Let the yeast control the hop flavour

ABSTRACT
When we think of yeast and hop aroma, we first think about the biotransformation reactions that take place, where the contribution to flavor is still debatable. Yeast can also be seen as a biosorbant for selective adsorption of hop aroma components. In this context non-viable brewing yeast was used successfully by these Japanese researchers. This application could be used to add hop flavours into alcohol free beers or for identifying hop aroma compounds in beer.

Brewery news USA: US senators to hold hearing on AB InBev-SABMiller deal
The U.S. Senate Judiciary Committee's antitrust subcommittee will hold a hearing to discuss Anheuser-Busch Inbev SA's plans to buy rival SABMiller PLC, two senators said on October 20.

The world's biggest brewer, Anheuser-Busch InBev, and SABMiller, the world's No. 2, said in mid-October that they had agreed on terms for a deal that is expected to top $100 billion (65 billion pounds).

Senator Mike Lee, a Utah Republican and chairman of the Senate's antitrust panel, announced the hearing along with the top Democrat, Senator Amy Klobuchar of Minnesota, Reuters reported.

No date or other details of the hearing were given.


Brewery news USA: Craft Brew Alliance outlines its 2016 regional strategy
In an effort to keep up with the growing consumer desire for local craft brands, executives from Craft Brew Alliance stressed the importance of their 2016 regional strategy during the company’s annual national CBA-Con meeting with Anheuser-Busch InBev wholesalers, held on October 14 in Las Vegas, Brewbound.com reported.

That strategy includes an increased emphasis on strengthening sales of core brands in home markets and a focus on investing in new craft breweries via the company’s emerging business division, which has already inked partnerships with North Carolina’s Appalachian Mountain Brewery and Nantucket-based Cisco Brewers.

To grow sales of both existing core brands and to accelerate sales of partner brands like AMB and Cisco, CBA will refocus its efforts on a deliberate “home market strategy,” Brady Walen, the company’s director of brand marketing, said.

“This is about ensuring that we have really strong brands in our home markets where they are most locally relevant and where it matters most from a brand health and profitability standpoint,” he said.

The company believes that by concentrating sales and marketing efforts for Widmer and Redhook in the Pacific Northwest, for instance, it can achieve higher profit margins and greater local relevance “where it matters most.”

Brewery news USA, WA: Seattle’s Pike Brewing Co. expands to brew more beer and add more capacity to its pub
Pike Brewing Co. says it will expand the space it occupies on downtown Seattle’s First Avenue by 25 percent so it can brew more beer, get more street visibility, and add more capacity to its pub, The Seattle Times reported on October 16.

The 5,500-square-foot expansion will enable beer production, currently at 12,500 barrels of beer a year, to increase by one quarter, said the brewery’s vice president of operations, Drew Gillespie.

The new space will replace a high atrium that currently looks out onto First Avenue and will house the restaurant, which is currently below ground level and lacks a street presence.

“That is a huge advantage. Many people don’t know where we are,” Gillespie said.

The brewery, founded in 1989 by Charles and Rose Ann Finkel, also announced it was expanding its roster of partners to add three long time employees: Gillespie, vice president controller Patti Baker and executive chef Gary Marx.

Adding the new partners responds to the founders’ desire for Pike Brewing to remain an independent company. “They realize it takes generations to make that happen,” Gillespie said.

The move comes after Elysian Brewing, another popular local brewery, was bought in January by giant Anheuser-Busch.

Brewery news USA, CA: Ballast Point Brewing decides to go public
At a time when many craft brewers are opting to sell their businesses, California’s Ballast Point Brewing & Spirits has an unconventional plan for the brewer’s future: it’s going public, Fortune reported on October 19.

The San Diego-based craft brewery, the nation’s 31st largest craft brewer, has officially filed plans to go public with the Securities and Exchange Commission. The brewer would be one of the few publicly traded craft beer companies, joining a small club with Sam Adams maker Boston Beer and Redhook and Kona brewer Craft Brew Alliance. There were also reports over the summer that SweetWater could go public, but that deal hasn’t occurred yet.

