WHAT IS THE ROLE OF YEAST FOR DRY
HOP AROMAS
ABSTRACT
This is a complex question but worth being explored.
In a study, German researchers tested two
different yeast strains (German ale yeast vs US ale
yeast) using an identical hopping regime for late
and dry hopping (during primary fermentation) with
varieties US Cascade and German Hallertau Mittelfrueh.
Comprehensive sensory evaluation and aroma analytics showed that the sum of terpenols was independent from
the sensory intensity for floral and citrus. The sum of
esters correlated well with the intensity of sweet fruit
flavours, and higher amounts of 4MMP correlated well
with red berry flavor intensity. The final analysis found
that the yeast strain can have a significant influence on
dry hop aroma.

USA & Mexico: Constellation Brands moving forward with plans to build a brewery in Mexico despite opposition

Plans by a U.S. company to construct a state-of-the-art brewery in the Baja California capital of Mexicali are moving forward — despite opposition of a group of local farmers and the cancellation of a state aqueduct project to supply water to the future facility, The San Diego Union-Tribune reported on July 19.
A spokesman for Constellation Brands, which supplies Mexican-made Corona and Modelo beers to the U.S. market, said on July 19 that the company is building its own water delivery system to the plant, located south of Mexicali off the road the San Felipe.
The project, set to launch operations in late 2019, represents an investment of more than $1 billion. Though endorsed by the Baja California state government, the project has been fiercely opposed by a group of Mexicali farmers who say the water is earmarked for agricultural use, and should not be diverted to industry.
The group, Comité Ciudadano de Defensa del Agua en Baja California, claims that the water targeted for Constellation Brands would have come from an aquifer that is overdrawn. “The aquifer needs to recover before these investments can be approved,” said Rigoberto Campos, the committee’s leader.

Canada, NB: Celtic Knot Brewing opens new and expanded brewery in Riverview
|
Celtic Knot Brewing has announced the opening of its new and expanded brewery in Riverview, a town located across the Petitcodiac River from Moncton, Canadian Beer News reported on July 18.
Originally launched in June 2013 by veteran homebrewer Bruce Barton as a home-based operation, Celtic Knot is now situated in a commercial space at 23 Biggs Drive, and has expanded from an 80 litre brewing system to a 450 litre brewhouse.
The new location and expanded brewing capacity means that Barton is now able to offer growler sales to the public, with Dubh Loki Black IPA currently available for purchase, and more brands to be added soon.

USA, TX: Texas brewers oppose new bill that could limit growth of the sector
|
Brewers all over Texas are standing together in opposition of a new bill that could potentially limit growth of the craft beer industry, the North Texas Daily reported on July 21.
House Bill 3287, also known as the beer bill, was passed last month, and requires craft breweries who produce at least 175,000 barrels of beer annually to pay a distributor in order to sell from their own taprooms.
In short, if beer goes straight from production to on-tap without leaving the brewery, a fee is now required.
Craig Goldman, Republican member of the Texas House of Representatives, is the author of the bill. Amanda Robertson, Goldman’s Chief of Staff, said the bill was designed to help smaller breweries.
“Our bill states if you are this big guy, you don’t get to claim and call yourself a craft brewer and utilize the carve outs and the exemptions that the small craft beer industry gets,” Robertson said. “It does seem ridiculous, but it’s that, or you close your taproom down because you’re too big to be able to operate one to begin with.”

USA, MD: Saints Row Brewing to launch this summer in Rockville

After Martin Prebula learned the craft of brewing beer at a Baltimore brewery, he wanted to bring his skills home.
The longtime Gaithersburg resident said he and his wife, Lacy, had always wanted to start their own business—and they decided to do so in the community they knew so well, BethesdaMagazine.com reported on July 20.
The husband-and-wife team is opening Saints Row Brewing this summer in Rockville, a few miles away from where the Prebulas live with their infant daughter in the same neighborhood where Martin grew up.
“We’re from here and we’re for here,” Martin Prebula said. “That’s the idea—this is where we’re from and this is where we want to do our business with the people I’ve grown up with, my neighbors, my family, my friends.”
The nanobrewery will occupy a 3,000-square-foot space on the corner of East Gude Drive and Taft Street. Prebula said they plan to open in late August.

