How to assess hop aroma ?


ABSTRACT
With the increased scientific interest in hop aroma, different sensory approaches for the evaluation have been published. This talk gave an overview of the history of aroma categorization and presented a class of 12 descriptors established specifically to assess hop varieties and hoppy beers in comparison to other tasting schemes currently available. Examples of hop varieties were given to show how this tasting form is able to characterize the uniqueness of hop varieties. Also the differences of a trained and an untrained taste panels were pointed out.

Brewery news USA, OK: Anheuser-Busch withdraws from Beer Distributors of Oklahoma due to new beer law
The fight over Oklahoma’s beer laws has caused Anheuser-Busch, maker of some of the most popular beers in the United States, to withdraw its membership from Beer Distributors of Oklahoma, an advocacy group for beer distributors in the state, Tulsa World reported on July 8.

The Beer Distributors of Oklahoma countered by accusing Anheuser-Busch of laying off employees at the Premium Beers of Oklahoma distributorship in Oklahoma City after purchasing it from the Cresap family three years ago.

In a news release issued by Anheuser-Busch, the company said “our definition of and path toward modernization does not align with the Beer Distributors of Oklahoma.”

Eric James, senior director for sales and marketing for Anheuser-Busch of Oklahoma, did not specify the nature of the company’s dispute with the distributors group. Instead, he specified what the company would like to see happen in Oklahoma.

“Anheuser-Busch would like to see cold, single-strength beer available to consumers in Oklahoma,” James said.

Currently, Oklahoma law dictates beer sold outside of liquor stores must be no stronger than 3.2 percent alcohol by weight. Beer sold in liquor stores can be stronger, but cannot be refrigerated.

Oklahoma is one of only five states that require the sale of 3.2 beer in certain circumstances.

Brewery news USA, MN: F-Town Brewing Company launched in Faribault
F-Town Brewing Company, a craft brewery in downtown Faribault, opened the doors to its taproom and released its beer in retail on July 8, Southernminn.com reported the same day.

For F-Town Brewing Company’s owners Travis Temke, Noah Strouth and Chris Voegele, it has been a long time coming.

Strouth and Voegele made beer together in the past and tossed around the idea of opening a brewery, but the idea didn’t fully ferment until Temke came into the mix.

“All three of us complement each other in the fact that we all have different talents,” Temke said.

Temke came into brewing with expertise in business and financing. His experience helped them find and acquire funds for the business. Strouth and Voegele brought the expertise of brewing and building the retail space.

In 2014, the brewery received a total of $500,000 in loans from the Southern Minnesota Initiative Foundation, the Faribault Economic Development Authority, the 1st United Bank of Faribault, Rice County Economic Development Authority and Faribault Industrial Corporation to get the business started.

The brewery is located at the old Peterson Art Warehouse Building at 22 Fourth St. NE in downtown Faribault.

Brewery news USA, MI: Lake Ann Brewing Co. opens in Traverse City on June 15
Lake Ann Brewing Co. launched into its first day in business with just two hours' notice, Traverse City Record Eagle reported on July 8.

Matt Therrien received his license to operate the brewery on June 15 at 4 p.m. The doors were open by 6.

"Talk about a stressful day," Therrien said. "It was like a construction site in the morning and we opened that night."

Therrien said the beer has garnered good response so far, and steady but manageable crowds have kept the business busy.

"It's kind of a good old hometown place," Therrien said. "We had regulars from the get go."


Brewery news USA, NY: Three Heads Brewing to construct $4 million facility
On one of his first visits to the future location of his brewery, Three Heads Brewing co-founder Geoff Dale could be seen in front of the just-started foundation that runs parallel to Atlantic Avenue in Rochester's Neighbourhood of the Arts in Honeoye Falls, Rochester Democrat and Chronicle reported on July 8.

For the past four-plus years, Three Heads Brewing has contract brewed its beer at Honeoye Falls' CB Craft Brewers. Three Heads Brewing comes up with the recipes, while Craft Brewers produces and packages the beer.

Partnering with FSI General Contractors, Three Heads Brewing is building its own brewery.

According to Three Heads Brewing’s co-founder Dan Nothnagle, the 19,500-square facility will cost around $4 million. FSI General Contractors is building the brewery and Three Heads Brewing will then lease back the space.

But before the new brewery opens, the men behind Three Heads Brewing have already established a loyal and thirsty local base of customers. Through the power of social media and good-old-fashioned pounding the pavement, Three Heads Brewing has built a recognizable brand.

Brewery news USA, TN: Mill Creek Brewing Co. to open in Nolensville by the end of October
Williamson County is getting another craft brewery this fall, Nashville Business Journal reported on July 7.

Mill Creek Brewing Co., which launched from a Kickstarter campaign last year, is aiming to open its production facility and taproom by late October, assuming the brewery’s build out stays on track and the company’s brewing equipment arrives on time from Slovenia.

The brewery, co-founded by Chris Going (CEO) and Michael Krewson, is slated for a 27,000-square-foot warehouse located at 2008 Johnson Industrial Blvd, Nolensville. The building is located about one-fourth of a mile from Mill Creek, which explains the brewery’s name, and includes about 5,000 square feet for a taproom.

In the interim, Going and Krewson have enlisted another brewery (which Going declined to disclose) to contract brew limited quantities of Mill Creek Brewing beer to introduce the name to the local market.

When Mill Creek Brewing opens in the fall, Going plans to run a 30-barrel system with four 60-barrel fermenters.

