REAL THIOLS ARE NOT ALL
HANGING OUT WITH CYSTEINE
ABSTRACT
A couple of studies in the recent past point towards
the importance of sulfur components contributing to
grapefruit, passion fruit and sauvignon type flavours.
It was thought that these thiols are released from
cysteinylated structures. However a Belgium research
group discovered that when producing dry hopped
beers with single hop varieties (Amarillo, Hallertau
Blanc and Mosaic), the yield of 3M4MP (grapefruit-like
flavour) was much higher than expected. As evidenced
in grapes these thiols can also come from S-glutathione
precursors and this research group was able to prove
the occurrence of S-3-(1-hydroxyhexyl) gluatthion and
S-3-(4-methyl-1-hydroxpentyl) glutathione in hops at
levels well above those reported for their cysteinylated
counterparts. For the release of cysteine conjugates
the beta-lyase can be responsible and the mechanism
behind the cleavage of S-glutathione precursors yet has
to be discovered. The potential to retrieve fruity aromas
from these structures seems to be a big factor for the
metioned varieties.

Glutathione S-Conjugates in Hop, J. Agric. Food Chem. 2016, 64, 8572-8582

The Brewers Association (BA)—the not-for-profit trade group representing small and independent craft brewers—on March 15 released its annual lists of the top 50 craft and overall brewing companies in the U.S., based on beer sales volume. Of the top 50 overall brewing companies, 40 were craft brewing companies.1

The top 5 craft breweries are D. G. Yuengling & Son, Inc, Boston Beer Co, Sierra Nevada Brewing Co, New Belgium Brewing Co, and Gambrinus.

USA, WI: Pabst Brewing Co. brewing at historic complex in Milwaukee for the first time since 1996
|
For the first time since 1996, Pabst Brewing Co. is producing beer at its historic complex just west of downtown Milwaukee, the Milwaukee Business Journal reported on March 13.
In fact, for years the Los Angeles-based company has not actually brewed its own beer at all, producing 6 million barrels a year at contract brewers, including MillerCoors in Milwaukee.
The press was invited to a sneak peek on March 13 at a new microbrewery in a former Methodist church at 1037 W. Juneau Ave. The building, which Pabst bought in the late 1800s, has been a ratskeller and training center for Pabst employees and a German restaurant called the Forst Keller. It has now been remodeled into a brewery and gastropub, with a beer garden in the works out back. The brewery is in the basement, with the pub above, in the former sanctuary of the old church, a light-filled, high-ceiling room with a bar, three large copper serving tanks, long tables and additional seating in the former choir loft. The business plans to open to the public on April 14, “Milwaukee Day” (4/14). The design was done by DUB Studios of Los Angeles, where Pabst is now based, with Engberg Anderson

USA, CA: Docent Brewing to open next month in San Juan Capistrano
|
As the oldest community in Orange County, San Juan Capistrano has its fair share of docents. Some don the iconic uniform of a red jacket and a black hat and show visitors around the tranquil grounds of the Mission. Others guide groups of residents and visitors each weekend around the city’s historic architecture.
But you won’t find San Juan’s newest docents in a museum or an art gallery. They’re working on opening a new public house, where they’ll guide each patron through experiencing and appreciating a glass of fine craft beer, the Capistrano Dispatch reported on March 13.
Docent Brewing, self-dubbed “San Juan Capistrano’s public house,” is set to open next month, with the goal of encouraging residents to get to know their neighbor and beer maker.
The city’s first full-fledged brewery is the brainchild of San Juan Capistrano residents Joe Wilshire and Brian Hendon, and Laguna Beach resident Scott Cortellessa. The three friends met years ago via family connections, and it didn’t take long before they realized they had a common love of craft beer.
After many a campfire conversation, the trio decided to turn their dream of brewing their own craft beer into a reality and began the planning process almost five

