How to quantify hop aroma utilization


ABSTRACT
We all know that there is no easy way to quantify the hop oil utilization due to the complexity of the hop oil composition. However Belgian researchers have developed a methodology to bring light into the darkness. With the combination of HS-SPME and GC-MS plus SIM (selected fragmentation monitoring) they were able to determine selected markers for floral and spicy aromas selecting specifications. Within their work they also discovered that a certain compound, trans-nerolidol, can be used as a marker in beers to measure flavor instability. So if you have some money aside, why not invest in some decent analytical instruments ?

Brewery news USA & China: China - an opportunity market for the US beer exports
Chinese beer connoisseurs are bored by the same old macrobrews they've been drinking for years. They are ready for some variety - a potentially huge market for American brewers if they can elbow out Europeans in the race to quench Chinese drinkers' thirst, Oregonlive reported on March 24.

Perhaps Portland-based Lompoc Brewing could tweak the "Proletariat Red" label to match the Cultural Revolution posters ubiquitous at tourist-y markets in China in effort to capture some of the $5 million in sales projected for 2017.

A report from the U.S. Department of Agriculture said now is the time to market to Chinese middle-class consumers and educate them on the unique qualities of Northwest beers. According to the U.S. Brewers Association, U.S. breweries exported $1.15 million of beer - about 505,206 liters - to China.

Imported beers from the U.S. and Europe are also considered safer by some middle-class, urban Chinese residents.

Some Oregon breweries already started tapping into the Chinese market. The Craft Brew Alliance, which operates Portland breweries Widmer and Omission, announced in 2012 it planned to expand to Asia. China and Hong Kong, as well as Japan, Taiwan and several European countries were on the list of new markets.

Brewery news USA, NC: Hi-Wire Brewing to build a $3 million expansion brewery
Asheville's Hi-Wire Brewing will build its $3 million expansion brewery on the edge of Biltmore Village, a project that will greatly boost its beer production and add 25 jobs to its workforce, Citizen –Times reported on March 24.

The new Hi-Wire space, dubbed the "Big Top," is at 2 Huntsman Place, just behind Appalachian Vintner off Biltmore Avenue. The 26,000-square-foot building was recently used for ISM, an industrial metal machining shop. The brewery will be open this summer.

Hi-Wire will continue to operate its original location at 197 Hilliard Ave. In addition to the brewing system, the building will include a tasting room with outdoor seating and on-site parking.


Brewery news USA, MI: Ann Arbor’s Wolverine Brewing expands further in the craft brewing market
Ann Arbor's Wolverine Brewing Co. has broken ground on a 6,000-square-foot on-site expansion, essentially doubling the brewery's footprint and production capacity, MLive reported on March 20.

Matt Roy, who opened Wolverine State Brewing in 2006 with childhood friend Trevor Thrall, estimates that the expansion will cost between $150,000-$200,000.

Marketing manager Mackenzie Meter estimates that construction on the new space should be completed within about four months.

Wolverine State Brewing Co. was steadily growing in beer sales across southeast Michigan for the last several years (from 35 barrels in its first year, to 2,200 barrels in 2014). Brewing only lagers, the company is unique in the craft brewing market.

"Ultimately, we'd like to get to 4,700 barrels by the end of 2017," said Roy.

"We've carved out a great niche market with our lagers in the southeast Michigan area, primarily in Washtenaw and Livingston counties, with some movement into the metro area. Now we're setting our sights on Grand Rapids and southwest Michigan, and eventually working our way north."

This is Wolverine State Brewing's second expansion. The first was in 2012.

"It gets to a point where we need to make more beer if we're going to push across the state," said Meter.

Prolific brewer Bolt Minister will open his 54°40’ Brewing Co. in Washougal, Washington.

Bolt Minister has been brewing around Oregon and Washington for many years, from Pyramid Brewing to Walking Man, Rock Bottom, and most recently Old Town Brewing, where his beers won multiple medals at the Great American Beer Festival, The Daily Meal reported on March 24.

More easily twittered and searched as “54-40 Brewing,” the name is in reference to the historic boundary dispute between the United States and the United Kingdom for the Oregon territory encompassing the greater Northwestern U.S. and British Columbia, or as it is called now, “Cascadia.” This area of land was marked at parallel 54°40′ north and became a democratic slogan for American annexation–”Fifty-four Forty or Fight!”–around 1845.

