PRACTICAL VARIABLES IN DRY HOPPING
ABSTRACT
The team at New Belgium Brewing in the U.S.
investigated the influence of hopping rate, temperature
and alcohol in beer to see what the driving parameters
are in dry hopping. They used a non-dry hopped IPA
with 7,5% and 9% alcohol as base beers and worked
with 125g, 250g and 500g per hl for dry hopping at
temperatures of 6 and 12 0C. They found that the dosing
amount and the temperature are of greater importance
than the alcohol content. However the yield of the
measured components (linalool, myrcene, caryophyllene
and humulene) did not increase linearly with increased
amount of hops used. The non-polar components were
better extracted at the lower temperature.

USA, HI: Waikiki Brewing Co. opening its second location in Honolulu
|
Waikiki Brewing Co., headed by the former general manager of Cheeseburger Restaurants, is opening its second location in the former Fresh Cafe space on Queen Street in the Honolulu neighborhood of Kakaako, the broker who did the deal confirmed to Pacific Business News on September 9.
Waikiki Brewing plans to open its all-encompassing 6,000-square-foot facility that includes a brewery, canning operation and tasting room in March at 831 Queen St.
Joe Lorenzen, former GM of Cheeseburger Restaurants, is the brewmaster of the new facility. Laren Gartner and Edna Bayliff, founders of Cheeseburger Restaurants, gave Lorenzen the opportunity to pursue training with the American Brewers Guild. Robert Kaskie, executive vice president of Cheeseburger Restaurants, was also instrumental in getting Waikiki Brewing up and running.
Waikiki Brewing’s first location, a 1,100-square-foot spot at the Cheeseburger Waikiki restaurant at 1945 Kalakaua Ave. at the corner of Ala Moana Boulevard, opened last year.
Its new brewpub will also serve a wide variety of handcrafted beers and food.

USA: Craft brewers' demand driving diversity in new hop varieties

In brewing, hops make the world go around and the fate of that world depends on what happens in the hops fields of Washington, Oregon and Idaho.
Happily, 2016 has been a good year for hops growers, San Antonio Express-News reported on September 9.
The United States Department of Agriculture forecasts this year’s production to be about 91 million pounds, an increase of 16 percent from last year. Overall, total planted hop acreage has been steadily rising in recent years into record numbers.
The total numbers are only part of the story, because there are really two sides of the market for hops.
The big guys, such as AB InBev and other large corporate producers, prefer varieties that add bitterness but not any particular flavor or aroma.
And since they buy a lot of hops for their mass production, their needs drove the hops market. Until recently, this kind of production was the most stable market for growers, so these varieties took priority over hops bred for their aroma.

USA, OH: Uniontown Brewing Co. planned to open in downtown Ashland
|
In hopes to continue to bring more traffic to downtown Ashland, an Ashland University employee and his wife are in the process of opening up a microbrewery downtown, The Collegian reported on September 8.
Doug Reynolds, who currently serves as the supervisor at the Eagle’s Nest is working to open Uniontown Brewing Co. in the building that once housed Gilbert Furniture Company.
Because of renovations and licensing through the state and federal government, Reynolds does not yet have a projected opening date, although he estimates it will not be until after the school year ends.
Reynolds explained that he and his wife had always wanted to own their own business, but life and familiar routines got in their way. That is, until now.
“We were just sitting one day and everything kind of clicked,” said Reynolds. “Breweries are huge [right now] and we always wanted to own our own restaurant in Ashland. We’ve talked about it for years, that Ashland needs something new and something local.”

USA, MA: Tree House Brewing breaks ground at its new brewery in Charlton
|
Tree House Brewing has hit a sweet spot in the craft brewery trend. Every week, the brewery in Monson brews 300 barrels of beer. People line up for hours, up to 5,000 paying customers over three days, Worcester Telegram reported on September 12.
By Saturday, all the beer is gone, says Tree House Brewing co-founder Dean Rohan.
"It is truly, truly remarkable how people have taken to our beer," Mr. Rohan said on September 12 at a ground-breaking for the brewery's new brewing facility. In attempting to explain, Mr. Rohan said, "First thing, it's the best beer in the world. That's number one. The other part of the equation is the atmosphere. We make customers feel like they're part of the family."
Tree House, which launched in a barn in Brimfield in 2011, now has a modest brewing and retail facility in Monson. But its future now lies in Charlton, on a 68-acre parcel that was most recently considered for a Home Depot warehouse, and previously, a casino. The property at 129 Sturbridge Road (Route 20) will feature a winding 1,600-foot driveway that meanders up a hill. At the top of that hill will eventually rise a 51,200-square foot brewery and retail store.