Canada, ON: GL Heritage Brewing opens its doors in Amherstburg
|
A new family-owned brewery has opened its doors in Amherstburg, a town south of Windsor in Ontario’s Essex County, Canadian Beer News reported on July 17.
GL Heritage Brewing has been founded by brothers Greg and Dwayne Grondin, and their wives, Jen and Cathy.
Located at 8728 Howard Ave. on a farm that has been owned and run by the Grondin family for 150 years, the brewery takes its name from GL Heritage Motors, a local business – now known as Heritage Tire – that Greg and Dwayne’s father Don Grondin co-founded with Paul Lepine.
The brewery opened to the public on July 16th with a selection of beers including Blonde Ale, California Common, Rye Ale, and Chocolate Stout available in the taproom and retail store.

USA, CT: Lock City Brewing Co. sets grand opening date on July 22
|
Lock City Brewing Co. is the latest brewery to join Fairfield County's small collection of craft breweries. The grand opening on July 22 will feature four beers on tap, food and a chance to check out the 2,000 square-foot brewing facility and taproom, The Advocate reported.
Owners Michael Bushnell, 41 and Patrick Caciolo, 42 have been busy brewing for about three weeks now in preparation for the big event. They are focusing mostly on IPAs at the moment.
Bushnell who is originally from upstate New York, moved to Stamford about six years ago and started brewing beer about four years ago. He and his business partner Casciolo decided to get "into the game" after visiting breweries in Vermont and Maine. "We had the intention of making good quality beer to match up with what we've been drinking," Bushnell said.
Two years ago, they entered their beer in an event at Craft 260 in Fairfield. The positive response pushed them to begin the process of opening their own business. In November, Bushnell quit his job as a financial comptroller to focus on Lock City Brewing Co. full time.

USA, MD: DuClaw Brewing Co. officially on the market
|
DuClaw Brewing Co. is officially on the market, Brewbound reported on July 20.
The Baltimore, Maryland-based craft brewery has announced that it had retained investment banking firm Equity Partners HG to help identify an investor or buyer for the company.
In a press release, DuClaw founder Dave Benfield said that after 21 years in business, that it was “time for a new chapter.”
“We’re excited to see what options are available to us that will allow DuClaw to continue to grow and provide unique offerings to our loyal, craft beer fans,” he said.
Matt LoCascio, a managing partner with Equity Partners HG, told Brewbound that DuClaw is beginning preliminary conversations with interested parties.
“Really, everything is on the table at this point,” he said, adding that the brewery is seeking “the right fit” to carry forward the brand and culture.
LoCascio added that DuClaw was “testing the market to see what options are available before narrowing in on a solution/price.”
An influx of new money would help DuClaw achieve several capital intensive goals, LoCascio said, including the installation of a canning line and renovation at the brewery’s Rosedale taproom. USA, VA: Väsen Brewing Company to unveil new production facility at grand opening on July 29
|
Väsen Brewing Company, a craft brewery located in the Scott's Addition Historic District in Richmond, will unveil its destination taproom and production facility at an official grand opening on July 29, 2017, PR Newswire reported on July 19.
The community is invited to join the brewers as Väsen debuts five varieties of its Belgian-inspired lineup. New Madrid will perform during the opening event, while Goatocado and Rappahannock Oyster Company provide food.
Väsen's journey to brewing began three years ago when owners Joey Darragh and Tony Giordano set out to create one of the nation's most sustainable breweries, which was also capable of combining the experimental spirit that defines American craft beer with the rustic flavors of Belgian farmhouse and sour ales.

