ONION IN YOUR BEER!
ABSTRACT
A Japanese research team put a lot of effort in finding
the relevant compound for the onion flavour in beer.
2-mercapto-3-methyl-1-butanol (2M3MB) has an onion,
sweaty type aroma, at a threshold of only 13ppb. Its
origin is most likely hops. Firstly this team has shown
that low or no wort aeration reduces the formation of
this off-flavour, secondly they found that 2,3-epoxy-3
methyl-butanal (EMB) is the responsible precursor. Next
to aeration, the yeast plays an important role on the final
level of this compound in beer and will be investigated
further. We hope for a happy ending!

Canada: Ontario’s Brick Brewing Co. reports increased net revenue in Q3 2016

Brick Brewing Co. Limited ("Brick" or the "Company"), Ontario's largest Canadian-owned brewery, released on December 9 its results for the third quarter ended October 30, 2016.
Net Revenues for the third quarter of fiscal 2017 grew to C$11.1 million, up from C$9.8 million in the third quarter of fiscal 2016. Gross margins for the quarter increased to 34.3% versus 25.7% in Q3 of the prior year. Margin expansion was supported by volume growth, improved product mix, strong pricing, as well as overall cost reductions in operations. EBITDA for the third quarter of fiscal 2017 improved to C$2.0 million, reflecting a continuation of the strong results reported in the first half of the year.
"This was, by any measure, another tremendous quarter for Brick Brewing," noted George Croft, President and CEO. "We're reporting double digit growth in branded volume, co-pack revenue and net sales. We've been able to expand margins, increase the investment in our brands, and still deliver over 30% growth in EBITDA. Our Laker brand posted 13% volume growth while LandShark continued to resonate with consumers. Our Waterloo brand declined modestly in the quarter, due to channel inventory reductions. USA, TX: Treaty Oak Brewing & Distilling introduces a brewery to its portfolio

Local liquor favorite Treaty Oak has branched out into the realm of craft beer. The Hill Country destination for booze, now Treaty Oak Brewing & Distilling, has introduced a brewery to its portfolio, CultureMap Austin reported on December 7.
"We're stoked to introduce a new line of beer, brewed fresh at the Treaty Oak Ranch," says Chris Lamb, head distiller and brew master, in a release. "Our beers reflect the same commitment to quality ingredients and precise production methods as we have with our distilled spirits to create the best possible products."
On the bill are three year-round beers, each of which will sit in barrels that have been used to age Treaty Oak spirits like whiskey, rum, and gin. These mainstays include Fitzhugh Ale (British ale), Lil’ Hop (session IPA), and Bright Side (blonde ale). Treaty Oak is also working on a few seasonal creations.
The new beers, as well as the liquor lineup, can be enjoyed at the Treaty Oak Ranch on the Fitzugh Road libations trail. This 30-acre property is molding into a fabulous destination for family fun, special events, and educational outings.

Canada, BC: Whitetooth Brewing quietly launches in Golden
|
The Golden Star newspaper reports that a new brewery quietly opened its doors last week in the southeastern British Columbia town of Golden.
Whitetooth Brewing has been founded by partners Kent Donaldson and Mark Nagao, along with brewmaster Evan Cronshaw.
According to the article, the brewery launched with six brands, three influenced by West Coast beer culture (Blower Pow India Pale Ale, Whitetooth Session Blonde Ale, Speed Metal Foreign Extra Stout), and three inspired by Belgian brewing traditions (Icefields Pale Ale, Launch Pad Rye Ale, Thread the Needle Witbier).
Whitetooth is open from 2:00 PM to 10:00 PM daily with the exception of Tuesdays, with samples and growlers available in the brewery tasting room. Distribution to local pubs and restaurants as well as bottle sales are planned to be added in coming months.

Canada, ON: Shacklands Brewing sets soft launch date
|
Shacklands Brewing has announced via Facebook that it will be soft launching this weekend in Toronto’s Stockyards District, Canadian Beer News reported on December 8.
Founded by accomplished homebrewer Jason Tremblay and partner Dave Watts, Shacklands was originally launched by Tremblay in 2012 as a virtual brewery, with brands brewed at several facilities including Junction and Innocente. The contract operation was put on hiatus last year, and the brewery announced plans to open a physical location in May.
Located in a unit at 100 Symes Road – an industrial building that is also home to Rainhard Brewing – Shacklands will open on Saturday, December 10th for cash-only sales of Wit, Saison and Belgian Blond in bottles and on draught, and Farmhouse Ale on draught only.
According to Ontario Beverage Network, the official grand opening of Shacklands will take place on Saturday January 21st.

