Should we try to dry hops in a more gentle way?
ABSTRACT
US researchers tried this. They took fresh
Cascade hops dried traditionally in a kiln and
compared them to hops dried in a freeze drier.
The analyses showed that the freeze dried hops
were higher in myrcene, while all other
important hop aroma components were higher
in the kilned dried hops. However the
differences were relatively small. Nevertheless
when applied in dry hopping the tasters were
able to significantly detect the differences
between the beers. The flavor and aroma in the
beer with freeze dried hops were much more
herbal and grassy, while the beer with the kiln
dried hops had a more fruitiness expressed.

Japan: Suntory loses patent dispute with rival Asahi Breweries
|
Suntory Holdings Ltd. lost a patent dispute with rival Asahi Breweries Ltd. on October 29, with the Tokyo District Court rejecting its demand for a halt to production and sales of Asahi’s nonalcoholic beer, The Japan Times reported.
Suntory had sought the suspension of Asahi’s Dry Zero, which was relaunched in September 2013, alleging that it infringed a Suntory patent application filed in November 2012 and approved in October 2013.
“The Suntory patent represents a technology that can be easily invented based on other products and should be considered invalid,” presiding Judge Koji Hasegawa said, endorsing Asahi’s argument.
Suntory’s All-Free and Asahi’s Dry Zero are competing for the top share in the expanding nonalcoholic beer market.
Suntory filed the suit against Asahi in January after they failed to resolve the dispute through talks.

USA: Boston Beer Company reports Q3 results
|
Boston Beer Company, United States’ leading craft beer producer, on October 29 reported third quarter depletions growth of six percent and net revenues of $293.1 million, a nine percent increase over the same period last year.
During an earnings call, the company credited the success of its Traveler Beer, Coney Island Root Beer and Twisted Tea brands — which offset declines from its flagship Samuel Adams brand — as the primary growth drivers in the quarter.
In a press statement, founder and chairman Jim Koch said that, despite depletion growth of 6 percent matching the company’s year-to-date trends, the “slowing” was a result of increased competition in the craft category and softer cider category sales, which continue to hamper Boston Beer’s Samuel Adams and Angry Orchard lines.
“While our total growth is testament to our strategy of a diversified brand portfolio, our Samuel Adams trends appear to represent a very competitive category, where drinkers are seeing greatly increased choices and established brands are being impacted,” he said. “We believe that quality, freshness, innovation and variety will be the basic requirements for success in this environment.”

Argentina: Argentina’s wheat harvest to decline as farmers switch to unregulated crops such as barley
|
Argentina’s next wheat harvest may be the smallest in three years, according to the Buenos Aires Grain Exchange, a decline that may spur Brazilian flour mills need to import the grain from other countries, Bloomberg reported on October 30.
Argentine farmers will produce 9.5 million metric tons of wheat in the 2015-2016 season, down 16 percent from a year earlier, the exchange said on October 29 in its first wheat forecast.
Farmers are switching to unregulated crops such as barley because the government charges wheat export taxes of 23 percent and restricts shipments to other countries. Wheat exports are permitted after 6 million tons are produced for domestic consumption. There are no export taxes on barley.
“We have had more barley than expected this winter,” said Diego Ubici, an agriculture engineer from Agropulso, a seed and fertilizer reseller in America City, in Buenos Aires province. “Farmers were not selling waiting for a new government.”

India: Diageo’s United Spirits to cut down around 150 of its brands and focus on better performing products
|
Diageo’s Indian unit United Spirits is planning to cut down around 150 of its brands to focus on better performing brands and strengthen its business in a market that is seemingly dominated by local, cheaper brands, Drinks Business Review reported on October 30.
The British drinks company intends to place its focus on promotion and marketing of its top 15 brands, while consolidating or downplaying other brands.
India is lately being seen as an emerging market for global drinks makers as business in the developed part of the world is seen becoming sluggish. The country is now considered to be Diageo's second-largest market in terms of sales, reported The Financial Express.
Diageo chief executive of UK unit Anand Kripalu was quoted by the publication as saying: "We are focussing on select brands, which we believe are the critical ones, big drivers of growth." He said that the top brands would receive special importance with strategic investments.
Anand Kripalu said that over the next few years Diageo expects growth in the top-end spirits business outdoing the mass market with the young professional class demanding better quality of liquor.
