COMPLEXITY OF BEER BITTERNESS

ABSTRACT
A UK research team developed a sensory bitterness lexicon to describe many types of differently hopped beers. With sensory PCA analysis, they concluded that beers low in hop bitter acids and polyphenols were described as having artificial, rounded, and diminishing bitterness. Conventionally hopped beers high in hop acids, e.g. alpha-acids, were rated as having a sharp and instant bitterness. While beers bittered with a blend of tetra and pre-isomerised iso-alpha-acid products were shown to have a smooth and diminishing bitterness. The bitterness of dry-hopped beers high in hop bitter acids and polyphenols was perceived as harsh and progressive.

Brewery news USA, NY & CA & CO: Brooklyn Brewery buys minority stakes in 21st Amendment Brewery and Funkwerks
New York based Brooklyn Brewery has taken minority stakes in both San Francisco’s 21st Amendment Brewery (21A) and Fort Collins, Colorado’s Funkwerks. The trio is creating a combined sales team, Beer Street Journal reported on July 27.

The baseline purpose of this deal is competition. The beer industry in the United States is rapidly changing as big beer companies, like Anheuser Busch InBev and Heineken, are purchasing craft breweries, plus the growth of private equity-backed breweries.

Rather than shop for a buyout, it is time to join forces.

Brad Lincoln, co-founder of Funkwerks tells Beer Street Journal that their brewery only has two salespeople, both in Colorado, yet ships to seven states. “We can’t afford more employees to compete in the markets that sustain us,” he said.

It’s a known fact that sales generally increase in distribution territories that have salespeople. 21A ships to 24 states, and boasts a 20 person sales team. Brooklyn touts nearly that many for just New York City.

Brewery news USA, GA: New Orleans’ Dixie Beer poised for a comeback
Once on the verge of joining K&B, Maison Blanche and a host of other local institutions on the “ain’t dere no more” list, New Orleans’ Dixie Beer could be poised for a comeback, WWL reported on July 27.

The local brew, once popular with New Orleanians of a certain generation before a notorious “bad batch” in 1975 and other missteps sent its fortunes south, will return to barrooms and stores after Tom and Gayle Benson announced on July 27 they have purchased a majority share in the struggling brewery.

“Gayle and I could not be more excited,” Tom Benson said in a prepared statement. “Dixie Beer was lost to time, storms and even economic changes, but it is part of the social fabric of our city, and needs to be back home.”

Hurricane Katrina swamped Dixie’s former Tulane Avenue home, a crumbling century-old red brick building with a signature silver cupola, which was later expropriated as part of the new VA Hospital.

Despite that, Joseph and Kendra Bruno, who bought the brewery in 1985 and will continue with the company as minority owners, fought to keep the brand alive, brewing it out of state. But that will soon change.

Brewery news USA: Boston Beer Co. reports flat shipments in Q2 this year
Boston Beer Co.'s stock was brewing up gains on Friday, July 28, Food Dive reported.

Shares in the maker of Sam Adams surged 20 percent Friday, July 28 morning, before giving back some ground. The stock was up 18 percent at midday.

The company reported fiscal second-quarter earnings per share of $2.35 and revenue of $247.9 million on July 27 after the bell, crushing Wall Street's expectations of $1.41 and $222.7 million, respectively.

In the year-earlier quarter the company posted profit per share of $2.06 on revenue of $244.08 million.

Boston Beer grew its margins to 54.1 percent from 51.8 percent in the year-ago quarter, which it credited to lower brewery processing costs. The company decreased its depletions by 3 percent and its administrative expenses by $2.4 million.

However, shipment volume was flat from the year-earlier quarter. Sales of Truly Spiked & Sparkling, hard sparkling water, and Twisted Tea, spiked iced tea, fueled sales, rather than the company's namesake product: beer.

On an earnings call, CEO Martin Roper said Angry Orchard and Sam Adams "stumbled out of the gates" in the first half of the year.

Brewery news USA, CO: The Post Brewing Company to open second location in Boulder this fall
The Post Brewing Company plans to open a second location in Boulder later this fall, 303 Magazine reported on July 27.

Although the original location is in Lafayette, this Boulder opening is almost like a homecoming for the brewery. As a Boulder native, owner Dave Query has long hoped to bring The Post to his hometown.

Denver residents may recognize The Post from its sister restaurant The Post Chicken and Beer on South Broadway in the city. Both concepts are part of Query’s Big Red F Restaurant Group — which also includes Lola Coastal Mexican and Jax Fish House.

The Post Boulder will open in the space currently housing the Shine Restaurant and Gathering Place. Query plans to sign the lease on September 20 and begin preparing for an opening later in the year. On top of a full brewery, the Post Boulder will also house an event space.

As for food and drink, Brewmaster Brad Landman and lead brewer Nick Tedeschi will oversee the beer side of the business. Chef and partner Brett Smith will handle the grub — much of which is similar to Denver’s Post Chicken and Beer. The menu will feature Colorado-style chicken, local farm-fresh sides and homemade desserts.


