HOW DOES THE TEMPERATURE AND
HOP AMOUNT INFLUENCE FLAVOUR
EXTRACTION DURING DRY HOPPING?
ABSTRACT
This was one of the questions that was looked into
when our Barth team conducted these small-scale dry
hopping experiments. Applying the temperatures 0°C,
13°C and 20°C with inline GC-measurements of 14
hop aroma components, it was found that for most of
the components a higher temperature results in higher
concentrations in the beer. However the extraction
yield is different for alcohols compared to terpenes and
other compounds. It was also observed that a six-fold
higher concentration of hops yielded, in general, higher
extraction values which are on average only 1-3 times
higher. This may be due to a saturation limit.

USA, WV: The Charleston Brewing Co. sold to Bad Shepherd Brewing Co.

The Charleston Brewing Co.’s location on Quarrier Street has been sold to Bad Shepherd Brewing Co., whose owners, Patrick Guthrie and Jessica Bright, also own Black Sheep Burrito and Brews, next door, Charleston Gazette-Mail reported on October 11.
The remaining craft beer at Charleston Brewing Co. will be the company’s last, as its assets have been sold to Black Sheep Burrito and Brews owners Patrick Guthrie and Jessica Bright for their new startup, Bad Shepherd Brewing Co.
The brewery, which is located next to Black Sheep on Quarrier Street, will be making and selling beer under the Bad Shepherd name by January 2017.
Guthrie said, with Charleston Brewing Co. owner Ann Saville looking to sell the company and it already having close ties with Black Sheep, they decided to purchase the brewery.
“We were already there selling the beer, so now we’re going to come in, change the structure and start a whole new company,” he said.
The sale became official Sept. 30, according to Saville, who also owns Taylor Books, on Capitol Street. The remainder of its beer will be sold at Black Sheep, and Bad Shepherd can use Charleston Brewing’s recipes. Guthrie said Bad Shepherd will offer similar options to Charleston Brewing’s most

Canada, MB: Fort Garry Brewing Company acquired by Manitoba-based limited partnership

The owner of Fort Garry Brewing Company says it has sold the beer maker to a Manitoba-based limited partnership, CBC.ca reported on October 11.
Vancouver-based Russell Breweries announced it has sold Fort Garry for $7.7 million. The company has owned Fort Garry since 2007.
The purchaser, Fort Garry Brewing Company Limited Partnership, is backed by one of the largest diversified private equity firms in western Canada, said Russell Breweries in a news release on October 7.
The sale comes after a "long and extensive strategic review" of Russell Breweries, the company said.
Russell said if a higher, unsolicited bid comes through it may terminate the deal with Fort Garry Brewing Company Limited Partnership at a cost of $750,000.
The company also sold a separate asset, Russell Breweries, to a B.C.-based limited company; effectively selling off all of its operating businesses.

USA, AK: Cynosure Brewing opens its doors in Anchorage
|
A new craft brewery has opened in Anchorage, one that focuses on lagers and Belgian-style beers, KTUU.com reported on October 10.
Located in a former furniture store on East Potter Drive, Cynosure Brewing opened its doors in late September after being in the planning stages for four years.
It’s owned by Clarke Pelz and Cindy Drinkwater, a husband and wife team who are also the brewery’s sole employees at this point.
A mechanical engineer by training, Pelz is a former brewer at Moose’s Tooth Pub and Pizzeria. He worked at the popular watering hole for 15 years, 10 of which he spent running the brewing side of the operation, Pelz said. He left in 2012 to open Cynosure, a term that refers to North Star.
“I told my wife in 2012 that I would have the brewery up and running in six months. Four years later here we are,” said Pelz, shining new fermentation tanks behind him.
After securing investments from old friends and others and getting an equipment loan from a credit union, Pelz pushed through a mountain of paperwork and other hassles to make the brewery a reality.
“We’re still seeing whether it is going to bear fruit but it’ been a wonderful process.

