PICK YOUR HOPS BEFORE THE ONION TAKES OVER!
ABSTRACT
Sulfur components in hops have many different faces.
Though we love them for bringing us flavors such as
rhubarb, passion fruit, grapefruit and black currant
flavours, they also surprise us with nasty flavours such
as onion-like, garlic-like or just cheesy. By name, these
are known as S-methyl-thioisobutyrate, S-methyl-thio-2-methylbutyrate, S-methyl-thioisovalerate, S-methylthio-4-methylpentanoate, and S-methyl-thiohexanoate.
One parameter that significantly influences the
formation of these compounds is the harvest time of
the hops. This article shows how the concentration of
the onion/garlic compounds increases during harvest
time for varieties as Cascade, Mandarina Bavaria,
Polaris, Hallertau Blanc and Hüll Melon. Although many
studies have shown that a later harvest brings a more
overall flavourful aroma profile for some varieties, e.g.
Hallertau Mittelfrueh (and I put here my hypothesis
that this includes many varieties that express intense
fruitiness such as Citra, Mosaic, Cascade, etc.), the
harvest date should be chosen carefully.

Riding on a trend towards premiumisation, craft beer, though still a very small market in China, is likely to continue gaining considerable share and should enjoy remarkable performance.
That is according to a new report by Rabobank into China’s craft beer market at a time when the traditional beer market has matured considerably and is now much more developed than in countries in Southeast Asia.
With annual consumption above the global average at 36 litres per capita, the beer market has witnessed a significant increase in both value and profitability, though much depends on regional differences. The well-developed eastern provinces consume much more beer than the emerging west, though it has reached a ceiling with stagnant volume growth.
Today, beer production in Beijing is lower than it was in 2006, whereas in Qinghai it is still growing and has risen by 180% over the last ten years, the Dutch agricultural bank found.
Following a global trend towards premiumisation, mainstream beer in China has gone through a difficult time over the past five years, while super-premium beer volumes have grown by 160% and now account for 4% of the volume and 18% of the profit pool.

India: Leading brewers to limit new product launches this year
|
Product launches by India’s leading breweries will happen at a slower pace this year, tamped down by subdued discretionary spending and naturally longer lead-times in creating new products, Livemint reported on January 3.
Firms such as United Breweries Ltd (UB), Amrut Distilleries Ltd and Allied Blenders & Distillers Pvt. Ltd (ABD) have all lined up launches of some new brews and blends for 2017, a year when growth in the sector is expected to remain slow.
Beer maker UB launched a new alcoholic beverage, Kingfisher Buzz, early last year in berry and lychee flavours and plans to add variants this year. UB, which currently sells Buzz in cities such as Mumbai, Pune, Goa, Delhi, Bengaluru and Mysuru, also plans to take it to states such as Haryana and West Bengal.
“We’re looking at launching new flavours in Buzz and new (beer) brands over the year,” said Samar Singh Sheikhawat, the company’s senior vice-president, marketing.
Family-run Amrut Distilleries Ltd, known for its single-malt whiskies, plans to introduce two premium rums. The company already sells a pale rum called Two Indies and is planning to launch a dark rum this year under the same brand name, most likely in April.

USA: Brewers push for new Great Plains barley cultivars

The craft beer boom continues its popularity push. According to 2015 data, even though overall beer sales declined slightly (-0.2%), craft beer saw 12.8% gains and now accounts for more than 12% of all U.S. beer sales, AgWeb reported on January 3.
Malting barley is a critical component of any craft beer, but this grain crop hasn’t seen the same robust growth in recent years. The American Malting Barley Association reports that acres have been down or flat for the entire 21st century, hovering at less than 4 million total acres.
“Barley is facing stiff competition from corn, soybeans, canola, wheat, and other crops that are receiving substantial private sector investment, including GM variety development, and that have more favorable federal farm program provisions,” according to the group’s annual report.
But AMBA and other groups have pumped hundreds of thousands of dollars toward barley improvement research and successfully lobbied Congress and USDA for millions more in funding. One of the more recent research stories comes by way of the Brewers Association, which has awarded four regional barley breeders and geneticists with a grant aimed at developing winter malting barley varieties specifically adapted to the Great Plains region.

This doesn’t appear to be the best of time for stakeholders in Nigeria’s sorghum industry, as lack of stability in government policy has pushed the sub-sector to the brink of collapse. Also, unjust import tariff system has not helped the situation, the Guardian reported on January 1.
The development has left local investors at the mercy of importers who bring in cheap barley malt, malt extract, glucose and maltose syrups to the detriment of locally made sorghum-based malt and extracts.
Managing Director, Food, Agro and Allied Industries Limited, Mr. Sudhansu Sinha, in an interview with reporters said the current waivers given to barley malt and barley concentrates imported into the country from Europe mean that thousands of workers in the farming, processing and storage segments of the sorghum value-chain could lose their jobs.
He explained that, “The decision by previous administrations, reversing ban on importation of barley malt with very low import duty and exemption from VAT and levy, has brought about a catastrophic reversal to the fate of investors and producers of sorghum malting and sorghum-based extract in Nigeria.”
