ABSTRACT
Sulfur components in hops have many different faces.
Though we love them for bringing us flavors such as
rhubarb, passion fruit, grapefruit and black currant
flavours, they also surprise us with nasty flavours such
as onion-like, garlic-like or just cheesy. By name, these
are known as S-methyl-thioisobutyrate, S-methyl-thio-2-methylbutyrate, S-methyl-thioisovalerate, S-methylthio-4-methylpentanoate, and S-methyl-thiohexanoate.
One parameter that significantly influences the
formation of these compounds is the harvest time of
the hops. This article shows how the concentration of
the onion/garlic compounds increases during harvest
time for varieties as Cascade, Mandarina Bavaria,
Polaris, Hallertau Blanc and Hüll Melon. Although many
studies have shown that a later harvest brings a more
overall flavourful aroma profile for some varieties, e.g.
Hallertau Mittelfrueh (and I put here my hypothesis
that this includes many varieties that express intense
fruitiness such as Citra, Mosaic, Cascade, etc.), the
harvest date should be chosen carefully.

USA: US alcohol consumption estimated to have declined 0.2% last year

The IWSR, the leading provider of data and analysis on the global beverage alcohol market, has released initial 2017 category results for the US market as part of its US Beverage Alcohol Review (US BAR) database, Eurasia Review reported on January 10.
After analyzing preliminary 2017 volume, the IWSR says total US beverage alcohol consumption declined for the second consecutive year by -0.2%. This loss is more than double that of 2016, a decrease of 17.6m gallons, or 7.4m nine-liter cases.
Beer volumes continued to slide in 2017 (-0.5%), which weighed down the performance of total beverage alcohol. The growth of spirits (+2.3%) and wine (+1.3%) were unable to make up the difference in volume due to beer’s overwhelming 79% share of total beverage alcohol.
The decrease in total beverage alcohol consumption is directly related to the slow-building trend of moderation or not drinking at all. Signs of health and wellness permeate the industry with increasing frequency. From all-natural ingredients to low-ABV to zero-proof mocktails, consumers are clearly gravitating toward ‘healthier’ drinking experiences.

USA: Legal marijuana could make 2018 another rough year for MillerCoors' light lagers
|
For years, sales of domestic light beer—once the undisputed king of American booze—have tanked as imbibers turn to craft brews, wine and spirits. Now an even bigger threat looms: the growing reality of legal, readily available and socially condoned marijuana, Crain’s Chicago Business reported on January 5.
Recreational pot took another step forward Jan. 1, when California—the first state to legalize medical marijuana more than two decades ago—began allowing cannabis retail sales. That doesn't bode well for Anheuser-Busch InBev or MillerCoors, which has pledged to revitalize Coors Light and Miller Lite this year and next. One industry expert says the beer industry stands to lose 7.1 percent of its overall sales, or more than $2 billion, as the rest of the country gets on board with legalization.
"There's a ton of overlap in marijuana and domestic beer consumption among younger college males," says Rick Maturo, co-founder of Cannabiz Consumer Group, an Inverness-based research company. "This is the group that drinks beer at a heavier volume and is most likely to cut back if cannabis is legally available."
He says 27 percent of beer drinkers say they've already substituted marijuana for beer or would do so if the drug were legalized in their state.

USA, OK: Oklahoma’s Quapaw Tribe launches Downstream Crafted Brewing Co.

The Quapaw Tribe of Oklahoma pushed the envelope last year by unveiling its new multimillion-dollar meat processing plant and has raised the bar even higher by opening its own craft brewing company, Joplin Globe reported on January 4.
The processing plant was the first USDA-inspected processing plant to be located on tribal territory and operated by a tribe. Now, the tribe will be exploring new ventures in the beer sector.
On January 4, tribal employees announced the launch of their new Downstream Crafted Brewing Co. and debuted two of their craft beers that were brewed in-house at Downstream Casino Resort.
Four silver and copper brewing tanks gleamed behind a wall of glass in the casino’s Legends Sports Bar. Lucus Setterfield, food and beverage director, said the tribe’s newest endeavor corresponds with the tribe’s vision of living off the land to create a farm-to-table experience for its customers.
The tribe has pursued numerous agricultural undertakings over the years, including bison, greenhouses, beehives, a coffee roasting operation and the meat processing plant.

