HOP FLAVOROMICS - THE SKY IS THE LIMIT
ABSTRACT
The continued release of novel hop varieties with
uniquely identifiable organoleptic characters is
evidence that the flavour potential of hops has not
been fully explored. Plus, the genetic basis of hop
organoleptic chemistry is relatively poorly understood.
A mapping cross containing 166 genotypes has been
established into two replicated field trials (Tasmania
and Victoria, Australia), separated by about 5 degrees latitude.
To date we have collected two years of data on
various parameters. Such data allows analysis of
genetic variation and genotype by site interactions.
However, the ultimate aim for the study is to obtain an
extended chemical phenotype of hop flavour volatiles,
polyphenols, glycosides, laboratory scale beer volatile
SPME profiles, and to integrate this with organoleptic
data. Successful completion of this hop flavoromics
study will allow the identification of quantitative
trait loci (QTL) in hop directly associated with beer
organoleptic traits.

USA, NY: Brooklyn Brewery looking for a spot for its brewing operations
|
Brooklyn Brewery is looking at the Navy Yard and Industry City in New York as a potential spot for its brewing operations. The firm has been searching for space in the borough to relocate its manufacturing facilities there, Crain’s New York Business reported on February 23.
The brewery, famous for its namesake lager, currently has space in Williamsburg. According to Eric Ottaway, the company's chief operating officer and general manager, it is searching for as much as 60,000 square feet.
The bulk of Brooklyn Brewery's beer is made upstate in Utica, but the brewery has held onto its Brooklyn location because it is essential to its brand and is where it makes most of its specialty beers. The Williamsburg facility on North 11th Street, at 61-71 Wythe Ave., functions more than just as a brewing factory; it offers a tasting room and retail shop and gives visitors a chance to watch beer being made. Ottaway said the company wants its new location to serve a similar purpose.
"What is tricky is finding a space where we can do the manufacturing but also have the retail be an important component," Ottaway said. "It's hard to find a neighborhood that has the level

USA, IL: Ten Ninety Beer Company opening own facility in Glenview
|
Ten Ninety Beer Company, which contract brewed in Zion is now opening its own facility in Glenview where it will launch a taproom sometime within the next month, possibly before St. Patrick's Day, co-owner Brian Schafer was quoted as saying by Chicago Daily Herald on February 25.
The Ten Ninety Beer Company, founded in June 2012, is now making its beer at the new facility at 1025 Waukegan Road in the former Card & Party Giant space.
The 11,000-square-foot home in Glenview will feature an 89-seat taproom with an outdoor patio with an initial capacity of 5,000 barrels for production, said Urban Innovations, serving as contractor for the project.
Schafer and his co-founders Andy Smith, a patent attorney, and Jamie Hoban, a banker, named the brewery Ten Ninety or "1.090" because that is the approximate measurement of original gravity for each of the four flagship beers. This measurement, taken early in the brewing process, denotes a beer with a higher amount of fermentable sugars than most common beers. For comparison, a Budweiser is a comparatively watery 1.045 starting gravity. Water itself is 1.0.
"We launched with the high-gravity beers," Schafer said, adding that they have released 17 beers since starting nearly three years ago.

Canada, SK: Churchill Brewing launches own brand line-up
|
Prairie beer blog On Beer reports that a brewery that has been quietly producing beer exclusively for a western restaurant chain for the past year has now launched its own brand line-up.
Churchill Brewing was founded by brothers and restaurant industry veterans Ryan and Curtis Peet, who launched the brewery early last year with a contract to brew the house beers for the Saskatchwan and Manitoba locations of Original Joe’s, a strategy that has allowed the company to establish a regular cash flow while preparing for a wider launch.
Now, the brewery has released five beers under the Churchill brand – Churchill Blonde Lager, Plainsmen Pilsner, Rivermen Red Ale, Britisher English Brown Ale, and Sundog Belgian Wit – with the first four available in 355 ml cans at select private liquor stores in Saskatchewan, and all available on tap at licensees in Saskatchewan and Manitoba.

USA, OR & CA: Oregon’s 10 Barrel Brewing to build new brewpub in San Diego
|
10 Barrel Brewing, which operates a brewery in Bend, Oregon and brewpubs in Portland, Bend and Boise, Idaho, is headed to San Diego with plans to build out a new brewpub that will open this year at 1501 E Street, activating a dormant corner of 15th Street in the East Village, San Diego Eater reported on February 24.
The 10,450-square-foot space will house a 20 BBL brewhouse, with a nine tank farm and a dozen serving tanks, and will include a rooftop dining area; 15 tap handles will pour some of 10 Barrel's core beers, but the brewing system will be dedicated to R&D beers that will be unique to the San Diego location. Its head brewer will be a San Diego native who has brewed with 10 Barrel for several years. The brewpub's food offerings may feature a few signature items from its other outposts, but the majority of the from-scratch menu will be open to the creativity of the locally-installed chef.
Though the project has barely gotten off the ground, 10 Barrel's entry into San Diego has already attracted controversy, as some members of the local beer industry have taken issue with 10 Barrel's craft status. The 10-year-old brewery was

USA, PA: Desperate Times brewery could be open by summer in Carlisle
|
Desperate Times Brewery could be open by this summer in Carlisle, PA, according to a recent posting on its Facebook page.
The borough zoning hearing board in November granted a special exception application to the 7,800-square-foot microbrewery and tasting room planned for a building Carlisle Events has used in recent years for special displays during its car shows.
Documents on file with the borough detail a project that will include a 4,800-square-foot craft beer production and distribution operation in the back, while the front third of the building will be open to the public as a 3,000-square-foot tasting room with a limited food menu and seating for 30.
A microbrewery is not permitted by right use anywhere in the borough, so a special exception was needed to show that Desperate Times Brewery would be compatible with the intent of the C-3 General Commercial zoning district. A public hearing on the application was held on Oct. 1.
Tom Richey of Carlisle Events testified the tasting room is similar to such permitted C-3 uses as general retail, restaurants and beverage distributors. Matthew J. Dunn, who owns 80 percent of the brewery, also testified in support of the application.

