ASK THE HOPS WHEN THEY WANT TO BE
PUT INTO THE BEER
ABSTRACT
For this study a group of US researchers have chosen two
very different varieties, Simcoe and Hallertau Mittelfrueh,
and brewed beers using the following different hopping
regimes: 60 min boil, 25 min whirlpool, or 48 h dry
hopping. Additionally, the impact of the yeast strains
used on treatment was investigated. Each treatment
was compared with an unhopped control using stir-bar
sorptive extraction GC-MS with a descriptive sensory
analysis. Results indicate that whirlpool additions
produced beers with the highest concentrations of
geraniol, linalool, and beta-citronellol, which is in line with
intense citrus flavours one often achieves with high
whirpool additions. Beers with Simcoe produced more
intense and individually distinct aromas with each
hopping regime compared to the Hallertau Mittelfrueh
hopped beers. Conversely, beers brewed with Hallertau
Mittelfrueh hops showed less intense aromas with less
distinction, except for the dry-hopped treatment, which
was characterized by a more floral type of aroma than
the other Hallertau Mittelfrueh treatments. So find out
which time of addition suits best your favourite variety!

USA, VA: Twisted Ales Craft Brewing to launch in Richmond’s Manchester area this month
|
A new husband-and-wife owned craft brewery is planning to open in Richmond’s Manchester area this month, Richmond.com reported on June 5.
Jason and Debbi Price — transplants from California who moved to the Richmond area more than a decade ago — are planning to open their brewery, Twisted Ales Craft Brewing, on June 17. The brewery is in the historic Aragon Coffee Co. building at 212 W. Sixth St.
The brewery is in the space formerly occupied by Blue Bee Cider before it moved last year to a new location in the Scott’s Addition area of Richmond.
“I started home brewing about five years ago,” Jason Price said. “My wife encouraged me to get started brewing beer. We entered some competitions and won a couple of awards, and decided we would like to have the opportunity to work together because we both worked separate jobs. We figured we would open a brewery to allow us to work together.”
The brewery occupies about 4,700 square feet of leased space, with about a third dedicated to beer production. The taproom has about 60 seats along with standing room for about the same number, and Price said they plan to add an outdoor patio.
The couple settled on

USA, PA: Abjuration Brewing getting ready to open in McKees Rocks
|
“It’s unbelievable what you can get done and hold other jobs,” says Pints on Penn bartender Tom Glover.
Glover is one half of the team of the yet-to-open Abjuration Brewing in McKees Rocks. Dave Hallam, a computer programmer at the University of Pittsburgh, is the other. The seed for the project was planted when Hallam’s wife bought him a home-brew kit. He became enamored of the process and the home-brew community. Soon, Glover joined him and the two started brewing together. “Tom really affected my recipes,” says Hallam. Seven years and many beer-festival test runs later, they’re on the cusp of opening Abjuration Brewing in McKees Rocks’ Parkway Theater, which is also currently under renovation. They hope to open the doors in July, PGH City Paper reported on June 7.
Brewing isn’t the pair’s only connection. Both Hallam and Glover are long-time gamers, and they choose the brewery name accordingly. “There’s a school of magic in D&D [Dungeons and Dragons] called abjuration. It means the renunciation of an oath,” says Glover. “There are all of these weird, old-school laws in beer, we don’t want to play like that. If you’re going to be an artist, you get to be an artist.”

USA, OH: Swine City Brewing aims at summer opening in Fairfield
|
Swine City Brewing promises a family-friendly atmosphere when it opens in Fairfield this summer, according to WCPO news partner the Journal-News.
The brewery, located at 4614 Industry Drive in Fairfield, will feature a few flagship beers, alongside a rotating tap list, according to co-owner Daniel Ebben. The brewery also will include a large, indoor tasting room and a 1.6-acre outdoor area with a 2,600-square-foot patio.
“We look to brew a variety of styles, plus wine and cider in the near future,” Ebben said. “We intend to be a family-friendly facility with private outdoor areas for small and large events.”
Swine City will occupy a 5,000-square-foot building that includes four 10-barrel tanks, one 15-barrel tank and three 7-barrel wine fermenters. Ebben said final construction on the brewery is currently underway and a grand opening date should be announced in the near future.

