How to quantify hop aroma utilization
ABSTRACT
We all know that there is no easy way to quantify the hop oil utilization due to the complexity of the hop oil composition. However Belgian researchers have developed a methodology to bring light into the darkness. With the combination of HS-SPME and GC-MS plus SIM (selected fragmentation monitoring) they were able to determine selected markers for floral and spicy aromas selecting specifications. Within their work they also discovered that a certain compound, trans-nerolidol, can be used as a marker in beers to measure flavor instability. So if you have some money aside, why not invest in some decent analytical instruments ? Read more

Singapore & USA: Tiger Beer plans to pounce on the US market
|
Singapore’s Tiger Beer is a roaring success in the region, and it is set to pounce on the US market next, Today Online reported on March 21.
Heineken - which owns Tiger following its S$7.9 billion acquisition of Asia Pacific Breweries (APB) in 2012 - hopes to triple sales volume in the US in five years. Analysts have said the US beer market is somewhat stagnant at the moment, and Tiger will have to position itself creatively to win market share.
The global beer market is a fragmented one, with a growing preference for craft beers amid a wide variety of offerings from macro-breweries like Heineken and Carlsberg. The US, in particular, is a key market for many brewers and Tiger Beer wants to make further inroads there.
Since being launched in 1932, Tiger Beer has grown its international footprint to more than 60 countries.
Mr Kenneth Choo, regional director of Singapore, Indochina & Exports at Heineken Asia Pacific, said: “The US is an important market, with the Asian community growing highly affluent. For example, San Francisco is an important city for us.
“We have not totally fused up our Heineken network, so the volume is small. Certainly we hope to triple our current US

UK: Diageo extending Guinness brand with new premium bottled ale
|
Diageo is further extending its Guinness brand with a new premium bottled ale, Harpers.co.uk reported on March 23.
Guinness Golden Ale, which will rolls out in April, is the third bottled beer to join the line-up after the drinks giant launched a stout and porter, Guinness West Indies and Guinness Dublin Porters, in September. The new 4.5% ABV ale has been developed as part of The Brewers Project, a Diageo initiative in which six brewers within St. James’s Gate in Dublin, research and “reinterpret” the company’s historic beers.
The company said the ale had a “subtle biscuit flavours” from the malted barley with a “pleasing bitterness”, delicate hop aroma and clean finish. The launch of Guinness Golden Ale is being supported by a £4.5 mln advertising campaign across PR, out-of-home, cinema, digital and in store.
The company is keen to tap into the growing craft and bottled beer sector, and previously estimated Guinness’ bottled beers could add around £58 mln of sales to the category, across the on- and off-trade. However it reported poor beer sales in its first half results in January. Beer sales across Europe were down 4% on a reported basis on flat volumes,

Finland: Finland’s brewing industry loses over 300 jobs in 2011-2013
|
Data published in a new Ernst & Young industry report show that, from field to flagon, the Finnish brewing and soft drinks industry employed over 3,100 fewer people in 2013 than in 2011. In 2013, the Finnish brewing industry employed 1,900 people directly and about 26,000 people in the entire chain.
Over 300 jobs have been lost at breweries in two years. The largest indirect reduction – 2,300 people – has occurred in on-trade jobs. On-trade jobs in the brewing industry indirectly employed only 14,700 people in 2013 compared to over 17,000 in 2011. In addition to indirect job losses in restaurants and bars, almost 300 jobs have been lost in retail and about 100 in agriculture. The Finnish brewing industry still employs about 4,500 people in retail and over 1,200 people in agriculture.
According to the report, the beverage category that has the greatest impact on employment is beer. It employs over 14,000 people in the chain as a whole. Soft drinks and mineral waters have the second largest impact, employing almost 5,400 people. Cider and long drinks employ about 4,100 people.
Home consumption is replacing on-trade consumption, and the Federation of the Brewing and Soft Drinks Industry considers this to

Japan: Sapporo Breweries to launch first non-alcoholic beer-like drink certified for specified health uses
|
Sapporo Breweries Ltd. will sell from May 26 Sapporo Plus, the first nonalcoholic beer-like drink certified by the government as a food for specified health uses, known as tokuho, Jiji Press reported on March 24.
The new beverage suppresses a sharp increase in blood sugar levels after meals thanks to the effects of a corn-derived dietary fiber ingredient called dextrin, the Sapporo Holdings Ltd. unit said.
Sapporo will sell the product at ¥160 for a 350-milliliter can, about ¥10 to ¥15 more expensive than non-tokuho beer-flavored drinks with no alcohol content.
To prevent the product from becoming a “gateway drink” to alcohol for minors, its label will have a message that it is recommended for adults 20 years old or over. In addition, shops will display the drink only in their alcohol sections.
Kao Corp. has also gained tokuho certification for its nonalcoholic beer, but has yet to launch it.
The nonalcoholic beerlike drink market could expand further as other companies have also applied for tokuho certification for their products, industry sources said.
