LEARNING FROM WINE AROMA RESEARCH
ABSTRACT
Hops for beer is like grapes for wine, so why not learn something
about hops from wine researchers? This French research team is
looking into the potential and contribution of sulfur related aroma
compounds present in many hop varieties. They found that there
is a signficant potential for the varieties studied for precursors
leading to 4MMP, 3MH and 3MHA. With these initial findings
they have three questions they want to follow with in the future:
1) What is the impact of process transformation of hops on aroma
potential? 2) What is the impact of fermentation to release thiols?
and 3) Are there other sources for thiols in beer? I see exciting
times for hops aroma research coming!

USA, CA: Napa Smith Brewery to build new multi-million dollar production facility in Vallejo, California
|
California’s Napa Smith Brewery has announced a two-pronged expansion plan that will include the construction of a new multi-million dollar production facility in Vallejo, Calif. as well as the addition of shared brewing capacity at Turtle Anarchy Brewing in Nashville, Tenn., Brewbound.com reported on June 1.
In a press release, the company, which expects to produce just 6,000 barrels of beer in 2016, called itself the “smallest independent bicoastal operation in North America.”
The decision to expand production capabilities in two different time zones, it said, was driven by capacity constraints at its current facility in Napa and a desire to deliver fresh beer to more markets.
Napa Smith — a wholly owned subsidiary of Nashville-based wine, spirits and beer supplier, R.S. Lipman Company — plans to maintain a presence in Napa but will likely vacate its current brewery and taproom at 1 Executive Way, according to R.S. Lipman owner and CEO Robert Lipman.
The company’s Vallejo brewery, located just off Highway 80, will span 36,000 sq. ft. and will initially be capable of producing about 10,000 barrels, Mr. Lipman said. Capacity could eventually triple, he added, and the space will also include a taproom.
Specific investment figures were not disclosed.
In Tennessee, meanwhile, R.S. Lipman

USA, NY: Stoneyard Brewing opening one more location in Penfield
|
Stoneyard Brewing is diligently working to conquer the west side of Monroe County, Rochester Democrat and Chronicle reported on May 31.
There is already the brewery and restaurant at 1 Main St. in Brockport. Construction is underway on a 20,000-square foot production brewery in Brockport. And just down Clinton Street, Stoneyard will be opening a breakfast company in the next few weeks.
Now, the Brockport-based brewery has set its sights on an east-side location. Owner Jay Nichols said the brewery has signed a lease for the former Capaldo's Recovery Room, 1517 Empire Blvd., Penfield.
The 8,000-square foot building, which will feature three dining rooms, two bars, and long German-style communal tables, should open in the middle of July as Stoneyard American Craft Beer Hall & Grill.
Nichols said the new Stoneyard location will also include a 2.5-barrel brewery (four fermenters and one Brite tank). The brewery won't be ready when the beer hall opens, however, but "will be ready soon after," Nichols said.
“I came here and looked at the place and fell in love with it,” Nichols said. “It’s big. But as big as it is, it’s still intimate.”
The layout includes a big rectangular portion that "feels like it should be a beer hall,"

USA, WA: Melvin Brewing opening a brewery in Washington
|
Melvin Brewing is opening a brewery in Washington, Seattlepi.com reported on May 31.
Jeremy Tofte, the owner and beer-loving visionary behind Melvin Brewing, is actually a Washington native. He was born in Mount Vernon and spent his formative youth shredding the slopes at Mount Baker. His love of snowboarding down mountains of dry powder is what led him to Jackson, Wyoming in the first place.
Melvin Brewing intends to open a new brewery and restaurant in Bellingham within the year.
They decided to open a brewery in Washington to keep up with demand and to re-establish Jeremy Tofte’s roots in the Seattle region. Jeremy grew up in a beer family, working for the family’s beer distribution company. Back in the day, he spent his youth loading trucks, repacking beer, delivering beer, and merchandising store shelves for breweries like Redhook, Pyramid, Grants, and Thomas Kemper. That’s when he became fascinated with craft beer and started home brewing at the age of 19.
Until the new brewery opens, Melvin Brewing will continue to establish its presence around Western Washington.

