ABSTRACT
Efficiency improvements in the brewing process lies in the
nature of brewing engineers. Therefore, in a practical
sense, the addition of hotbreak into the lautering tank for the recovery alpha- and isoalpha acids seems sensible.
Since hop acids function as chelating agents, their reuse
also introduces the chelated metal ions which is detrimental
for the oxidative stability of the beer. These German
researchers proposed a method using a pH treatment and a
yeast washing solution to recover the bitter acids from the
hot break and the yeast while excluding the metal ions.
How this would work in a larges scales still needs to be
shown.

USA, NY: Three Heads Brewing in talks to set up own facility in Rochester
|
Beer maker Three Heads Brewing is in talks to set up its own beer-making operation on Rochester's northeast side, Democrat & Chronicle reported on January 1.
Three Heads partner Dan Nothnagle said December 31 the business is eyeing property on Atlantic Avenue in the neighborhood of the Arts area, and is in talks with the city about building permits needed to renovate 20,000 square feet of space into a brewing and retail operation. However, Nothnagle said, no lease has been signed and Three Heads still is trying to raise the estimated $3 million to $4 million needed for the project.
Currently, Three Heads' array of beers are brewed for it by Honeoye Falls's Custom Brewcrafters and available at numerous retail outlets and bar taps around the Rochester region.
Three Heads launched in 2010 and "has always been about building the brand, then building a brewery once we get established," Nothnagle said.

USA, MT: Lewis & Clark Brewing Company expands production capacity by 30%
|
"Out with the old, in with the new" - the familiar New Year's saying that's been taken to heart this week at the Lewis & Clark Brewing Company, kpax.com reported on December 30.
Two 40-barrel fermenters were taken out of the brewery's roof with a crane on December 29, and were replaced by two new 60-barrel fermenters that were lowered into the brewery the same way. A third 60-barrel unit was wheeled in through a loading dock.
The brewery will be able to increase their production capacity by as much as 30% thanks to the new additions.
"What it means for us in 2015 is that we can continue this growth pace that we are on and try to satisfy all of Montana. Right now there's still markets like Billings and Sidney and some of the eastern Montana markets that we're still working to get into," brewery owner Max Pigman noted.
Pigman took the sub-freezing temperatures in stride and said, "Could have picked a warmer day, but, hey, can't pick that!"
Pigman says the new fermenters should be up and running in a week to 10 days.

Canada, ON: Pakenham’s Cartwright Springs Brewery now in final stages of construction
|
Pakenham’s first and only brewery will soon be up and running, Inside Ottawa Valley reported on December 30.
The operation, called Cartwright Springs Brewery, is currently in its final stages of construction. Andre Rieux, the company’s founder, said he hopes to start full production of their craft beers by the beginning of 2015, and to have the doors open to the public in the spring.
“We’re very excited that this stage of the project is coming to a close so we can move on to the really fun part,” he said. “Making and distributing the beer is what this is all about.”
Cartwright Springs Brewery is located in the heart of Pakenham and will be Mississippi Mills’ first brewery. The company will feature a lineup of craft beers made using locally sourced products – including their beers’ main ingredient: natural spring water.
The idea to start Cartwright Springs Brewery came to Rieux just over two years ago, when he was out for a walk on his property one day. He had come across a small creek when he noticed it didn’t seem to have a source. After some searching and sifting through a few fallen leaves, Rieux discovered that the water was bubbling up

USA, NC: Natty Greene's Brewing Company adds six more tanks to step up production and starts thinking of finding a new location
|
Natty Greene's Brewing Company began operations at its West Lee St. brewery in Greensboro in 2007, its growth in recent years mirroring the state's love of craft beer, TWC News reported on January 1.
The company has just added six more tanks to step up production.
"We got five new fermenters and also a 120 barrel bright beer tank that we've added. Our original cellar consisted of 23 tanks and now this brings us up to 29," says Head Brewer Scott Christoffel.
The brewery turned out more than 17,000 barrels of beers, ales and stouts in 2014.
The new equipment puts the company on target to reach 29,000 barrels to serve North Carolina and new markets in Virginia and South Carolina.
"It's an about 43 percent increase in production, so it's a pretty good jump for us," Christoffel says.
With this latest expansion, the company has now run out of space.
"We're really going to have to look for a new building here in the next 18 months to 24 months. We need to come up with a new plan because we'll max these tanks out in the next, probably, year," says Christoffel.
A new brewery could start out at 56,000 barrels, with room for more production.
"And

USA, FL: Barrel of Monks to become South Florida’s only Belgian-style brewery
|
It's been a long time coming, but plans to open South Florida's only Belgian-style brewery are currently underway in Boca Raton, Broward Palm Beach New Times reported on December 31.
Barrel of Monks co-founder Keith DeLoach announced this week he hopes to celebrate a grand opening in early 2015 along with partners Bill McFee and Matt Saady. Construction is on at their Boca Raton-based facility, where the trio will be producing some authentic, Old World-style ales using the finest in modern brewing equipment.
The Boca Raton residents have been busy perfecting recipes with brewmaster Kevin Abbott, and sourcing state-of-the-art equipment for a full, commercial production-ready brewery since November 2013.
Buildout for Barrel of Monks began in August, what is a roaming two-story, 10,000-square-foot facility that includes a tap tasting room, lounge area, meeting space, and a barrel-aging and bottling room.
The brewery is equipped with a state-of-the-art, 20-barrel Newlands brewing system, and plans are underway to begin immediate commercial production bottling (750ml only) for several of its beers, says DeLoach. That includes the Barrel of Monks White Wizard witbier; Three Fates Belgian tripel; and Abbey Turno Belgian double.
The tasting room will have a total of 12 taps featuring a rotating selection of the brewery's