Brewery news USA, IN: Donum Dei brewery opened last week
Donum Dei Brewery, located off Grant Line Road in New Albany, opened last week after about three years of planning and is now planning to join the burgeoning craft beer community, The Courrier Journal reported on March 24.

With an open layout and bright setting, Donum Dei's atmosphere varies from other nearby breweries, including New Albanian Brewing Company and Red Yeti Brewing in Jeffersonville. But brewer and co-owner Richard Otey said he hopes to prove himself before attempting to make his mark.

"I think it's important, especially for a young artist, to prove that he can do the technical stuff," Otey said. " I want to let people know I can brew a pale ale, I can brew a Belgian, then I can go out and brew whatever is the latest trendy beer. I need to establish myself first."

Craft brewers are currently at the height of their place in the beer industry, reaching a double-digit volume share of the marketplace for the first time ever last year, according to a recent report by the Brewers Association.

Brewery news USA, OH: Barley’s Brewing is expanding to the Keyes Plumbing site
One of Columbus’ most-established brewers is ready for an expansion that could quadruple its capacity and bring new life to an industrial property near the North Market, Columbus Business First reported on March 23.

Barley’s Brewing Co. hopes to set up a new brewing operation inside the former Keyes Plumbing building, a 9,900-square-foot former warehouse near the North Market.

“It’s getting close. It’s getting real,” said Jason Fabian, the general manager.

The property, owned by developer Mo Dioun’s Finance Two LLC affiliate, was scheduled to go before the Downtown Commission on Tuesday, March 24, seeking approval for a $600,000 renovation from a warehouse to a brewery. Dioun said despite the Downtown Commission’s application, a deal with Barley’s remains incomplete.

“Nothing is final right now,” he said. “We don’t have any leases signed,” Dioun said the tentative deal calls for Barley’s to take the first level of the two- and three-story complex.

“We want to keep that innovation happening at 467 North High,” he said.

A larger brewery, however, will enable the restaurant to keep its own 23-year-old brewpub supplied and allow it to expand more throughout the market.


Brewery news USA, MI: Lake Ann Brewing- a tribute to tradition
“We had no idea, especially when we started, when we’d be opening,” said Matt Therrien, who is launching the Lake Ann Brewing Co. brewery with his wife, Jennie Therrien, Traverse City Record Eagle reported on March 21.

Now he has a firm answer to that question. It will be opened this spring.

Lake Ann Brewing is in its final construction push. The brewery, is situated in the former LA Cafe building on First Street. The interior decor will fit the “old hunting, fishing, camping” theme Therrien envisions. “That’s a style that’s close to me,” he said.

Therrien has brewed beer off and on at home for nearly 20 years and decided to open a brewery in Lake Ann more than a year ago. He made an offer on the building in late 2013. He has a lot of friends who own and work at area breweries, so Therrien knew to be cautious about starting the business.

Lake Ann Brewery will be the only establishment serving beer downtown, and Therrien is sensitive to his role in the community. The brewery will be family friendly and will close on Sundays.

Brewery news USA, WA: Scuttlebutt Brewing is expanding
Scuttlebutt Brewing is expanding its production facility near downtown Everett.

A longtime tennant’s recent departure opened the opportunity for the 20-year-old brewery to take over an adjacent portion of the building at 3310 Cedar St. that its production facility currently occupies. The brewery will gain 1,600-square-feet in space to bring their total to 7,100-square-feet, HeraldNet reported on March 23.

“We’ve always been very disciplined with our growth,” said Scuttlebutt head brewer Matt Stromberg. “This is a great opportunity for us to continue that growth.”

Stromberg said is hoping to increase the number of 60 barrel fermenters from five to 15. Most of all, though, Stromberg sees the elimination of waste as the biggest improvement from the added space.

That improved efficiency could see Scuttlebutt go from brewing 7,600 barrels per year, like they did in 2014, to 24,000 barrels per year.

Scuttlebutt owner Phil Bannan Sr. said the increase in production helps Scuttlebutt get more beers to local, national and international consumers.

“We can increase our penetration in the local markets while also expanding the footprint of our other markets,” Bannan said.

Brewery news USA, KY: A new law issued that bans breweries from owning distributors
The governor of Kentucky signed a law on March 20 that bans breweries from distributing their own products. The measure is aimed at forcing St. Louis-based Anheuser-Busch to sell or close its two distributorships in the state, St. Louis Post Dispatch reported on March 23.

