MORE SPECIFICS WHY HOPS ARE GOOD TO INCREASE FLAVOUR STABILITY

ABSTRACT
German brewing scientists have already been looking into this for a couple of years. The ability of hop constituents to suppress the formation of 3-methylbutanal and 2-furfural in wort-like model systems containing maltose, leucine, and Fe2+ was investigated. The functional principle by which hop alpha-acids and beta-acids diminish the formation of 3-methylbutanal and 2-furfural may be ascribed to their unique molecular structure and chemical properties. This allows them to perturb oxidative or nonoxidative formation of aldehydes. Findings from this study indicate that antioxidative potential may be explained through, but not necessarily limited to, two mechanisms. First, because of the hop alpha-acids' complexation functionality towards transition metal ions such as iron and copper, they can block or attenuate oxidative pathways of the Maillard reaction and suppress the generation of reactive oxygen species, thereby preventing oxidative degradation of leucine to 3-methylbutanal. Second, once hydroxyl radicals are formed, they can act directly as antioxidants and suppressing free radical reactions with leucine again, which can yield its corresponding aldehyde. Other aldehydes may show the same behavior and response to the presence to hop alpha-acids.

Brewery news USA: The Brewers Association launches new seal for truly independent craft brewers
The craft beer waters are muddied with beer giant Anheuser-Busch buying some small brewers and private equity firms having a hand in others, the Denverite reported on June 27.

The Brewers Association recognizes it might be difficult for some beer drinkers to know if they’re really sipping craft beer. That’s why the Boulder-based promoter of the industry unveiled a new seal aimed at identifying beers that are independently produced.

The seal is available for use free of charge by any of the more than 5,300 small and independent American craft brewers that have permission from the Alcohol and Tobacco Tax and Trade Bureau to operate. Brewers must also meet the Brewers Association’s definition of a craft brewery to use the seal, but they don’t have to be members of the nonprofit.

In order to qualify as a craft brewer, breweries have to be less than 25 percent owned or controlled by an alcohol industry member that is not itself a craft brewer, according to the Brewers Association. Colorado’s largest craft brewery, New Belgium Brewing Co., meets that threshold. AB-owned Breckenridge Brewery and 10 Barrel Brewing Co. do not.

Independence has long been a hallmark of the craft brewing industry.

Brewery news Canada, ON: Wolfe Island Spring Craft Brewery launched on the largest of Ontario’s 1000 islands
A small brewery affiliated with a restaurant on the largest of Ontario’s 1000 Islands has launched its first beers, including one that uses a very unique item in its brewing process, Canadian Beer News reported on June 28.

Wolfe Island Spring Craft Brewery has been founded by Casey Fisher, owner of the Wolfe Island Grill, with both businesses named after the island in Lake Ontario where they are located.

Brewmaster and partner René Ziegelmaier has developed four inaugural brands for the brewery including Billy Bishop Red Ale (5.2% abv, 35 IBU), Lighthouse Lager (4.2% abv, 18 IBU), Orange White (4.8% abv, 12 IBU), and the signature Wolfenstein Cannonball Ale.

All of the beers are made using water from the artisan springs that run beneath the brewery, and ingredients from local farms are also used where they fit the style of the beer.

Wolf Island Spring beers are available at the Wolfe Island Grill and The Mansion – another establishment owned by Fisher – as well as other select bars and restaurants in Kingston. Brewery news Canada, AB: Siding 14 Brewing opens its doors in Ponoka
A new brewery that is aiming to provide beer drinkers with a full-on “farm to glass” experience is now open in the small town of Ponoka, approximately 60 miles south of Edmonton, Canadian Beer News reported on June 29.

Siding 14 Brewing has been founded by Marc Shields, Kari & Brent Tarasoff (owners of Square One Hop Growers), and Lemke & Josh Lubach (owners of Pridelands Grain barley farm). Their plan is to brew beers exclusively using ingredients grown by the partners, with small-scale malt houses such as Red Shed Malting contracted to produce custom malt using barley from Pridelands, but since both farms will take some time to reach the necessary production levels, commercially purchased ingredients are being used to supplement in the meantime.

The Siding 14 brewery, taproom, and retail store opened last weekend at 3520 67 St. in Ponoka, and is offering glasses, growlers, and cans of a variety of brands including Brakeman Brown Ale, Dayliner Golden Ale, Pullman Pale Ale, and Ten-Wheeler IPA. Cans and draught are also available at select retail outlets and licensees in the area.


Brewery news USA, OH: Bad Tom Smith Brewing's Ohio City launch delayed
Delays have pushed back the opening date for Bad Tom Smith Brewing's Ohio City location, said managing partner John Vojtush, who owns the company with his fiancee Sheryl Gittins, Cleveland.com reported on June 29.

Bad Tom, based in Cincinnati, had planned to open around Memorial Day, but "early September" appears to be the new target. A contractor should be in the building this week, Vojtush said. The space is catty-corner from Nano Brew and is in the heart of one of the healthiest craft-beer neighborhoods in Northeast Ohio.

