THE BITTER, TWISTED TRUTH OF THE HOP: 50 YEARS OF HOP CHEMISTRY
ABSTRACT
Two very well known authors, Patrick Ting
and David Ryder, guide us through a history of hop
chemistry. They reveal the "bitter, twisted truth of the
hop", detailing the discovery of hop acids and their
transformation to the many innovations that led to
the development of advanced hop products essential
to the success of many new and novel beer brands
of consistent quality. Miller Brewing has played an
important role in these achievements, and although
today's zeitgeist goes in the direction of using minimally
processed foods and spices, it is clear that, thanks to
advanced technologies the brewing production process,
we are in the position to create more possibilities for
consistency, efficiency, and flexibility in terms of bittering
and foam quality.

USA, WY & CA & CO: Melvin Brewing to open at least four new brewpubs in 2018
|
Melvin Brewing plans to open at least four new brewpubs in 2018, including outposts in craft beer strongholds San Diego and Denver, Brewbound reported on December 13.
Melvin sales director Ted Whitney told Brewbound that the Wyoming-headquartered cult beer maker has signed a letter of intent on a 5,500 sq. ft. space in downtown San Diego with the hope of opening a 7- or 10-barrel brewery there next summer. He added that the company has prioritized finding a space in Denver.
“We have people in Denver about every other week scouting areas and looking at leases,” he said. “We’re trying really hard.”
In a conversation with Brewbound, Melvin brewpub engineer Jamie Morris explained that the company wants to seed brewpubs in the best beer markets in the country.
“We feel that our beer is competitive,” he said, “and we want to be right where the epicenter of the craft beer world is as well.”
Melvin, which currently operates two Wyoming brewpubs and an outpost in Bellingham, Washington, is also pursuing brewpub locations in Olympia, Washington, and Eureka, Missouri, according to Whitney. He added that the company is attempting to establish a local presence in its new markets as well as “bolster existing sales.”

Canada, ON: Equals Brewing Company to open as exclusively contract brewing facility in London early next year
|
The London Free Press reports that a large brewing facility exclusively dedicated to contract brewing will be opening early next year on Sovereign Road in London.
Equals Brewing Company is being founded by Southwest Sun Group, a private investment partnership with nearly three decades of experience in various ventures, all of which have been divested in order to concentrate on this new project.
The brewing operation will cost C$8 to C$10 million to establish, and will have an annual capacity of 50,000 hectolitres, as well as the following features:
Along with 15 to 20 fermentation tanks, the new facility will include a canning line that can handle 250 cans per minute, keg- and growler-filling lines, cold storage and warehousing space. The facility will also be able to handle packaging of other mixed alcoholic beverages such as shandy or coolers.
Brewing will be overseen by Justin McKellar, a former Labatt Breweries employee, with client breweries welcome to have their own brewers on hand to be involved in production.
Construction at the 3,620-square-metre building is planned to start next month, and brewing is expected to start in April.

Holland, MI’s Big Lake Brewing (BLB) will open its new location at 11 a.m. on Wednesday, Dec. 20, HollandSentinel.com reported on December 14.
The new 160-seat space, located at 13 W. Seventh St., has recently received at $1.25 million facelift and will be the new home to the company’s 7,000-square-foot brewpub and restaurant.

USA, IL: Industry Brewing Company already open in Peoria

Craft beer is back in the barrels of a North Peoria brewery in Peoria, IL, the Peoria Journal Star reports.
Industry Brewing Company, a brewery with food service for lunch and dinner, opened on December 12 at 8012 N. Hale Ave., the site of the old Peoria Brewing Company. Area restaurateur Travis Mohlenbrink purchased the brewery earlier in the summer with designs to re-open it this winter after a quick renovation. Industry will be open every day starting at 11 a.m. with the kitchen open until 10 p.m. and the bar open later than that. Seven of the nine beers brewed on the premises are currently available, per Industry Brewing’s Facebook page, and all nine will be available by the weekend.

USA, GA: Steady Hand Beer Co. eyeing March 2018 opening in Altanta
|
You might have tried Steady Hand Beer Co.’s IPAs at restaurants and bottle shops around Atlanta. Come March 2018, you’ll be able to order a flight or a pint at their new brewery on the Westside. Located at 1611 Ellsworth Industrial Boulevard, near Topgolf, Bacchanalia, and Star Provisions, the new facility encompasses 14,000 square feet, including an approximately 3,600-square-foot taproom. (The owners are also considering adding a patio for summer afternoon sipping), the Atlanta Magazine reported on December 12.
“Atlanta is a tremendous population center, and relative to other areas of the country, we’re just scratching the surface in terms of number of breweries,” Steady Hand CEO Kevin Sullivan says. “Everyone brings a different kind of appeal. We have a unique voice to add to the conversation.”
Steady Hand was founded in 2015 by brothers Brian and Kevin Sullivan. Brian, the brewmaster, previously served as head brewer at 3 Sheeps Brewing in Wisconsin and chef at Pyramid Brewing in California. As CEO, Kevin handles the business side, and business partner Randy Wise manages operations. The name Steady Hand comes from the Sullivan family’s Irish coat of arms, dating back to the 16th century.

USA, MA: Seven Saws Brewing planning new brewpub in Holden in early 2018
|
There is yet another brewery coming to Central Massachusetts in the coming months, this one in Holden, the Worcester Business Journal reported on December 13.
Seven Saws Brewing, currently located in a building on Main Street in Holden, is hoping to open a brewpub in early 2018, brewer and co-founder Tom Anderson told the WBJ on December 13.
So far, the team of five friends is only distributing the beer to local restaurant Specialty Sandwich Company on Main Street, but the plan is to nail down a space in the near future and build a brewery.
The brewery's name, according to Anderson, pays homage to Holden's manufacturing history and foundation. The town was home to more than a dozen mills in the late 1700s, including seven saw mills.
"I love the idea of - not only the history - but where we came from and trying to incorporate that back into the community," he said.
The group of friends began to explore the possibility of brewing their own beer after waiting in the long lines at renowned breweries Tree House Brewing Company and Trillium Brewing Company.
"We could do this," Anderson remembers the group thinking. "Let's try to brew beer."
The group eventually brought on Holden resident
