HOP FLAVOROMICS - THE SKY IS THE LIMIT

ABSTRACT
The continued release of novel hop varieties with uniquely identifiable organoleptic characters is evidence that the flavour potential of hops has not been fully explored. Plus, the genetic basis of hop organoleptic chemistry is relatively poorly understood. A mapping cross containing 166 genotypes has been established into two replicated field trials (Tasmania and Victoria, Australia), separated by about 5 degrees latitude. To date we have collected two years of data on various parameters. Such data allows analysis of genetic variation and genotype by site interactions. However, the ultimate aim for the study is to obtain an extended chemical phenotype of hop flavour volatiles, polyphenols, glycosides, laboratory scale beer volatile SPME profiles, and to integrate this with organoleptic data. Successful completion of this hop flavoromics study will allow the identification of quantitative trait loci (QTL) in hop directly associated with beer organoleptic traits.

Brewery news South Africa: South Africa may well become the biggest roadblock in AB InBevs’ takeover of SABMiller
South Africa may well become the biggest roadblock for Anheuser-Busch InBev NV's proposed takeover of SABMiller PLC, a $108 billion deal that would combine the world's two biggest brewers, MarketWatch reported on February 24.

A key challenge is coming from places like the farm owned by Annemarie Filmalter, which has supplied about 50 tons of hops a year to SABMiller for more than a decade. She said the takeover has unsettled her half-dozen employees, who this week are headed to the fields near the country's southern coast to harvest hops. "People worry about jobs," Ms. Filmalter said.

Concerns like these have led the Congress of South African Trade Unions, which represents employees across the country, to oppose the AB InBev-SABMiller merger. Because of AB InBev's reputation for cutting costs and shedding jobs, it is gearing up to fight the deal.

That has sown doubts in some quarters about whether AB InBev will be able to secure South African regulatory approval and close the deal during the second half of the year, as planned.

The deal will test a unique aspect of South Africa's regulatory process that requires weighing a deal's impact on so-called "public interest," namely employment in a country where about one in ...More info on site

Brewery news Sri Lanka: Beer drinkers expected to switch to arrack as taxes on strong beer are now equal to those on hard liquor
Arrack drinkers who were switching to beer until last year would now move back into the hard alcohol after Sri Lanka’s finance ministry hiked taxes on strong beer by 70 percent over the last year, Fitch Ratings said.

"We expect the trend of drinkers switching to beer from hard liquor to reverse in 2016, as taxes on the alcohol content in strong beer have caught up with those on hard liquor (spirits) after increases in excise taxes in October and November 2015," Fitch Ratings said.

The rating agency confirmed an 'AAA(lka)' rating on Distilleries Company of Sri Lanka, the island's largest hard liquor maker.

Distilleries accounted for around half of Sri Lanka's total alcoholic beverage production and 72 percent of the country's total arrack production, Fitch said.

Arrack production declined 3 percent a year over 2011 to 2014, resulting in a smaller share in alcohol sales for arrack.

But, Fitch expects sales of spirits to grow in the mid-single digits over the next three years, which will help the segment to regain lost market share.

"Disposable income is likely to rise, driven by higher per capita income along with the mid-single digit economic growth for Sri Lanka, and following the recent increase in public-sector pay, higher ...More info on site

Brewery news Canada: Molson Coors Canada recreates 108-year-old ale recipe
Molson Coors Canada says it's offering a limited release pale ale brewed from a 108-year-old recipe found deep in the company's archives, Toronto Sun reported on February 25.

Molson Coors says John H.R Molson and Bros. 1908 Historic Pale Ale was created to celebrate its 230 years of brewing in Canada.

The company says its brewmasters "worked tirelessly" to authentically recreate the pale ale of 1908, right down to the most minute details, combining diverse malts, heirloom hops and century-old fermentation techniques.

During the brewing process, the density and temperature measurements had to be recorded every few hours to ensure consistency.

As an unfiltered beer, each batch of the 1908 brew has its own unique qualities and the company says it can be enjoyed cold, or even at warmer temperatures.

The recipe is one of the many historic documents found in approximately 400 cartons of Molson archives.

"To try and replicate the flavours and nuances of the early twentieth century recipe, we went deep into the archives to uncover every last detail behind this historic brew," said brewmaster Keith Armstrong.

"We sat down with maltsters, barley and hops breeders from across the globe to identify the correct ingredients to mix with Molson's ancient ale yeast derived from ...More info on site

WhiskyWhisky News Whisky

Whisky news India: Vijay Mallya steps down as chairman of United Spirits Ltd
UB Group chairman Vijay Mallya has stepped down as non-executive chairman of United Spirits Ltd, controlled by Diageo Plc., after striking a sweetheart deal with the UK firm which agreed to drop all charges of irregularities under his watch, and pay him $75 million over five years in return for getting him to go, Livemint reported on February 26.

Diageo and Mallya have been sparring for some time over his exit.

One-time billionaire Mallya, known as much for his breadth of ambition as his flamboyance, does not have a group to call his own at this point of time. He controls holding company United Breweries (Holdings) Ltd whose ownership in India’s largest spirits maker United Spirits has fallen to less than 3%; he’s no longer the largest shareholder in United Breweries Ltd; and he has lost management control of Mangalore Chemicals and Fertilizers Ltd.

He has also been declared a “wilful defaulter” by some banks that loaned money to his now-grounded Kingfisher Airlines.

“Having recently turned 60, I have decided to spend more time in England, closer to my children,” Mallya said in a statement.

Diageo said in a statement that the United Spirits board will appoint Mahendra Kumar Sharma, currently independent non-executive director and ...More info on site