USA, NY: The Blue Line Brewery of Saranac Lake opens new location
|
The Blue Line Brewery of Saranac Lake has opened a new location at 43 Maple St. and will be brewing beer there soon, the North Country Now reported on June 4.
“Right now we’re trucking our beer down from Saranac Lake,” said Mark Gillis, who owns the business with his wife, Veronica Gillis.
They are not brewing any beer or ale in Potsdam yet, but it is in the plans.
“We have a bigger new system in Saranac Lake and we’ll be moving the smaller one here,” Gillis said on the phone from the Potsdam spot.
He says they will probably be serving Potsdam-made beers “in about 90 days.”
“We have anywhere from six to eight beers on tap, depending on the day,” Gillis said.
A few of the favorites they offer are Black Fly IPA (India pale ale), Leaning Pine IPA, and Split Rock Ale.
They also have a bar food menu with items they make from scratch. “Everything we do is pretty much from scratch, not from the freezer,” he said. For instance, they make the dough and the sauce for their individual 10-inch pizzas.
“We have a tremendous following in Saranac Lake and it’s starting here in Potsdam,” he said.

USA, CT: Cliffside Brewing to open in Wallingford in mid to late July
|
A craft beer enthusiast expects to open a new brewery in the center of Wallingford next month, Meriden Record-Journal reported on June 1.
David Durant, a resident who brews beer at his home on Cliffside Drive, will open his own brewery — Cliffside Brewing — at 16B Center St. this summer. The business will open in mid to late July, Durant said.
After receiving approval from the Planning and Zoning Commission in January, Durant hoped to open the brewery in late spring, but said unexpected obstacles pushed the opening back.
Durant received a lot of interest in the new business from local beer lovers leading up to the opening.
“People come up to me all the time and want to know when it’s going to open,” he said. “It’s insane, I never expected word would go around as fast as it has. Everyone is excited for a brewery to come to Wallingford.”
Durant’s brewery will produce and sell a “wide range of beers,” including ales, wheat beers and fruit beers, he said. Customers will be able to taste the brewery’s beer or buy it by the growler.
Durant founded Cliffside Brewing in his home on Cliffside Drive about four years ago. He started by using apples

USA, MD: Guinness appoints brewmaster for planned Baltimore County facility
|
Guinness has named a brewmaster for its planned Baltimore County facility as the brewery's parent company looks to get its liquor license approved by the county, the Baltimore Business Journal reported on June 6.
Peter Wiens was announced as the brewmaster on June 6, coming over to Guinness from San Diego-based Stone Brewing Co.'s East Coast facility in Richmond, Va. Wiens has spent his career in a number of positions at Anheuser-Busch before moving to Stone Brewing in 2012 and leaving as director of brewing operations for the East Coast.
Wiens will head up the brewing operations at Guinness Open Gate Brewery & Barrel House at 5001 Washington Blvd. in Relay. It is the first Guinness brewery to open in the U.S. in 63 years and will take over the facility previously home to the historic Calvert Distillery.
“Guinness is synonymous with the highest quality offerings and being a Guinness brewmaster is a dream I've had since college," Wiens said in a statement. "The first beer I ordered when I turned 21 was a pint of Guinness and I'm honored to have the chance to participate in the continuation of this iconic brand’s legacy and its return to American soil."

USA: Molson Coors signs deal to import and distribute Heineken’s Mexican Sol beer
|
Molson Coors has tapped Heineken to ensure the Big Beer producer behind Miller Lite and Coors Light can participate in swelling American interest for Mexican-produced ales.
On June 5, Molson Coors announced that it signed a 10-year import deal to allow it to import, market and distribute the Mexican-made Sol brand to the U.S. market beginning this fall. Sol, which is a brand that was established in 1899, is a pale lager with an ABV of 4.5% that has been part of Dutch brewer Heineken's U.S. portfolio since 2004. Heineken has owned the brand outright since 2010, when it paid $7.6 billion to buy a handful of Mexican beer assets including Dos Equis and Tecate.
"Given the steady growth of the Mexican import segment in the US over the past few years, the addition of Sol represents a key addition to our portfolio," Molson Coors CEO and President Mark Hunter said in a statement.
The deal will give Molson Coors access to a strong-performing Mexican beer import business that has benefited both Heineken and Corona and Modelo Especial maker Constellation Brands. Mexican-made beers have been strong sellers in recent years because they are easy to drink, much like many U.S.-made light lagers, but