UK: AB InBev interested in using alcohol-free beers to win over younger drinkers
|
Budweiser brewer AB InBev has expressed an interest in using alcohol-free beers to win over health-conscious younger drinkers as part of wider efforts to overcome volume declines fuelled by shifts in demographics and consumer preferences, The Drum reported on December 30.
The brewer already produces Beck’s Blue, which it claims is the UK’s most popular alcohol-free beer, and believes there is an increasing normality of drinking these types of brews as an alternative to consuming alcohol. While there is no imminent announcement regarding the trend, AB InBev pointed to the success of its Beck’s variant, which saw volume sales climb 16.4 per cent and 11 per cent in the off and on-trade respectively, as a sign of promise.
British adults feel that alcohol-free beer is more socially acceptable than it was five years ago, the brewer claimed. The insight comes from a Comres study, commissioned by AB InBev, of 2,061 adults earlier in December, which found that the sub-category could be key to propping up sales in a quarter usually hampered by people curbing their drinking habits to offset the excessiveness of the festive period.
The millenial generation - those aged between 18 and 34 - are eight times more likely than over

India: United Breweries Holdings likely to be declared ‘wilful defaulter’ after new United Bank of India head assumes office
|
United Bank of India is likely to declare United Breweries Holdings (UBHL) — the parent company of Vijay Mallya’s UB Group — a ‘wilful defaulter’ after its new chairman and managing director (CMD) assumes office, The Financial Express reported on December 31.
The public sector bank is headless since February after the previous CMD, Archana Bhargava, quit on health grounds even as the lender was facing a probe by the RBI and the government over bad loan pile-up.
“We identified UBHL as a wilful defaulter earlier this month. The grievance redressal committee on this will be held when the new CMD joins. We will have to go back to the board to take a call on UBHL,” United Bank of India executive director Deepak Narang said.
Bank sources said the ministry of finance was expected to notify the name of the new CMD soon. UBHL was the guarantor for the now-grounded Kingfisher Airlines. The Reserve Bank of India, in its master circular on wilful defaulters issued in 2012, said in cases where the guarantees furnished by the companies within the group on behalf of the wilfully defaulting units are not honoured when invoked by the banks/FIs, such group companies should also be reckoned

Africa: African brewers increasingly use local ingredients in their products
|
There is a growing trend towards contract farming of cassava and other inputs to the brewing industry across Africa, where seven governments have established special tax regimes to stimulate the use of local crops in beer production, All Africa reported on December 31.
While using sorghum and cassava in Africa reduces the import bill for barley by up to 40%, the special tax concessions negotiated have proved critical to the launch of these new beers, which are priced at around 70% of the cost of mainstream beers.
According to the industry market research company Canadean Ltd, the beer market in western Europe is flat, with its decline estimated at -0.6% a year, while "the volume of beer sold in Africa is expected to grow 4.6% per year on average from 2012 to 2016, faster than any other continent and nearly double the global rate." Accessing this growing market potential in Africa, through the production of lower-priced beer capable of attracting consumers away from traditionally brewed alcoholic beverages, is a critical part of the corporate strategies of companies such as SABMiller and Diageo.
For instance, in Uganda, contract farming of sorghum for brewing purposes was first pioneered in 2008 by SABMiller.
According to reports, contracts

Ethiopia: Diageo’s Meta Abo Brewery launches new beer
|
Meta Abo Brewery S.C., a Diageo company, announced that its newest production, Zemen Lager Beer, is available in outlets across Addis Abeba starting from last week, All Africa reported on December 29.
In a presses conference held on Thursday Dec. 25th Meta said it continues to invest in its beer range with the introduction of Zemen, "a refreshing, superior quality light beer with an alcohol by volume (ABV) of 4.5% and brewed with state of the art technology."
As with all Meta Abo Brewery products, Zemen is brewed with natural spring water in the brewery's hometown, Sebeta.
The lager is Meta Abo Brewery's second new product release in Ethiopia since acquisition by Diageo, following the August 2013 launch of Malta Guinness, a premium non-alcoholic malted soft drink.
Zemen Beer is already available in outlets across Addis Ababa and the 330ml bottle retails for a recommended price of ETB 10.
The world's leading premium drinks business giant Diageo acquired Meta Abo Brewery S.C. in January 2012 at a historic market share of 50%.
Meta was formerly a state-owned beer factory located in Sebeta, in the western outskirts of the capital, Addis Ababa.

West Bank: Taybeh Brewing Co. flourishes in spite of difficult political situation
|
Nadim Khoury, cofounder of Palestine’s Taybeh Brewing Co., first began brewing while studying at Brookline’s Hellenic College. And in navigating the curvy Judean hills about 12 miles outside of Jerusalem and a half-hour or so from Ramallah, there is a certain resonance, The Boston Globe reported on December 30.
In the village of Taybeh, nestled among this rolling, olive tree-lined landscape of the West Bank, Khoury’s brewery turns out exceptional beer, and his family’s business continues to flourish in spite of the region’s disheartening political situation.
Started in 1994 by Nadim and his brother David, Taybeh Brewing Company was the first microbrewery in the Middle East and exists in Palestine’s last remaining all-Christian community — an ancient town where Jesus is said to have taken refuge prior to his crucifixion. The 1993 Oslo Accords spurred rising optimism among Palestinians, and Nadim returned home from Boston one year later to start the business at the urging of his father. Twenty years later, there is still not peace, but the brewery is in a period of expansion and exciting new initiatives.
Those who question the likelihood of a brewery in the Middle East can look back to Ancient Egypt and Mesopotamia, and remember that the
