CO2 EXTRACT FOR BETTER
FLAVOUR STABILITY
ABSTRACT
A German research group is looking into beneficial
compenents in hops to improve flavour stability. In
their latest publication, they summarize their trails
using CO2 extract in context with reducing the iron
content in beer. In comparison to dosing the extract
at the beginning of boil they tried different versions of
dividing the hop dosing throughout the boil. With
this they were able to reduce the iron content by
about 30%, resulting in improved flavour stability
not only based on analytical values but also on
sensory evaluation.

Canada, ON: Brick Brewing reports increase in fourth-quarter sales, profits, and beer volumes
|
Brick Brewing's fourth-quarter sales and profits jumped as its beer volumes rose.
The Kitchener-based company earned net income of C$720,000 on net revenue of C$10.5 million in the three months ended Jan. 31. That's up from net income of C$492,000 and net revenue of C$9 million in the fourth quarter a year earlier.
For the entire fiscal year, Brick earned net income of C$4 million of net revenue of C$45.1 million. It had net income of C$1.6 million on revenue of C$37.6 million a year earlier.
"This past year was clearly an inflection point for Brick Brewing," chief executive officer George Croft said in a news release. "We have been able to drive double digit growth in volume, expand margins, while increasing our investment in both our brands and our facility."
Brick said volume for its Laker and Waterloo brands both increased 15 per cent. Laker accounted for 76 per cent of Brick's beer volumes last year, while the Waterloo premium brands accounted for nine per cent.

USA, SC: Commonhouse Aleworks to finish building its brewery in North Charleston this fall
|
Six months after Palmetto Brewing Co. announced plans to move to Park Circle, an upstart brewery says it might beat the local beer titan to the punch, the Charleston Post Courier reported.
Commonhouse Aleworks - a company cooked up by two local home brewers - says it will finish construction this fall on a new O’Hear Avenue brewery in what would be a first for the hip North Charleston neighborhood.
Co-founders Hank Hanna and Pearce Fleming say they will break ground in the next few weeks on a 7,200-square-foot brewery and tap house two blocks north of the business district on East Montague Avenue. Commonhouse bought the land for the new building on Friday, but financial terms were not immediately available.
Hanna and Fleming have been working on plans for the brewery for a year and a half, and the two have established themselves quickly in the local craft industry after taking up home brewing on a whim a few years ago.
Under the moniker Octohops Homebrew, the two competed in the Great American Beer Festival last year in a partnership with Charleston’s Revelry Brewing Co. Their Hefeweizen style wheat beer, Wise One, ultimately made it to the final judging table.
The new venture will

USA, KS: Dodge City Brewing moving forward with construction
|
It may be taking slightly longer than expected but Dodge City Brewing is still moving forward with construction, the Dodge City Daily Globe reported on April 12.
Located near Third Avenue and Spruce Street, Dodge City Brewing will be the first micro-brewery and one of the only ones in southwest Kansas.
“The closest brewery I think is in Hays,” Dodge City Brewing co-owner Larry Cook said. “Then the closest one to the west is in Pueblo, Colorado. So Dodge City seemed like a good place to be.”
Cook, along with his wife Shari, grew up in the area, both graduated from Dodge City Community College and St. Mary’s of the Plains.
“Shari was a teacher and I worked as a CPA for 17 years,” Cook said. “Then a client got me into craft beer which introduced me to craft brewing.
“Shari and my two sons then pushed me into brewing my own beer and opening up a place.
“Dodge City is ready to have a brewery.”
According to Cook, Dodge City Brewing will have more than 30 recipes ready to use when the business opens and currently have six featured beers called Space Cowboy, Demon Red Ale, Pete’s Brown Ale, Uncle Johnny’s Cream Ale, Samurai Cowboy and

USA, GA: Pontoon Brewing planning 11 thousand square foot brewery in Sandy Springs
|
Sandy Springs is getting a new brewery.
Pontoon Brewing is planning an 11,000-square-foot brewery in Northridge Business Park at 8601 Dunwoody Place, the Atlanta Business Chronicle reported.
It’s the first space for Pontoon, which has been contract brewing its beers at other facilities in Greenville, S.C., and Savannah, Ga. Its beers include a “Southern Skipper White IPA” and a “No Pants Pilsner.”
In Sandy Springs, Pontoon will open a 10-barrel, six vessel brew house. It will have a large taproom and décor inspired by a dockside lifestyle.
The hope is to open by September 2017.
“We love the relaxed lifestyle of enjoying beer with friends on a pontoon boat,” said Pontoon partner Sean O’Keefe. “Our vision here is to appeal to the business community and offer a relaxing way to spend time after a day at work.”