USA, TX: Uncle Billy’s Brewery expanding production capacity
|
Uncle Billy’s Brewery is expanding its production capacity significantly by having its beer brewed at the new Celis Brewery in north Austin. The move to add a second brewing location will allow Uncle Billy’s to increase its beer production to satisfy growing demand for the brand’s wide variety of craft beers and for regional distribution, Brewbound.com reported on June 2.
Beginning in 2013, Uncle Billy’s began selling its beer in stores, bars and restaurants following a change in the Texas beer laws governing the off premise sale of beer by brewpubs. Uncle Billy’s is one of only a small number of brewpubs in Texas that sells its beers on premise and distributes kegged and packaged beer to other retailers. This strategy has allowed Uncle Billy’s to reach its fan base beyond its four walls at its original location in South Austin, Texas.
Uncle Billy’s expanded its year-round line-up of core beer brands to include Barton Springs Pale Ale and Lazy Day Lager, as well as its flagship The Green Room IPA. Its beers have been wildly popular, and the brewpub installed new equipment to expand from a 10-barrel system to a 20-barrel system in 2014 to keep up with the demand.

China: Brewers increasingly looking to move away from mass-market bottled beers
|
It is a Tuesday night, yet World of Beer on Shanghai's Fumin Road is packed with a mixed crowd of expatriates and locals. The bar is stocked with craft beers from around the world, and manager Jacques Zhu is busy making recommendations - he has 41 different beers on tap, and around 300 in bottles. Meanwhile, a Filipino band belts out classic rock songs, the Nikkei Asian Review reported on June 3.
World of Beer, based in Tampa, Florida, has 75 locations around the U.S., but the Shanghai branch is its first international franchise. Dezan Shira & Associates, a business intelligence company, estimates that the craft market makes up only 1% of China's total beer market, compared with 20% in the U.S., but still represents $400 million in annual sales.
The attractiveness of the Chinese market to global beer giants was illustrated in March by the takeover of Shanghai's Boxing Cat Brewery by Belgium's Anheuser-Busch InBev, the world's biggest brewer, which earlier in the year bought Kaiba, a Shanghai-based bar chain selling Belgian beer.
However, while China is the world's largest market for beer by volume, accounting for a quarter of the total, Deutsche Bank estimates that it accounts for only 3% of

Angola: The Refriango Group to invest €32 mln to triple the production of its Tigra beer brand
|
The Refriango Group has decided to invest €32 mln in order to triple the production capacity for its Angolan beer brand Tigra, the Drinks International reported on June 2.
Refriango launched Tigra in April 2016 and the factory currently produces 60 mln litres of beer a year, but the decision to expand will also create 50 jobs within the company.
A Tigra spokesperson said: “Tigra is a brand that looks to the future with optimism and wants to show that it is possible to offer innovative solutions that continue to surprise, with a high quality product that wins consumer preference, in an estimated market of 800 mln litres.”
Tigra is produced at the Kikuxi factory, in the outskirts of Luanda, Angola which cost $50 mln to build. In its first year, Tigra beer has invested $10 mln in marketing across all platforms.
Refriango says Tigra is a soft, ‘easy-drinking Pilsner beer’ with 5% ABV and is triple filtered.

Cambodia: Cambodia’s Kingdom Breweries now contract-brewing for a dozen companies in Southeast Asia
|
As the craft beer craze sweeps from West to East amid intensifying demand for diverse, flavorful beers, a microbrewery in Phnom Penh is positioning itself as one of the leading producers in the region, the Nikkei Asian Review reported on June 5.
Kingdom Breweries, launched in 2010 alongside the Tonle Sap river in the Cambodian capital, has gone from producing own-brand craft beers for the domestic market and Bruntys cider for local brand Asia Pacific Cider to making around 30 beverages for a dozen companies in Singapore, Thailand, Hong Kong, and the Philippines that lack their own breweries.
In Thailand, where strict rules block independent brewing, beer makers are increasingly looking to contract brewers to cope with expanding demand and to legitimize their operations.
"Going to Kingdom allows us to bring beer and sell it legally," said Mike Roberts, founder of Outlaw Brewing, which launched in 2015 as a brewpub in Thailand's northeastern Loei province and recently contracted Kingdom to produce its American-style India Pale Ale.
"A lot of us are getting busy, so we need to take the steps for volume, and brew at a proper brewery," said Roberts. He currently produces around 1,000 litres a month at his brewpub, but recently contracted