Brewery news Canada, ON: Orange Snail Brewers preparing to open larger location in Milton
Ontario beer news website What’s Brewin’ reports that the only brewery in Milton, a suburban community west of Toronto, is preparing to open a new and larger location.

Orange Snail Brewers closed its original location at 295 Alliance Road last Friday July 21st, and will be opening its new facility at 32 Steeles Ave East on Saturday July 29th following four months of construction.

Orange Snail was launched in early 2015 by co-owners Damion Orsi and Kevin Greer, and produces several brands including Iron Pig Pale Ale, 16 Jasper IPA, and Rattle ‘n’ Nemo Red Ale.



Brewery news Canada, AB: Oldman River Brewing slated to open its doors in Lundbreck on July 29th
The newest small brewery in Alberta has announced that it will be opening to this public this coming weekend in Lundbreck, a hamlet located just over 100 km west of Lethbridge in the southwestern corner of Alberta, Canadian Beer News reported on July 26.

Oldman River Brewing has been founded by married couple Brittney and Adam Wilgosh and their friend Dan Christensen, all longtime residents of the community.

Located at 101 Breckenridge Avenue, the brewery has been in the works for more than two years, and has given an advance taste of its beers to attendees at community events while the final touches were being put on the brewery and taproom.

The official opening will take place on July 29th and 30th from 10:00 AM to 8:00 PM each day, and will feature several beers including the flagship Blue Bridge Lager, as well as food from local businesses including Lundbreck Pizza.

Britain's Diageo raised its profitability target and announced a share buyback programme on July 27, sending shares in the world's largest spirits company to an all-time high, Reuters reported.

Analysts said the influence of the new chairman, Javier Ferran, was being felt with a tight rein on costs at the firm that makes Johnnie Walker whisky and Smirnoff vodka.

Diageo, whose shares jumped more than 6 percent, reported sales of 12.05 billion pounds ($15.83 billion) in the year ending June 30, up 4 percent excluding the impact of the weak British pound, which boosts the value of overseas revenue.

Operating profit rose about 6 percent to 3.6 billion pounds, excluding the currency benefit, due to improvements in productivity and cost-savings.

"We had expected new chairman Ferran to bring greater rigour on costs, however the upgrade has come sooner than expected," Jefferies analyst Edward Mundy said in a note.

Earnings would get a 1 percent lift this financial year from the buyback and 2 percent next year from the higher margin target, he said.

Ferran, a private equity specialist with a background in consumer goods, took up the post of chairman in January.

Brewery news Taiwan & Vietnam: Taiwan Tobacco & Liquor Corp to debut in Vietnam with three beers in October
Taiwan Tobacco & Liquor Corp (TTL) is to make its market debut in Vietnam by introducing three beers in October, as the company taps into the Southeast Asian market in line with the government’s New Southbound Policy, Taipei Times reported on July 28.

The overseas expansion follows its entry into the Philippine market in January. Its previous expansion in Southeast Asia was in Singapore in 2011, the company said.

“We are accelerating our pace to expand our reach in Southeast Asia,” TTL vice president Chang Lei-min told reporters on July 26 after the opening ceremony of the Taiwan Expo in Ho Chi Minh City.

Vietnam is the biggest market for beers in Southeast Asia and the third-largest in Asia. The nation’s beer consumption reached 3.8 billion litres last year, TTL said.

As international and domestic beer companies are boosting their presence in Vietnam, TTL selected three products — Golden Medal Taiwan Beer, Taiwan Beer Sweet Touch and its pineapple flavored beer — to differentiate itself from the competition, Chang said.

“We have not seen fruit-flavored beer in [Vietnam]. This is an opportunity for us to grow in the market,” he said.

TTL will gradually increase its product portfolio in the Vietnamese market, he said.

Whisky news India: Diageo asks Vijay Mallya to return $40 mln paid for his exit from United Spirits Ltd
British liquor giant Diageo on July 27 said it has asked beleaguered businessman Vijay Mallya to return $40 million paid to him as part of the $75 million (Rs 515 crore) sweetheart deal for his exit from United Spirits Ltd, the India Times reported.

Diageo has stopped payment of $7 million a year to Mallya as part of the deal and sought compensation for the losses incurred by it.

The British firm had agreed to pay Mallya, who now lives in the UK after Indian banks approached courts to recover money lent to his now defunct airline, $75 million over five years as global non-compete and non-interference fee post his exit from United Spirits (USL).

Citing violation of the agreement by Mallya, Diageo has also ruled out the future instalments to him, saying "it was not liable to pay such amount."

"Diageo and other group companies have demanded from Mallya the repayment of $40 million which was paid by Diageo on 25 February 2016, and also sought compensation from him for various losses incurred by the relevant members of the Diageo group on account of the breaches committed by him," Diageo said in its Preliminary Results for the year ended ...More info on site