USA, VA: Legend Brewing to open small facility in Portsmouth

Tapping into the statewide trend of breweries opening satellite locations outside their home markets, Richmond-based Legend Brewing is headed for the Hampton Roads harbor, RichmondBizSense reported on October 10.
The beer maker confirmed on October 10 it has signed a lease to open a small brewery and taproom in the Olde Towne section of Portsmouth.
The new outpost will take shape in 4,300 square feet on the ground floor of the Seaboard Coastline Building at 1 High St., according to Legend VP of operations Dave Gott. The building is a former train station that sits along the Elizabeth River and is owned by an affiliate of the Monument Cos., a Richmond-based developer.
The brewery will recreate a smaller version of Legend’s Manchester location to include a full service brewpub that will seat about 120 people. Along with the full line of Legend products, a small brewing system will produce its signature beers at the location.
“We’re very excited to be going into Olde Towne Portsmouth,” Gott said. “The area reminds us a lot of Manchester; it’s up-and-coming and being revitalized, and we hope to add something extra to the whole area.”
Legend hopes to have the taproom and brewery open by the spring of 2017.

Canada: Alberta and Saskatchewan grain harvesting delayed by rain and snow

Many growers in Alberta and Saskatchewan have had to put harvesting on hold because of the recent rain and snow, Globalnews.ca reported on October 9.
It’s been a roller coaster of a season for farmers like Murray Taks who has barley, canola and wheat crops west of Crossfield.
“Well we started out with a drought and then as soon as we started haying, the rains came. It’s been a different year,” Taks said as he assessed his ice-covered barley fields on Sunday.
It was shaping up to be a decent barley yield for Taks, but the cold wet weather put a freeze on the harvest and will likely reduce the frozen remnants to feed grade, dropping the value nearly in half.
“I think for malt barley, the quality is pretty much done. The wheat could end up being feed grade. But the canola won’t take much damage and with the cattle industry the way it is, feed barley isn’t worth much. It doesn’t have any profitability in it at all,” Taks said.

USA, TN: Steel Barrel Brewing Co. construction plans approved by Murfreesboro

Franklin-based Mantra Artisan Ales has plans in the works to build a massive brewery and mixed-use complex on John Bragg Highway east of Murfreesboro, The Daily News Journal reported on October 11.
The plans for Steel Barrel Brewing Co., which were unanimously approved by the Regional Planning Commission on October 10, call for a planned-unit development on the 82.4-acre lot at 6790 John Bragg Highway near Floration Road, according to a site plan provided to the Rutherford County Planning Department. The plans must be approved by the full County Commission to be finalized.
“One of the main goals of this brewery is to promote agri-tourism through the growing of materials onsite, which are needed for producing the locally crafted beers,” Rob Molchan from SEC Inc. wrote in the site plan on behalf of the applicant, Mark Jones.
Jones has partnered with Derrick Morse for the project. Morse is a partner in Mantra Artisan Ales, which is a collaboration with celebrity chef Maneet Chauhan.

Brazil: Brewers pushing back against tax overhaul

Brazilian beverage producers, including groups that represent Ambev SA, Heineken NV and Coca-Cola Co., are pushing back against a tax overhaul they say will open up the industry to fraud and put their trade secrets at risk, ESM reported on October 14.
The government’s plan is to ask companies to self-report the quantity of ingredients they receive and the volumes they produce. That would replace the current use of machines to track how much soda or beer is being made - an expensive method that was meant to cut down on tax fraud but has ultimately been deemed overkill.
Changing the system will cut costs and make better use of revenue generated from state and federal taxes, which combined average about 44 percent for beer, the government says.
But the switch comes at a difficult time for Ambev, Brazil’s top-selling brewer, which is controlled by multinational giant AB InBev SA. To adopt the new system, companies will have to disrupt production at the end of this year, at the peak of summer in the southern hemisphere, according to the manufacturer of the current machines. And Ambev is still working to recover from a sales slowdown that hurt its first-half results.