USA, MN: Tanzenwald Brewing Company looking to make itself at home in Northfield
|
Tanzenwald Brewing Company (TBC) is looking to make itself at home at 103 Water St. in Northfield, Minnesota and will feature a 10-barrel (bbl) Craft Microbrewery, with an adjoining taproom/restaurant, Southernminn.com reported on May 31.
According to a release regarding the development, the brewery’s goal is to source as many ingredients from Northfield and Minnesota farms as possible. The local partnerships will allow Tanzenwald to support farmers and engage in unique collaborations, the release notes.
For example, Tanzenwald will send the leftover spent grain from brewing to their livestock provider, so the sausage people eat at the brewery will be fed by the same beer they are drinking.
Tanzenwald has secured 24 percent of its total start-up cost of $689,000 from private investors, according to Chris Heineman, community planning and development director, and has been approved for an additional loan.
The remaining financing is being requested in a Small Business Administration loan and two revolving loans, one from the Northfield Economic Development Authority (EDA) and the other from the Rice County Housing and Redevelopment Authority.
Last week, the Northfield EDA approved the $25,000 revolving loan request, contingent upon securing all of the other financing.
"It seems like it's going to be a big win for

USA, IN: Hoosier Brewing Co. expanding
|
A brewery planning to move to Franklin has found its way onto the shelves of one of Indiana’s biggest grocery store chains, Daily Journal reported on May 30.
Soon-to-be Franklin-based Hoosier Brewing Co. is now sold at each of the 34 Meijer grocery stores in Indiana. At the 14 central Indiana locations, the beer has its own display and also is promoted on the ends of shelves near the beer aisle. At 20 other locations across the state, you can find the brews in the beer aisle.
Hoosier Brewing Co. owner Brian Nentrup was approached by representatives of Meijer who were interested in his product and the possibility of selling his beer at the company’s Indiana locations, Nentrup said. Nentrup traveled to Grand Rapids, Michigan, to meet with Meijer’s corporate staff earlier this year and a distribution deal was reached.
Nentrup distributes his beer to the 14 central Indiana Meijer locations and a distribution company delivers the rest, Nentrup said. But the payoff goes far beyond additional revenue, Nentrup said.
“Meijer is a big win for us,” Nentrup said. “They came to us, liked our beer and our brand and said we want to showcase you. We hit their shelves several weeks ago and

USA, MA: Element Brewing Company completes move and expansion
|
Element Brewing Company announced it has completed its move and expansion. Its new home (16 Bridge Street, Millers Falls, MA) is just 100 yards down the street for their old location, Brewbound.com reported.
Element had been looking for a new facility for several years having outgrown its old location and while their search included several other towns the owners were thrilled when they were able to acquire a suitable property while remain in Millers Falls. “The town and its citizens have been so supportive of us it would have been heartbreaking to leave” said co-founder Dan Kramer. “There is a renaissance beginning in this village with a lot of redevelopment happening, and I am so happy we can stay here and be a part of it” he continued.
The new facility is triple the size of their old location and is much better suited for the brewery. It boasts a large tasting room that seats 35 as well as a game room with free pool, foosball and retro video games. Live music is performed from time to time and eight beers are available on tap for tastes and by the glass as well as three house brewed sodas.

Vietnam: Sale of state’s share in Sabeco not put into discussion at latest shareholders’ meeting
|
ThaiBev, the conglomerate owned by Thai billionaire Charoen Sirivadhanabhakdi, has been chasing Sabeco’s stakes for a few years. More than 10 investors have registered to buy Sabeco’s shares. Why are investors so interested in the Vietnamese beer manufacturer?
According to VietnamNetBridge, Sabeco is the largest brewery in the Vietnamese market, dominating the middle-class beer market segment.
Sabeco has been a joint stock company for eight years, after equitization. However, the state now still holds 89.95 percent of shares, while Heineken holds 5 percent.
Therefore, the joint stock company, by nature, is still a state-owned enterprise. The chairs of the company’s board of directors and other key positions are appointed by the Ministry of Industry and Trade (MOIT).
Sabeco’s managers suggested selling stakes in two campaigns, about 20-30 percent of stakes each. The second campaign will come one year after the first.
Meanwhile, MOIT has recently submitted to the government the plan to sell Sabeco stakes, to reduce the state’s ownership ratio from 89.59 percent to 36 percent.
This means that the new investors will have opportunities to hold controlling stakes in the company.
However, to many people’s surprise, the plan to withdraw the state’s capital and list shares on the bourse was not put into discussion

