MORE SPECIFICS WHY HOPS ARE GOOD
TO INCREASE FLAVOUR STABILITY
ABSTRACT
German brewing scientists have already been
looking into this for a couple of years. The ability
of hop constituents to suppress the formation of
3-methylbutanal and 2-furfural in wort-like model
systems containing maltose, leucine, and Fe2+ was
investigated. The functional principle by which
hop alpha-acids and beta-acids diminish the formation of
3-methylbutanal and 2-furfural may be ascribed to their
unique molecular structure and chemical properties.
This allows them to perturb oxidative or nonoxidative
formation of aldehydes. Findings from this study indicate that antioxidative potential may be
explained through, but not necessarily limited to,
two mechanisms. First, because of the hop alpha-acids'
complexation functionality towards transition metal
ions such as iron and copper, they can block or
attenuate oxidative pathways of the Maillard reaction
and suppress the generation of reactive oxygen
species, thereby preventing oxidative degradation
of leucine to 3-methylbutanal. Second, once
hydroxyl radicals are formed, they can act directly as
antioxidants and suppressing free radical reactions with
leucine again, which can yield its corresponding
aldehyde. Other aldehydes may show the same
behavior and response to the presence to hop alpha-acids.

2-Furfural in Wort-Like Model Solutions

USA, CA: Russian River Brewing selling its original Sonoma County brewery
|
In anticipation of moving into a new production facility in late 2018, Russian River Brewing Company has put its original Sonoma County production brewery on the market, Brewbound reported on June 26.
“We are looking for a quality-focused brewer interested in expanding their operations in a turnkey brewing facility known for making pretty good beer,” Russian River co-owner and president Natalie Cilurzo wrote in an email to Brewbound.
Speaking to Brewbound on June 26, Cilurzo said she and husband Vinnie Cilurzo planned to sell their original production brewery after committing to build a new $40 million brewery and restaurant eight miles north, in Windsor, Calif.
Russian River will maintain its downtown Santa Rosa brewpub, but keeping the original production facility, where the company has operated for nearly a decade, was “just too complicated,” Cilurzo said.
“There’s absolutely no way to run three,” she said.
A formal listing price was not disclosed. Potential buyers are being asked to meet directly with Russian River’s owners and sign non-disclosure agreements. Several local brewers and other local community members have already expressed interest, Cilurzo added, but a buyer has not been identified.
Cilurzo, who noted that more than 25 breweries were now operational in Sonoma County, described the opportunity as

Canada, ON: The People’s Pint Brewing Collective to open its own bricks and mortar location in Toronto in October
|
A partnership that pairs amateur and professional brewers to create one-off collaborative beers at Toronto and area breweries has announced the upcoming opening of its own bricks and mortar location in the city’s Junction neighbourhood, Canadian Beer News reported on June 15.
The People’s Pint Brewing Collective was founded by award-winning homebrewer Peter Caira and Prud’Homme Master Beer Sommelier and Educator Doug Appeldoorn, and will be moving into the space at 90 Cawthra Ave. that is currently occupied by Junction Craft Brewing, following its upcoming move to a larger facility at 150 Symes Road.
While Caira and Appeldoorn will be brewing a number of permanent and seasonal brands under the People’s Pint banner, the pair will also invite local homebrewers and professionals to come in and brew guest beers on a regular basis.
“We want to spotlight both established and up and coming talented brewers from around the city,” says Appeldoorn. “We will be an open and welcoming space for the Greater Toronto Area homebrew community. Having so many other brewers with unique ideas will allow us to push the brewing envelope and experiment with many different styles and ingredients.”
People’s Pint will officially take over the Cawthra Ave. location on October 1st, and