Japan & USA & Brazil: Kirin partners with Brooklyn Brewery to produce and sell its craft beer in Japan and Brazil

Kirin Brewery will partner with Brooklyn Brewery to produce and sell the New York-based company's popular craft beer in Japan and Brazil starting next year, Nikkei Asian Review reported on September 13.
In Japan, the two companies plan to set up a joint venture next January, with the Kirin Holdings unit expected to take a majority stake. The U.S. company's signature Brooklyn Lager, known for its rich flavor, will be produced at Kirin factories - in cans, bottles and kegs for eateries - and be sold exclusively by Kirin through high-end supermarkets and liquor stores as well as restaurants and bars. A bottle will likely cost around 400 yen to 500 yen ($3.90 to $4.90).
Even as the overall beer market keeps shrinking in Japan, demand is growing for craft beer, which puts an emphasis on flavor and brewing method. Kirin will become the first major Japanese beer company to make foreign craft beer.
Established in 1988, Brooklyn Brewery ranks 12th among U.S. craft beer makers by production volume but comes in second by export volume. Approximately half of its production is exported. Garrett Oliver, the brewery's "brewmaster," is an iconic figure in the craft beer industry.

Heineken USA is expanding its beer offers in the US with the creation of a new venture that will put more focus on its global brands, Drinks Business Review reported on September 13.
The new venture, dubbed, Five Points Trading Company, will be launched on 1 January 2017. It intends to incubate a range of popular global beers in the US.
The venture will take the responsibility of importing a range of global beers into US which include Red Stripe, Tiger, Birra Moretti, Affligem, Murphy's Stout, Prestige, Sagres and Mort Subite.
Heineken has taken the step of creating a new venture as the licenses of other importing companies that are currently importing and selling these brands are set to expire by the end of this year.
According to the Dutch brewing company, the name Five Points Trading Company has been inspired by the five points of Heineken’s iconic red star and America’s first cultural melting pot in lower Manhattan. It says that the new company will embody the same energy and entrepreneurial spirit of the neighbourhood.
The new company will be led by general manager Charles (Ches) Littlefield and he will manage Heineken’s brands separately with his team.

USA, GA: Former brewmaster at Stone Brewing Co. coming to Atlanta with a new brewing project
|
Mitch Steele, former brewmaster at Escondido, California’s lauded Stone Brewing Co., is coming to Atlanta with a new project in Poncey-Highland. Steele will open what’s being described as “a new craft brewery and brewpub,” Eater Atlanta reported on September 12.
The currently unnamed venture will offer “craft beer, great artisanal food, and an inviting atmosphere.” The space will feature a rooftop bar and a beer garden, and patrons can participate in tours of the facilities and brewing classes.
Steele left Stone in June after 10 years as brewmaster. He says he is “looking forward to the opportunity to become part of the growing craft beer movement in Atlanta and the Southeast.” In a farewell video posted on Stone’s YouTube page, Steele shared some background on the forthcoming brewpub.
“I had an opportunity that dropped into my lap,” he said. “These guys approached me. They’re industry vets — they’ve got 20, 30 years — they wanted me to be a partner with them in starting this new operation.
“It’s a bucket list thing. An opportunity like this may not ever come again, and it was something that — I thought if I didn’t give this a shot, I’d regret it the rest of my life.”

USA: More farmers becoming interested in growing hops outside of the Pacific Northwest

Geoff Keating grows a prized plant at the northeastern edge of the country, some 3,000 miles away from the region of America most associated with his crop — hops, Mediacom reported on September 11.
Americans' growing thirst for bitter, flavor-packed styles of beer has brought an unprecedented demand for hops, so growers are looking to new places to harvest its flowers.
Hops are used to provide bitterness, aroma and flavor to beer. It the U.S., the vast majority are grown in Washington state, with significant numbers grown in Oregon and Idaho. But hop growers in states like Michigan, New York and Maine, where Geoff Keating runs the Hop Yard farm in Gorham and Fort Fairfield, are starting to ramp up production.
The growth dovetails with craft beer's growth, and its passion for using local ingredients.
"As far as Maine-grown hops, anything done at good quality that's coming out of Maine is being used by brewers," Keating said. "We have limited supply."

USA, WI: Janesville's first downtown microbrewery on pace to open by Thanksgiving
|
Janesville's first downtown microbrewery, Rock County Brewing, is on pace to open late this year, one of its owners said in an interview to Gazettextra.
John Rocco, Rock County Brewing co-founder, said he hopes to be tapping the brewery's first brews to customers in time to catch the Thanksgiving holiday crowd.
“We feel like we've really got to be open by then. That day before Thanksgiving, that holiday, it's like the biggest beer day of the year,” Rocco said.
Rocco said he and his three partners are neck-deep in construction and setup of brewing equipment that will operate in the rear of a storefront under renovation at the Carriage Works building at 10 N. Parker Drive on the downtown's east side.
Rocco said the microbrewery has had a partial occupancy review by the city, and Rock County Brewing and the Carriage Works building owners, Shannon and Shawn Kennedy, are working in tandem with contractors to push the renovation through final construction phases.
According to city building inspection notes, the project still needs improvements to rear exits that would empty to a narrow lot sandwiched between a high retaining wall separating the Carriage Works building from an elevated parking lot just east.