USA, NC: Mica Town Brewing becomes Marion’s first craft brewery
|
The craft brewing boom has moved into McDowell County, the Mountain Xpress reported on January 5.
Mica Town Brewing opened Dec. 31, the first brewery in Marion and the latest arrival in a seemingly endless wave of craft brewing around the mountains. More than 70 breweries are now open in Western North Carolina, with a little over half of those in Asheville and Buncombe County.
Mica Town occupies an old storefront at 25 Brown Drive in Marion. Former homebrewer Jason Snyder and his wife, Emily Causey, started work on the project last March, when they purchased the building. The brewery takes its name from Snyder’s former career in the mining industry.
“We realized that there wasn’t a brewery within a 25-mile radius of Marion,” Snyder says. “We started talking with the city, and it had a lot of interest in having a brewery. So, we decided to take the leap.”
The history of the two-story brewery building is uncertain. A deed indicates it was constructed in 1900, but it does not appear on a 1922 map. “We’re thinking that it was built in the ’30s or ’40s,” Snyder says.

USA, TN: Dandridge Brewing Company now open in Dandridge
|
Downtown Dandridge now has a coffeehouse and pub for locals and visitors.
Friends since Jefferson County High School days, Jake Depew and Ben Murph recently opened their Dandridge Brewing Company, The Standard Banner reported on December 28.
“We saw the need to offer coffee and also beer since Dandridge passed liquor by the glass,” explains Depew.
While Depew says he handles the distributors, Murph is “the beer guy.” After living in Atlanta while attending college, he got used to specialty beers.
“Our business offers 16 brews now, including Guinness, New Castle Brown Ale, and Fat Tire to name a few,” said Murph. “We will have beer on tap soon and may even explore making our own brew in the future.”
In addition to draft beer, Dandridge Brewing Company owners are looking forward to the arrival of a new espresso coffee machine. The rented space, across from the Dandridge courthouse, serves as a handy coffee stop for downtown workers.
They also offer deli sandwiches, soups, and homemade beer cheese with chips for lunch.
“We get foot traffic from locals in the morning and tourists later in the day,” says Dandridge native Depew, who lives near the downtown area.

USA, NJ: The Kings Road Brewing Company joins New Jersey’s craft brewing community

In New Jersey, it seems like you can’t swing a cat by the tail without hitting a craft brewery, microbrewery or a brewpub.
Make room for another – this one in Haddonfield, which has been dry for more than a century, PhillyVoice.com reported on January 2.
The Kings Road Brewing Company opened just before Christmas in a building which operated as a tavern during colonial times.
Nearby in South Jersey, there are many new breweries: Tonewood in Oaklyn, Devil’s Creek in Collingswood, Lunacy in Haddon Heights, Eclipse in Merchantville, Forgotten Boardwalk in Cherry Hill, Zed’s in Marlton and more places than we can list as the outer ring expands to encompass the damn-near venerable — 21 years in business — Flying Fish in Somerdale.
And on and on, with brew operations from Cape May to Point Pleasant along the coast.
The best-guess count right now is 82 breweries and 9 brewpubs in the state, with as many as 30-some more operations seriously working toward openings.
But — and here’s the cautionary part — about 20 facilities throughout the state have either closed or their openings are at a standstill and may never open.

