WHO IS RUINING MY BEER FOAM?
ABSTRACT
It is an interesting observation that dry hopped
beers often have less stable beer foam. Why is this?
Comprehensive testing by a research team has found
that with dry hopping, the amount of iso-alpha acids
slightly decreases in the beer due to precipitation.
Increases in humulinones and alpha acids were
observed but both are rather foam positive so they
are likely not the cause. Beta acids are foam negative,
but due to low concentration in beer, they are also
not guilty. But two parameters were found to be of
importance: 1) Temperature - the foam stability is very
sensitive to temperature change, and 2) Hop lipids -
they are known to be gushing surpressing, so it is no
surprise they are foam negative. Problems with foam
stability? Contact Barth-Haas to discuss!

Canada: Canadian Malting Barley Technical Centre releases list of recommended malting barley varieties
|
The Canadian Malting Barley Technical Centre has released its annual list of recommended malt barley varieties.
The list represents varieties that the centre recommends based on the greatest potential for performance, quality, and marketability.
This year’s list includes:
2-row varieties – CDC Copeland, AC Metcalfe, Bentley, CDC Meredith, CDC PolarStar, Newdale, Merit 57, CDC Kindersley, AAC Synergy;
6-row varieties – Legacy, Tradition, Celebration.
The recommendations are published annually with input from grain companies, domestic and international maltsters and brewers, grower associations as well as seed companies.
“We examine selection rates and consult with industry to gauge the level of demand for specific varieties,” said Peter Watts, the centre’s managing director.
“The list represents malting barley varieties that we believe have the greatest potential to be selected for malt. We also recommend growers talk to their local elevators, or selectors from grain and malting companies, about the best two-row and six-row malting barley varieties to grow in their area.”

Canada, NS: Lunn’s Mill Beer Company opening soon in Lawrencetown
|
The Annapolis County Spectator reports that a new brewery will be opening soon in Lawrencetown, a small village in Nova Scotia’s Annapolis Valley.
Lunn’s Mill Beer Company – which is named after the original name of Lawrencetown – is being founded by partners Mark Reid, Chantelle Webb, Sean Ebert, and Chad Graves.
According to the article, the group intends to offer “handcrafted beer in small batches and a chef-run kitchen preparing good food on-site for some sit-down or stand-up eating.”
Located on a seven acre property near the Beavercreek Winery, Lunn’s Mill will initially be running on a 150-litre brewing system, with a larger system due to arrive in the spring. Beer will be available in growlers at the brewery, local farmers’ markets, and via home delivery.

USA, OH: Heavier Than Air Brewing Co. may open as early as this spring in Centerville
|
A new brewery could open as early as this spring in the Normandy Square Shopping Center on Ohio 725 east of the Dayton Mall in Centerville, Ohio, the Dayton Daily News reported on January 9.
Heavier Than Air Brewing Co. at 497 Miamisburg-Centerville Road will be overseen by brothers and Centerville natives Nick and Chris Tarkany, with an assist from two of Nick’s sons, Ben and Nick Jr. The idea came from Ben.
“My youngest son Ben got me into homebrewing 10 years ago,” Nick Tarkany said. Nick and his brother Chris “have always wanted to make something, and we both love making beer,” Nick said.
Chris Tarkany said that 30 years ago, he wrote a class paper on why craft beers were going to become successful — “and that was when all we had was Anchor Steam.”
The unexpected death of an older brother acted as a catalyst for the two younger brothers to chase their dream of operating a brewery.
“You only live once,” Nick Tarkany said. Looking at his younger brother, he added: “We are not spectators in life. We’re participants.”
The co-founders are deeply involved in the buildout of the 2,000-square-foot space, two doors down from a new Submarine House bar and

Canada, AB: Elbeck Brews set to release its first beers soon
|
Prairie beer news site On Beer reports that a “gypsy brewing” operation from an Edmonton-based brewing veteran is getting set to release its first beers soon.
Elbeck Brews is being launched by Bruce Sample, a long-time homebrewer who has also worked at several Alberta breweries over the past decade, most recently serving as head brewer at Yellowhead Brewing.
Named after the street in Houston, Texas where Sample and his wife lived in 1980s and 1990s – and where he discovered craft beer and started his homebrewing experiments – Elbeck will be debuting with KGB Russian Imperial Stout, a revival of beer that took the Best of Show award at the Edmonton Homebrewers’ Guild annual competition several years ago. Future planned releases include a series of flavoured porters and an oat-based IPA.
The initial Elbeck beers are being brewed at the Two Sergeants Brewing in Port Saskatchewan, and Sample says that he “hope[s] in a year or so to be brewing at three different breweries, offering different packaging and style options.” In the longer term, he intends to open an Elbeck brewpub and production facility.

USA, MI: Eastern Market Brewing Co. gets a grant helping it to open this spring
|
A Motor City Match grant announced on January 9 closes the gap to help Eastern Market Brewing Co. open this spring, co-owner Dave Keyte said in an interview to the Detroit Free Press.
The $40,000 grant will help get the taproom built at the brewery's two-story, 5,200-square-foot brick building, built in 1929 on Riopelle between Winder and Adelaide. Renovations under way since last year are moving forward, with demolition complete, and they're aiming for a mid-April opening.
"Things are going great," said Keyte, 30, of Kalamazoo, adding that the money will help with putting in the bar, tables and seating. "We're using local manufacturers for all the furniture and tables."
"It's huge to be recognized and supported by the Detroit Economic Growth (Corporation)," Keyte said. "We're bullish on Detroit, and we're bullish on America."
The other co-owners include Dayne Bartscht, Paul Hoskin, Devin Drowley and Brad Silverman, who all attended Northwestern University in Chicago together.

