as a 12-barrel brewery and pub in San Francisco in 2000, the beer makers — known for brews such as South Park Blonde and Hell or High Watermelon Wheat — grew beyond their capacity there and then moved most of the production to Minnesota in 2008. However, the company has outgrown even that space, which has a capacity of about 60,000 brew barrels.

Brewery news USA, DE: Warlock Brewing Company to open by March 2015
Owner of Warlock Brewing Company in Smyrna, Ron Price said he hopes the microbrewery will have its soft opening by early March, delawareonline.com reported on December, 12.

In September, Price closed the lease on warehouse space at the Smyrna business park and now he's about a month into construction. For several weeks, he and a group of volunteers have been hammering away at wood frames and trenching drainage troughs along the concrete floor of the 10,525 square-foot space right outside of town.

Price said the brewery's pilot brewing system – a small batch production unit – is on its way from Oregon. A deposit has been placed on a larger, 15-barrel system that will serve as the brewery's major production unit. All told, Price said he expects it will take about $750,000 to have the brewery up and running.

In the first year, he said he plans to produce about 500 to 700 barrels. Price said he expects to have the full system up and running by July.

The brewery is planned to include a tap room for tasting, live events and the sale of cases and pints. The tap room will include 12 taps, Price said.

Brewery news USA, FL: Ormond Brewing Co. set to expand
The owners of Ormond Brewing Co. recently celebrated the first anniversary of their business. Now the brewery is expanding by adding six new fermenters and two conditioning tanks that will expand its production capacity to 3,000 gallons a week, up from its present 270-gallon capacity. The brewery is also adding a canning machine, news-journalonline.com reported on December, 15.

Justin Robinson, the company’s president and co-owner, said the brewery began operating at its present full capacity within two weeks of its opening Nov. 30, 2013, and has been at that level ever since.

Robinson said he and co-owner Jon Pennett, Ormond Brewing Co.’s head brewer, also are in the process of adding a 4,000-square-foot facility next door, which they hope to have fully operational by the end of January, Robinson said he purchased the warehouse a little over a year ago and had been using it for storage.

Ormond Brewing Co. has seen its sales triple in the past year, Robinson said.

“It’s a testament to the growth of the craft beer industry (throughout Florida) as well as the quality of our product,” he said.

Ludlow's first craft brewery, Iron Duke Brewing opened to the public for tap room hours and bottle sales last week, masslive.com reported on December, 15.

Located in the Historic Ludlow Mills, Iron Duke is able to present full-service pint tastings and bottle sales in its 1,000-square foot tasting room, which provides a view of the brewery itself below. The brewery opened its doors with five beers and will add one each week until all 15 draft lines are full.

Visitors can sample beers on premises or purchase either 64-ounce growlers or 32-ounce "grunt" bottles to take home.

Iron Duke will be distributing its brews to several local bars and restaurants to serve on tap. These will include the brewery's signature offerings, Baby-Maker, a deep amber porter, and Dead Nuts, a hoppy American IPA.

The German statistics office reports that Germany’s grain exports fell to 4.5 mln tonnes from July to October 2014 compared to the 5.6 mln tonnes exported in the same period of the previous year.

Exports to other EU countries reached 2.3 (2.8) mln tonnes and to third countries 2.2 (2.8) mln tonnes. Barley exports stood at 418,000 (1.34 mln) tonnes, and those of malt at 193,000 (160,000) tonnes.

Grain imports totalled 3.3 (3.3) mln tonnes, thereof those from other EU countries 3.2 (3.2) mln tonnes and those from third countries 117,000 (77,000) tonnes. The imports of barley accounted for 445,000 (434,000) tonnes, and those of malt for 85,000 (78,000) tonnes.

Barley news Spain: Barley production estimated lower at 6.9 mln tonnes this year
Spain’s agriculture ministry still estimates Spain’s 2014 wheat production (excl. durum) at 5.7 mln tonnes which is down from the 6.7 mln tonnes produced in 2013.

Durum output is now seen slightly higher at 789,000 (previous forecast 769,000; previous year 906,000) tonnes, while barley production is estimated lower at 6.9 (7.1; 10.1) mln tonnes.

The estimate for oats now stands at 671,000 (674,000; 965,000) tonnes, for rye at 229,000 (226,000; 383,000) tonnes and for triticale at 450,000 (423,000; 394,000) tonnes. Corn output is still expected at 4.6 (4.6; 4.9) mln tonnes.


Barley news Russia: Russia getting creative in slowing down grain exports
Russia is getting creative as it seeks to stem a surge in grain exports amid the rout in the country’s currency that has pushed up the prices consumers pay for bread, Bloomberg reported on December 18.

The country is slowing down shipments by denying certificates that grain sellers and buyers need after sanitary inspections, an association of Russian exporters said December 17. Agriculture Minister Nikolai Fedorov said this week that it may scrutinize shipments through offshore companies, and the nation’s agriculture watchdog said last month it would block outbound cargoes it deems contaminated.

Russia, the world’s fourth-biggest wheat exporter, probably doesn’t want to risk pushing up prices with an official ban, according to Matt Ammermann, an analyst at INTL FCStone Inc. who focuses on the Black Sea region. While the country has said it won’t stop exports, the curbs may allow Russia to avoid a repeat of 2010, when it issued a 10-month embargo that saw wheat prices more than double.

“They want to do it by different means,” Vladimir Petrichenko, director general of market researcher ProZerno, said by phone in Moscow. “An embargo or export duties would obviously be too painful.”

Barley news UK: Spring barley area may increase in 2015
Spring cropping may increase in popularity for harvest 2015 in the United Kingdom for a number of agronomic and policy reasons. Looking at gross margins alone, there is a stronger incentive to plant spring barley this year over other spring crops. Spring milling wheat may also be a popular choice, even if milling premiums next season are at a modest level, HGCA reported on December 18.

While there can be greater risks with spring cropping compared with winter planting, spring crops offer a number of benefits that may increase the popularity of spring planting in the UK this season.
