ABOUT THE STABILITY OF
BITTER COMPONENTS IN
HOPS DURING STORAGE
ABSTRACT
German researchers are specialists in identifying
and quantifying bitter components in hops. In this
project, heat maps were developed for all bitter
components during the storage of several years.
The data presented gives profound insight into the
molecular bitter compound variability of certain hops.
Quantitative analyses of hops stored with and without
the influence of oxygen revealed that the decline of
distinct hop constituents cannot be explained by an
increase in transformation products formed during
beer aging, thus implying unknown degradation
mechanisms in hops. In a controlled, cool and oxygen
free environment, the relevant bitter components proved
to be stable for a period of 2 years.

USA, CT: East Rock Brewing Co. nearing final steps of designing its premises in Elm City
|
Elm City residents will soon be able to drink more locally brewed beer when a new brewery opens in East Rock next semester, the Yale Daily News reported.
East Rock Brewing Co. is nearing the final steps of designing its premises, and its construction will be put out to bid in the coming weeks. The brewery at 285 Nicoll St. will produce beers for distribution in Connecticut and serve them in its nearly 100-seat beer hall. East Rock Brewing Co. founder Tim Wilson said he hopes his company will turn out its first batch of lager in the fall.
Wilson began his project in 2015, and by the time it is complete, it will have taken roughly two years from start to finish.
“It’s quite a process. It’s not as easy as starting an internet business from your house or something like that,” Wilson said. “Just because of the nature of the brewery and being a concept that the city of New Haven hasn’t had in 20 or 30 years.”
On the New Haven beer scene, East Rock Brewing Co. joins BAR, located at 254 Crown St., which operates as a brewpub — a place where beer is created onsite and served alongside food

USA, VA: Amber Ox Kitchen and Brewery submits application to the Williamsburg Planning Commission
|
Williamsburg officials are considering adding another microbrewery to the city’s growing portfolio of drinking establishments, the Williamsburg Yorktown Daily reported on April 14.
The Williamsburg area offers Virginia Beer Company, Alewerks and Brass Cannon breweries, in addition to Copper Fox Distillery and Silver Hand Meadery — and now a newcomer may be added to the list.
According to an application submitted to the Williamsburg Planning Commission on April 12, a new brewery could be opening on Prince George Street.
Williamsburg resident Chris Cook and his business partner Andrew Voss are proposing to operate a 5,360 square foot restaurant, including a 712 square foot microbrewery called Amber Ox Kitchen and Brewery.
Cook and Voss said they are in their mid-30s and are looking forward to the new business venture.
“Chris and I have a combined 25-30 years running restaurants and bars,” Voss said. “We definitely have a lot of experience and we feel really good about this project, but it’s still in the development phase.”
According to promotional material included with the application, the brewery’s menu will feature seasonal dishes and regionally-sourced ingredients.
“The Amber Ox is a welcoming culinary-focused brewery, always looking for innovative ways to create dishes that pair perfectly with our beer,” stated the

USA, NJ: The Wild Bones Brewing Co. seeks Morristown’s permission to open a brewery
|
The Wild Bones Brewing Co. seeks Morristown’s permission to open a brewery at 95 Morris St., the Morristown Green reported on April 18.
Unlike a brew pub, a brewery serves no food and consumer sales are restricted. So liquor licensing from the state is much cheaper, according to documents filed with the town zoning board, which is scheduled to hear the application for a use variance on Wednesday, April 19, 2017.
Wild Bones, which lists a present address in an apartment on Ridgedale Avenue, wants to occupy about 4,800 square feet behind a T-Mobile shop.
The proposed brewery would operate a “tasting room,” and offer tours to a maximum of 15 people at a time, Wednesdays through Fridays from 4 pm to 10 pm, Saturdays from noon to 10 pm, and Sundays from noon to 6 pm.
A Limited Brewery License would entitle Wild Bones to “brew any malt alcoholic beverage” in a quantity up to 300,000 barrels of 31- fluid gallons capacity per year, for sale to wholesalers and retailers, the application states.
Additionally, such a license would allow retail sales to consumers “for consumption on the premises in connection with a tour of the brewery, or for consumption off the premises in