USA, WA: River Mile 38 Brewing Co. is up for sale
|
River Mile 38 Brewing Co. is up for sale, The Daily Astorian reported on March 10.
Three years ago, Drop Anchor Brewery opened on Third Street in Cathlamet with 12 investors. Less than a year after opening, the brewery faced a trademark lawsuit from California’s Anchor Brewing and changed its name to River Mile 38 Brewing.
The brewery is now owned by six partners, including Richard Erickson, Steve Sharp, Andy Lea, Rob Stockhouse and Barry Aiton in Cathlamet; and Danna Speer in Texas. Erickson, a managing partner in the brewery, said the owners, two in their 50s and the other four in their 60s and 70s, are looking for someone younger to take the brewery to the next level.
“We all have other jobs,” he said. “We opened this up to be like a little clubhouse.”
Erickson said the owners are selling the entire business and remaining lease with the Port of Cathlamet for $550,000. The port had built a 1,500-square-foot building for River Mile 38, which includes a 10-barrel brewing system and five 10-barrel fermenters producing about 400 barrels of beer a year.
“We have 14 beers on tap in our brewery,” Erickson said.
The brewery’s taproom opens two days a week in the winter

USA, KY: Diageo opens Bulleit distillery in Shelbyville
|
Bulleit, the Diageo-owned bourbon brand, has formally opened its new US$130m distillery in Shelbyville, Kentucky, the Drinks International reported on March 15.
Diageo’s initial investment in building the distillery is $115 million for the site. Combined with the $18 million investment that was made to open the Bulleit Frontier Whiskey Experience at Stitzel-Weller, the company says Bulleit has contributed more than $130 million to Kentucky’s economy since 2014.
The Bulleit Distilling Co was founded in 1987 by a young entrepreneur who left his job as a lawyer to pursue his passion – making bourbon.
Tom Bulleit said: “We’re so proud to open the Bulleit Distilling Co. here in Shelbyville. Seeing this distillery come to life has been a truly surreal experience that couldn’t have been achieved without the tireless work of so many men and women. We can’t wait to share the delicious whiskey that will be produced here for centuries to come.”
The opening coincides with the brand’s 30th anniversary. It was attended by Governor Matt Bevin and a number of other elected officials and dignitaries.
Bulleit was bought by Seagram in 1997, and was and made at its Four Roses distillery in Lawrenceburg, Kentucky. Diageo and Pernod Ricard bought Seagram and carved

USA, FL: New River Brewing slated to open in Fort Lauderdale before this fall
|
Later this year, Fort Lauderdale will welcome a new brewery to an industrial complex just south of Sailboat Bend and the Tarpon River, the Miami New Times reported on March 15.
Riverside Market's founders and Native Brewing's Adam Fine have partnered with the Restaurant People to form New River Brewing. The project has been a long time coming for Riverside Market husband-and-wife team Julian and Lisa Siegel, who say they considered several locations over the past few years — everywhere from Pompano Beach to Fort Lauderdale's FAT Village — before settling on the current spot.
No strangers to the craft beer community, the Siegels are credited with launching one of South Florida's first craft beer bars, Riverside Market. The restaurant and self-serve beer bar, which expanded to a larger location several years after its founding in 2001, has enjoyed successful organic growth and today is considered one of area's most iconic establishments.
In 2014, the Siegels launched Craft Beer Cartel, rebooting the original Riverside Market convenience store as a homebrew and bottle shop. In July 2015, the couple opened a second location, Riverside Market South, in east Fort Lauderdale. A third Riverside Market is under construction in Plantation.
Fine, also founder of Fresh Beer

USA, PA: Conny Creek Brewing Co. aiming at late summer opening in Allegheny Township
|
First a winery, and now comes a brewery to Allegheny Township, Tribune-Review reported on March 12.
Lee and Erin Layton will open Conny Creek Brewing Co. late this summer or early fall at the former Freedom Farms Cafe and Carry-Out location along Route 56 and Shearsburg Road. The brewery, located at 4323 Shearsburg Road, is the second business to offer locally made libations in the township. Wooden Door Winery on Greenwood Road has been open since 2010.
Lee Layton said customers can look forward to trying seven to 10 rotating beers on draft. He said his beers should cater to all tastes, with everything from India pale ales to sour beers.
“I try to keep everything pretty simple, straightforward,” Lee said of his brews.
The couple plans to produce nearly 1,000 gallons of beer each month to sell in pints, growlers and cans.
“We'll probably try to sell most of that in-house,” Lee said.
They also hope to offer a small rotating food menu including sandwiches, salads and soups. They plan to get some of their produce from a friend's farm in Butler County.
“I don't like deep fried (foods),” Erin Layton said. “I like fresh ingredients.”
Lee Layton, 28, began brewing beer at home six years ago

