WHO IS RUINING MY BEER FOAM?
ABSTRACT
It is an interesting observation that dry hopped
beers often have less stable beer foam. Why is this?
Comprehensive testing by a research team has found
that with dry hopping, the amount of iso-alpha acids
slightly decreases in the beer due to precipitation.
Increases in humulinones and alpha acids were
observed but both are rather foam positive so they
are likely not the cause. Beta acids are foam negative,
but due to low concentration in beer, they are also
not guilty. But two parameters were found to be of
importance: 1) Temperature - the foam stability is very
sensitive to temperature change, and 2) Hop lipids -
they are known to be gushing surpressing, so it is no
surprise they are foam negative. Problems with foam

USA, CA: Russian River Brewing Co. planning new brewery in Windsor
|
It’s a busy time for Santa Rosa’s Russian River Brewing Co., maker of cult beers like Pliny the Younger, the San Francisco Chronicle reported on January 11.
As the brewery team gears up for the 14th annual release of Younger — which will run from Feb. 3- Feb.16 — they’re getting ready to break ground on a brand new, 35,000-barrel brewhouse in Windsor, more than twice the brewery’s current size. The project has been in the works for years and will feature a tasting room, gift shop, second brewpub with outdoor seating and both guided and self-guided tours. The groundbreaking is expected in late March, with a goal of opening for business in 2018.
“Everything has gone really smoothly,” said Natalie Cilurzo, who owns Russian River Brewing Co. with her husband Vinnie. (Check out my 2015 profile of the couple and the company.) “It’s been a really fascinating, and time-consuming, process.”
“We’re adding a lot more sophistication to our brewing process by getting updated equipment,” she added.

USA, VA: Dragon Hops Brewing Company eyeing June opening in Purcellville, VA
|
Purcellville will welcome its sixth brewery this spring as Dragon Hops Brewing Company announced they have leased the space at Purcellville Marketplace on Main Street, the Loudoun Times-Mirror reported on January 10.
For the past two years, Dragon Hops, a family- and veteran-owned farm, has been growing hops on their bines several miles outside of town.
The certified organic farm initially marketed their hops as “fresh, green hops,” but they found a demand for processing the hops to dehydrated pellets, so they decided to take their business a step further. They purchased equipment and developed a fully functioning processing facility at the farm.
“We have USDA certified organic hops processed and ready to sell,” said James Horris, co-owner of Dragon Hops.
Horris said after they invested in the production process, the logical next step was to open their own brewery.
After looking at several spaces around the area, they found “the perfect location” at the Purcellville Marketplace, which is “in the center of town, near the bike trail and near other attractions such as Catoctin Creek,” Horris said.
“The location couldn't be better. We will start brewing our own beer after we move in Feb. 1,” he said.

USA, CA: Out of Bounds Brewing expanding to a second location in Folsom
|
More than three years after opening Out of Bounds Brewing in Rocklin, the brewery is expanding its brand with a second location — a 5,500-square-foot brewpub and biergarten in Folsom, the Sacramento Bee reported on January 12.
The Folsom project, in a building off Folsom Boulevard near Blue Ravine Road that formerly was a daycare center, is already under construction and is expected to open in June.
“We’ve seen our tasting room numbers go through the roof,” said Eric Johnson, chief executive officer of Out of Bounds. “With the changes in the beer industry, we’ve always wanted to have a brewery restaurant with an outdoor biergarten that the community can embrace.”
A construction crew will raise the roof to create 16-foot ceilings with massive Douglas fir trusses, according to Johnson. The outdoor sitting area will be 3,500 square feet and will feature fire pits, a stage for live music and direct access from the bike trail. A private barrel-aging room will be available to reserve for private parties.
Johnson said the brewery is already ramping up production with anticipation of selling much more beer. In 2016, Out of Bounds brewed 1,200 barrels of beer; in 2017, projections are to brew 4,500 barrels, he said.

Canada, NB: Murchie’s Microbrew getting close to launch its beers in Florenceville-Bristol
|
Maritime Beer Report has announced that a new contract brewery is getting close to launch in New Brunswick.
Murchie’s Microbrew has been established by local brewer Matt Murchison as a brand name for the beers he will be producing out of the Railcar Brewing facility in Florenceville-Bristol, a small town located approximately 90 minutes northwest of Fredericton.
The first beer from Murchie’s is expected to be released in February, and it will be available on tap at Railcar and other local bars and pubs.
Murchie’s is the second contract operation to brew out of Railcar, following the late 2015 launch of River Valley Micro.