USA: AB InBev to add another brand to its craft portfolio
|
Anheuser-Busch InBev is adding another brand to its craft and import focused “High End” portfolio, but this time it won’t come via acquisition, Brewbound reported on April 17.
In a letter to wholesalers, the company said it would launch Veza Sur Brewing Co. in Miami this summer.
Few details were available at press time, but the company described Veza Sur as a “Latin-American inspired craft beer brand,” and said it would also open a brewpub in the Wynwood Art District of Miami.
According to High End president Felipe Szpigel, who penned the note along with Veza Sur GM Max-Antonio Burger and Anheuser-Busch’s vice president of wholesaler development, Bob Tallet, the brand will only be available in Miami.
Along with Burger, 10 Barrel Brewing co-founder Chris Cox and Bogota Beer Company founder Berny Silberwasser, were credited with helping to develop the brand. Anheuser-Busch owns both 10 Barrel Brewing and Bogota Beer Company.
The Wynwood Art District of Miami has become a hub for craft beer in recent years. Three companies — J Wakefield Brewing, Concrete Beach Brewery and Wynwood Brewing – are already located within just a few blocks of one another. Concrete Beach Brewery is owned by Boston Beer Company and Wynwood Brewing is 24.5

USA, AK: Baleen Brewing Co. submits liquor license application
|
A brewery is in the works for Ketchikan, AK, and the owner has submitted a liquor license application to the state Alcohol and Marijuana Control Office, KRBD reported on April 14.
Baleen Brewing Co.’s license application is now on Ketchikan Gateway Borough Assembly agenda for review. The Assembly can object to liquor license applications for certain reasons, such as if a business is delinquent on taxes.
According to a memo from Borough Clerk Kacie Paxton, the applicant, Alex MacGillivrey, has already registered to collect sales taxes, the business plan complies with zoning regulations, and Troopers expressed no concern about law enforcement problems related to the business.
The brewery would be located on Mizzen Lane, which is off North Point Higgins Road.
Ketchikan briefly had a downtown brewery that closed its doors many years ago, called Ketchikan Brewing Co. There’s been no local commercial brewery since.

India: India’s leading brewers collectively introducing a dozen new beer brands
|
Heineken, Anheuser-Busch InBev, and Carlsberg are collectively introducing about a dozen new beer brands in India to slake the thirst of its summer-singed consumers, the Economic Times reported on April 17.
For the world’s top three brewers, which together control about 90 per cent of India’s beer market, new products could be the recipe for fending off an unhealthy cocktail of sales bans, shrinking store networks, and stagnant demand in a warm, tropical country with promising demographics and increasing affluence.
India’s beer sales fell 2 per cent in the year to March 2017, but companies expect the segment to expand 5-7 per cent in the current fiscal, driven by premium products.
“We need to strengthen our portfolio because consumers want to choose, and we want to be a part of their choice. In the next six months, we will come up with two strong beer brands in the premium segment, and an interesting portfolio of imported brands in the next six weeks,” said Shekhar Ramamurthy, managing director at United Breweries (UB). Heineken owns 43 per cent of UB, which sells Kingfisher, Kalyani Black Label, and Zingaro beers, and controls half of India’s beer market.

China: Diageo has its eye on emergence of China’s whisky drinkers
|
Given its massive population, China represents a key market for consumer goods companies, and even a small change in Chinese behaviour can have a massive impact on bottom lines, CNBC reported on April 15.
Diageo, the multinational company selling alcohol brands including Johnnie Walker and Captain Morgan, has its eye on the emergence of China's whisky drinkers.
"What we're seeing in China right now is really positive," Sam Fischer, Diageo's president of Asia, told CNBC. "We're seeing an increasing curiosity around people asking, 'What is whisky? Where does it come from? What taste do I like?'"
Whisky is a big business for Diageo, especially in Asia where it accounts for 40 percent of its total sales, compared to 25 percent of sales globally.
Fischer cited demand from China's increasingly urbanized population and its rising middle class. Meanwhile, for the younger generation, status is becoming less about material possessions, and increasingly about the experience of consumption and story behind the brand.
That's where Johnnie Walker hopes to come in.
During an investor call recently, Fischer said the changing demographics are positive for new sales growth, pointing to a prediction that by 2022, 630 million Chinese will be classified as middle class.
But international spirits have not fully penetrated