USA, VA: Reason Beer set to open in Charlottesville in June
|
Three childhood friends have returned to the Charlottesville area to open a brewery.
Reason Beer is set to open in a space in the former Comdial building, close to the Shops at Stonefield, in June, The Daily Progress reported on March 11.
Patrick Adair and cofounders Mark Fulton and Jeff Raileanu met when they were in elementary school at their church’s youth group and have remained friends ever since.
Adair and Raileanu went to Albemarle High School and Fulton went to Charlottesville High School. Fulton and Adair attended the University of Virginia, while Raileanu went to Duke University.
Though the three eventually ended up in different cities, they decided to open their brewery near friends and family in their hometown.
“We really decided we’re going to look all over the country, we’re going to look at different areas of the country, we thought about Northeast, out West,” Adair said.
“There are so many breweries in all those areas, it feels like there’s a lot of breweries in Charlottesville, but when you look at the number of breweries per capita, there are actually fewer breweries than you’d expect for an area this size,” he said. “Especially with the focus on farm-to-table cuisine around here, with the focus

Canada, BC: Highway 97 Brewery already operational in Penticton
|
The newest brewery in BC’s South Okanagan is now open in a spot that will likely be familiar to craft beer drinkers in the region, the Canadian Beer News reported on March 13.
Highway 97 Brewery opened earlier this month at 954 Eckhardt Ave. West in Penticton, an address that was home to Tin Whistle Brewing before it relocated in 2015.
Following Tim Whistle’s move, building owner and homebrewer John Kapusty decided to open his own brewery, and developed a concept based around an important local highway, which he describes as follows:
“The name of the brewery is intended to represent the vitality of the region, the importance of the transportation network to the interior, the pride of residents and the countless recreational and lifestyle opportunities available to anyone along the Highway 97 corridor. The communities along this important highway represent much of British Columbia’s interior population and provides unprecedented access to the spectacular mountains, valleys, lakes, rivers and associated recreational opportunities the Province is famous for. Highway 97 beer will be involved in this lifestyle, the people, the events and the overall culture of this Highway 97 corridor.”
Head brewer Andrew Anker has crafted six brands for the brewery’s launch – Amber Ale,

USA, AL: Conditional use application sought for a new craft brewery in downtown Trussville
|
Joe Meadows of Slag Heap Brewing Company was seeking a conditional use application for 227 Main Street, better known for its original use as the old ice plant, on March 13. His plan is to construct a craft beer brewery in downtown Trussville, the Trussville Tribune reported.
Despite a few concerns, the measure passed unanimously to send the recommendation of approval to the city council with a unanimous vote. The final decision now lies in the hands of the city council, who will likely vote on the matter on March 14.
Among the concerns raised by the board was there would be no food available for purchase.
Meadows said much like other local tap rooms, he would not serve food, but would allow his patrons to bring food into the establishment.
Additionally, the proposed outdoor seating area was an issue.
Meadows expressed reservations about the outdoor seating as shown in the drawings because of the proximity to Main Street. He said he was considering moving the outdoor seating behind the building.
While board members generally liked the idea of outdoor seating, the area in the rear raised concerns of whether the brewery staff could properly monitor that area if it wasn’t in a contained enclosure.

USA, MD: Rockwell Brewery joins Frederick craft beer community
|
For all you beer lovers out there, a new brewery has opened up in Frederick, Md, WHAG reported on March 10.
With their motto, "Beer Well," Rockwell Brewery recently just opened their doors for business. Co-founders of the business said they started home brewing together before they decided to open Rockwell Brewery. They also said they are excited to be a part of the craft beer movement in Frederick County, Md., that has been growing within the last few years.
“We start this out thinking we want a really cool space; a modern, comfortable, industrial, so you could come in and basically have a date night. You do not have to go to some warehouse, slugging beers back,” said co-founder Matt Thrasher.
The co-founders of Rockwell Brewery are currently working on opening a beer garden.