USA, MA: Tree House Brewing Co. opens for the first time for the Charlton public
|
Tree House Brewing Co.'s highly anticipated new brewery in Charlton opened for the first time over the weekend, the Worcester Business Journal reported on July 18.
The brewery, which makes several of the country's top-rated beers, served its first pours on Saturday, July 15 at its new 52,000 square foot facility that includes 6,000 square feet of retail space, said Kimberly Golinski, the brewery's office manager. The facility had over 2,000 visitors that day and poured 3,000 pints, said Golinski. That may sound like a lot of visitors, but Tree House's Monson brewery sees 2,000 visitors on a typical Wednesday, she said.
The expansion allowed Tree House to double in size from a 30 barrel brew house to a 60 barrel, said Golinski. A canning machine has the ability to can up to 240 cans per minute, as opposed to 32 in Monson.
Hours are Wednesday 12 p.m.-9 p.m., Thursday and Friday from 2 p.m. to 8 p.m., and Saturdays from 10 a.m. to 6 p.m., said Golinski. Cans will be available for purchase but pints and growlers won't be until things settle in a bit, she said.

USA, NY: Stillwater Artisanal brewing opening up facility in Brooklyn
|
Stillwater Artisanal brewing is opening up a production facility in Brooklyn, New York, and is launching a new line of beers called "Production", the Baltimore Business Journal reported on July 21.
Brain Strumke, the founder of Stillwater and a Baltimore native, recently signed a lease for a 5,000-square-foot facility in Brooklyn to hold a brewery and food hall. The space, scheduled to be open by the spring, will serve pub food every day for lunch and dinner, Strumke said, in a food hall style where customers will order their food at a counter and have it brought to them.
Strumke started Stillwater in the back yard of his Baltimore home in 2004, and started to distribute in 2010. Today, it can be found in 12 different countries, including Canada, South Korea, Australia and Brazil.
Up until this point, Stillwater has been what's known as a "gypsy brewer," meaning production is carried out in a variety of facilities all across the world. Strumke said most of Stillwater's brewing has been done recently in Denver and Connecticut, but he's leased equipment in 15 different countries.

USA, IL: Buffalo Creek Brewing's opening helping to revitalize downtown Long Grove
|
Buffalo Creek Brewing's opening in Long Grove represents what some village leaders say will be a significant spark in the revitalization effort for the downtown, the Chicago Daily Herald reported on July 19.
Vernon Hills resident Michael Marr's brewery and tap room debuted on July 15 in a 10,300-square-foot building on Historical Lane that was vacant since 2005. Studio of Long Grove was the last tenant in the structure adjacent to the Stemple municipal parking lot.
Ryan Messner, chairman of the Downtown Long Grove Business Association's executive committee, said he expects Buffalo Creek Brewing to become a regional draw. He said it was more than a typical business opening.
"I think this is the future of what Long Grove is going to offer with restaurants, places for folks to have a cocktail and some additional boutiques and shops," Messner said. "It's part of the revitalization. It fits perfectly with the process we've been working on for the last two or three years."

USA, TN: Round 6 Brewing to welcome first public to its main taproom on July 29

A new family- and dog-friendly craft brewery is coming to Maryville, the Maryville Daily Times reported on July 20.
Round 6 Brewing, 427 Whitecrest Drive, will open its main taproom to the public at 1 p.m. Saturday, July 29.
Will Wesselman, who owns the brewery with his wife Kathy, said the craft beer establishment’s two-acre parcel, which formerly served as Ready Mix Concrete’s showroom and warehouse, will eventually consist of a production room, beer garden and plenty of outdoor seating on the patio, courtyard and deck.
“There’s a lot of property here, so it might take a while for it to come to its full potential,” Wesselman told The Daily Times this week. “Some more engineering has to be done because we’re turning an old industrial space into a commercial space and trying to make it accommodating for everybody.”
Wesselman said the brewery will even include a grassy area for dog walking and a kids corner with toys, books and games available for use in the taproom.
Local food trucks will also be utilized at lunch and dinner on a rotational basis to provide an “eclectic menu” that’s different every day.

USA, MA: Remnant Brewing to open soon in Somerville’s Union Square
|
A converted and renovated storage building in Somerville’s Union Square will soon open as Bow Market, and it will be chock full of retailers, vendors, and a brand new brewery. Remnant Brewing will take up a large chunk of space within the complex, with nearly 3,000 square feet inside and a 1,000-square-foot outdoor space, according to the Boston Globe.
Owner David Kushner is an alum of John Harvard’s Brewing, and he’s partnered with co-founder Joel Prickett (Lord Hobo) and head brewer Charlie Cummings, previously of Chelsea’s Mystic Brewing. Kushner told the Globe that one of his goals for Remnant Brewing is to make the brewing process accessible to customers. Part of the plan for making that happen is to take up the same dual-concept approach used by a handful of other breweries in the area: offering all-day coffee service.
As for the beer, expect to see everything from saisons and IPAs to sessions, sours, and stouts.