A new brewery with a name and branding philosophy inspired by the owners’ love of comic books has announced that it will be launching in Calgary on the upcoming Canada Day weekend, Canadian Beer News reported on June 23.
Zero Issue Brewing – named after the numbering that comic publishers often use for special prequel or origin issues of their series – has been founded by brothers Mark and Kirk MacDonald. USA, PA: East Branch Brewing Co. being started in Downingtown by two school friends
|
Two friends meet in school and dream of one day starting their own brewery.
They work for years for others but always keep in the back of their minds the childhood dream.
Finally, they decide the time to act is now, so they look around for a place to start their own microbrewery and choose Downingtown.
Sound familiar?
No, it’s not Victory Brewing, which was started in 1996 by longtime friends Ron Barchet and Bill Covaleski, The Phoenix reported on June 26.
This time, the dream-becoming-reality is the work of Dylan Meanix and Kevin McGovern, who are starting East Branch Brewing Co. in a portion of the former Minquas Fire Co./Molly Maguire’s building in the 200 block of East Lancaster Avenue.
“Everything about this project has fallen into place perfectly,” Meanix said. “The stars have aligned – the timing, the location, our previous employment ... We were ready to do something.
“This was a pipe dream when we were 21,” Meanix said.
Now 38, McGovern and Meanix met the first day they started at Downingtown Senior High School – when there was only one – and became fast friends.
After school, McGovern became a mechanic working at a Downingtown shop while Meanix started his own landscaping company.

USA, MI: The Ramshackle Brewing Company gets approval for its microbrewer license
|
The Ramshackle Brewing Company is one step closer to its grand opening, The Hillsdale Daily News reported.
On June 21, Joe Keselring and Zack and Jessy Bigelow, the majority owners of the company, were on hand for the Jonesville City Council meeting with a recommendation from City Manager Jeff Gray for the council to approve a microbrewer license for the business.
The formality was needed for the trio to submit an application to the Michigan Liquor Control Commission for a microbrewer license.
A slight issue arose with the application as certain investors in the business were promised anonymity, due to their statuses within the community, which limited investor information included in the application to the primary managers in the company, being Keselring and the Bigelows.
“As council will not have the benefit to review the entire application, Mr. Bigelow’s legal counsel has recommended the attached resolution that confirms that local approvals for the brewery have been granted,” Gray said.
Bigelow himself took to the podium to answer a number of business related questions, posed mainly by Councilmen Andy Penrose and Ron Hayes.
The questions pertained mainly to the business model the company has established.
Bigelow indicated that business hours would be primarily from 4 p.m. to 10

USA, NY: Malting barley farmers in 44 upstate NY counties now eligible for crop insurance
|
Malt barley farmers in 44 upstate New York counties are now eligible for crop insurance from the federal government, the New York Daily News reported on June 22.
Malt barley is a necessary ingredient in beer and spirits, and the lack of crop insurance had hindered expansion of the craft brewing industry in New York.
Last year, U.S. Senators Kirsten Gillibrand and Charles Schumer successfully pushed the U.S. Department of Agriculture to bring malt barley insurance to farmers in four New York counties and argued it should be expanded.
The state now has approximately 2,000 acres of malt barley. Because of New York's Farm Brewing Law, it is estimated malt barley production will have to grow fifteen-fold in the next decade to meet the needs of New York brewers and distillers.

USA, NJ: Wild Bones Brewing Co.’s variance approved by Morristown’s Board of Adjustment
|
Four friends are well on their way to opening the town’s first brewery after completing a major step in the process last week, the Daily Record reported on June 27.
The variance for Wild Bones Brewing Co. was approved at Morristown’s June 21 Board of Adjustment hearing.
The brewery will be owned and operated by four friends; Alaine Anderson, 30, a designer for Hofmann Design Build in Morristown; her husband Scott Anderson, 32, an accountant for Kings Food Markets and beer buyer for End of Elm down the road from the brewery; Anthony Necco, 32, a beer buyer for Kings Fine Wine & Spirits, and Steven McConnell, 29, a manager at the New Jersey Performing Arts Center. The Andersons and Necco live in Morristown, while McConnell lives in Morris Plains.
Alaine Anderson will seve as operations manager, and Scott Anderson will be the tasting room manger, also handling accounting and sales. McConnell will be head brewer (“And mad scientist,” he added), while Necco will also be a brewer and handle merchandising.
“Scott and I have been thinking of opening a restaurant for about 10 years,” Alaine Anderson said. “Once we were introduced to Steven and Anthony and saw what they were homebrewing, and we