The craft beer space is a hot sub-segment of the $101.5 billion U.S. beer industry. Though volume for the total beer industry has been generally flat, the craft beer segment’s market share has jumped from 5% in 2010 to 11% last year. The hot growth has led some craft brewers to sell their businesses to larger rivals or private equity firms that see great potential in the smaller brewer’s growth prospects. Brewery news USA, MO & AZ & KY: Boulevard Brewing Company expanding sales to two more states
Boulevard Brewing Company, the popular Kansas City, Missouri brewer, is expanding its territory to two more states and increasing its presence in some states it's already in, KMBC Kansas City reported on October 19.

Boulevard Brewing Company announced that it will begin distributing its beers in Arizona and Kentucky in January 2016.

"With the addition of six new 1,000-barrel fermentation tanks, plans to expand our distribution territory can become a reality," said Bobby Dykstra, Vice President of sales for Duvel Moortgat USA, the owner of Boulevard Brewing Company. "There has been a strong and persistent demand for Boulevard beers in Arizona for quite some time and Kentucky is seeing an explosion of craft beer excitement. We're thrilled to bring the taste of the Midwest to these states."

In addition to adding Arizona and Kentucky to its territory, Boulevard will also begin selling beers in Michigan, Connecticut, Rhode Island and parts of upstate New York in early 2016.


Brewery news USA, CO: Verboten Brewing moves to larger location in Loveland
Loveland’s Verboten Brewing has closed its original, industrial district brewhouse and taproom and is moving to a larger downtown space, Coloradoan reported on October 19.

The new Verboten brewery will open at 125 E. 5th St. in Loveland in mid-January, said owner Josh Grenz. It will be almost three times the size of the brewery’s former space, which was located across from Dancing Pines Distillery on Taurus Court.

Grenz said he is looking forward to a central Loveland location and more room for growing his nearly 3-year-old business. The new brewery will fit around 65 people in its taproom and allow for an expanded brewing operation and bottling line in the back.

Verboten currently distributes kegs and bottles only around Northern Colorado and as far south as Denver.

Even with brewing halted, though, Grenz said that bars and stores carrying beers such as Thinking of Something Orange, Killer Boots and Angry Banjo shouldn’t run dry before the new brewery’s opening.

“We brewed enough to pretty much bridge the gap,” he said. “But it’s getting pretty tight at this point.”

To keep the beer flowing, Grenz and his team will contract brew at Snowbank Brewing in Fort Collins.

Brewery news USA, OR: Public Coast Brewing Company set to open next spring in Cannon Beach
The Lumberyard Rotisserie and Grill, 264 E. Third St., Cannon Beach, Oregon, closed earlier this month so construction could begin on a new brewery, according to a press release.

Public Coast Brewing Company, set to open next spring, will produce seven house beers from a 10-barrel brewing system, according to the release. Portland Brewing Company co-founder Fred Bowman is collaborating on the project.

The Lumberyard was purchased in 2004 by Ryan and Stephanie Snyder of Martin Hospitality, which also operates Cannon Beach's Stephanie Inn, Surfsand Resort and The Wayfarer Restaurant.

"We're excited to move forward with a project that's been a lifelong dream for me," Ryan Snyder said in the release. "We look forward to offering a unique new venue on the North Coast, and leaving our mark on Oregon's respected beer culture."

According to the Oregon Brewer's Guild, Public Coast will be the 23rd Oregon Coast brewery and third in Cannon Beach, after Bill's Tavern & Brewhouse and Warren House Pub.

The brewery's name was inspired by the Oregon Beach Bill, the 1967 legislation that ensured the Oregon Coast would remain open to the public.


Brewery news USA, IN: Switchyard Brewing to launch in Bloomington next year
In 2016 Bloomington will be home to a new $4 million brewpub, Indiana Daily Student reports.

In an Oct. 21 press release, Switchyard Brewing Company announced they had selected the former RCA/Thompson site, located at 1320 S. Rogers St., as the destination brewpub’s location. The 1.3 acre area will house the 10,500 square foot facility, an onsite parking lot and a large outdoor patio.

Switchyard is an independent Bloomington-based brewpub. It was founded by two Indiana natives in 2014.