In a statement issued this month, Kentucky Gov. Steve Beshear said House Bill 168 “protects the integrity of the three-tier system for alcohol sales in Kentucky.”

The post-Prohibition three-tier system establishes that the brewer makes the beer, the distributor stores and delivers beer to retailers, and the retailer sells it.

Laws on whether brewers can own distributors, however, vary state by state. In Missouri and Illinois, brewers can’t own wholesalers.

“This system was designed to protect consumers as well as small producers like new breweries,” Beshear’s statement continued. A-B, a unit of Belgian brewer A-B InBev, has owned a distributor facility in Louisville since 1978 and acquired a distributor in Owensboro in December.

“We are deeply disappointed in Governor Beshear’s signing this bill, particularly when you consider his frequent talking points about Kentucky working to attract foreign investment,” Damon Williams, director of sales and marketing at distributorship A-B of Louisville, said in an emailed statement.

Brewery news USA, WI: The Bonsai Brewing Project turns a business dream into reality
In Whitefish, a new Shopko department store booted the Bonsai Brewing Project - and several other businesses - from the Whitefish Mountain Mall, NBC Montana reported on March 25.

Bonsai was ready for an expansion, and thanks to a Kickstarter campaign, the owners could afford one after only a year of business.

Now Bonsai operates out of a bigger space on Wisconsin Avenue, on the way to Whitefish Mountain. The new location opened its doors on March 13.

Graham Hart, who owns the Bonsai Brewing Project, claims the expansion would have been unlikely if his mother hadn't convinced him to turn to internet crowdfunding.

The Whitefish resident said by the time Bonsai opened for business in 2014, he had raised almost $18,000 from about 70 different backers. He had only counted on $15,000.

Hart offered backers rewards through his Kickstarter campaign. When they donated money, he promised them t-shirts and hoodies or access to a special pub club that offers discounts.

According to Hart, Bonsai has seen success in its new location, and all began with internet crowdfunding.

Brewery news USA, OH: Vermont craft brewery Long Trail Brewing to start distributing its beers in Ohio
Vermont craft brewery Long Trail Brewing is coming to Ohio, Cincinnati.com reported on March 24.

The brewery, founded in 1989, has partnered with Superior Beverage Group in Columbus to introduce its flagship altbier, Long Trail Ale, and its American IPA, Limbo, to the state. Both should be available on draft beginning in early April, with packaged products hitting shelves later in the month.

Ohio is the first new market for Long Trail Brewing since 2012, and it’s the farthest market from the brewery’s home state.

“This is a great opportunity to grow our brand and be a part of Ohio’s thriving craft scene,” said Bill Zaninelli, vice president of sales at Long Trail, in a news release.


Brewery news USA, FL: Tomoka Brewing Co. to open on March 28
Tomoka Brewing Co. will hold a grand opening for its Port Orange brewpub/restaurant at 4647 S. Clyde Morris Blvd. on March 28 from 11 A.M. to midnight, The Daytona Beach News-Journal reported on March 25.

The event begins with a ribbon-cutting and will include live music, food, prize giveaways and a tap line of 14 of the company’s beers, including “Elvis PB Banana Sandwich Brown Ale.” The Port Orange location employs 50 workers. The brewpub is at the corner of Herbert Street and Clyde Morris.

Tomoka Brewing was founded in Ormond Beach in July 2013 by Pete Szunyogh and Jennifer Hawkins. The Port Orange location is majority-owned by Richard McCarthy, with Sue Borwick, Szunyogh and Hawkins as minority owners.


Brewery news World: Analysts say 3G Capital’s Kraft Fods – Heinz deal puts possible takeover bid for SABMiller by AB InBev on hold
MegaBrew may have to wait a bit, Bloomberg reported on March 26.

The possible combination of Anheuser-Busch InBev NV and its $85 billion rival SABMiller Plc has been the subject of deal chatter for at least a year. The Brazilian investors behind 3G Capital are some of the top holders of AB InBev. Some analysts have speculated that 3G could help orchestrate a transaction just as it did when InBev NV bought Budweiser maker Anheuser-Busch in 2008 to create the No. 1 brewer.

Anheuser-Busch InBev, the world's largest brewer, is close to proposing JAB Holding Chief Executive Olivier Goudet as its next chairman, Reuters said on March 26 claiming it got the information from four sources familiar with the matter.