USA, TX: Neches Brewing Company now open in Port Neches
|
Tyler Blount started brewing beer in his garage five years ago with a home brew kit that he bought from eBay. Now he is the co-owner of the brand new Neches Brewing Company in Port Neches. After years of doing what he considered a hobby Blount finally felt he was able to share what he loved doing with others, 12NewsNow.com reported on September 11.
"After five years of brewing beer nonstop, we finally decided that we could this a business," said Blount. "So we put things into motion and here we are with a brew pub."
Located on Port Neches Avenue, this microbrewery is the only one in Southeast Texas. Even with that unique distinction Blount and his business partner David Pool are continuing to try and stay ahead of the curve.
"We are trying to just come up with new styles," said Blount. "Keep things interesting and make this a place for Southeast Texas."

Shortly before dark in the heart of Yangon's bustling Chinatown, the neon signs for dozens of beer stations flicker to life.
Until recently, the signs almost exclusively advertised the ubiquitous Myanmar Beer, but new logos have appeared on the street, representing the rapid changes in the country's beer market. Almost every week there are rumors about another big foreign brewer reportedly eying entry to the scene, Nikkei Asian Review reported on September 11.
Thilha Aung was sitting with a friend inside a Tuborg-branded beer station -- one of three brands belonging to Carlsberg, which began brewing in Myanmar last year.
"Last night we drank Myanmar [beer], tonight it's Tuborg," he said. "It's great that we have these options now, because we didn't have them before."
Myanmar Brewery Ltd., the maker of Myanmar Beer and other brands, dominates the country's beer market. A report by Euromonitor International, a global market research consultancy, estimated in 2014 that Myanmar Beer's market share was at 64%, followed by Tiger, the Singapore beer brand, at 18%, when the latter was then also being brewed by MBL under license.

World: Financial world emerging as the biggest winner from AB InBev’s proposed takeover of SABMiller
|
AB InBev is $9 bln down, so far, on a currency hedge the brewer arranged for its £79 bln takeover of rival SABMiller. But it will not be drowning its sorrows, BDlive reported on September 10.
That value, lost as the pound sank after the Brexit vote, is being paid away to banks and hedge funds in the foreign-exchange markets. Add it to InBev’s advisory and financing fees, and the bidder’s total costs for the deal will hit $11 bln.
The financial world is therefore emerging as the biggest winner from the proposed tie-up rather than SAB’s shareholders. The UK brewer’s investors have borne the cost of the hedge as much as InBev itself.
The hedge guaranteed that InBev, which reports in dollars, would pay $1.53 for each pound in the original £46 bln cash portion of its offer for SAB.
Sterling’s fall to $1.33 has plunged the value of that contract into the red. Had the pound jumped — say on a vote to remain in the EU — the hedge would have generated a gain for the Belgian brewer.

South Africa: Heineken plans to add more premium beers to its South African portfolio

Heineken NV’s recent introduction of Sol Mexican lager to South Africa forms part of a plan to boost its market share in a country dominated by soon-to-be-acquired SABMiller Plc, Bloomberg reported on September 13.
The Dutch brewer brought Sol to South Africa this month and plans to add more premium brands there, country head Ruud van den Eijnden said in an interview on September 12. Growth will also be achieved through established brands such as Heineken, Amstel and Windhoek, he said.
“South Africans love premium beers, with 39 percent drinking them on a regular basis,” van den Eijnden said. South Africans spent more than 103 billion rand ($7.1 billion) buying beer in 2015, an increase of 9.1 percent from a year earlier, according to researcher Euromonitor International.
Heineken took full control of its South African operations in April after dissolving a joint venture with Diageo Plc. Its share of South Africa’s beer market has remained at about 10 percent over the last five years, dwarfed by SABMiller’s 80 percent. Guinness Nigeria Plc plans to increase exports to improve sales and generate more foreign exchange as the country’s second-largest brewer battles to overcome an economic slump in its home market, Bloomberg reported on September 14.
The unit of London-based Diageo Plc will consider selling Guinness stout and the herbal drink Orijin in South Africa to boost the proportion of beverages it sends to international markets, Chief Executive Officer Peter Ndegwa, 48, said in a Sept. 9 interview at the company’s office in Lagos, the commercial capital. That will help resolve the brewer’s shortage of foreign currency in Nigeria, which the beverage maker needs to pay for imported goods.
“With all the challenges we have had with foreign currency availability, we realize that export is a great opportunity to gain foreign exchange and stabilize,” Ndegwa said. “We have heard a lot of inquiries from South Africa. We are currently in the process of seeing how we can export some of those brands to the country.”