“Like many American start-up companies, our dream began several years ago on the workbench of a two-car garage,” Switchyard Brewing co-founder Kurtis Cummings said in the release. “After two years of developing our business plan, walking through potential sites and perfecting our craft, we are incredibly excited to build near the future Switchyard Park.”

Switchyard Park is the 58-acre stretch of land the City of Bloomington plans to turn into a park.

The release claimed the future brewpub will provide a different experience. Customers will be able to see the 15 barrel brewhouse and fermentation cellar as well as special-event spaces and performances on the indoor stage.

The facility is being designed by local architect Ryan Strauser. It will be inspired by the founders’ traveling experiences.

Brewery news USA, VA: Back Bay Brewing in Virginia Beach to invest nearly $2 mln in new manufacturing facility
Back Bay Brewing Co plans to invest nearly $2 million to open a manufacturing facility to increase production for the company at 1140 Loretta Lane in Virginia Beach, according to a city news release.

The company had been manufacturing its beer distribution in Hampton while running a tasting room with a small-batch facility at 614 Norfolk Ave.

Josh Canada, Charlie Burroughs, George Powell and Will Yearick established Back Bay Brewing in 2011. The brewery, with beers like the Witch of Pungo and Atlantic Avenue IPA, distributes to 250 stores and restaurants.

“We felt the time was right to make this investment after the demand for our products is well established in the marketplace,” Canada said in a news release.

Virginia Beach Development Authority awarded Back Bay an $80,000 grant for the project. The company also use locally grown hops in its brewing process and its new production facility will be closer to the Virginia Beach agricultural center.

The company also plans to open Wolf Street Brewing Co. in Harrisonburg this month, according to the news release.


Brewery news USA, MN: Bad Habit Brewing Co. getting ready for Halloween launch in St. Joseph
Bad Habit Brewing Co. in St. Joseph finally has an official opening date, St. Cloud Times reported on October 20.

The brewery at Suite 108 at 15 Minnesota St. E will open its doors to the public at 2 p.m. Oct. 31.

Bad Habit is also hosting an exclusive preview of the taproom the day before on Oct. 30.

“My head is spinning right now,” joked founder Aaron Rieland, who worked for about two years to secure a brewery location. “I’m obviously nervous but also very excited.”

Rieland said he’s already kegged two of the beers.

Bad Habit brews on a five-barrel system and is scheduled to launch with a chocolate milk stout, India pale ale, Saison, cream ale and non-alcoholic root beer on tap. Each evolved from Rieland homebrew recipes.

Normally, the brewery will be open Fridays and Saturdays. Rieland said they will explore adding Thursday hours in the near future.

“I can finally see the light at the end of the tunnel,” Rieland said. “All that’s left are a few odds and ends.”


Brewery news USA, TX: Holler Brewing LLC raises necessary funds to build a brewery in Houston
Holler Brewing LLC, a new brewery scheduled to open in Houston’s historic First Ward neighborhood, has raised $250,000, according to a filing with the Securities and Exchange Commission.

The money will be used to help the fledgling brewery get through the buildout of its space in the Silos on Sawyer development, which could be Houston's premier arts district once completed.

An opening date for the new brewery hasn't been set yet, but this money should help Holler bring the project to fruition, co-founders John and Kathryn Holler told the HBJ.

"We looked at how much money we had, and we needed $250,000 to balance it out," John Holler said.

The money will go to help purchasing equipment and eventual construction costs, Holler said.

The cash was raised from a group of 19 investors in Holler Brewing's private network, John Holler said.

"(Raising the money) was fine. People are really excited about it," Holler said. "There's a lot of excitement about craft beer right now."

He's right. Houston's seen several breweries pop up over the past couple of months, including BackPew Brewing near George Bush Intercontinental Airport, Town In City Brewing Co. in the Heights and Spindletap Brewing, which is expected to open its north Houston brewery Nov. 7.


Brewery news USA, NH: Hooksett’s White Birch Brewing growing again
Founded in 2009 as one of New Hampshire’s first nano breweries, White Birch Brewing is growing again. In October 2015, White Birch Brewing has ordered five more 60 barrel tanks, a doubling of its canning line speed to 60 cans per minute, and more supporting equipment from American Beer Equipment, Brewbound.com reported.