USA, OK: Fat Toad Brewing Co. opens its doors in Pryor
|
Oklahoma has another new brewery, and this time, it isn’t in Tulsa or Oklahoma City.
Pryor, about 45 minutes east of Tulsa and home to a Google campus, now has Fat Toad Brewing Co. at 3986 W. 530 Road near the Mid-America Industrial Park, the Tulsa World reported on January 4.
Pryor resident David Miller has been brewing beer for quite a few years and has wanted to start a brewery in his hometown for just about as long. Miller has been attending beer events, where he gives samples of his beers and listens to feedback. He’s met other brewers this way and has learned a lot about the adventure of starting a brewery in Oklahoma.
“We support all other local breweries, and it is a nice fraternity of like-minded, interesting, fun people willing to help at any time. Breweries like Dead Armadillo, Marshall, Iron Monk and others have been a great resource for practical help with everything from federal labeling to price point to customer relations,” Miller said.

USA, OH: Sandy Springs Brewing Company launched by husband-and-wife team in Minerva
|
An interest in home brewing beer led a Minerva couple to build their own brewery, The Free Press Standard reported on January 4.
Andy and Amanda Conrad opened Sandy Springs Brewing Company, located at 232 N. Market St., Minerva, Nov. 4. Beginning the end of December, they expanded their hours on Fridays to open for lunch. The menu includes a selection of appetizers, flatbreads and sandwiches. Non-alcoholic beverages, such as coffee, flavored sodas and craft root beer is available along with Strongbow Gold Apple Cider, for those with a gluten allergy.
The couple, graduates of Minerva High School, watched a pharmacology professor brew beer and, liking different kinds of beer, began home brewing and creating recipes during college.
Andy and Amanda received college degrees in Physical Therapy and headed west to work. As traveling therapists, they saw a lot of small craft breweries. They spent three years out west tasting a variety of beers, learning different brewing techniques and experiencing the atmosphere of each brewery.
“We saw what these craft breweries did for the small communities and thought of Minerva,” Andy said. “Our planning began out west and we started on licensing in 2013-2014.”

USA, OH: Swine City Brewing set to open in Fairfield on January 27
|
Fairfield will get its first brewery this month when Swine City Brewing opens to the public. The date has been set for Jan. 27, Cincinnatti.com reported on January 5.
Swine City is the project of a group of friends who started in home brewing, including owners Dan and Debby Evans. Head brewer is Justin Chaney, who came from Rivertown Brewery and there's also Chris Schulz, taproom manager.
Schulz said their approach to brewing is not to concentrate on certain styles, but to aim for excellent examples of a number of styles: a blonde ale, an IPA, New England IPA, a sour, a Berliner, a stout, etc. They will start with 6-8 beers in the tap room and in kegs to distribute to bars and restaurants.
They plan to begin canning soon.
The taproom is at 4614 Industry Dr. in Fairfield, an industrial area off Symmes Road. In addition to the taproom, there's a 2,600 square foot patio and a yard for outdoor activities in good weather. It will be a family-friendly vibe, said Schulz. They will rely on food trucks to provide food.

USA, TX: Family Business Beer Co. ready to debut on January 10
|
Jensen Ackles, the co-star of science-fiction television show Supernatural, is debuting his and his family’s new Texas brewery, Family Business Beer Co., on Wednesday, January 10 in Dripping Springs, Eater Austin reported on January 5.
The name is reflective of the group of people behind the 15-acre brewery found on 19510 Hamilton Pool Road. Involved are Ackles’ wife Danneel, her brother Gino Graul, and their parents Ed and Debby Graul.
The Ackles, who live in Austin, are big fans of the local beer scene. “I love the variety that’s here,” Jensen said. “It’s not just cookie-cutter brewers. It adds to the spice of life that is Austin.
“Everything has its own flair,” Jensen continued, “but I don’t feel like there’s any competition. We’re all in this together. As long as there’s quality, then it’s ‘welcome to the table.’”
While living in California, Jensen and Gino often brewed their own beers at home. The family moved to Austin and decided to finally open their own place. They found the Dripping Springs property in 2014, hooked up with now-head brewer Nate Seale, and got started from there.
Seale, who used to be the head brewery of Austin spot (512) Brewing Company, sees Family as a “destination brewery.”

