HOP VARIETY CATEGORIZATION ACCORDING TO THE FREEDOM OF AROMA COMPOUNDS?

ABSTRACT
We now understand that there are several possible factors affecting the release of relevant aroma compounds during the brewing process that have a high flavour impact in finished beer. These Japanese researchers took a close look at the influence of geraniol. With the investigation of a total of 42 hop varieties, they found that many hop varieties could be classified in two geraniol-rich "Flavour Hop" groupings, which tend to contribute a large amount of beta-citronellol to finished beer. The two types are designated as "free geraniol dominant hops" and "geraniol precursor dominant hops". Free geraniol dominant hops contain mainly free geraniol at high levels along with some geraniol precursors. These include varieties such as NZ Motueka, US Bravo, US Cascade, US Citra, and US Mosaic. Conversely, geraniol precursor dominant hops contain mainly the geraniol precursors at high levels and to a lesser extent, free geraniol. Examples here are AUS Vic Secret, D Comet, D Hallertau Blanc, and D Polaris. Maybe something worth looking into when you define your next beer recipe!

Brewery news USA: Craft beer export volume up 3.6% in 2017
The Brewers Association (BA) — the not-for-profit trade group representing small and independent craft brewers of the United States — reported on April 3 export growth data for the American craft beer industry in 2017.

Supported by the BA’s Export Development Program (EDP), craft beer export volume increased by 3.6 percent in 2017, now totaling 482,309 barrels and valued at $125.4 million.

Growth was seen in major markets including in the Asia-Pacific region (not including Japan) which grew 7.4 percent; Japan, which was up 2.6 percent and Western Europe which saw exports increase by 1.3 percent.

Meanwhile, Canada was again the leading international market for American craft beer, accounting for 51.3 percent of total exports. Other leading importers were the United Kingdom, accounting for 10.5 percent; Sweden, 6.7 percent; Korea, 4.6 percent; Australia, with 3.8 percent; and China, with 2.5 percent of exports.

Brewery news Canada: Purchasing small Canadian craft breweries unproven outside of their local domain could be highly risky for large multinationals
As it has in other countries, Canada’s beer market has changed considerably with the decline of mass-marketed, light-bodied lager beer such as Canadian and Blue and the rise of craft beers differentiated by a number of attributes from taste to location, The Conversation CA reported on March 30.

But what exactly is a craft beer? Is the brewer small and/or local? Does the beer itself incorporate more specialty hops or innovative ingredients such as fruit and spices?

While there is no pan-Canadian definition, the Ontario Craft Brewers Association defines craft beer as being small (less than 400,000 hectolitres), independent, and traditional.

The Brewers Association in the United States defines a craft brewer as producing less than six million barrels (around seven million hectolitres) annually, being less than 25 per cent owned by a non-craft brewery and using traditional or innovative ingredients for the majority of their production.

Many beers that were initially produced by local craft brewers have since been purchased by larger, multi-national breweries and are now available in a much wider geographic area thanks to the distribution network of those large larger breweries. Does that mean the beer is still a craft beer?

Brewery news USA, ME: Waterville Brewing Company now open for business
Waterville's first microbrewery is now open for business, WABI reported on March 30.

Located in the Hathaway Creative Center, Waterville Brewing Company is yet another addition to the city's bustling downtown.

"This building is just, the first time we walked into it, it was just such a beautiful building. I mean it was an easy choice. There was a lot of empty spaces on this floor, but we could see the potential that it wouldn't be empty for long."

Not long at all. More than a dozen businesses and non-profits are expected to join Waterville Brewing Company inside the mixed-use facility this summer.

Ryan Flaherty co-owns the microbrewery with friend, and fellow Winslow resident, Eric Willett. They've been brewing at home for over a decade.

"Our friends always said that we should and our beer is really good, and then we just kind of decided to just go for it," said Flaherty.

They signed their lease last year and opened their doors in in the Hathaway Creative Center in February.

Brewery news USA, VA: Bold Mariner Brewing Co. opening second brewery in Ocean View
Bold Mariner Brewing Co. is opening a second brewery in Ocean View later this year, said owner Michael Stacks.

"There are no other craft breweries in Ocean View right now, so we figured it's a great place to be for a craft brewery," he was quoted as saying by the Virginian-Pilot.

Stacks had originally considered Ocean View for Bold Mariner's first location, which he opened in Lambert's Point in 2016, but he couldn't find a building big enough. This time, the search was easier because he didn't need such a large building, he said.

Bold Mariner was the third brewery to open in Norfolk, and since then several others have planted flags in the city.

This brewery will have a smaller brewhouse, about a third of the size of Bold Mariner's current system. It will make smaller batches of more specialized beers, using whiskey and wine barrels plus sour beers. Stacks said they won't just use the barrels to age beers, but also to ferment.

