DRY HOPPING - DIFFERENT SCALE - DIFFERENT FLAVOUR

ABSTRACT
This was basically a summary of trials done by a German research team. They used the hop variety Comet in dry hopping three different beer batch sizes: 17L (keg), 8 hl, and 140 hl (CCTs) at an addition rate of 1,47 ml hop oil/hl or 100g of hops/hl. Temporary circulation was used for a homogenized yield of aroma transfer. Analytical methods and tasting impressions showed significant differences in various descriptors. The small scale trial showed more fruitiness than the others. The mass-transfer rates of the hop aromatic oils to the beer clearly depend on the scale of the trials. In particular, the mass-transfer rates of myrcene and linalool differ between the scales. Correlations of analytical results with the tasting results showed that the tasters were able to detect the measured differences in the mass-transfer rates of volatile hop compounds. Therefore, brewers cannot necessarily expect to achieve similar aroma impressions when scaling up laboratory- scale trials to industrial-scale trials.

Brewery news Canada, AB: Number of craft breweries triples over last three years
The number of craft breweries in Alberta has tripled over the last three years, and the trend is expected to continue, with at least 30 new breweries being planned in Alberta this year, CBC.ca reported on March 30 quoting industry insiders.

"Alberta farmers grow some of the world's most sought after barley and agricultural products. It only makes sense to grow the brewing industry right here and support good jobs from grain to glass," said Alberta Finance Minister Joe Ceci, who was in Red Deer for the province's first Alberta Craft Brewing Convention on March 29.

He was highlighting the C$25 million earmarked for the Alberta Small Brewers Development Program announced in the 2017 budget.

Terry Rock, executive director of the Alberta Small Brewers Association, said the province has 54 brewing licenses now compared to 18 in 2014.

"It's a real economic diversification story that Albertans should be proud of," said Rock, one of hundreds who attended the convention.

Brewers say the proliferation of micro-breweries was made possible after the province removed minimum production limits in 2013.

Augusta’s own craft brewery is slated to serve its first beer in just about six months at 243 Water St., the Kennebec Journal & Morning Sentinel reported on March 30.

That’s when the partners behind Cushnoc Brewing Co. estimate the wood-fired pizza restaurant and craft brewery will open its doors.

While there’s a lot to get done between now and then, its identity was announced on March 30 via social media with this simple message: coming soonish.

“We wanted to grab the social media names, and we did that today,” Tobias Parkhurst said on March 29. It was chance to introduce the company’s logo.

He is one of four partners behind the venture. He’s joined by Casey Hynes, who is making the move from the Liberal Cup in Hallowell; brewer Chris Geerlings, who is relocating to Augusta from Savannah, Georgia, where he worked at Southbound Brewing; and local attorney James Bass.

“There are 19 craft breweries on the peninsula in Portland, and another brewery seems to open every other week in Bangor,” Parkhurst said.

Brewery news USA, SC: Co-owner of Spartanburg Brewing LLC planning another brewery
A chemist who enjoys home brewing is taking his hobby to the next level.

Petr Valenta, co-owner of Spartanburg Brewing LLC, purchased an abandoned building in 2016 off W.O. Ezell Boulevard, and plans to turn it into a brewery featuring premium lagers, the Spartanburg Herald Journal reported on March 30.

"We want to bring the old European way of lager brewing and make beer the original way of fermenting in open vessels," Valenta said.

Valenta said a new roof and doors were recently installed at the 4,000-square-foot building at 101 Chester St. that was formerly occupied by an auto detailing shop. He said an architect is designing the building's interior and exterior space.

The brewery is scheduled to open this summer, with a biergarten on adjacent property, Valenta said.

The venue also will feature an outdoor stage for live music, pingpong tables and other games for families. Valenta said an indoor bar will offer tastings, and the building's garage doors will be open during business hours.

Among the five beers the brewery will feature is Curly Czech Pilsner, a nod to the Czech Republic, where Valenta was born. He is a senior research chemist at Milliken & Co. and lives in Greer.

Red Hare Brewing Company is heading to the coast and opening their second brewery in Shallotte, North Carolina — just up river from Ocean Isle Beach, Brewbound.com reported on March 29.

The new brewery will primarily focus on barrel aging and open fermentation, while serving as an experimentation station for the ever-increasing diversity of beer flavors and brewing processes.

Red Hare Founder and Managing Partner, Roger Davis, and Bobby Thomas, Co-Founder and Head Brewer, were heavily influenced by a recent road trip to visit breweries on the coast of Oregon last year. “We saw what cool things you can do with open fermentation, coupled with a coastal climate and salty air — so Bobby and I set our sights on the Southern coast,” Davis shares. “We couldn’t be more excited to increase our presence and expand into North Carolina!”

Brewery news USA, LA: Brieux Carre to open its doors on April 1
Brieux Carré of New Orleans is made up of a couple of guys with a passion for all things beer and a brewery pup named Barley who keeps them company, WGNO reported on March 31.

