Is it all about the ratio?


ABSTRACT
Listening to the best recognized research team in flavour chemistry, that would be the correct conclusion. Summarising the results of 25 years of research on all kind of different foods, this German research team says that their meta-analysis demonstrates characteristic ratios of only about 3 to 40 genuine key odorants for each food (of more than 220 investigated), from a toolbox of ~230 out of ~10,000 food volatiles. They conclude that the foodborn stimulus space has co-evolved with, and roughly matched our ~400 olfactory receptors as best natural agonists. The key odorants can be classified into two groups of volatiles: 1) high-threshold volatiles reaching their odor impact by their high levels in foods, e.g. the high odor thresholds of 16 and 13 Mg/L for acetaldehyde and (R)-limonene respectively, are compensated by the high concentrations of 6150 and 2308 Mg/L found for these odorants in hand-squeezed grapefruit juice, and 2) trace level volatiles exceeded their low threshold concentrations at low concentrations, e.g. the grapefruit-like smelling 1-p-menthene-8-thiol (0.01 Mg/L) and the cooked apple-like (E)-B-damascenone (0.9 Mg/L) in grapefruit juice and red wine respectively, which easily exceed their extraordinarily low odor threshold of by a factor of 50 and 90. This is a comprehensive review and with having dry hopped beers in mind, it sounds that if you combine all key odorants of juices, wines and normal beers - there is your dry hopped IPA!

Brewery news USA, NC: Waterline Brewing Company to be opened in former warehouse in Wilmington
Brewery owners across the state of North Carolina are choosing to renovate old structures instead of building from scratch, TWC News reported on May 17.

Waterline Brewing Company in Wilmington is one of the latest to hop aboard this growing trend.

Owner Rob Robinson said he chose the perfect building for his new brewery - an old warehouse from the 1940s.

"It's got a lot of soul. It looks cool. And the people that enjoy craft beers and craft brewing, kind of gravitate to some of this,” said Robinson.

Waterline Brewing Company is scheduled to open sometime this summer.

Wilmington Brewing Company is another example. The brewery is located in an old electrical supply shop.


Brewery news USA, ME: DeepWater Brewing Company comes to life after a barn restoration
The story of DeepWater Brewing Co. began more than 300 years ago in an old horse barn at the top of a hill, Bangor Daily News reported on May 18.

Built in the 1700s in a traditional post-and-beam style, the barn was once home to half a dozen horses. Thirty years ago the barn moved from its original location across the street. These days, instead of livestock, the cream-colored, shingle-sided building is home to bubbling vats of fermenting beer and sacks of malt grain.

DeepWater owner John Hikade and his son Tim restored the barn with the intention of brewing beer to sell at Arborvine, an adjacent restaurant.

Prior to starting restoration in 2012, the barn was virtually unused. But after refurbishing six other buildings in Blue Hill, Hikade knew he could do the job.

The barn transformation was completed in two years and Hikade said his goal with the restoration was to preserve as many historic details as possible while still adding modern conveniences.

John and Beth are not new to opening and running businesses in historic locations. Their restaurant Arborvine, on the same property as the brewery, occupies the former B.W. Hinckley house, which John and Beth restored.

Brewery news USA, MD: Assawoman Bay Brewing Co. and Brewpub eager to enter Ocean City’s booming craft beer scene
Two breweries, Backshore Brewing Co. and Ocean City Brewing Co., have found a home in Ocean City while a third, De Lazy Lizard, decided to pack off to Snow Hill after a fire in February badly damaged its building, The Star Democrat reported on May 17.

If they’re willing to take a road trip, beer aficionados during this summer tourist season will be able to find 10 more locally run breweries across Delmarva.

Is the area’s craft brewery market getting too frothy? Its newest entrant doesn’t think so.

In fact, the way brewmaster Jason Weissberg sees it, Assawoman Bay Brewing Co. and Brewpub occupies its own niche. No other brewery on Delmarva offers the same combination of a full gastropub menu and waterfront views, he said.

Like a true brewmaster, Weissberg declared that his beer will find a reliable base of drinkers on its own.

“People are always looking to expand their palates,” he said. “I equate it to opening a restaurant. If you make a good product and treat your customers right, there’s plenty of room.”

Brewery news USA, KY: Darkness Brewing co-founders turn to crowdfunding to help bring brewery to life
One of Kentucky’s newest brewery projects is looking for investment and hopes the public will share in their dream, WCPO reported on May 18.

