IS THIS CATTY IN MY BEER... OR BLACKCURRANT?
ABSTRACT
The latest issue of the Barth Innovation Newsletter is dedicated to a very
specific compound that receives a lot of attention both
scientifically, and by brewers: 4MMP (4-mercapto-4-
methyl-2-pentanone). Depending on concentration
and matrix, 4MMP can exhibit different flavours but
is typically described as ribes, black currant, box
tree, muscat grape, fuel and catty (cat urine). Black
currant was the flavour described by Steinhaus when
it was found as one of the most odor active volatiles in
Cascade hops in 2006. In this work and the work of
Kishimoto it became clear that this compound is present
in much higher concentrations in U.S. bred varieties
than European varieties. 4MMP is probably a factor in
the complicated start of Cascade. Originally desired by
big U.S. breweries as an aroma hop to replace European
varieties, its "strange" flavour was not at first well
appreciated – but that view has certainly changed!
Threshold values published for 4MMP are between
0.0015 and 1.5 ppb. Noticeable concentrations are
reported by Steinhaus with 0.0017 ppb and reported
transfer rates from hops into beer are reported with
about 60% in a late-hopped beer. Gros et al reported
on 4MMP in 2012, but using the different name of
4-sulfanyl-4-methylpentan-2-one (4S4MP). Beers latehopped
with Tomahawk and Nelson Sauvin (from New
Zealand) had concentrations of 0.023 ppb 0.127ppb
respectively, much higher than in previous brewing trials.
Also mentioned was 4MMP's presence as S-cystein
conjugates in hops. The same team showed that 0.2 ppb
of 4 MMP can be reached by bottle refermentation.
It is also clear that some fruity thiols such as 3MH and
3MHA (described as rhubarb and grapefruit) are also
present in malt, often in conjugated forms. Though the
concentration of free 4MMP and its precursors is higher
in U.S. hop varieties like Citra, Cascade, Chinook, as well as some New Zealand and Australian varieties, the
precursor form of 4MMP was also found to be present
in Saaz, Strisselspalt and Mandarina Bavaria!
It has been shown that 4MMP degrades during beer
storage. These fruity thiols are know to vanish rather
quickly and it will be important to understand the
exact mechanism behind this degradation behaviour.
Another compound delivering a grapefruit like flavour
is 3-mercapto-4-methylpentan-1-ol (3M4MP). Here
the amount of the precursors are also much higher
than the free form. So to get more of these fruity
thiols, brewers might utilize yeasts that have the right
enzymes to release these compounds, keeping in
mind that the compounds' flavours may change (from
pleasant fruity to unpleasant catty/fuel/burnt rubber)
at certain concentrations... beer drinkers have very
individual perceptions!
Though the term "catty" is used by many U.S. brewers
and beer drinkers in a positive way... it is unappealing
for Europeans, who are hesitant to use it and prefer an
alternative such as black currant. The Barth experts admit that catty is a
well established descriptor for many, but in establishing
a universal language of hops, perhaps we should
look for term that is equally understood and can be
interpreted positively by everyone.

USA: Constellation Brand’s latest craft beer acquisition should worry investors

Constellation Brands just made its second craft beer acquisition, but probably won't begin buying up breweries to the same degree as Anheuser-Busch InBev, Madison.com reported on September 3.
Although the price paid also likely wasn't anywhere near the $1 billion it dropped on Ballast Point Brewing two years ago, it indicates the pace of craft brewery acquisitions might not abate anytime soon, and investors may not like the trend it portends.
The spirits, beer, and wine distributor purchased Florida-based craft brewer Funky Buddha Brewery for an undisclosed sum in early August, but noted it was both the largest microbrewery in south Florida by sales and volume as well as the fastest-growing craft beer in the state. At 54,000 square feet with a capacity of 45,000 barrels, Constellation says Funky Buddha is also Florida's busiest tap room by beer sales.
That ties in well with Constellation's acquisition of Ballast Point, which although much larger than Funky Buddha - producing at the time of the purchase some 4 million cases a year, or about 290,000 barrels - it was one of the fastest-growing craft brewers and it blended well into the ongoing trend of beer premiumization.