Robert Bostick and Taylor Pellerin met three years ago at a beer festival. Each brought their own home-brewed craft beers, and by the end of the night they were combining mugs. The rest is history.

With a laissez faire approach to brewing, they hope to embody the New Orleans spirit.

"We want our brews to be as weird and interesting as the city we live in," said Bostick."While we will always have a variety of brews on tap to suit every type of craft beer drinker, it's our goal to challenge ourselves and bring new recipes to the taproom every week."

Bostick started brewing his own beer in college when he first discovered craft beer and the effects it had on his wallet.

"If you do the math, I was spending about $8 a six-pack, and if I made it myself I was spending $3."

The duo began brewing to save some beer money, and now they're sharing their beer with Nola.

Brewery news USA, FL: Perfect Plain Brewing Co. anticipates its brewery construction to start in early May
Downtown Pensacola's next craft brewery has stepped closer to fruition, the Pensacola News Journal reported on March 30.

An ownership group led by D.C. Reeves, the co-founder and co-owner of the forthcoming Perfect Plain Brewing Co., closed on March 30 on property at 50 E. Garden St. Plans for the 5,400-square-foot building will go before the Pensacola Architectural Review Board on April 20 for final approval.

Reeves anticipates construction to start in early May, with early September targeted for the brewery's launch.

"Everybody's really excited," he said. "We've gotten a great response so far. We think there’s room in the local craft beer industry to expand in the number of breweries, but also in terms of our sophistication in craft beer and the different types of styles that we see."

After unveiling the initial plans for the brewery in February, Reeves said concepts for much of the business remain unchanged. The bar will feature two to four signature beers each month, eight to 12 seasonal varieties based on the time of the year and about 10 on tap at all times. It will have an outside seating area. Brewery news USA, NE: Upstream Brewing Company closing its doors, owner plans to move and expand operations
The west Omaha Upstream Brewing Company is closing its doors this summer, the Omaha World-Herald reported on March 30.

Owner Brian Magee said the location, which opened in 2002 on the corner of 171st Street and West Center Road, had been underperforming. It will likely be closed by the end of June, or shortly thereafter.

“When we built that restaurant,” he said, “there were hardly any other restaurants out there. It was amazing how many happened after that.”

At the time, Magee said he picked that location because the demographics of the area fit the typical Upstream customer. He also thought its west location would mean that it would attract a new customer base instead of cannibalizing patrons from the Old Market Upstream, which opened in 1996.

He reiterated some of that during an interview on March 30, saying that the west Omaha location’s revenue never met projections.

Magee said he has a prospective tenant to take over the location; though he said he could not say who it is, he did indicate that it is not another restaurant.

He said there are no plans for the Old Market location to close, and that financially, it’s doing well.

Brewery news Russia: Russians developing new taste for alcohol-free beer
Russians are among the biggest drinkers of alcohol in the world, yet are developing a new taste for alcohol-free beer, which could help save a brewing industry that has stalled under government initiatives to discourage drinking, Reuters reported on March 30.

Sales of zero-alcohol beer jumped 12 percent last year even as the broader Russian market shrank by 2 percent, according to research firm Nielsen, extending a 40 percent slide in beer sales since the government tightened regulations in 2008.

Anheuser Busch InBev plans to promote the alcohol-free version of its Bud brand as a sponsor of soccer's FIFA World Cup when Russia hosts it next year. Carlsberg's Russian unit Baltika, which has the largest share of Russia's alcohol-free beer market, said this month it was making new investments in zero-strength beer.

The trend, say people in the industry, is being driven by a move towards healthier lifestyles among Russian consumers, nudged by government measures that include restrictions on alcohol sales and tougher penalties for drunk-driving.

Barley news India: States of Haryana and Rajasthan could now start growing malting barley
Till a decade ago, the barley that farmers grew in semi-arid Haryana and Rajasthan states due to water scarcity would mostly be used as animal feed. Now, with international beer manufacturers keen to source barley locally, these farmers could see their coffers swelling, IANS reported on March 31.

"Our annual requirement of barley grain is about 15,000 tonnes, of which just 1,000 tonnes is procured locally and the rest is imported. We can fulfil our requirement by encouraging barely cultivation in India. We have found the climate in this region (Haryana, Rajasthan) suitable for malt-grade grain," Pedro Aidar, President of Business Unit India of Belgium-based AB InBev, told IANS.

To this end, the company, which owns the iconic beer brand Budweiser, recently held a grand event for farmers in Gurugram -- a satellite town of the national capital -- promising them good returns if they opted for contract farming for cultivating malt-grade barley.

Under contract farming, a grower agrees to provide a pre-decided quantity of a specific agricultural product.

According to the Indian Institute of Wheat & Barley Research (IIWBR), barley could become a cash crop in arid and semi-arid areas, especially in Haryana and Rajasthan, if farmers succeed in producing standard quality malt-grain.