USA, CA: Speakeasy Ales & Lagers halts operations because of financial difficulties
|
Speakeasy Ales & Lagers, one of San Francisco’s largest breweries, has halted all operations because of financial difficulties, the company announced on March 10.
The brewing company cited difficulty securing investment and outstanding debt as the reason for the decision. At about 1 p.m. on March 10 the company announced it had ceased brewing, packaging and taproom operations in San Francisco effective immediately.
The brewery and taproom was located at 1195 Evans Ave. in the city’s Bayview District. Whatever future the brewery will have will depend on its primary creditor, according to the company.
“The brewery has worked with multiple investment banking groups and have had numerous meetings,” Speakeasy founder and CEO Forest Gray said in a statement.
“One fact has become central to the process, and that is the company is financially insolvent and requires new capital to move forward. Whether that will happen is unclear, but I do hope the brewery and brand will persist,” Gray said.
The remaining inventory has already been shipped, so once the stock in stores sells out, it’s unclear if it will be available again. The company’s beers include Big Daddy IPA, Prohibition Ale and Metropolis Lager.

“The second and final domestic medium-term note will seek to provide EABL an opportunity to match its borrowings with its medium-to-long-term capex and working capital investment aimed at building capacity and optimizing operations within the brewhouse and packaging,” Dorcas Ngure, head of communications at EABL, said an emailed response to questions.
The issue is the first corporate bond since the collapse of Imperial Bank Ltd. in October 2015. The lender was placed under statutory management on the same day its 2 billion-shilling bond was scheduled to begin trading on the Nairobi Securities Exchange. That was followed by the bourse in April 2016 suspending trade Chase Bank Kenya Ltd.’s corporate bonds after the central bank put the lender under receivership.
The EABL offer may attract investor interest because there are few available

Australia: Coca-Cola Amatil creates a team of experts to build its long-term beer and cider growth strategy
|
Coca-Cola Amatil’s team of specialist experts hit the ground this week to build the foundations of the company’s long-term beer and cider growth strategy, the Beer and Brewer reported on March 15.
The Beer and Cider Exchange team consists of 14 specialist beer and cider merchants who will provide expert support to the trade and Amatil’s state sales teams.
As part of a long-term partnership between Amatil and Molson Coors International, the team will work closely with the Molson Coors range (including Miller Genuine Draft, Miller Chill, Coors and Blue Moon), as well as Amatil brand partners Australian Beer Company (Yenda craft beer and Pressman’s cider), the Boston Beer Company (Sam Adams and Angry Orchard cider), and Chili Marketing (Rekorderlig cider).
Coca-Cola Amatil says that following the addition of the Miller brands to its premium beer portfolio late last year, they’ve leveraged their relationship with Molson Coors International to develop a bespoke premium beer and cider strategy for the Australian market.
This strategy will be modelled on the successful Tenth and Blake Beer Company, the craft and import division of the US-based MillerCoors.
Heading up the creation and appointment of the team was Amatil’s Director of Beer and Cider Judd Michel.
“Premium beer consumers expect good

Japan: Japan’s top 4 brewers considering joint deliveries in Hokkaido
|
Four major Japanese brewers are considering starting joint deliveries of their alcoholic products in Hokkaido possibly by the end of this year in an effort to cut distribution costs, according to sources close to the matter, the Japan Today reported on March 15.
Asahi Breweries Ltd, Kirin Brewery Co, Suntory Beer Ltd and Sapporo Breweries Ltd are planning to set up a distribution base in Sapporo, the capital of Japan’s northernmost prefecture, from which their products would be transported to wholesalers across Hokkaido.
All except Suntory Beer operate plants in Hokkaido.
Joint delivery would also benefit wholesalers because they will be able to receive products from the four companies all at once.
Asahi Breweries, Kirin Brewery and Sapporo Breweries are already distributing products together in Tokyo, while Asahi Breweries and Kirin Brewery started joint transportation of their products by train to the Hokuriku region in central Japan from their plants in the Kansai area in the west in January.
Akiyoshi Koji, president of Asahi Group Holdings Ltd, the holding company of Asahi Breweries, indicated in December that it is important to strengthen competitiveness while promoting cooperation in order to boost the industry’s profitability.