India: United Breweries planning zero-alcohol beer launch
|
United Breweries will introduce a zero-alcohol beer by early next year, its managing director said, as the country’s largest beer maker seeks to use the full capacity of its brewery in Bihar where liquor is banned, and enter alcohol-prohibited markets, the Economic Times reported on September 4.
“We are working on a project to introduce non-alcoholic malt based beverages. We will manufacture these products at our Bihar site,” Shekhar Ramamurthy said.
“We are currently at an early stage of development and will introduce these products early next year.” He didn’t provide further details.
According to a person with direct knowledge of the matter, United Breweries that accounts for more than half the nation’s beer market is working on a name and evaluating the kind of product it wants to introduce. “No, this is not the same as the Heineken one,” the person said, speaking on the condition of anonymity.
The majority stakeholder in UB, Dutch-brewer Heineken recently launched an alcohol-free version of its namesake beer with half the calories of a standard Heineken in 17 markets globally.

South Africa: South African Breweries to create as many as 10 thousand jobs through various programs

South African Breweries Ltd. on September 4 unveiled plans to create as many as 10,000 jobs in the country through various programs it offers.
The new jobs are in addition to the commitments agreed with the government last year following the merger between AB InBev and SABMiller, SAB said in an emailed statement.
SAB offers two so-called kickstart programs focusing on youth-owned businesses; the SAB Foundation; an enterprise and supplier development fund, and agriculture initiatives to establish barley, hops, corn and malt industries, with a view to enabling the country to become a net exporter of hops and malt by 2021.

Thailand: New excise tax structure could lead to increase in beer prices
|
The Thai Health Promotion Foundation expressed concern on September 2 that the new alcohol excise-tax structure would drive drinkers to consume more cheap white liquor at the expense of their health.
Foundation manager Supreeda Adulyanon said the number of estimated drinkers in the country has remained constant recently. Many people have turned to drinking beer instead of liquor, he said, but the new excise tax structure would cause beer to become more expensive in terms of its level of alcohol in comparison to that of white liquor.
Supreeda worries that drinkers may turn to white liquor, with a resulting increase in health problems.
The Finance Ministry is scheduled to enact a directive enforcing the new tax structure as of September 16. The new tax would be calculated based on retail prices rather than on producer prices as is now done. The new tax would create a level playing field for producers. Some critics have claimed that the current approach works to the benefit of some producers over others.
Those in favour of the new approach argue that market forces should decide retail prices and tax authorities should enforce the law accordingly.

Kenya: Court reinstates orders stopping Heineken from terminating contracts with local distributors
|
A dispute pitting Dutch brewer, Heineken and three Kenyan distributors took another turn on August 31 after the High court reinstated orders stopping the firm from terminating their contracts, The Star reported.
Justice Joseph Onguto, in the ruling, said it will be in the interest of justice to reinstate the orders which lapsed on April 20 2017.
The orders stops Heineken from terminating the distribution agreement entered between it and Maxam Limited in relation to the supply of the firm’s products in the country.
Heineken had asked the court to reject the plea by Maxam to restore the orders, further accusing the distributors of engaging in delaying tactics to frustrate the hearing of the case.
However, Justice Onguto said neither Maxam, Modern Lane (Uganda) and Olepasu limited (Tanzania) the two other distributors, were to blame for the delay in prosecuting the suit filed way back in 2016.
"I have no doubt that the court may reinstate interim orders vacated on its own motion if circumstances so indicate. The order as extended shall subsist until 6 November 2017 when the matter will be heard in inter parties."
Justice Onguto further ordered Heineken through its lawyer Gitau Singh to file and serve their amended joint statements of defence

UK: Craft beer names registrations more than double in 2016 versus 2007

The craft beer trend has led to the creation of so many weird and wonderful new brews that the number of registrations in the United Kingdom in 2016 was more than double the number in 2007, City A. M. reported on September 4.
According to figures from law firm RPC, there were 1,983 applications to register a new beer trade mark in 2016, increasing 104 per cent since just under a decade before when there were 968.
RPC said that a major factor in the growth was the uptake of the craft beer boom by supermarkets with the likes of Aldi and Tesco recently expanding their own-brand ranges to include "craft" style brews, as well as stocking a wider variety of existing beers.
The number of independent UK breweries also jumped, leading to a corresponding increase in the number of new beers. Last year 530 new breweries opened, up 33 per cent on the previous year.
“The craft beer sector has been booming - and now there are not only a number of new entrants, but also more established breweries, larger drinks corporations and supermarkets all wanting to establish a share in the market," said Jeremy Drew, a commercial partner at RPC.