Co-founders Eric Bosler and Ron Sanders want to open Darkness Brewing at a former warehouse at 224 Fairfield Ave. in Bellevue.

Bosler got his start in the industry bartending at the Crazy Fox Saloon in Newport and currently works at Virgil’s Café in Bellevue.

Bosler will be the head brewer and bar manager, while Sanders will take care of the business side of the brewery. Sanders will also be brewing once they get up and running.

Both of them have been brewing together for about three years. Bosler has been home brewing for the past five years.

Bosler said their goal is to keep the brewery and experience small, and focus on experimental beers.

When it opens, the brewery will be unique among the Great Cincinnati brewing scene as it will specialize in “darker” styles of beer.

Bosler and Sanders added they have no plans to bottle, can or distribute their beer widely. They plan to start off with a 3.5bbl brew house and several 3.5 bbl fermenters.

Brewery news USA, WA: Reuben’s Brews opens second location in Ballard to increase production
Ballard-based Reuben’s Brews has expanded to a second location, which means more delicious, locally produced beer, Ballard News Tribune reported on May 18.

The new and larger brewery and taproom is located at 5010 14th Ave. NW, Seattle, and they opened the doors to the public on May 9.

“We’re really excited to show people the new brewery,” said Adam Robbings, co-founder and head brewer of Reuben’s Brews. “We are excited to brew more styles, add to our line-up with sours and lagers and expand our barrel-aging program.”

Reuben’s has come a long way since Robbings, wife Grace and brother-in-law Mike Pfeiffer opened in August of 2012. After opening within six months they maxed out their production capacity and started looking for a new location. They found it in a space that used to be a garage.

The new brewery is 4,000 square feet. With the space increase, the beer production has also expanded. The new brewery has a 15-barrel brewhouse and multiple 30-barrel fermenters.

Robbings said that the old space will operate as a pilot brewery and taproom for exploring new beers recipes and preparations.

Brewery news USA, NC: Lazy Hiker Brewing to open this week in Franklin
Franklin will get its first brewery this week with the opening of Lazy Hiker Brewing in an old fire and police station on Main Street, Asheville Citizen-Times reported on May 18.

Lazy Hiker opens on May 20 at 188 W. Main St., Franklin, with a grand opening June 13, said Ken Murphy, who is teamed with partners Lenny Jordan and Tommy Jenkins and brewer Noah McIntee.

With a 15-barrel system and two 30-barrel fermentation tanks, Lazy Hiker will sell beer both at the tasting room and throughout Western North Carolina, said Murphy. “We hope to begin self-distribution next month,” he said. “For now, it will be all draft brew,” he said.

While Lazy Hiker is the first brewery in Macon County, residents there have a wide range of tastes, said Murphy. “Some have never had a craft beer and others have visited all the area breweries,” he said.

Lazy Hiker will be the 42nd brewing company in the mountains, most of them in Asheville and Buncombe County.


Brewery news USA, IN: Sun King's Fishers brewery opening could be delayed to 2018
It might be 2018 before Sun King Brewing Co. opens its proposed 40,000-square-foot destination brewery in Fishers - a delay of two years from its original plan, Indianapolis Business Journal reported on May 18.

The Fishers City Council could vote on a resolution on May 18 that would extend by two years the economic-incentives deal the city reached with the Indianapolis-based brewery last year.

The original $2.5 million economic development deal, which was approved in August, required the project to start in 2015 and finish in 2016. The new arrangement would require the company to break ground in 2017 and complete the project by the end of 2018.

Under the agreement, Sun King would be required to make a capital investment of $10 million in equipment, machinery, technology, etc., by the end of 2022.

Plans for the expansion were initially put on hold during the Indiana General Assembly session this year as lawmakers debated increasing limits for microbrewery production.

Sun King and other brewers successfully lobbied for a bill that increased the maximum number of barrels of beer a small brewery can manufacture in a year for sale in Indiana from 30,000 to 90,000. One barrel is equal to two 15.5-gallon kegs.

Brewery news USA, WA: Central District’s Standard Brewing plans to expand
It’s been 24 months since the Central District nano brewery Standard Brewing opened its doors at 25th and Jackson St., Seattle, CHS Capitol Hill Seattle reported on May 18.

This week, the brew crew at Standard Brewing announced plans for an expansion that will increase their beer output. Co-owner Justin Gerardy said the most important aspect as they planned the expansion was remaining in the Central District. “In our case, space is the constraint, but so are our ideals,” the Standard announcement reads. “Not wanting to leave the neighbourhood leaves our options slim, but the choice to keep the brewery relatively small also affords us diversity and an experimental attitude.”