It'll be located in the old Bank of the Commonwealth building at 1901 E. Ocean View Ave. The plan is to open sometime in the fall or winter, Stacks said.

Brewery news USA, MN: Lost Sanity Brewing is Madelia's brand–new spot for brews
Lost Sanity Brewing is Madelia's brand–new spot for brews as the building opened up on March 30, KEYC reported on April 1.

Lines stood outside the door for three consecutive hours on March 31 and although keeping up with orders got hectic, the brewers were pleased with the turn out.

Owner Caleb Fenske said "As much work as it was, I think everybody that was here helping had a lot of fun. Seeing people's smiles when they taste your beer and everybody here is having a great time. That really kept the energy level up and everybody here just had a blast."

The intrigue spewed over this afternoon as beer lovers traveling from all over the area packed the brewery once again.

For a town just over 2,000 people, locals are enthusiastic that this fresh appeal will succeed down the road.

Madelia resident Christopher Arduser said "They're going to get a lot of support here and it's a good thing for a small town like Madelia. I'm excited for it and for the Fenske's. I've known them for a long time, so I think it's going to be a great thing for them."

Located in San Francisco’s historic Ghirardelli Square, San Francisco Brewing Co. is pleased to announce that it will open the doors to its highly anticipated brewery and restaurant in April. The family owned operation will be open for dinner to start, followed by lunch, brunch, and brewery tours shortly thereafter. Founder Josh Leavy, along with his wife Jennifer and brother Aaron are thrilled to be opening in one of San Francisco’s most vibrant urban destinations, Brewbound reported on April 2.

“We’re incredibly excited to finally be getting ready to open the doors to our new brewery and restaurant,” says Josh. “We hope that people will continue to enjoy the beers they’ve come to know from our taps at various restaurants and bars around the Bay Area, now with their own home and brewed onsite alongside delicious food.”

Brewery news USA, TX: Big Bend Brewing Co. breaks ground on new San Antonio brewery
An established Alpine-based beer company has officially broken ground on a San Antonio brewery on the East Side, the San Antonio Express-News reported on April 2.

Big Bend Brewing Co., which debuted in 2012, hopes to open its doors late this year at 1310 Cornerway Blvd., near the intersection of Interstate 10 and Loop 410. According to documents filed with the Texas Department of Licensing and Regulation, construction of the new facility is estimated to cost $3 million.

The company makes beers with names inspired from the region it’s brewed, such as National Park (hefeweizen), Terlingua Gold (pale ale) and La Fontera (IPA). Big Bend also brews a line of Mexican-influenced lagers that are canned under the umbrella of the Tejas name.

According to its website, the San Antonio facility will feature a full tap room offering specialty beers as well as year-round offerings. Last week, Big Bend hosted a private event at the construction site, where industry workers were allowed to roller skate and sample suds on the fresh cement pad before construction intensified.


Brewery news Canada, NS: New Scotland Brewing Co. planning to launch in Dartmouth later this year
The brothers behind a popular Nova Scotia clothing brand have announced plans to open a brewery later this year in Dartmouth, Canadian Beer News reported on April 2.

New Scotland Brewing Co. is being established by Kevin and Scott Saccary of New Scotland Clothing Co., along with brewer Mike Gillespie.

As reported by the Atlantic Canada Beer Blog, the partners have recently taken possession of a space at 91 Alderney Drive, and will be installing a 5 hectolitre brewhouse and 56 hectolitre fermentation capacity. The brewery will produce a line-up of five core brands along with a rotation of “fun and sometimes experimental projects,” with a variety of beer styles represented including traditional Scottish and English ales, modern American-style beers, wild and sour ales, and more.

New Scotland beers will be available primarily by the glass and in growlers at the 40-seat taproom and retail store, with limited can runs possible for special releases, and occasional appearances on draught at other local bars. The taproom will also be designed to serve as a live venue for intimate concerts by local and touring artists.

New Scotland Brewing Co. is expected to open this summer.


Brewery news USA, MT: Conflux Brewing Company hopes to open in Missoula in late May or early June
A new brewery is popping up in Missoula in a section of downtown that's seeing a lot of construction, the ABC FOX Montana News reported on April 3.

Conflux Brewing Company is going up on the corner of Pattee and East Main streets in downtown Missoula.

The owners of the new brewery say they couldn't be happier with this location in a part of downtown where lots of changes are in store.

Hugh Yates and Meghan Casqueria, the husband-wife duo who own Conflux Brewing Company, say they were apprehensive about the location at first.

While they passed on it originally, they kept going back to look again and again and finally agreed to give it a go.

"As hard as it was to convince ourselves to jump and go for this spot, we are super happy and thrilled to be here,” Hugh Yates says.

Hugh and Meghan are thrilled to be a part of it.

"People walking by, especially when our silo came in. I think everyone was like, 'Wow, that’s a brewery, you can tell now,'” said Yates.