South America: Craft beer conquering South American markets

Think of Latin American alcohol and you are likely to think of wine and spirits.
Mexico has its tequila, Cuba has rum, Brazilians drink caipirinhas and in Peru they make pisco. In Chile and Argentina, the tipple of choice is often a cabernet sauvignon or a malbec.
You are less likely to think of craft beer.
But slowly, surely, the beer revolution that is so well established in northern Europe and North America is starting to trickle southwards, BBC reported on October 14.
Across Latin America, small breweries are opening up, offering alternatives to the mass-produced brands of lagers.
These emerging microbreweries account for only a tiny fraction of overall beer sales, but that fraction is expanding quickly.
"Sales of craft beer in Latin America are growing at between 20% and 40% a year, depending on which country you're in," says Daniel Trivelli, president of Copa Cervezas de America, one of the region's biggest craft beer contests.
"Here in Chile, sales are growing at 25% and craft beers have around 2% of the overall beer market. We have around 250 craft beer breweries here, producing around 1,500 different beers."

Carlton & United Breweries can officially claim its status as Australia’s number one brewer, Anheuser-Busch InBev has declared, having taken control of the company on October 10.
AB InBev also sought to clarify that Jan Craps, Zone President Asia Pacific South, will have a dual role as Chief Executive Officer of CUB, its Australian business unit.
CUB’s newly appointed president Peter Filipovic is effectively second-in-command, with responsibility for commercial delivery of the division.
Filipovic is one of 13 business unit presidents comprising the Asia Pacific South Zone Management Committee – abbreviated by AB InBev to ‘Zone ManCom’.
All 13 of these executives report directly to Craps. The zone leadership team also includes ‘functional leaders’, most of whom are responsible for leading business functions across the entire zone.
Among their number is newly appointed VP Marketing Richard Oppy, whose role AB InBev said “will initially be focused on delivery for Australia and sharing best practice across the zone – this will be broadened to include full zone responsibility in time”.
Craps said the zone leadership team is made up almost equally of AB InBev and SABMiller colleagues.

Colombia: For Colombians AB InBev’s takeover of SABMiller means more beer choice

One of the most anticipated corporate mergers in recent history was sealed last week when Anheuser-Busch InBev (AB InBev) acquired SABMiller. The Anglo-South African SABMiller purchased Colombia’s Bavaria from the family-owned Santo Domingo Group back in 2005 as part of this international group’s expansion into South America. Bavaria is South America’s No. 2 brewer with 99% market shares in Colombia and Peru, The City Paper Bogota reported on October 14.
As of Oct 10, the news of the third largest ever take-over became official and Bavaria, as well as the niche Bogotá Beer Company became part of the Belgium-based InBev and world’s largest beer company. For Colombia, the brands that are part of beer history, such as Club Colombia, Aguila, Poker and Costeña will continue to dominate the local market, but with the InBev incursion, consumers get more choice, with Stella Artois, Budweiser and Corona expanding InBev’s domestic beer portfolio. And of course you can still enjoy all the craft beer selections by the Bogotá Beer Company in their pubs and in restaurants and supermarkets across the nation.

Latvia: Uzavas Alus brewery to increase production capacity by a third next year
|
Uzavas Alus brewery based in the Ventspils municipality in north-western Latvia (formerly Zaksi) next year will increase its production capacity by one third, the company's owner Uldis Pumpurs told LETA.
He said that Uzavas Alus this year has started selling its beer in Finland where it is available in Stockmann stores and has already won interest of consumers.
At the end of October the company plans to send its first shipments to Germany, where the beer will be sold in Gunars Kirsons' restaurants Kirsons. "If we manage to develop in the Finnish market, then next year Uzavas Alus will expand and increase production by one third," said Pumpurs, adding that in the future also other export perspectives may open, for example, to Russia.
Pumpurs said that the company next year plans to purchase new equipment in order to increase its capacity. Pumpurs did not disclose the planned investments, but said that the EU funding will also be attracted to the project.
Last year Uzavas Alus generated EUR 3.195 mln in sales, up 2.9% y-o-y, and posted EUR 238,940 in loss in contrast to a profit a year ago.