Canada: Molson Coors Canada recreates 108-year-old ale recipe
|
Molson Coors Canada says it's offering a limited release pale ale brewed from a 108-year-old recipe found deep in the company's archives, Toronto Sun reported on February 25.
Molson Coors says John H.R Molson and Bros. 1908 Historic Pale Ale was created to celebrate its 230 years of brewing in Canada.
The company says its brewmasters "worked tirelessly" to authentically recreate the pale ale of 1908, right down to the most minute details, combining diverse malts, heirloom hops and century-old fermentation techniques.
During the brewing process, the density and temperature measurements had to be recorded every few hours to ensure consistency.
As an unfiltered beer, each batch of the 1908 brew has its own unique qualities and the company says it can be enjoyed cold, or even at warmer temperatures.
The recipe is one of the many historic documents found in approximately 400 cartons of Molson archives.
"To try and replicate the flavours and nuances of the early twentieth century recipe, we went deep into the archives to uncover every last detail behind this historic brew," said brewmaster Keith Armstrong.
"We sat down with maltsters, barley and hops breeders from across the globe to identify the correct ingredients to mix with Molson's ancient ale yeast derived from

India: Vijay Mallya steps down as chairman of United Spirits Ltd
|
UB Group chairman Vijay Mallya has stepped down as non-executive chairman of United Spirits Ltd, controlled by Diageo Plc., after striking a sweetheart deal with the UK firm which agreed to drop all charges of irregularities under his watch, and pay him $75 million over five years in return for getting him to go, Livemint reported on February 26.
Diageo and Mallya have been sparring for some time over his exit.
One-time billionaire Mallya, known as much for his breadth of ambition as his flamboyance, does not have a group to call his own at this point of time. He controls holding company United Breweries (Holdings) Ltd whose ownership in India’s largest spirits maker United Spirits has fallen to less than 3%; he’s no longer the largest shareholder in United Breweries Ltd; and he has lost management control of Mangalore Chemicals and Fertilizers Ltd.
He has also been declared a “wilful defaulter” by some banks that loaned money to his now-grounded Kingfisher Airlines.
“Having recently turned 60, I have decided to spend more time in England, closer to my children,” Mallya said in a statement.
Diageo said in a statement that the United Spirits board will appoint Mahendra Kumar Sharma, currently independent non-executive director and

South Africa: South Africa may well become the biggest roadblock in AB InBevs’ takeover of SABMiller
|
South Africa may well become the biggest roadblock for Anheuser-Busch InBev NV's proposed takeover of SABMiller PLC, a $108 billion deal that would combine the world's two biggest brewers, MarketWatch reported on February 24.
A key challenge is coming from places like the farm owned by Annemarie Filmalter, which has supplied about 50 tons of hops a year to SABMiller for more than a decade. She said the takeover has unsettled her half-dozen employees, who this week are headed to the fields near the country's southern coast to harvest hops. "People worry about jobs," Ms. Filmalter said.
Concerns like these have led the Congress of South African Trade Unions, which represents employees across the country, to oppose the AB InBev-SABMiller merger. Because of AB InBev's reputation for cutting costs and shedding jobs, it is gearing up to fight the deal.
That has sown doubts in some quarters about whether AB InBev will be able to secure South African regulatory approval and close the deal during the second half of the year, as planned.
The deal will test a unique aspect of South Africa's regulatory process that requires weighing a deal's impact on so-called "public interest," namely employment in a country where about one in

Sri Lanka: Beer drinkers expected to switch to arrack as taxes on strong beer are now equal to those on hard liquor
|
Arrack drinkers who were switching to beer until last year would now move back into the hard alcohol after Sri Lanka’s finance ministry hiked taxes on strong beer by 70 percent over the last year, Fitch Ratings said.
"We expect the trend of drinkers switching to beer from hard liquor to reverse in 2016, as taxes on the alcohol content in strong beer have caught up with those on hard liquor (spirits) after increases in excise taxes in October and November 2015," Fitch Ratings said.
The rating agency confirmed an 'AAA(lka)' rating on Distilleries Company of Sri Lanka, the island's largest hard liquor maker.
Distilleries accounted for around half of Sri Lanka's total alcoholic beverage production and 72 percent of the country's total arrack production, Fitch said.
Arrack production declined 3 percent a year over 2011 to 2014, resulting in a smaller share in alcohol sales for arrack.
But, Fitch expects sales of spirits to grow in the mid-single digits over the next three years, which will help the segment to regain lost market share.
"Disposable income is likely to rise, driven by higher per capita income along with the mid-single digit economic growth for Sri Lanka, and following the recent increase in public-sector pay, higher