Canada: Molson Coors Torono brewery workers go on strike
|
No beer shortages are expected, at least for the short term, after workers at the Molson Coors plant in Toronto walked off the job when labour negotiations between the union and the beer giant broke down this week, Globalnews.ca reported on January 13.
Around 320 employees at the Carlingview Drive brewery in Toronto hit the picket line at noon on Thursday, January 12 when both sides couldn’t reach a deal.
The Canadian Union of Brewery and General Workers Local 325, the union which represents the workers, said the company wants to cut wages, pensions and benefits by 7 per cent.
The union rejected a “settlement offer” in December after members voted 100 per cent against it.
A statement released by Molson Coors Canada said the company is disappointed the deal fell apart but are committed to reaching a “globally competitive agreement.”
“At Molson Coors Canada, we are disappointed that our union partners have rejected a deal that is fair to employees, allows the company to be more efficient, and is similar to collective agreements with unionized employees in other Canadian breweries,” VP of Corporate Affairs at Molson Coors Canada Gavin Thompson said.

USA: Legalisation of marijuana does not curb beer sales – new report
|
The legalisation of marijuana in several US states has not curbed beer sales, according to new research, as Americans managed to find room in their social schedules for both, the Guardian posted on January 13.
Analysts at investment firm Bernstein said fears that the brewing industry would be sent into chronic decline by red-eyed revellers reaching for joints instead of beers have proved unfounded.
“At first sight, one would regard marijuana and alcohol in general as clear rivals and that every extra dollar spent on weed meant a dollar less on booze,” they said.
But rather than swapping Budweiser for bud-smoking, the legalisation of marijuana for medical or recreational purposes has in some cases corresponded with an uptick in beer consumption.
In states where medical marijuana is legal, beer consumption was down 0.6% on average in the three years leading up to legalisation, but rose 0.1% in the three years after.
Bernstein admitted its analysis was based on a relatively small number of states over just a few years but said: “Our analysis indicates that the legalisation of medical marijuana had a positive impact on beer volume trends.”
It said this suggested “beer and weed are complements rather than substitutes”.

Vietnam: Habeco to list on the Ho Chi Minh City Stock Exchange on January 19
|
Hanoi Beer Alcohol and Beverage, or Habeco, will list on the Ho Chi Minh City Stock Exchange (HOSE) on Jan. 19 with 231 million shares at 127,600 dong ($5.63) apiece, the Nikkei Asian Review reported on January 12.
The offering price is almost three times higher than Habeco's first listing on the Unlisted Public Company Market (UPCoM) in October. It is also higher than the offering price of the largest beer producer, Saigon Alcohol Beer and Beverages, or Sabeco, which last month listed its shares at 110,000 dong apiece.
Ahead of the HOSE listing, Habeco shares closed on January 11 slightly up at 128,000 dong on UPCoM.
Beer consumption in Vietnam reached 3.8 billion litres in 2015, and the industry is projecting annual growth of 4-5% for the next five years.
Habeco had almost 22% of the market by volume in 2014 and 2013, but this fell back to 19.8% with 668 million litres in 2015. In 2015, Sabeco held 41% of the market with 1.38 billion litres, while Heineken had nearly 22% with 729 million litres, according to the Vietnam Beverage Association.

Ukraine: Beer export increases in volume but declines in money terms in 2016
|
Ukraine’s beer export totalled USD19.14 mln in money terms last year, which is 13% less than in 2015, Finance.UA reported on January 11 citing the State Fiscal Service.
In volume terms, the nation’s beer exports increased by 2% to 0.769 mln hl. Ukraine mostly exports beer to Moldova, Belarus, and Algeria.
Beer imports in the country declined by 24% to 0.22 mln hl but grew by 5.2% in money terms – to USD24.93 mln. Main beer exporters to Ukraine are Belgium, Mexico, and Germany.

UK: New malting barley variety Laureate emerges as a serious competitor to Concerto
|
The new malting barley variety Laureate has emerged as a serious contender for Scottish growers who are looking for an alternative to market leader Concerto, The Courier reported on January 13.
AHDB trials have demonstrated it is high-yielding and less susceptible to skinning than Concerto, although it is no earlier to ripen. It been awarded provisional approval for malt distilling and brewing by the Institute of Brewing and Distilling (IBD), and plant breeders Syngenta are optimistic it will be given full approval this summer.
Speaking at a variety update in Perth, the company’s seed manager Samantha Brooke said the distilling industry was keenest on finding a new barley because they had less choice of varieties which had full IBD approval for malt distilling.
She added: “Laureate has produced excellent quality for both markets – with a high spirit yield for distilling and a high hot water extract for brewing. It has also performed well in both Scotland and England.
“It is the first variety to tick all the boxes for Scotland since Optic was launched 21 years ago.