EU: Alcohol companies invited to propose their own labelling guidelines
|
The drinks industry has hailed a move by the European Commission to allow alcohol companies to propose their own labelling guidelines.
The EC said on March 13 that it has decided to invite the industry to develop, within a year, "a self-regulatory proposal aiming to provide information on ingredients and nutrition of all alcoholic beverages". The EC announced the decision after adopting the findings of a report to the European Parliament and the Council that examined mandatory labelling in the drinks industry.
The move was welcomed by several major drinks companies and trade organisations. Diageo said: "The report opens the way to greater collaboration between industry and European institutions. The report also makes it clear that companies are a necessary voice to create appropriate solutions to providing clear and useful information about alcohol to people, based on their needs."
The Johnnie Walker owner highlighted its existing policy on listing nutritional information, Diageo Consumer Information Standards, which launched last year.
Meanwhile, a spokesperson for Carlsberg said the EC is "kicking at an open door". The brewer said that 83% of its beers worldwide already carry on-pack ingredient information.
"Beer is made from good quality, natural ingredients... [which is] why Carlsberg launched this long ago," the

UK: Heineken offers new variant of its tequila-flavoured Desperados beer
|
Heineken has launched a new variant of its tequila-flavoured beer, Desperados, aimed at drawing in younger, late-night drinkers, The Morning Advertiser reported.
The new variant, Desperados ‘Dos’, is flavoured with light and dark Tequila and has a higher ABV of 7% and reduced carbonation.
It will be available across the on-trade in 250ml bottles – a smaller serve than its predecessor.
Heineken premium brand director David Lette said: “Drinking habits among the Desperados target audience are evolving, with many now looking for more sophisticated options as they make the transition from early evening into the night.
“As these ‘shift’ occasions become increasingly important to young adults, so does the need for our customers in the on-trade to develop an offering that is relevant to these consumers and provides them with the excitement they’re looking for on a night out.
“[The beer’s] flavour profile brings an element of taste experimentation, its 7% ABV places it alongside spirit mixers and its serve size helps consumers to see it differently from beer, instead seeing it as a drink that they can enjoy as they shift into the night occasion.”
This is the latest in a series of new product announcements from Heineken, which is in the

Hungary: “Totalitarian symbols” ban could hit Heineken in Hungary
|
Hungarian lawmakers of the governing Fidesz-KDNP submitted a bill to Parliament that would ban the use of what it calls “totalitarian symbols” for commercial purposes, according to reports. Local media has speculated this could hit Heineken, which uses a red star symbol, although the firm declines to comment for now, the Budapest Business Journal reported on March 14.
Deputy Prime Minister Zsolt Semjén and János Lázár submitted the bill. In its justification, the two MPs say that allowing the use of the symbols gives them “a kind of legitimacy”, Hungarian news agency MTI reported.
Under the bill symbols such as the swastika, the arrow cross, the sickle and hammer and the red star would be banned for commercial use 30 days after it is approved by Parliament. Violating the ban after January 1, 2018 would constitute a criminal offence.
Hungarian media immediately identified Heineken as a brand that could possibly be hurt by the ban. However, the brand has not taken a public stance in the matter yet. “For the moment we are not in the position to comment on any of the below points,” Heineken Hungary told the Budapest Business Journal.
According to the brewer’s Heineken Collection Foundation website, established to promote and

UK: Heineken UK to launch non-alcoholic version of its flagship lager
|
Heineken UK is launching a new, non-alcoholic version of its flagship lager, The Morning Advertiser reported.
Heineken 0.0 will be available in 330ml bottles across the on-trade from this month onwards, accompanied by a £2.5 mln marketing push. Each bottle contains 69 calories.
Heineken premium brands director David Lette said: “Initial feedback from both consumers and customers has been overwhelmingly positive, with a strong preference shown towards Heineken 0.0 versus other alcohol-free beers.”
“With a high purchase intent, Heineken 0.0 will not only drive frequency with current beer drinkers, but also bring new drinkers to the category by attracting health-conscious younger consumers who are drinking less or abstaining altogether, by delivering a great tasting beer from a brand that they’re proud to be seen with,” he added.
This makes Heineken the latest brewer to stake a claim on the burgeoning low and non-alcoholic beer market, after AB InBev announced last year it would expand its alcohol-free range and work to ensure 20% of its sales come from the category by 2020.
Lette cited research by the company that claimed only 47% of customers were currently satisfied with the range of low and non-alcoholic beers available.
Additionally, 50% of consumers were now actively