USA, TX: TKO Libations Craft Brewery already open in Lewisville
|
TKO Libations Craft Brewery has launched in the Castle Hills Village Shops in Lewisville, CultureMap Dallas reported on January 3.
TKO will make beers, ales, and lagers, as well as non-alcoholic beverages, using ingredients sourced locally. Founders Ty Sefton, Kamel Maude, and Cory Kuchinsky have more than 20 years of home brewing experience among them.
They've been in soft-opening phase since fall 2017, but will celebrate a grand opening event on January 13. Beers on tap will include:
Gingerbread Monster, a seasonal gingerbread porter brewed with toasted ginger, cinnamon, nutmeg, and cloves
Breakfast Stout at Tiffany's, a breakfast stout brewed with oatmeal, coffee, cocoa, and strawberries
You Like the Juice, a hazy New England-style IPA
Other beers poured at the opening will include Tart Blonde, a Belgian blonde; Special Beast, a bitter; Abbey Delight, a Belgian strong dark ale; Southern English Brown Ale; TKO's Wheat; Dry Stout; and Oatmeal Stout.
The Castle Hills Village Shops is at 2520 King Arthur Blvd., west of the Dallas North Tollway and Park Boulevard. This is the same center where the artisan cheese chop The Salty Cow recently opened; TKO and The Salty Cow have partnered to offer a beer and cheese pairing menu.

Renaissance Brewing Co. is opening to the public next week, the Tulsa World reported on January 4.
The long-planned brewery at 1147 S. Lewis Ave. will open at 4 p.m. Thursday, Jan. 11. This brewery was built from the ground up when most have taken an existing structure and made it work as a brewery.
That construction has meant a lot of roadblocks and delays.
“So we started this little project back in October 2011; we decided to build a brewery. After breaking ground at the end of 2015, two years later we are ready to open. We have been waiting a long time to welcome people into the brewery,” said founder Glenn Hall.
“People ask all the time why it has taken us so long, we have had beers out in the market for a year, thanks to brewing at Dead Armadillo. It has taken so long because no one really builds from the ground up — it takes a lot longer than most people realize, especially if you haven’t done it before,” Hall said.
“We are pleased with how everything turned out; we are happy everything came to fruition.”

USA, TX: Walking Stick Brewing Co. getting ready to launch in Houston in mid-2018

According to a report from the Houston Business Journal, owner Andy Dunn and business partner Ramon Duran plan to open Walking Stick Brewing Co. in mid-2018 on the 12,000-square foot property at 957 Wakefield Dr., directly across the street from the Wakefield Crowbar, The Leader reported on January 6.
Currently, the report says, the property contains a 1,600-foot metal warehouse built in 1965, which Dunn and Duran plan to transition into a neighborhood craft brewery that will serve up to 100 customers in its taproom upon completion.
According to HBJ, Dunn expects to produce 2,000 barrels a year with a 10-barrel brewhouse the company will get from Portland Kettle Works once Walking Stick opens next year. He also plans to self-distribute his seven foundation beers – each named after Rocky Mountain peaks higher than 14,000 feet and made with ingredients from his own small farm in Florida – to local bars and restaurants once production is underway, per the report.

Two former East End vineyard investors and another partner plan to launch a brewery later this year at the Hampton Business District at Francis S. Gabreski Airport in Westhampton Beach, Newsday reported on January 3.
Brian Sckipp and John Salvaggio, two childhood friends and former partners at Sherwood House Vineyards in Jamesport, and partner Kathleen Tedesco have secured 4,800 square feet of space at the industrial complex where they plan to brew, bottle and distribute their own beer as the Westhampton Beach Brewing Co.
Though the startup has yet to begin operations, it has hired Dave DeTurris, former brewer of John Harvard’s Brewery in Smithtown, to craft the beers.
“We’re not getting someone who is experimenting in the garage,” Salvaggio said. “We have someone who’s been doing it commercially for years.”
Sckipp said the decision to find commercial space prior to brewing was to avoid the struggle of getting a commercial product out in a timely manner. “We felt we had the team together so we could move forward quickly.”
There are at least 28 breweries and brew pubs on Long Island, according to data from the New York State Brewers Association.