Canada, BC: Agricultural Land Reserve rules threatening Persephone Brewery’s operations
|
A brewery in Gibsons, British Columbia says they want to see changes made to Agricultural Land Reserve rules so they can continue operating on their property, CBC.ca reported on January 9.
Persephone Brewery says their application for a "non-farm use distinction" was rejected by the Agricultural Land Commission and now they have two years to meet ALR rules — or leave.
"For breweries or distilleries or meaderies, we have to grow 50 per cent of the ingredients we use in the brewing process on the farm where you're producing the beer," Persephone CEO Brian Smith told On The Coast host Stephen Quinn.
"It's effectively asking us, on our 11-acre parcel on the Sunshine Coast, to grow malt-grade barley in the volume necessary to keep our business viable … those are big variables with respect to growing barley. Really, the places in the province that grow good, malt-grade barley are up on the Peace River in the Vanderhoof region, not on the Sunshine Coast."
The Ministry of Agriculture responded via statement defending its guidelines, saying its approach provides a balance between offering farmers a value-added opportunity on their farm and ensuring farming remains an integral part of the overall operation while helping to preserve farmland

Japan: Suntory aims at increasing total beer sales by 1% this year
|
Japan’s Suntory Beer Limited made public its business strategy for 2017 on January 10.
The company said in 2016, the total market for the beer category in Japan (including happoshu, new-genre beer, and non-alcoholic beer-type beverages) was estimated to shrink about 2% from the previous year. Under these circumstances, Suntory Beer Limited had total sales of 71.65 million cases (one case is equivalent to twenty large (633 mL) bottles), which is down 3% year-on-year, as the sales volume was in line with the market size. Sales of the beer category, excluding non-alcoholic beer-type beverages, totaled 64.61 million cases (down 3% year-on-year).
This year, the total market for the beer category in Japan and the beer market in Japan excluding the non-alcoholic beverages is forecast to shrink by about 2% from the previous year. Suntory Beer Limited said it will further bolster marketing activities related to the three core brands of The Premium Malt's, Kin-Mugi, and All-Free to stimulate new demand and provide added impetus to the beer market. Suntory Beer Limited's goal is to sell 72.7 million cases (up 1% year-on-year) with the aim of selling 65.5 million cases (up 1% year-on-year) in the beer category.

Vietnam: Vietnam’s beer market a promising destination for global beer companies
|
With high growth potential, Vietnam has become a promising destination for leading global beer companies, according to Sai Gon Giai Phong newspaper.
Belgium’s Anheuser Busch InBev opened a beer factory in the southern province of Binh Duong, while the Netherlands’ Heineken plans to expand its factory in the southern province of Ba Ria – Vung Tau and increase productivity from 50 million litres at present to 60 million litres by 2025.
The Japanese Sapporo beer company has introduced new products to the public.
According to Kirin International Food JSC, Vietnam produced nearly 4.7 billion litres of beer in 2015, becoming the world’s third largest beer producer. With this output, Vietnam recorded the highest growth rate of over 20 percent compared to 2014, much higher than the figure of 8.8 percent recorded by Belgium – the runner-up.
Asian and global beer output in 2015 saw year-on-year declines of 1.3 percent and 1.1 percent respectively.
Along with India, Vietnam is one of two nations recording consecutive growth in beer output over the past 15 years.

Finland: Proposed alcohol reform could bring down strong beer prices and have great impact on consumer purchasing habits
|
If passed by Parliament, the Finnish government's proposed alcohol reform could have a great impact on consumer purchasing habits, YLE News reported on January 11.
According to a new report, the reform would lead to significantly lower prices for strong beer, a decrease in the amount of alcohol brought to Finland from Estonia by Finnish travellers, and an increase in alcohol consumption.
Supermarket shoppers could in future get stronger booze without visiting the state alcohol monopoly retailer, Alko.
Stores in Finland would be able to sell drinks containing up to 5.2 percent alcohol such as strong beer. The current limit for retail grocery sales is 4.7 percent alcohol.
That difference may sound insignificant, but a new Taloustutkimus Research survey commissioned by the Finnish Grocery Trade Association says the consequences could be great. It claims that retail prices for strong beers and ciders will drop by 40 percent. The survey also says that this will lead to an increase in alcohol sales, but owing to taxation differences beer containing 3.5 to 4.7 percent will become a more affordable option.
The reform will also make it less financially enticing for travellers to buy alcohol in neighbouring Estonia and cart it back to Finland.

India: Supreme Court asks Mallya to explain transfer of Diageo payout to his children
|
The Supreme Court on January 11 asked businessman Vijay Mallya to explain why he transferred the $40 million payout he received from London-based liquor maker Diageo Plc. to his children, Livemint reported.
A bench comprising justices Kurian Joseph and A.M. Khanwilkar was hearing a plea filed by a consortium of banks that sought to recover the $40 million from Mallya.
On 25 November, in an affidavit submitted before the apex court, Mallya admitted that the money had been transferred to his three children—Siddharth, Leena and Tanya Mallya—who were US citizens and sole beneficiaries of the three respective trusts over which he had no control in his individual capacity.
Mallya had received the payment of $40 million out of a $75 million package from Diageo following his resignation as chairman of United Spirits Ltd in February 2016.
In April, the apex court directed Mallya to disclose all the assets held by him and his family, after the consortium of creditors spurned his offer to repay Rs4,000 crore to settle the debt of Kingfisher Airlines. He later agreed to disclose a list of assets held by him in India in a sealed envelope to the Supreme Court and requested it to not hand this information to