When it does open it's sure to draw even more attention, because of their goal to be environmentally friendly.

Brewery news USA, CA: Green Flash Brewing to close barrel-aging facility and taproom in Poway
Another chapter in the story of Green Flash Brewing’s distressed financial situation was written on March 30 as the San Diego-based company announced plans to close its Cellar 3 barrel-aging facility and taproom in Poway, California, Brewbound reported.

The decision to close Cellar 3 comes only five days after the company said it would cease operations at its 58,000 sq. ft. Virginia Beach production facility and terminate 43 employees.

“Over the past two years, the company has been under significant pressure due to the cost and complexity of running several retail operations,” Green Flash wrote in a post to the Cellar 3 Facebook page. “We have decided to refocus our efforts on our primary Green Flash and Alpine breweries in San Diego and Alpine, respectively.”

The Cellar 3 location, which produced more adventurous styles of beer and included a taproom, opened in mid-2015. About a year later, Green Flash opened its East Coast facility, which is capable of being scaled up to 100,000 barrels and is currently for sale as part of an online auction run by Heritage Global Partners.

Brewery news USA: Beam Suntory and AB InBev to create limited-edition collaboration beer
Beam Suntory and AB InBev’s Jim Beam and Budweiser brands will collaborate for the first time to create a new limited-edition beer for the US market, which will go sale later this year, FoodBev.com reported on April 4.

The collaboration will see the creation of the Budweiser Reserve Copper Lager, which will be released to celebrate the 85th anniversary of the end of prohibition in the US.

Set for release in September, the lager will be brewed using two-row barley before being aged in Jim Beam barrels to give the drink an oaky aroma and a slightly nutty taste.

Ricardo Marques, vice-president of marketing for Budweiser said: “We are very excited about this partnership not only because both brands share common history but also an obsession for quality and a decade’s long connection to America.

“This is a truly unique partnership and innovation that will surely drive excitement with our drinkers.”

Brewery news Japan: Change in legal definition of beer could give some boost to Japan’s stagnant market
The legal definition of beer in Japan changed on Sunday, April 1st, and the nation’s major breweries are looking to shore up their shrinking customer bases by introducing new products with a wider variety of flavors to shake up the stagnant market, The Japan Times reported.

Under the old definition, beers need to be made from water and hops and have a malt content of 67 percent or higher. But that has now been lowered to 50 percent, marking the first change in 110 years.

Furthermore, a wide range of items have been added to the approved list of secondary ingredients, which is currently limited to grains like rice, wheat and corn. The new ingredients include fruit, spices, herbs and flowers. Seaweed, oysters and bonito flakes are also included.

The change in definition gives beer makers more flexibility to produce beer with unique tastes and aromas and enables them to officially market the finished product as beer. Under the previous definition, such low-malt beverages were called happōshu (quasi-beer), and were cheaper because they were less heavily taxed.

For consumers, the crucial question is whether prices will rise with the change.

Danish beer brand Carlsberg has announced plans to continue its efforts to transition into a “premium beer brand” over the next year, City A.M. reported on April 4.

The brewing giant is aiming to follow up on the success of its rebrand of Carlsberg Export by taking new approaches to its original Carlsberg brand. But, with overall UK lager sales down seven per cent, will it work?

Yougov Brandindex data indicates how its consumer perception holds up compared to the competition. Carlsberg’s Quality score currently stands at seven, which puts it behind rivals such as Heineken (nine), Stella Artois (16) and Kronenbourg (17).

In recent times, Carlsberg decided to move away from football sponsorship, ending its 22-year association with England’s national team. Instead, it is increasing its spend on music festivals. Our data suggests that Carlsberg is right to try and appeal to this demographic.

YouGov Profiles data show that among regular or occasional festival goers, the brand’s positive Impression score (the percentage of those who have a positive view) stands at 18. It does lag behind other beer brands such as Heineken (22), Kronenbourg (22) and Stella Artois (27).

Brewery news South Korea: AB InBev’s Korean subsidiary acquires local craft brewer
A subsidiary of Oriental Brewery, best known for its Cass brand, has acquired a homegrown craft beer firm, The Hand & Malt Brewing Company, the Korea JoongAng Daily reported on April 4.

This is the first time the Korean unit of Anheuser-Busch InBev (AB InBev), the world’s largest beer company, has bought a local craft beer house.

Under the deal inked on April 2, ZX Ventures, a 20 month-old subsidiary of Oriental Brewery, acquired a 100 percent stake in Hands and Malt, a private company, and its president and founder Bryan Do will retain his position as president.

Although neither party confirmed details, the acquisition cost approximately 10 billion won ($9.4 million), according to sources familiar with the matter.

“ZX Ventures has been seeking to diversify its business and Hand & Malt made a proposal a year ago,” said a spokeswoman from Oriental Brewery, which is wholly owned by the Belgian giant.