Founder Bill Herlicka said:

“When we added a canning line from American Beer Equipment it allowed us to take our customers favorite beers and put them into a convenient six pack format. The response to our canned product has been beyond our wildest expectations. The products we’ve bought from American Beer Equipment have allowed us to reach new markets, increase our volumes and our quality.”

CEO David Herlicka commented:

“Our distribution partners have done an amazing job of taking our canned Hop Session and Berliner beers out to the marketplace. Our customers love our six pack product lines and want more. It’s exciting to be part of White Birch Brewing grow from production of 500 barrels in 2014, to 7000 in 2015 and 20,000 in 2016.”

Brewery news USA, CT & ME: Two Roads Brewing starts distribution of its brands in Maine
Stratford, CT-based Two Roads Brewing Company announced that the brand will be rolling into the state of Maine and they are pleased to be teaming up with Nappi Distributors and Pine State Traders. Brewery news Japan: Government may decide to overhaul beer tax system in fiscal 2017 - sources
Japan’s government and ruling camp are likely to forgo a beer tax overhaul under annual tax system reforms for fiscal 2016, which starts in April, informed sources were quoted as saying by The Japan News on October 21.

This is partly because discussions on introducing a reduced tax rate to cushion the impact of the consumption tax increase from 8 percent to 10 percent in April 2017 are expected to take a long time.

Another reason is that the government and ruling bloc hope to avoid the public feeling a heavier tax burden from the beer tax change ahead of the House of Councillors election in summer next year, the sources said.

Currently, a tax of ¥77 per 350 millilitres is imposed on beer, ¥47 on “happoshu” low-malt quasi-beer and ¥28 on so-called third-segment quasi-beer drinks with little or no malt content.

In its fiscal 2015 tax reform package, the ruling camp said that the differences in taxes affect the product development and sales volumes of beer and lead to lower tax revenue.

Against this background, the government has been considering narrowing the tax differences gradually and introducing a unified tax of about ¥55.

Brewery news Vietnam: Alcohol and beer consumption increasing every year
While alcohol consumption in other countries has barely changed in the past decade, the number of people consuming alcohol and beer is increasing every year in Viet Nam, Viet Nam News reported on October 20.

According to Pham Thi Hoang Anh, director of non-governmental organisation HealthBridge, Viet Nam consumes over 3 billion litres of beer and nearly 68 million litres of alcohol each year, costing US$3 billion a year.

In 2005, the average consumption of alcohol per capita of Vietnamese adults was at 3.8 litres per person, but this figure doubled to 6.6 litres per person in the following year.

A recent survey shows 57.72 per cent of Vietnamese households often use alcohol while rich families and highly educated people have shown a quantum leap in their consumption.

The survey also showed that alcohol and beer are on their regular daily food list, and not just on holidays.


Brewery news EU: Study finds out the highest prices for pint of beer are paid in Sweden, Denmark, and France
The average cost of a pint of beer in the UK is GBP 3.46 (some EUR 4.7), more than three times higher than in Romania, where the same pint costs GBP 1 (EUR 1.36).

The Czech Republic, which is famous for its high beer output and consumption, has the lowest beer price out of 13 European countries, only GBP 0.72 (EUR 1), according to an infographic made by British real estate consultancy firm Citybase Apartments.

Romania has the second lowest price for the beer pint. Beer is also cheap in Belgium (GBP 1.27), Lithuania (GBP 1.30), the Netherlands (GBP 1.69), and Spain (GBP 1.74).

On the other hand, the highest prices for the pint of beer are in Sweden (GBP 5), Denmark (GBP 4.7), and France (GBP 4.66), the same analysis shows.


Barley news Ireland: Irish distilleries want more local malting barley
The surge in whiskey sales may not be having an impact on grain prices but it is delivering increased demand for malting barley, The Irish Independent reported on October 21.

Irish whiskey exports are worth €300 mln a year but Irish Farmers' Association (IFA) grain committee chairman, Liam Dunne, says not all Irish whiskey under production is being made with Irish grain.

"We would like to see that Irish produced whiskey has the maximum amount of native grains in it instead of importing other grains such as maize.