UK: Molson Coors-owned Staropramen releases new 4% ABV pilsner Pravha
|
Molson Coors-owned Staropramen has released a new light 4% ABV pilsner for the on-trade called Pravha, which has been revealed to the Publican’s Morning Advertiser first.
The crisp, light and refreshing pilsner will be exclusively available on draught to the on-trade from June 2.
Two specially selected malts and three Czech hops are used in the brewing of the premium beer, which is said to offer a twist on the classic pilsner, and responds to an increase in consumer demand for “brews with personality”.
Molson Coors portfolio brand director Ali Pickering said: “In Prague there’s always something new and exciting going on underneath the surface of the city.
“In the same way, Pravha is the unexpected side of Staropramen – an unexpectedly refreshing drinking experience that you might not expect from a Czech pilsner,” she added.
The new launch coincides with beer experts’ talk of an increase in demand from consumers for more sessionable beers, such as pilsners.
Pickering said: “In introducing this beer to the on-trade, we hope to excite consumers and drive increased rate of sale in the premium world beer category.
“We think this is the perfect beer for after work with colleagues or a night out with friends.”

South Africa: Union plans to appeal against approval of AB InBev’s takeover of SABMiller
|
A South African union plans to appeal against a decision to clear Anheuser-Busch InBev NV’s takeover of fellow brewer SABMiller Plc next week, citing concerns that participants in an employee share-program aren’t being fairly compensated, Bloomberg reported on June 3.
The Food and Allied Workers Union believes the program should be wound up and participants paid the same as SABMiller shareholders stand to make from the $106 billion acquisition, General Secretary Katishi Masemola said by phone on June 3.
“We’re going to the Tribunal to argue our case,” Masemola said. “If the Tribunal doesn’t take our argument seriously, we will appeal to the Competition Appeal Court.”
The takeover was cleared by South Africa’s Competition Commission after AB InBev agreed to sell SABMiller’s 9 billion-rand ($577 million) stake in wine and spirits maker Distell Group Ltd., protect jobs and set up a 1 billion-rand fund to support the local beer industry. The union appealed to the commission, which then didn’t address the labor group’s argument when recommending the deal to the Competition Tribunal on Wednesday, Masemola said. An initial hearing is scheduled for June 7, with a full hearing to be scheduled for a later date.
The objection could delay the completion of the AB

Kenya: Another Dutch brewery to enter Kenya’s beer market
|
Battle for Kenya’s beer market is set to turn a new heat as former Kenya Distributor of Bavaria Beer Jovet Kenya Ltd signed a new deal with another Dutch brewer to enter the market, Capital FM Kenya reported on June 2.
Jovet Kenya Ltd, the local distributor, signed the deal to distribute Bavaria’s major rival brand Atlas Beer.
This comes after the local distributor was dropped by Bavaria Beer, after distributing for them for about 10 years.
Following the drop, Jovet Kenya Ltd sued Dutch brewer seeking compensation for the investments it made over the last 10 years to market and sell the brand before the Bavaria distributorship deal is transferred to another party.
“It is unfair that I have already spent a lot of money on branding and distribution, then now the company wants to take this away from me after 10 years of hard work, just because sales are now solid,” said Daniel Munene, director of Jovet Kenya in a case filed at the Milimani Commercial Court.
The court temporarily stopped Bavaria N.V from terminating the importation and distribution agreement held by Jovet Kenya pending an inter-parties hearing.
Speaking to Capital FM Business UDB Sales Manager Africa Sander Bos says the Kenyan market is

South Korea: Magpie Brewing opens new facility on Jeju Island
|
Magpie Brewing, one of the driving forces behind Korea's craft beer industry, has opened a new full-sized brewery on Jeju Island, The Korea Times reported on May 31.
The brewery was opened with a day-long party on May 28. As well as offering discounted brews, Magpie invited Jeju Island's four most famous food trucks, plus Linus' Bama Style Barbecue from Seoul, which served two whole pigs.
"It was actually way crazier than we expected," said Erik Moynihan, co-owner and managing director of Magpie.
He said they had hoped for 200 guests, but more than 700 came to the rural village where the brewery is located, about 20 minutes east of urban Jeju City.
The brewery, once fully operational, will make beer for all three Magpie brewpub locations ― Hongdae and Gyeongnidan in Seoul, and Tap-dong in Jeju City.
The Jeju location opened late in 2014, on invitation by Arario Group, which owns the building and provides a rent discount.
"They didn't invest directly into us ― it's almost like they're our patron," said Moynihan. "Once we were down here, we realized we needed to open a full-sized brewery."
They arranged with Arario to convert an old tangerine warehouse and processing facility into their brewery.
Previously, Magpie had been