The ascent of Goudet, a Frenchman who has been on the AB InBev board since 2011, highlights the close ties between the associates of JAB and 3G Capital, two of the most important private investors in the global consumer goods industry. 3G Capital has four of its founding partners on the brewer's board.

Goudet, a former Mars Inc CFO, would replace Dutchman Kees Storm whose term expires this year. He would bring expertise in operations and deal-making, both core to AB InBev, which has grown into the world's largest brewer through a series of cross-border combinations over the years. "When it comes to pursuing organic growth, he's got a lot of expertise from his Mars days that I'm sure will be relevant but these guys don't need any help when it comes to knowing how to do deals," said Bernstein Research analyst Trevor Stirling.

Brewery news Zimbabwe: Delta invests US$17 mln in Chibuku project
Construction of Delta Corporation’s US$17 million Chibuku plant at Fairbridge, just outside Bulawayo, will get underway in the next few weeks after the country’s biggest brewer last week received the first batch of equipment from Germany and South Africa, reported Zimbabwe Daily, March 26.

The delivery consisted of the main packaging plant procured from the world’s leading packaging and bottling machine manufacturer, Krones of Germany and brewing and fermentation tanks from Interfab of South Africa.

C&M understands that the remainder of the equipment, which consists of brewing and refrigeration plant sourced from GEA Process Technology of South Africa and grain silos from Cimbria of Denmark, are now expected in the country next month.

Alex Makamure, the company secretary for the cash-rich beverages’ firm which is listed on the Zimbabwe Stock Exchange, confirmed the company had received the first batch of equipment, saying the remainder would be delivered next month.

“We have started receiving the plant from Krones and tanks from South Africa with the remainder of the equipment expected in April,” Makamure said, adding that the new plant would be commissioned by June this year.

The Keroche Breweries plant to be opened in a week will remit Sh6 billion annually to the Kenya Revenue Authority, the CEO was quoted as saying by AllAfrica on March 25.

Keroche CEO Tabitha Karanja said the firm's market share will rise from the current three per cent to 20 per cent.

She said the company will produce 10 times more beer than it currently does once the plant is operational.

Nutritional labelling on alcoholic drinks could become the norm after four of the world’s biggest brewers backed plans to add calorie counts to their products in Europe, reported Wall Street Journal, March 26.

The Brewers of Europe, a trade body representing beer makers across the continent, said members soon would begin listing nutritional information on their brands. Anheuser-Busch InBev SA, SABMiller PLC, Heineken NV and Carlsberg A/S were among those to endorse the proposal. Some of them planned to start of 26th of March.

Alcohol producers are coming under pressure to follow the food industry by providing more detail on nutrition, especially in developed markets where consumers increasingly make health-based decisions.

As the economic crisis sweeps through Russia, a dangerous trend is emerging: the rise in consumption of potentially lethal moonshine, medical alcohol or even cleaning products, reported UsNews, March 25.

Layoffs, wage cuts and price increases are combining to worsen the problem, by increasing the mix of dangerous products in the market. Those who can no longer afford store-bought drinks are turning to "under the counter" alternatives that can cause serious damage, even death.

"A number of patients who previously could afford expensive spirits are now forced to reorient in the sense that they use cheaper and lower-quality spirits," Alexander Polikarpov, the head doctor of the Alcospas chain of alcohol rehab clinics in Moscow, says in his consulting room.

Sales of legal beer and vodka have fallen sharply as prices rise, buoyed in part by the rising cost of imported ingredients after the ruble's value tumbled last year. Brewery news New Zealand: A 3 per cent beer price increase to be passed to customers
The price of beer will increase by nearly 3 per cent as New Zealand's biggest brewers try to recoup costs in a flagging market, reported businessday, March 27.

Overseas-owned breweries Lion, DB and Independent Breweries are all hiking beer prices by the end of April.

DB spokesman Simon Smith said it would increase tap and packaged beer prices by 2.8 per cent from April 13.

"We have kept this price rise to a minimum, despite tough market conditions and increased operating costs," Smith said.

Lion national sales director Danny Phillips said that from March 30, Lion was increasing its price for all pack beer by 2.8 per cent.

However, Pak 'n' Save supermarket owner Foodstuffs marketing manager Katherine Klouwens said the three breweries were putting some prices up.

Countdown spokeswoman Kate Porter said it would pass price increases on to customers.

In March 2012, DB bumped up its tap-beer price by 1 per cent. Lion increased its prices by 1.5 per cent a week later.