USA, TX: Klaus Brewing Company set to open in Houston in April

Officials announced Klaus Brewing Company is set to open sometime in April at 10142 Jones Road, Houston, the Community Impact Newspaper reported on January 3.
According to the company’s Facebook page, owner Thomas Lemke has 20 years of amateur brewing experience, and the new brewery will focus on German-style brews.
The site will have an indoor taproom and an outdoor beer garden with live music, table games, food trucks and special glassware available for purchase.

China: China Resources Beer confirms ‘moderate’ price hike for some of its products in certain regions

China Resources Beer (Holdings) Co Ltd said on January 8 it had “moderately” raised prices of some of its products in certain regions, becoming the latest Chinese drinks maker to confirm price increases in response to higher packaging, raw material and labour costs, Reuters reported.
The owner of China’s top beer brand, Snow, said it had adopted various measures, including lean marketing and production as well as product refinement, to absorb the cost pressure. It gave no further details on the price increases.
The company’s shares hit a record high in Hong Kong on January 5 on press reports that brewers, including China Resources and rival Tsingtao Brewery Co Ltd, raised some prices from Jan. 1 citing rising costs of materials, labour, transportation and for environmental protection.
A stronger pricing environment in China is also good news for European alcoholic drinks companies, said Liberum analysts, pointing out that Carlsberg, Anheuser-Busch InBev, Remy Cointreau and Pernod Ricard boast the highest China sales.
Tsingtao Brewery, the maker of China’s best known Tsingtao beer, said on January 5 that it had raised product prices by up to 5 percent, in a bid to offset pressure from higher costs of production and raw materials.

Costa Rica: Costa Rican craft brewers working on increasing export of their products

A group of Costa Rican craft beer producers has been working on creating a cluster, in conjunction with the Foreign Trade Promoter, the Promotora de Comercio Exterior de Costa Rica (Procomer), to export their products to new markets, Q Costa Rica News reported on January 7.
Initially aimed at the United States, the initiative is much more ambitious and hopes to bring their craft beers to Central America, South America and Europe.
The cluster was formed two months ago. Ignacio Castro, president of the Asociación de Cerveceros Artesanales de Costa Rica (ACACR) - Association of Craft Brewers of Costa Rica - explained that the cluster is just in a formative stage, but they expect to officially present it in February of 2018.
The cluster must first meet the requirements for export.
“We have more than 100 associates that are dedicated to the production of craft beer in the country, but we are grouped into chapters. In this cluster, 39 producers in the microbrewery category may participate, although they must first meet the requirements for export, so we believe that we will start with about 10 or 12 producers,” said Castro.

Australia: New South Wales brewers passing container deposit scheme costs on to their customers

Coca-Cola Amatil is already passing on the costs of the New South Wales container deposit scheme to its customers, increasing prices between A$3 to A$5 for a 24-drink carton, The Guardian reported on January 8.
The scheme began on 1 December, allowing NSW residents to return bottles for a 10c refund at depots, over-the-counter collection points and vending machines.
But, as expected, the scheme has brought costs for manufacturers. Those costs are now being passed on to their wholesale customers and, in turn, to the public.
Coca Cola-Amatil has increased prices by 13.6c per container, excluding GST, or more than A$3.20 for a 24-drink carton of soft drink or water, according to a release to the ASX. The beverage giant said the scheme – along with similar projects being planned across the country – had caused considerable uncertainty for its near-term earnings in Australia.
Major brewers have also increased prices by between A$4 to A$5 for a carton of beer, according to the Liquor Stores Association of NSW.
The chief executive of the Brewers Association of Australia, Brett Heffernan, confirmed the scheme’s costs were now being passed on to customers of the big breweries.
