MORE SPECIFICS WHY HOPS ARE GOOD
TO INCREASE FLAVOUR STABILITY
ABSTRACT
German brewing scientists have already been
looking into this for a couple of years. The ability
of hop constituents to suppress the formation of
3-methylbutanal and 2-furfural in wort-like model
systems containing maltose, leucine, and Fe2+ was
investigated. The functional principle by which
hop alpha-acids and beta-acids diminish the formation of
3-methylbutanal and 2-furfural may be ascribed to their
unique molecular structure and chemical properties.
This allows them to perturb oxidative or nonoxidative
formation of aldehydes. Findings from this study indicate that antioxidative potential may be
explained through, but not necessarily limited to,
two mechanisms. First, because of the hop alpha-acids'
complexation functionality towards transition metal
ions such as iron and copper, they can block or
attenuate oxidative pathways of the Maillard reaction
and suppress the generation of reactive oxygen
species, thereby preventing oxidative degradation
of leucine to 3-methylbutanal. Second, once
hydroxyl radicals are formed, they can act directly as
antioxidants and suppressing free radical reactions with
leucine again, which can yield its corresponding
aldehyde. Other aldehydes may show the same
behavior and response to the presence to hop alpha-acids.

UK: Regulators warn Heineken over merger plans with Punch Taverns
|
Heineken have been warned by UK regulators over their potential merger plans with Punch Taverns, amid concern over maintaining competition in local areas, The Investment Observer reported on June 13.
The Competition and Markets Authority (CMA) said it have located 33 areas where pubs would affect levels of competition and hinder consumer choice following the deal.
Punch Taverns currently owns over 3,500 pub locations across the U.K, with Heineken set to acquire approximately 1,900 if these locations.
Heineken, which already owns 1,100 pubs across the UK, must submit plans to the CMA by 20 June or face further investigation.
Andrea Coscelli, CMA acting chief executive and a key figure in the case, said:
“We have listened very carefully to a range of concerns about this merger. The companies will own less than 10pc of all British pubs after any deal, but we are concerned about the loss of competition for pub goers in a number of local areas.”
The international brewer agreed back in January to a deal worth £403 million, alongside investment firm Patron Capital, which is contributing around £100 million of the agreed upon amount.