"The guys (distillers) themselves have to make up their own minds about what they want to put into it. That's what decides what the whiskey is going to be like afterwards and we're not in a position to interfere in telling them what should be in their mash.

"We would like to think that if they want to put Irish on the bottle, and it is a growing brand, they should have it as Irish as possible," he said.

Mr Dunne added that Ireland is capable of growing plenty more barley to match the excelling industry.

"Our capacity to grow malting barley is not limited - we can grow a lot more of it," said Mr Dunne.

Brewery news South Africa: South African unions want to block takeover of SABMiller by AB InBev
Powerful unions in South Africa have called on competition regulators to block the £68 billion takeover of SABMiller by Anheuser-Busch InBev, This Is Money reported on October 20.

London-listed SAB is Africa’s biggest brewer with a heritage dating back 120 years. But workers’ groups in South Africa fear the deal will trigger job cuts.

Budweiser owner InBev has a track record of growing by debt-fuelled acquisitions and repaying loans through fierce cost-cutting.

South Africa’s Food and Allied Workers Union (FAWU) said it would oppose the merger as did the Congress of South African Trade Unions (Cosatu).

It said the government, regulators and pension funds should not agree to the takeover, which would create the world’s largest brewer, bringing together a host of lagers including Stella Artois, Peroni and Budweiser.

The deal would also trigger a huge payday for SAB chief executive Alan Clark, who stands to walk away with £70 million from the shares and options he holds.

It is possible that the government could block the deal if it looks like jobs may be affected, or the amount of taxes collected reduced.

Brewery news Cyprus: Beer sales up 3.05% in January-September this year
Beer sales in Cyprus recorded a 3.05% increase on an annual basis between January and September this year, reaching 28.28 million litres, compared to 27.44 million litres during the same period in 2014. At the same time beer exports were up by 23.3%, FG News reported on October 19.

Data released by the Cyprus Statistical Service on beer deliveries for local consumption shows that deliveries were up in the warmest months of the year, with July in the lead with 4.7 million litres and August following with 4.42 million.

Consumption equals on average 39 litres per person if one takes into consideration the 2011 census of 705,111 of people in the age group of 15 to 64.


Brewery news Australia: Coopers Brewery not really interested in expanding imported beers portfolio
The managing director of Australia's third-largest beer company, Coopers Brewery, says there might not be room for any extra imported beer brands in his portfolio if any were to spring free in Australia from the proposed global A$146 billion merger of Anheuser-Busch InBev and SABMiller, The Sydney Morning Herald reported on October 20.

Tim Cooper says Coopers has been able to deliver solid growth from the Carlsberg brand and Kronenbourg 1664, which it took over from Foster's Group in 2012 under a licensing deal following the A$12.3 billion takeover of Foster's by SABMiller.

"It's been growing every year," Dr Cooper said of the Carlsberg brand, which is the flagship imported brand.

Coopers also has the Japanese brand Sapporo in its international portfolio.

"They both keep us pretty busy," he said.

Foster's surrendered the licences to Carlsberg, Corona and Stella Artois in the space of a few months after the takeover by SABMiller under change of control clauses. Brewery news South Korea: Shortage of recycled glass bottles forces brewers to cut production
A shortage of recycled glass bottles has hit South Korea’s Hite-Jinro, Oriental Brewery (OB) and other alcohol companies, forcing them to cut production ahead of the year-end party season, according to industry officials quoted by Korea Times on October 21.

The officials blame the government for its plan to hike bottle deposits in January, which they say has encouraged consumers and retailers to hoard empty glass bottles to receive higher deposits from alcohol companies next year.

Makers of soju, beer and other alcoholic beverages are expected to further slash production in November and December, because of the worsening bottle shortage, when alcohol demand is at its peak.

According to the Korea Alcohol & Liquor Industry Association (KALIA), the average recovery rate of glass bottles at liquor companies stood at 78.9 percent in September, down sharply from 96.8 percent a year earlier.

The association projects that the recycling rate will further decline in the fourth quarter, saying more consumers, junk shops and retailers will hold onto empty bottles until January to get higher deposits from brewers and distillers.
