THE YEAST TAKES IT ALL!

ABSTRACT
Beta-myrcene is a potent but also very volatile hop aroma compound that can contribute to hop flavours with "herbaceous", "resinous", "green", "balsamic", "fresh hops". Too high concentrations of myrcene sometimes are considered unpleasant in regards to flavour. A German team worked with the hop variety Mosaic with different yeast strains to see where the myrcene actually ends up. They confirmed the release of hop aroma compounds during fermentation in the gas phase with increasing amounts at higher fermentation temperatures, and were also able to show that the yeast basically absorbs all of the myrcene with no possibilities to redissolving it in beer again. Whereas other hop aroma compounds such as linalool are not influenced significantly by the yeast.

Barley news Canada: Total domestic barley use forecast to remain unchanged this season
For 2017-18, Canada’s total domestic barley use is forecast to remain unchanged (at 5.888 mln tonnes) as lower feed use is offset by higher industrial use, Agriculture and Agri-Food Canada said in its February report.

Total barley exports are forecast to increase by 14% to 2.65 mln tonnes due to steady total supply and lower world supplies.

Barley carry-out stocks are forecast to decrease by 25% to 1.6 mln tonnes and remain slightly above the previous three and five-year averages.

The Lethbridge in-store feed barley price is forecast to increase due to the tight total barley supplies and the decline in the supply of other domestic feed grain substitutes.

As of December 31, Canadian barley stocks were 6% lower than 2016 although they were still 2% higher than the previous five-year average. Commercial stocks increased by nearly 50% from 2016 indicating a faster pace into the elevator and end-user system. For the main barley-producing region, the Prairie Provinces, on-farm stocks are down 8% from last year but are still 3% higher than the previous five-year average. Manitoba showed the largest year-to-year decline as corn production continues to expand in that province.

Brewery news USA, TN: Crosstown Brewing Company launches in Memphis
Memphis beer lovers now have another option to grab a locally made brew in the Bluff City. Crosstown Brewing Company officially opened its doors to the public on February 16, the Local Memphis reported.

Located next to Crosstown Concourse on 1264 Concourse Avenue, the brewery currently offers five different beers, root beer, and nitrogen-infused cold brew coffee.

The idea for the brewery has been close to four years in the making, and the founders say Crosstown Concourse worked with them every step of the way.

"We said, 'Would you be interested in a brewery?' They said we would absolutely be interested," says Clark Ortkiese, Crosstown Brewing Company founder. "They've been great to work with throughout the entire process. They were really helpful. I think they've always seen it as an amenity for their project. It's the type of place where a brewery would make sense."

Crosstown Brewing Company will be open Wednesday through Friday from 4:00 p.m. to 10:00 p.m. and Saturday and Sunday from noon to 10:00 p.m.



Brewery news Canada, ON: Chapter Two Brewing now open in the Walkerville neighbourhood of Windsor
Ontario Beverage Network reports that a new taproom and nano-brewery is now open in the Walkerville neighbourhood of Windsor.

Chapter Two Brewing has been founded by partners Chris Holt, Terry Dube, and Tom Gelinas, and has been in soft opening mode since early February, selling growlers and glasses during limited business hours while planning for an official launch.

Chapter Two Brewing is located at 2345 Edna Street in Windsor.


Brewery news Canada, ON: Breakwall Brewing set to open to public on February 23
A new brewery strongly inspired by the history of its area is set to open to the public on February 23 in the city of Port Colborne in Ontario’s Niagara Region, the Canadian Beer News reported.

Breakwall Brewing has been founded by Fred and Monica Davies, owners of several other local businesses and longtime advocates for improving Port Colborne’s downtown. The business is named after the Gravelly Bay breakwall, which has protected the community and its marine industry for over 180 years.

Located at 46 Clarence Street in a 5000-square-foot building that was previously home to Davies Stationary (no relation), Breakwall features a custom brewhouse from local supplier Criveller, a 160-seat restaurant, outdoor patio, and retail store.