Japan: Government move to protect small liquor shops could further damage Japan’s beer market
|
A move by a group of lawmakers to protect small neighborhood liquor shops could end up further drying out the beer market in Japan, the Nikkei Asian Review reported on June 2.
The revised liquor tax law took effect on June 1, leading to higher beer prices at some major retailers and triggering much grumbling among beer lovers.
One supermarket in Tokyo’s Adachi Ward raised the price of a six-pack of 350-milliliter cans of beer by 150 yen ($1.35).
“The situation facing beer is a very severe one because sales stop suddenly when prices rise even by a few yen,” said the employee in charge of alcoholic beverages at the supermarket.
An 80-year-old woman who buys three six-packs of beer a week said the law might force her to switch to the harder stuff.
“I am searching for the cheapest beer by going to different supermarkets in the neighborhood,” she said. “I may cut back on beer and change to shochu.”
The revised liquor tax law is designed to help small mom-and-pop retailers compete against large supermarkets and discount liquor shops that have attracted customers with lower prices.
The revisions essentially ban sales of beer products at prices that are less than the costs involved in retailing

Germany & UK: Germany’s Radeberger Group entering the UK market
|
Germany’s biggest brewer, the Radeberger Group, is entering the UK market with its best-selling Pilsner, which distributor Copestick Murray said had the potential to be “huge” in the UK market, the Drinks Business reported on June 6.
Radeberger Pilsner was established in 1872 and is brewed by the Frankfurt-based Radeberger Group, Germany’s largest brewery, which has a 14.7% share in the German beer market and reported a total group turnover of around €2 billion in 2016.
The beer brand is one of the top five Pilsners in the German market, but until now has not attempted to enter the competitive UK market, despite building “substantial” sales in the domestic market, the US, Canada, Europe and being in a total of 87 export markets. But its UK distributor Copestick Murray said it was the “perfect time” to launch the brand in the UK, and it was the “natural partner” to take it to the UK market. The German brewery group is owned by the Oetker Group, and is a sister company of Copestick’s parent company Henkell & Co, the Oetker Group’s sparkling wine, wine and spirits division.
“As with wine, people are drinking less but better, so there is a trend of people trading

UK: Carlsberg UK releases this year’s Crafted portfolio and handbook
|
Carlsberg UK has released this year’s Crafted portfolio and handbook featuring a new selection of craft beers including ‘Your beer, here?’ winner, Toast Ale, The Drinks Business reported on June 5.
This year, Carlsberg UK has worked with beer writer Pete Brown to create its craft beer offering and accompanying handbook, Crafted. It boasts 65 beers and ciders, including five new draught beers and 12 new packaged world, craft and speciality beers.
Toast Ale, launched in January 2016 on Channel 4’s Jamie Oliver and Jimmy Doherty’s Friday Night Feast, uses unsold bread from bakeries and sandwich makers to brew beer. The UK’s first ‘bread to beer’ ale, it replaces a third of the barley used in the traditional beer production process with bread, while all profits are given to Feedback, a charity that aims to eradicate food waste. It partners with other brewers including Hackney Brewery, Hambleton Brewery, Wiper & True and St Austell and was recently launched in the USA. Toast Ale was awarded a ‘special commendation’ in last year’s Green Awards, impressing the judges with its striking business concept that highlights the importance of recycling.

Japan & Taiwan: Japan’s largest craft brewer Yo-Ho Brewing enjoys strong sales in Taiwan
|
Fresh off the success of a limited-time partnership with 7-Eleven in Taiwan, Japan's Yo-Ho Brewing plans to make its Yona Yona Ale and other signature beers available in all of the chain's convenience stores on the island. Permanently, the Nikkei Asian Review reported on June 4.
It is also collaborating with a local craft brewer to create a beer just for Taiwan.
Yo-Ho, Japan's largest craft brewer, enjoyed strong sales in Taiwan during last year's trial run. The success prompted the chain to ask Yo-Ho to supply beer to all 5,000 or so of the republic's 7-Elevens year-round. The brewer has decided to acquiesce to this request, perhaps by the end of this year.
Other products in the range include Aooni India pale ale and Suiyoubi no Neko Belgian White.
Masafumi Morita, in charge of brewing at Yo-Ho, explained the brewer's popularity in Taiwan. "In addition to a feeling of trust in made-in-Japan products," he said, "many [Taiwanese] buy our beers for the distinctive packaging."
The company is also developing a special beer with Taihu Brewing, a Taiwanese craft brewer.
One recipe under consideration calls for Japanese hops and yuzu, a Japanese citrus fruit, as well as a native Taiwanese citrus called liu ding.

World: AB InBev secretly buys minority stake in RateBeer
|
Through its so-called “global disruptive growth group” ZX Ventures, Anheuser-Busch InBev has acquired a minority stake in RateBeer, one of the most popular and reputable beer ratings and resource websites in the world, Good Beer Hunting (GBH) reported on June 2.
But the deal isn’t exactly new. In fact, it closed this past October following eight months of talks.