Brewery news USA, TX: Saint Arnold Brewing Co.’s CEO sets up a brewery expansion strategy
Brock Wagner, founder and CEO of Saint Arnold Brewing Co., sits in his office at the brewery's north Houston warehouse with a Lego set in front of him, Houston Business Journal reported on July 7.

On it are an array of blocks and buildings that represent Wagner's grand vision for what he has named "Saint Arnoldville."

The vision has several different elements. A key component is an expanded brewery, which will include an increase in cold storage space and more fermenters to make more beer. Then there are the beer garden and restaurant concepts.

"This expansion of Saint Arnoldville is the biggest part of my focus over the next five years," Wagner said.

“Some of the plans are expected to be submitted to the city by the end of the year,” Wagner said. They, however, weren't revealed. Architects, contractors and other partners to the build-outs weren't disclosed, either.

The final plans on how the Lego bricks will be arranged are still being decided. Primarily, the final layout depends on the land Saint Arnold Brewing Co. currently owns or plans to acquire down the road.

Brewery news USA, DE: Twin Lakes Brewery to relocate from Greenville by August
Twin Lakes Brewing Co. is moving from its Greenville home to a new, yet-unnamed Delaware location, according to Jack Wick, a company founder, The News Journal reported on July 8.

The tasting room and tours at 4210 Kennett Pike, Greenville brewery have been closed to the public since June. In a Facebook post on July 7 to the First State Brewers' group, former head brewer Rob Pfeiffer said he and another brewer left the operation "a couple of weeks ago."

Wick said the brewery is moving because its lease was up in 2013. He said several Delaware locations were considered and a lease has been signed.

An announcement about the new site is pending, Adam Doherty, the company's CEO, said in an email.

Wick said he hopes to reopen by August.

On July 7, John H. Cordrey, Delaware's Alcoholic Beverage Control Commissioner, said Twin Lakes Brewery has contacted his office about moving the brewery, but has not yet filed the required $1,000 application paperwork.

He said the process takes at least 30 days. Cordrey said notice must be given to property owners anywhere from 200 to 1,000 feet of the new location.

Brewery news Canada, NB: Flying Boats Brewing opens in Shediac
A new nano-brewery that pays tribute to the historic transportation of the area is now open in Shediac, New Brunswick, Canadian Beer News reported on July 6.

Flying Boats Brewing is named after the large seaplanes that stopped over in nearby Pointe-du-Chęne during trans-Atlantic flights in the 1930s and 40s.


Brewery news Canada, ON: Cartwright Springs Brewery opens on July 8
After two months of having beer available exclusively on draught at several bars and pubs in the area, Cartwright Springs Brewery has received the government approvals necessary to start retail sales in Pakenham, Ontario, Canadian Beer News reported on July 8.

As noted in a post on Facebook on July 8, the retail store opened the same day for growler sales.

Brewery news Vietnam: Well-off Vietnamese choose foreign beer instead of local products
With improved incomes in recent years, more Vietnamese are drinking foreign canned beer instead of draft beer. But Vietnamese breweries are not making high-end beer, VietNamNet Bridge reported on July 9.

Analysts have noted big changes in beer consumption in Vietnam with a slight decrease in draft beer output, a high increase in bottled beer and sharp growth in canned beer.

A report from the Vietnam Alcohol, Beer and Beverage Association showed that high-end beer products now account for 7 percent of Vietnam’s market.

The market segment is dominated by foreign breweries such as Heineken, Tiger, and Sapporo.

Heineken has a production capacity of 140 million litres a year, and Sapporo has raised its capacity from 40 million to 100 million.

Meanwhile, AB InBev has opened a brewery that makes Budweiser beer with the capacity of 100 million litres a year in Binh Duong province.

According to Hirofumi Kishi, general director of Sapporo Vietnam, market surveys all show that the Vietnamese middle class will increase by 2-3 times in the next 10 years, which means that the demand for high-end beer products will increase sharply.

Brewery news Portugal: Carlsberg launches 6% ABV Carlsberg Nox
Danish beer giant Carlsberg has launched Carlsberg Nox, a new beer with 6% alcohol content based on a specific variety of hops, known as Polaris, in Portugal, ESM reported on July 9.

A black 0,25 cl bottle has been chosen to further differentiate the drink, a first for the brewing industry, according to Carlsberg.

The beer will be available at special events in Portugal sponsored by Carlsberg, such as Where’s The Party (in Portimăo) and the Super Bock Super Rock festival.


Brewery news Kenya: Operations at Keroche Breweries paralysed as group of youths attempts to raid it
Operations at Keroche Breweries were paralysed the whole of July 8 as the management thwarted an attempt to raid it, The Standard Digital News reported.

There was chaos as a group of youths eager to destroy the company’s products were kept at bay by anti-riot police officers at the main gate.

But senior officers led by Rift Valley regional commissioner Osman Warfa and Naivasha MP John Kihagi were allowed into the factory.

At one time Kenya Bureau of Standards (KEBS) officers disabled the production and locked the warehouse to the management’s anger. The company’s CEO Tabitha Karanja ordered all the officers and the MP to leave.

Addressing the Press, the CEO accused the MP of waging a political war on the company. Ms Karanja resisted attempts to ferry the products to the police station, saying she had paid taxes and adhered to all the rules.

“The MP should pay us the taxes that we have paid and then take the liquor to his hired goons for destruction as he wants,” she said while questioning the MP’s move to stop the production of Summit beer which was “not in the list of suspended drinks”.