Core beer brands developed by head brewer Cameron Shedden include Shrinking Mill Pale Ale (5.5% abv, 20 IBU), Sailor Saison (5.8% abv, 15 IBU), and 9 O’Clock Whistle IPA (6% abv, 35 IBU), all names inspired by local history and landmarks. These beers will be available on tap, and in cans and growlers in the retail store.

Brewery news USA, MA: Proposal for Rising Glass Brewing approved by North Adams’ Planning Board
A proposal for Rising Glass Brewing, located in the former Fraternal Order of Eagles Aerie 310 building on Curran Highway in North Adams, was approved by the city's Planning Board on February 12, the Berkshire Eagle reported.

Spearheaded by city resident Jonathan Spinney, the plans call for a 10-barrel brewery, taproom and canning operation with aspirations of opening in April 2019.

"We're planning on bringing a really interesting facade and working with that building, and making it a destination, a place that you want to be at because it's really cool," Spinney said.

It would be the city's second brewery and the first to open since 2016 when Bright Ideas Brewing opened its doors on the Massachusetts Museum of Contemporary Art campus.

Spinney is currently an assistant brewer at Bright Ideas Brewing.

In addition to the brewery, Rising Glass would also have enough space in the existing kitchen to host three small, food-based businesses — one of which would provide food for the taproom while the others use the kitchen as an incubator for their businesses, according to the application.

Brewery news USA, OH: Long awaited Fat Head’s Brewery opening coming soon
The long awaited, much anticipated and somewhat delayed opening of Fat Head’s Brewery in North Canton is coming soon, the Massillon Independent reported on February 16.

The 220-seat brewhouse and restaurant, in the southeastern corner of The Venue at Belden plaza, is tentatively scheduled to open on March 5. So, as they like to say at Fat Head’s, the company’s motto in fact: “Chill out man, have a beer.”

Fat Head’s traces its roots to 1992, when Fat Head’s Saloon opened on the south side of Pittsburgh. The name is a nod to its gargantuan sandwiches, actually called headwiches.

An on-line menu comes with the following explanation: “These sandwiches are big. Relatively close to the size of your head. Not including your hair because some people have really big hair and we had to draw the line somewhere ... and your hair was where we drew it. Historically this is where the term “hairline” originated. Beauty & The Beasty, Twisted Brisket, South Side Slopes (Voted one of the Top 5 Sandwiches in the U.S.A.) Brewery news USA, VA: Founding partners scrap plans to open Statement Brewing in Richmond's Scott's Addition
A Scott’s Addition brewery is off the table.

Jay Shah, local restaurateur and executive at Shamin Hotels, along with business partner Joel Gilbert, have scrapped their plan to open Statement Brewing in the old SunTrust bank branch at 3022 W. Broad St., Richmond, RichmondBizSense reported.

Shah said the 10,000-square-foot brewery and restaurant hit roadblocks in securing historic tax credits for the 70-year-old building.

“After two years of design, and going through the motions submitting for tax credits, we got outright rejected,” Shah said.

Their designs included a mezzanine level and outdoor beer garden, but those features would have had to be eliminated in order to get the tax credits.

“We really worked hard and went extra steps to preserve it,” Shah said. “It was surprising to me, our architects and our consultants. It seems like we just had bad luck.”

Shah said they initially didn’t want to depend on tax credits to build the brewery, but the cost escalated during the design phase mainly because of the historic nature of the building. He said Statement was going to be an $8.5 million project. They paid $1.7 million for the property in early 2016.

Brewery news USA, OH: State Representatives announce introduction of Ohio Proud Craft Beer Act
Ohio State Representatives Steve Hambley (R-Brunswick) and Martin J. Sweeney (D-Cleveland) announced the introduction of the Ohio Proud Craft Beer Act on February 13, Cleveland 19 News reported.

House Bill 509 has 25 co-sponsors and would grant "Ohio Proud Craft Beer" certifications to craft beer and cider that are brewed using Ohio-grown ingredients.

The bill would also allow craft brewers to sell one-ounce tastings and a limited amount of finished product for off-site consumption.

"The goal of the Ohio Proud Craft Beer Act is to support every industry that plays a part in brewing craft beer," said Hambley in a prepared statement. "This legislation not only supports Ohio barley growers, hop and fruit farmers, maltsters and craft brewers, but also consumers who want to know that what they are drinking was grown right here in the Buckeye State."