Gerardy said the expansion will play out over the summer with a project to overhaul the brewing facility coming first followed by Standard’s expansion into the neighbouring Halal Mart, Seattle.

Brewery news Vietnam: Brewing industry to spend a lot on stamps requested for brewery products by the government
Vietnam’s Ministry of Industry and Trade (MOIT) has requested brewery enterprises to stamp their products, a solution the ministry believes is important to avoid trade fraud, VietnamNet Bridge reported on May 19.

Breweries say they would have to spend VND700 more on every product made. They do not believe the stamp will help prevent trade fraud and increase state management capability.

According to the Vietnam Association of Beverage & Alcohol, there are over 100 alcohol and brewery manufacturers in Vietnam which run 200 beer production lines.

If they have to stamp their products before putting them for sale in the market, they would have to spend about VND3 trillion to buy stamping machines (VND15 billion for each). The will also have to pay for regular expenses to run the machines.

Enterprises will also have to spend money to buy stamps, VND200 for each, which means enterprises will have to spend VND2 trillion on stamps alone.

Regarding the management cost, the association estimates the figure could be up to VND1 trillion.

As such, if the stamping is required, enterprises will have to spend VND700 more for every product.

Brewery news Kenya: Reduction of taxes on sorghum, millet and cassava beer will give unfair advantage to EABL – Keroche Breweries
Keroche Breweries has welcomed Kenya government's reduction of taxes on beer made from sorghum, millet and cassava but added that it will give unfair advantage to EABL's products, AllAfrica reported on May 18.

In a statement issued on May 15, the company said the signing of the Alcoholic Drinks Control (Amendment) Act 2015 which removes excise duty levied at 90 per cent for beer made from sorghum, millet and cassava was a good move towards reducing cost of beer targeting the low-end market but added that its vodka products for this segment were left out.

"Keroche Breweries congratulates President Uhuru Kenyatta on signing of the Alcoholic Drinks Control (Amendment) Act 2015 as it reduces reduction of tax on beer made from sorghum, millet and cassava," said Keroche.

"The Act, as it stands now, presents a difficult challenge for Keroche Breweries as it removes a level playing field for alcoholic products targeting the lower market but are not made from sorghum, millet and cassava."

Brewery news India: All India Brewers Association wants beer to be sold like FMCG products through retail shops
Describing beer as 'fun, social drink', the All India Brewers Association (AIBA) wants state governments to allow the beverage to be sold like FMCG (Fast Moving Consumer Goods) products through retail shops, The Economic Times reported on May 19.

AIBA, an industry body of breweries operating in India, is also demanding a separate classification of beer from hard-drinks or spirits citing smaller alcohol content.

"We have already made representations to various state governments to increase the availability of beer. Beer is a fun, social drink and we would like beer to be sold through modern retail shops, like any other FMCG product," Shalabh Seth, Chairman of AIBA and Managing Director at SABMiller India said.

He further said: "While some states like Kerala and Maharashtra have relaxed norms for beer shops, we will soon begin round two of representations with more states."

AIBA Director General Shobhan Roy added that beer should not be treated "at par with spirits, which have much higher alcohol content (around 42 per cent), compared with beer, which has just 5-8 per cent alcohol."

India has around 10 leading beer manufacturers including Carlsberg, Budweiser, United Breweries, SABMiller, Bar Malt India, Alfa Laval, Praj Industries and Briggs of Burton, among others.

Brewery news Denmark: Carlsberg planning cost cuts at headquarters in Denmark
Carlsberg, the maker of Tuborg beer, plans cost cuts at its headquarters in Denmark as a drop in demand in Eastern Europe weighs on earnings.

The Danish brewer is starting an initiative including job cuts that targets “large” savings, Danish paper Jyllands-Posten reported on May 18, without saying how it obtained the information.

Spokesman Jim Daniell confirmed the company is reducing costs at its main office and informing staff this week about organizational changes.

“This is just the headquarters and there are some announcements being made to people today,” he said by phone, declining to give further detail.

Carlsberg has been struggling with political instability and economic turmoil in Russia, where it is the biggest brewer. The brewer last week reported that the operating loss from its eastern European business widened in the first quarter, though total profit for the quarter beat estimates due to a better-than-anticipated performance in Western Europe. The company said in January it would close two of 10 breweries in Russia.