USA, MI: Tri-City Brewing Co. to inaugurate new location on December 14
|
Tri-City Brewing Co. has set a grand opening date to get the taps flowing at its new location, the Midland Daily News reported on December 7.
The microbrewery in Bay City plans to open Wednesday, Dec. 14, from 4 to 11 p.m. The new 10,000-square-foot building, at 4170 Shrestha Dr. near Wilder Road and Euclid Avenue, is roughly double the size of the more stowed away former site off Woodside Avenue.
“Due to our former location, in part, we were one of Bay City’s best kept secrets. Now, the secret is out,” Kevin Peil, founder and president of Tri-City Brewing Co., said in September.
The brewery plans to have new suds on tap, including Annie’s Old Ale, an English old ale, and live music by Andrew Kitzman at 7 p.m.
Tri-City Brewing Co. opened in 2007. It invested about $1.3 million in its new manufacturing facility and tap room.

USA: Access to legal marijuana has negative impact on beer sales - study

A new industry study says access to legal marijuana is having a negative impact on beer sales.
According to Brewbound, the research firm Cowen & Company analyzed the beer industries in Colorado, Oregon and Washington, three states that have recreational pot shops, and found that their beer markets have "collectively underperformed" in the past two years.
The "magnitude of the underperformance has increased notably" as beer volumes have dropped more than 2% year-to-date in the trio of pot states, with big mainstream brewers like MillerCoors and Anheuser-Busch InBev seeing the biggest declines, with volumes down 4.4%. Craft beers have done a little better, but are down too, seeing a 2.2% drop.
"While [marijuana] retail sales opened up in these markets at different points of time, with all three of these states now having fully implemented a retail infrastructure, the underperformance of beer in these markets has worsened over the course of 2016," wrote Vivien Azer, Cowen and Company’s managing director and senior research analyst.

Vietnam: Foreign brewers still have to take roundabout path to enter Vietnam’s market

Foreign brewers often set up joint ventures with Vietnamese partners and then take over the capital contribution from the Vietnamese partners. Why do they have to take this roundabout path to enter the market?
Though the regulations are clear, it is still difficult to obtain licenses because the licensing depends on the beverage industry development strategy, VietNamNet Bridge reported on December 8.
In some cases, foreign companies can obtain licenses through negotiations between governments. However, in general, investors must follow complicated procedures to get licenses.
Masan Group, for example, in order to develop a brewery in Hau Giang province, has used a license granted earlier to another company.
Analysts believe that this is why both Heineken and Carlsberg lust for the stakes of Sabeco and Habeco, the two Vietnamese brewers.
Carlsberg is a success story about how a foreign company penetrated the Vietnamese market. The Danish brewer has acquired Hue Brewery which owns Huda and Huda Gold brands.
Analysts commented that Carlsberg took a wise move when it avoided the competitive southern market and decided to dominate the central region, which accounts for 6 percent of total beer consumption in Vietnam.

UK: Heineken launches new H41 lager made with wild yeast from Patagonia
|
Heineken has announced the launch of H41, a new lager made with 'wild' yeast from Patagonia, into the UK on-trade, the Morning Advertiser reported on December 8.
The 5.3% ABV limited-edition beer has been launched exclusively across Laine Pub Company sites in London and Brighton with an eye to expanding its availability in the future.
It will be available on draught and in 330ml bottles.
Heineken master brewer Willem van Waesberghe said: “When we had brewed the first two litres of the beer from this yeast and we started to smell it and taste it, I thought wow, we have immediately found something which fits what we wanted to do – play with yeast, brew a Heineken and show that when you change the yeast, everything changes in the beer.”
The Patagonian 'wild' yeast used in the beer’s production – reportedly the 'mother' yeast of Heineken’s A Strain, which has been used to create its beers since inception – is a rare variety discovered in the remote Argentinian region.
The name H41 is a nod to the latitude co-ordinate of the mountain range where it was found.

The Czech Republic: Beer-loving Czechs approve smoking ban in pubs, restaurants

The Czech lower house of parliament on December 9 approved a ban on smoking in restaurants, bars and pubs, overcoming years of wrangling and bringing the country in line with most others in the European Union, Reuters reported.
"This brings the Czech Republic (in line with) civilized countries that care for the health of their citizens," Prime Minister Bohuslav Sobotka said.
Parliament's upper house must sign off on the legislation but the lower house vote showed there was enough support to override any potential veto. The law is to take effect on May 31, 2017, the annual World No Tobacco Day.
Seventeen of the 28 EU member states have comprehensive smoking-free laws in place. The ban enjoys support from three in four Czechs, polls show, but is sensitive all the same as Czechs are fervent pub-goers and beer drinkers are often smokers. Moreover, Czechs drink the most beer per capita in the world.
About 28 percent of Czechs are smokers, somewhat above the EU average of 24 percent. About 18,000 Czechs die annually from smoking-related illnesses, the Health Ministry says.