ZX Ventures has various brands in its portfolio but they are all foreign. One of the best-known is Goose Island, a Chicago-based brewery AB InBev purchased in 2011. It has been expanding robustly in Korea with new tap rooms in various locations.

Brewery news Vietnam: Ministry of Industry and Trade asks Sabeco to hold extraordinary meeting to review personnel matters
Vietnam’s Ministry of Industry and Trade (MoIT) has asked the Saigon Beer-Alcohol-Beverage Corporation (Sabeco) to hold an extraordinary shareholders’ meeting to review personnel matters, VietNamNet Bridge reported on April 4.

This request was made in response to the Thai Beverage Public Co Ltd (ThaiBev)’s query relating to its authority to participate in Sabeco’s management board.

In a recent letter sent to the Government, ThaiBev has expressed concern that until now it has not been directly involved in Sabeco’s management board, even though its ownership here has reached 53.59 per cent of charter capital.

Deputy Prime Minister Vuong Dinh Hue asked the MoIT to handle the Thai beer company’s proposal.

In a sideline discussion at the Government’s meeting on April 2, Deputy Minister of Industry and Trade Do Thang Hai said the 2014 Law on Enterprise stipulates that a shareholder or a group of shareholders may officially participate in the company’s board of directors and board of supervisors if they own a 10 per cent equity or more for at least six months.

Meanwhile, ThaiBev has held Sabeco’s stake for about four months.

Brewery news Portugal & Angola: Sagres beer expected to double production volume in Angola this year
Production of Portugal’s Sagres beer was launched in Angola in March 2017 and the total volume brewed over the 12 months amounted to around 11 mln litres, Dinheiro Vivo reported on March 26.

The brand’s owner, Sociedade Central de Cervejas e Bebidas (SCC), hopes to double the output in 2018.

“We don’t export to Angola, the beer is brewed locally thanks to the contract we have with Sociedade de Distribuição de Bebidas de Angola (SODIBA),” said company Communications Director Nuno Pinto Magalhaes.

Sagres is the first international brand to be produced under license in Angola, he added.

The Portuguese company also exports to Angola via SODIBA its dark beer, a radler, and a range of Heineken-owned ciders.


Barley news Japan & Australia: Japan bans some imports of Australian barley over high pesticides levels
The Japanese Government has banned some imports of Australian barley after pesticides five times the normal limit were detected, the ABC reported on April 3.

Hundreds of thousands of cereal products containing the barley are now being recalled.

The pesticide azoxystrobin was detected in a shipment of Australian barley from ITOCHU Corporation that arrived in August.

The Japanese Ministry of Agriculture, Forestry and Food is now investigating and analysing all shipments of Australian barley.

Almost half of the 85 tonne export has already been used in food products and most likely already consumed, but ITOCHU said the quantity and concentration of pesticides detected did not pose a health risk.

Nevertheless, food company Nissin Cisco has voluntarily recalled 315,000 of its cereal products.

The Japanese Ministry of Agriculture, Forestry and Food has banned future shipments of barley from ITOCHU, but this will not impact exports which already have approval.

"ITOCHU says something possibly happened between harvesting and shipping, perhaps during the cleaning process, but they are still investigating," the ministry's Tetsuo Ushikusa told the ABC.

"It's very unlikely that it suddenly appeared in the fields."

"In the last 14-15 years, azoxystrobin has never been detected from Australian imports — not even a tiny amount."

Brewery news India: Beer set to come back to Bengal before summer
After being exiled from the shelves due to a hike in excise duty, coupled with bottlenecks in the supply chain, beer is set to make a comeback in Bengal. But sipping on the popular summer beverage could leave thirsty Bengalis high and dry on account of the revised prices, The Hindu reported on April 3.

The production and distribution of beer in Bengal is back on track after a gap of three months owing to a hike in excise duty. The State government issued a communiqué to this effect saying that beer will be back on the shelves of liquor stores with all the key breweries in the state upping production.

“In order to cater to the demand of beer in the summer season, all the three breweries are now functioning in three shifts, optimizing their production capacity,” the release noted. The problem of non-availability of beer started following a sharp hike in excise duty. Following the hike, beer producers stopped production and the much desired summer drink disappeared from the market.

According to the communiqué, United Breweries and Carlsberg India “now produce 30,000 cases per day”, while Celebrity Brewery is producing about 12,000 cases, thus going full capacity, the communiqué noted.

Raj Brewery Pvt Ltd has started commercial production of German beer Warsteiner in Nepal, My Republica reported on April 4.

Catharina Cramer, the owner and president of the board of Warsteiner Group, inaugurated the brewery plant amid a ceremony held in Nawalparasi on April 4.

Addressing a press briefing following the inauguration of the brewery, Cramer said that the group is proud to expand its products to Nepal.