USA, TN: Tennessee Valley Brewing Company successful since July 1 opening

Eric Brannstrom has been brewing beer for over 25 years, and after all that time honing his craft, he finally has his own place — Tennessee Valley Brewing Company, the Clarksville Leaf Chronicle reported on July 19.
He co-owns it with his wife, Wendy, who shares his passion for the craft beer business. Since their opening on July 1, they've been successful, having turned non-beer drinkers on to some of their brews.
After serving time in the Army and attending school in Michigan, Brannstrom decided in 1990 to return home to his father in Tennessee. That Christmas, his father bought him a home brewing kit. Since then, he hasn't stopped.
For years, Brannstrom worked professionally as an assistant brewer in northern Michigan, among other customer service jobs. He learned through experience and continued to build his own recipes from home.
After the couple faced a handful of layoffs, they decided to take their dream to action.
"We needed to take matters into our own hands. We wanted to be more in charge of our lives," said Eric Brannstrom.

South Africa: Government planning to tighten beer legislation

South Africa’s government wants to tighten the screws on the production and sale of malt and sorghum beer, including traditional African beer, Eyewitness News reported on July 19.
It’s planning to make amendments to the Liquor Products Bill that are intended to make it easier to prosecute those who add contaminants to home-brewed beer.
Fermented cane sugar products marketed as sales, will also be regulated.
It’s been a year since the government first mooted amendments to the Liquor Product Act that will tighten control over alcohol products, their composition and properties.
Currently, the sale of ale is unregulated, something that is set to change.
Now there will be a definition for beer, traditional beer and other fermented beverages, giving the Department of Health and the SAPS more clarity on what products are covered by legislation.
The Medical Research Council’s Charles Parry says that the legislation is a step in the right direction.
“This particular legislation won’t necessarily get to the heart of most of the problems in South Africa which are industrially produced malt beer which is being heavily marketed.”
The amendments also prescribe the process for producing beer, including traditional African beer.

Bature Brewery has faced a slog to launch the first commercial products from its microbrewery tucked behind a burger joint in the capital, seeking to gain a foothold - albeit a small one - in Africa's second biggest beer market.
It has had to navigate Nigeria's Byzantine bureaucracy to secure a license, install cables and a generator to deal with frequent blackouts and raise financing to import equipment and ingredients while the naira currency plunged.
But the three expatriate founders of Bature, who want to turn a passion for home brewing into commercial success, have been spurred on by an enthusiastic reception for their beers and encouraged by growth prospects in a nation of some 190 million.
Nigerians drink 16 million hectolitres of beer a year, which is half as much as South Africans - the continent's biggest beer market - even though Nigeria has a population that is more than three times the size.

Latvia: Craft brewer Uzavas Alus to invest EUR 2 mln in expansion this year

Latvian micro-brewery Uzavas Alus plans to invest EUR 2 million in development this year, the company's co-owner and lone board member Uldis Pumpurs told LETA.
He said that the investments will be made to expand the company's warehouses, as well as purchase new equipment, like, for example, for fermentation equipment.
Pumpurs said that the investment project is planned to be implemented already this year, thus also increasing beer production volumes.
After the investment project is implemented, the brewery hopes to increase production volumes by about one-fourth of current volumes.
The company is also planning on introducing new beer bottles with new labels, which will be circulated in the market within the next month.
He said that the company's sales volumes have also seen an substantial increase this year, compared to the previous one, and expressed hope that this positive trend will continue.
Pumpurs said that the company has started exports to Great Britain, and that it also exports to Estonia, and a bit to Finland and Russia as well. He hopes that export volumes to Finland will also rise this year.
Uzavas Alus operated with EUR 3.214 million in turnover and EUR 18,519 in profit last year.