Opening by Labor Day would be a "best-case scenario," he said of Bad Tom Smith's first taproom outside of Cincinnati. It's part of an overall expansion plan for the company.

The delays are coming in the back-and-forth editing-like process between the brewery and the city's building department, Vojtush said.

"The wild card is how quickly we get inspectors to sign off on things," he said. "That's the only thing we can't control.

Brewery news USA, MN: Hoops Brewing opens its doors in Duluth
Master Brewer Dave Hoops has opened the doors of Hoops Brewing, WDIO-TV reported on June 27.

Located in the former Timberlodge Steakhouse spot on Lake Avenue, the brewery and beer hall boasts gleaming woodwork and massive windows, so you can see directly into the brewing area.

Hoops Brewing will be open daily, 11am-midnight.


Brewery news USA, CA: Almanac Beer Co. secures permanent home for production
Almanac Beer Co. has a permanent home for production, securing an Alameda brewery space with an indoor taproom and outdoor beer garden. It’s currently under construction and will open this fall, the Eater reported on June 29.

For seven years, founders Damian Fagan and Jesse Friedman have operated as roaming contract brewers, crafting their barrel-aged beers on equipment at other local breweries. Their own space, a WWII-era building at 651 W Tower Avenue on the former Alameda naval air station, will quadruple their brewing capacity, and even up their quality in the process, Friedman says. It’s 30,000 square feet with room for a 20-barrel brewing system and 4,000 oak barrels for aging.

“It already looked like a cathedral to barrel-aged beer before we moved in,” Friedman says, with curved redwood beams evoking barrels, at least for someone with beer on the mind. Almanac is one of a small cohort of local breweries, such as the Rare Barrel in Berkeley, that’s betting heavily on sours and barrel-aged beers, labor and time intensive products (with prices to match) and a growing fanbase.

Brewery news USA, WI: Earth Rider Brewery receives $109,877 grant to start construction phase
Earth Rider Brewery officially launched its construction phase in Superior, WI while receiving a $109,877 Wis. Economic Development Corporation grant at an event on June 28. The event was held in the future brewery space in the former Leamon Mercantile building, Brewbound reported.

“Superior doesn’t need its own brewery,” said Lieutenant Governor Rebecca Kleefisch to begin her speech, “but Superior deserves its own brewery.

“This redevelopment project has the potential to be a true catalyst for downtown Superior that should boost other businesses in the area and create jobs and spur additional development. Having a vibrant downtown with amenities like this also will help area employers attract and retain millennials, which is vital to meeting the workforce needs of today and tomorrow.”

The Community Development Investment Grant from the Wisconsin Economic Development Corporation (WEDC) will be used to renovate the former Leamon Mercantile building on Superior’s North End into the 16,000-square-foot Earth Rider Brewery.

Barley news Tanzania: Tanzanian Breweries partnership with farmers seen as powerful instrument to increase barley output
Tanzania Breweries Limited (TBL) partnership with barley farmers in the northern zone of the country is a powerful instrument to increase output to meet country's demand for barley, the Minister for Agriculture Livestock and Fisheries, Dr Charles Tizeba has said, according to AllAfrica.

Statistics show that TBL requires 18,000 tonnes of barley annually while the farmers can only produce 10,000 tonnes, hence forcing the brewery to import the rest. Dr Tizeba said this on June 27 after meeting some barley farmers in the northern zone, Emairete village in Monduli District, Arusha Region.

He commended TBL for empowering barley farmers in the northern zone through provision of farm inputs and reliable market. "I call upon TBL Group to collaborate with district councils where barley farming is practiced so as to empower farmers to increase production so that the government can essentially put a stop to importation of barley," he said.

In 2016, TBL paid barley farmers in all production regions a total of 14.7 bln Tanzanian shillings from 12,700 tonnes produced, while this year they have lent 2.1 bln Tanzanian shillings to farmers for preparations of their farms as well as purchase of farm inputs.

Brewery news The Netherlands: Authorities investigate sales of brand-less beer as Heineken and Amstel
Dutch Tax authorities' investigative department FIOD caught three suspects selling brand-less beer as Heineken and Amstel. Eight businesses in Nijkerk, Putten, Rotterdam, Heusden and Linne were raided on June 28. So far no arrests were made, RTL Nieuws reports.

According to FIOD, the suspects bought brand-less beer from abroad, poured it into beer bottles and labeled them with Heineken and Amstel logos. They then sold them at higher prices.

Several Dutch companies fell victim to this fraud. The investigation is still ongoing.

The suspects are a 64-year-old man from Putten and a man and woman from Nijkerk, aged 52 and 44 years respectively. FIOD officers seized digital and paper administration and a number of beer caps during the raids.

There is no reason to believe that the involved beer posed a risk to food safety, according to FIOD.
