Less skunky with more hops
ABSTRACT
Sunstruck flavor is a widely known off-flavor in beer
often described as skunky. It occurs when beer is
exposed to sunlight during storage owing to
photodecomposition of isohumulonein the presence
of riboflavin. Polyphenols are known to be off-flavor inhibitors. Since hops are rich
in polyphenols the aim of this study was to specify a
suitable hop product and the process parameters to
reduce the sunstruck flavor perception in beer.
Because of the high total and single polyphenol
content the tannin extract was selected for further
trials. After exposure to light, the tasting results
concluded that the higher the tannin extract level the
lower the sunstruck perception.

South Korea: Beer imports climb to new annual high in just 10 months this year
|
South Korea's beer imports have climbed to a new annual high in just the first 10 months of the year, data showed on November 22, due to what market observers here called growing consumer exposure to foreign delicacies amid a continued surge in the number of people going abroad, Yonhap news reported.
In the January-October period, the country imported some $118 million worth of beer, already surpassing the annual total of 2014, when beer imports surged to a record high of $112 million, according to the data from the Korea International Trade Association.
The 10-month tally also marks a 26.9 percent spike from the same period last year.
The country's beer imports have been growing steadily since 2010, posting an annual growth of between 17.7 percent and 33.6 percent.
"A growing number of people are looking for the same beer they have tasted while traveling abroad, which has also apparently led a rise in the number of brands imported," said an official from a beer importer.

The Czech Republic: Survey shows both men and women drink more beer per week this year
|
Czech men have raised beer consumption by a quarter of a litre to 8.3 half-a-litre beers a week this year, according to a survey that centre CVVM made in September among 953 people aged over 18 who drink beer at least sometimes, Jiří Vinopal of CVVM said at a press meeting on November 24.
Czech women drink 2.5 beers a week on average this year, 0.1 litre more than in 2014.
According to data from the Czech Association of Breweries and Malt Houses (ČSPS), beer production in the Czech Republic dropped by 2 percent in the first eight months of this year.
Beer in the Czech Republic is regularly consumed by 91 percent of men and 56 percent of women. The survey has been conducted in the Czech Republic for 12 years.
“In the long term, the declared beer consumption stagnates or falls moderately by men and grows by women,” Vinopal added.
Women drink beer on average twice a week and men every second day.

Croatia: New craft brewery to open in Osijek in December
|
Croatia's craft beer revolution continues, now expanding in Slavonia, Total Croatia News reported on November 25.
In early December, the first craft brewery in Osijek, Black Hat, will start its production at the premises of the Bios business incubator in Osijek. The project has been launched by Igor Ilić, a graduate of electrical engineering, and Danijel Božurić, an owner of a private company, reports Glas Slavonije.
These beer lovers say that the idea for launching a craft brewery occurred a year ago when they decided to turn their hobby into a business. One of the reasons was the fact that in recent years in Croatia there has been a growing interest in craft beers. Also, Daniel from an early age had a vision of opening his own private brewery.
The opening ceremony of the Black Hat brewery is planned for 9 December, when the first batch of their beer will come on the market. At first, the production capacity will be 4,000 litres of beer per month, with plans to reach a capacity of at least 8,000 litres a month in the near future.