USA, PA: Cobblehaus Brewing Co to hold grand opening on April 14
|
Coraopolis gets it next brewery on April 14 as Cobblehaus Brewing Co. holds its grand opening on the main drag of Fifth Avenue, the Pittsburgh Post-Gazette reported on April 13.
Owner and brewer Scott Mills says that as a longtime home brewer, he was influenced and inspired by having worked in Europe, where he became a big fan of German and Belgian beers. His spin is “Olde World Styles, New World Twists.”
For a surprise soft opening on April 8, one beer he was serving is a German-style alt. But he also was pouring something dubbed “the X,” which was an experimental mashup of a Belgian-style triple and a farmhouse ale.
Other brews ready to pour from the eight tasting room taps are a triple, hefeweizen, Belgian-style wit, imperial stout and black IPA, with a brown ale to follow shortly.
“Basically, [I’m] taking the traditionals and trying to modernize them a bit,” says the 46-year-old Moon resident, who was looking at the western suburbs as soon as he started seriously planning this brewery two-plus years ago. Last year he signed the lease on this space, which originally was a furniture store, but had been an office for a

USA, OH: Fretboard Brewing Co. to be opened in Blue Ash in the fourth quarter
|
Three La Salle High School graduates are teaming up to open a new brewery in Blue Ash, the Enquirer reports.
Jim Klosterman, Joe Sierra and Brad Plank will open Fretboard Brewing Co. at 5800 Creek Road in the fourth quarter.
The trio formerly operated Six String Brew Works, which partnered with Rhinegeist in 2015 to create S23 as a tribute to Sierra’s brother Eric, a Cincinnati Police Department sergeant who died of a brain aneurysm. The S23 IPA will be on tap along with a light ale, stout and hoppy wheat beer as well as up to 13 others.
The brewery will have a 20-barrel brewhouse and produce 2,500 to 3,500 barrels in its first year. Packaging could begin later, but the beer will be self-distributed to local bars and restaurants in kegs at the beginning.
The brewery’s 17,000-square-foot space will include three studio rooms that bands can use along with a 3,000-sqaure-foot taproom featuring a stage and sound system to showcase live music and music-related movies multiple times each week. A garage door will be incorporated into the space to provide a mix of indoor and outdoor seating during warm weather.
The brewery’s kitchen will be rented out to barbecue and smoked meat restaurant

South Korea: Government recognizes necessity of efforts to support local craft breweries
|
As the soaring popularity for imported beer among South Korean consumers is seeing the shelves of supermarkets filled with the likes of Heineken, Asahi and Stella Artois, the government is ramping up its efforts to support South Korean beer makers in the hope of winning back the hearts of beer drinkers in the country, The Korea Bizwire reported on April 14.
South Korea’s latest move to cultivate its own brand of craft beer will see the government introduce reforms that will loosen current restrictions on beer production and distribution to boost the competitiveness of homegrown craft beers, Vice Minister of Strategy and Finance Choi Sang-mok said on April 13.
Speaking to staff members during a visit to the Playground microbrewery in Gyeonggi Province, Choi said, “Over the last five years, sales of imported beers have increased 250 percent and continue to grow. As consumers desire superior quality and taste, more microbreweries need to open and grow.”
Choi’s visit, which included a meeting with officials from a craft beer association to discuss ideas, follows in the footsteps of government plans to ease the restrictions on beer production and encourage investment in brewing that were announced at a trade investment promotion meeting last February.

UK: Heineken to invest £20 mln to transform pubs across the UK
|
Heineken has announced a £20 mln investment to transform pubs across the UK, the Development Finance Today reported.
The funds will be used to upgrade Heineken’s Star Pubs & Bars estate, with around half the money earmarked for rural and suburban pubs.
Among the changes will be new kitchens, comfortable outdoor spaces and areas for events.
Lawson Mountstevens, managing director of Star Pubs & Bars, said: “Vibrant pubs are an affordable, fun place where people of all ages and backgrounds can come together.
“But as consumer demands have changed, pubs that struggled to keep pace have closed.
“We believe pubs run by skilled operators and backed by transformational investment can thrive in their role at the heart of communities.”
Some 70% of the funding will be spent on transformational projects over £100,000.
Star will also spend nearly £3 mln on maintenance and repairs this year.
Heineken’s decision follows research which found that 62% of pub goers want their local to offer good food, 37% look for a nice pub garden and 20% want to watch live sport on TV.
Over the past five years, the company has invested around £100 mln in transforming pubs across the country.