As part of an advocacy and education effort for the Ohio Proud Craft Beer Act, Hambley and Sweeney toured the state with other state representatives to visit business owners from every step of the brewing process. Brewery news Italy: Number of craft breweries grows by 535% between 2008 and 2017
Italy’s craft beer sector is booming with the number of craft breweries rising by 535% between 2008 and 2017, a report by the Italian farmers' organization Coldiretti based on data by the National Statistics Institute shows.

According to the organization, the number of craft breweries in the country increased from 113 in 2008 to 718 last year, with the majority having been launched by young people aged below 35.

Lombardy hosts the majority of Italy’s craft breweries (245), followed by Veneto (134), Piedmont (127), Tuscany (112), and Emilia-Romagna (111).

With the expansion of domestic craft brewing, British and German brands have lost positions in Italy, with their imports declining by 79% and 31%, respectively, Coldiretti said.

The nation’s annual per capita beer consumption is currently estimated at 31.5 litres.

Brewery news Hungary: Carlsberg partners with Hungarian craft brewer Horizont
The local unit of Danish multinational Carlsberg is teaming up with Hungarian craft brewer Horizont Brewing, the companies told state news wire MTI. Under the cooperation, Carlsberg Hungary will become the exclusive distributor of a number of Horizontʼs beers.

Carlsberg expects to sell 300-500 hectolitres of the craft beer in the coming one to one-and-a-half years.

Horizont Brewing currently turns out some 200,000 litres of craft beer a year. It had revenues of HUF 31 million in 2016, public records show.

Carlsberg Hungary had revenues of HUF 4.8 billion in 2016.


Brewery news Sri Lanka: Beer consumption increases following tax reduction in last budget
Beer consumption in Sri Lanka has increased by 12% after the government reduced taxes on beer in the last budget, News1st said on February 21.

The National Authority on Tobacco and Alcohol said this fact was revealed in the data collected by the Excise Department. Hence, beer’s share of total volume of alcohol consumed in the country is 18%.

The National Authority on Tobacco and Alcohol predicts the percentage to rise further, owing to the current situation.

Accordingly, a report on the use of beer is expected to be submitted to the president and the health minister.


Brewery news UK: Battle for beer market domination likely to be fought in low alcohol sector over the next decade
The ingredients contained in the longest surviving beer recipe found in a nearly 4,000-year-old Mesopotamian poem are essentially unchanged today.

The Hymn to Ninkasi, the Sumerian goddess of beer, breaks down the brewing process so that it can be repeated by subsequent generations. However, the brewing giants of today are risking the wrath of the ancient gods with a major alteration to the finished product – removing the alcohol, the Telegraph reported.

This is where the battle for domination is likely to be fought over the next decade and beyond.

Growth in conventional beer sales is stalling around the world as an increasing number of people become more focused on health and well-being. Zero or low-alcohol beer could be a saving grace not only for calorie intakes but also the finances of big beer.

At the moment, it is a fairly niche market that makes up just a small part of sales at the brewing giants such as Budweiser brewer Anheuser-Busch InBev, Heineken and Carlsberg, but these behemoths are starting to up their efforts.

Whisky news South Korea: Diageo toasts success of low-alcohol W Signature 12 whiskey
Diageo Korea recorded solid growth in the low-alcohol whiskey market in the past three months on the rising popularity of its W Signature 12, which launched last October, the Korea JoongAng Daily reported on February 20.

The Korean unit of the British alcohol producer said on February 19 that its market share in the low-alcohol whiskey market rose by 6.2 percentage points in the past three months.

Its market share stands at 32.9 percent as of January, the company’s highest since it entered the niche market back in 2015 to diversify its alcohol portfolio.

The low-alcohol whiskey market is considered an alternative to the traditional whiskey market, where high alcohol levels and expensive price tags turn off younger drinkers.

Diageo Korea launched W Ice in 2015, followed by W Signature 17 in 2016 and W Signature 12 last year.

Since W Signature 12 was launched last October, Diageo Korea’s market share in the category jumped from 26.7 percent to 32.9 percent.