China: Diageo’s Chinese ‘rival’ Kweichow Moutai achieves market cap past RMB600 bln
|
Chinese alcohol brewer Kweichow Moutai, which in April steamed past Johnnie Walker-brand owner Diageo Plc. to become the world’s most valuable liquor-company by market capitalisation, passed another barrier on June 26, as its market cap surged past RMB600 bln, the Financial Times reported.
The manufacturer of the fiery grain-based liquor baijiu, which is listed in Shanghai, has been making share price gains for a year and on June 26 reached a market cap of RMB608.8 bln ($89 bln), compared to Diageo’s GBP58.3 bln ($74.2 bln).
Moutai’s fortunes have been boosted by a rise in luxury goods buying and the return of boozy business drinking after a years-long government crackdown — and the animal instincts of Chinese retail investors flocking to the stock. Nearly all of Moutai’s sales are domestic.

UK: Heineken offers to sell dozens of Punch Taverns pus to ease competition concerns
|
Heineken has offered to sell dozens of Punch Taverns pubs to ease concerns over competition and secure its Ł403 mln takeover, City A. M. reported on June 27.
Earlier this month, the Competition and Markets Authority (CMA) warned the brewing giant that its purchase of part of the Punch Taverns estate could reduce competition in 33 local areas across the UK after an initial investigation.
Heineken has now offered to sell pubs in each of the affected areas, and the CMA said the proposals, or a modified version of them, may be an acceptable solution to the competition concerns.
A spokesperson for Heineken said: “We welcome confirmation from the CMA that only a small number of pubs are required to be sold. It’s a sensible outcome and good news for pub-goers across the UK who will see the benefit of well invested pubs in their communities.”
The CMA's investigation revealed there were 33 local areas where pubs would not face sufficient competition after the merger, which could lead to price increases or a deterioration in the quality of service on offer.
Now the CMA has until 22 August to decide whether to accept the new proposals, although it may decide to extend the deadline to

UK: Beer lovers now paying more for mainstream lager at supermarkets
|
United Kingdom’s beer lovers are now paying more for mainstream lager after supermarkets binned bottles and multi-packs of popular brands to make room for cheaper hipster craft ales, The Sun reported on June 25.
Kronenbourg, Heineken and Beck’s now cost consumers more with average prices surging four per cent in the last year, as UK brewers point the finger at rising imported raw material costs.
Heineken drinkers buying booze in supermarkets will feel the pinch with their products experiencing an eight per cent year-on-year price hike.
The average cost of a four pack of 440ml Kronenbourg is now Ł4.44, up a shocking 11 per cent on last year, while a six pack of 275ml bottles of Beck’s has risen to Ł5 – an inflation-busting 14 per cent price hike.
Sainsbury’s recently axed more than 70 popular beer and cider lines in a major overhaul of its booze offering and earlier this year Tesco canned Heineken beers, reducing stocks to just 22 products – down from 53 at the beginning of the year.
A Sainsbury’s spokesperson said: “We have de-listed some lines and also added others, as part of our regular reviews of our ranges to make sure we offer customers great quality and value across

India: Leading brewers launch strong beers despite ban of liquor sales near highways
|
United Breweries Ltd, Carlsberg India Pvt. Ltd and B9 Beverages (Bira 91) have launched strong beers in the past three months even though India’s Supreme Court’s move to ban liquor sales near highways from April has hurt demand, Livemint reported on June 27.
Strong beer, in particular, has taken a bigger hit after that ruling since it gets sold more than other alcoholic beverages along highways, according to industry executives. And come July, another risk looms large: the impact from the implementation of the goods and service tax (GST). Alcohol has been kept out of GST while raw materials used by liquor companies fall under the purview of the tax.
But launching new products in such uncertain times could prove to be a bold move if the market stabilizes by October as analysts and companies expect. “This could be a proactive strategy to beat the industry because in tough times those investing in new products can gain market share,” said Abneesh Roy, senior vice-president of institutional equities at Edelweiss Securities.
Liquor companies expect most retailers to relocate stores by October since they will not want to sell their licences. By then, these new brands will likely be well established.
United Breweries launched Kingfisher Storm
