HOP VARIETY CATEGORIZATION
ACCORDING TO THE FREEDOM OF
AROMA COMPOUNDS?
ABSTRACT
We now understand that there are several possible factors
affecting the release of relevant aroma compounds during
the brewing process that have a high flavour impact in
finished beer. These Japanese researchers took a close
look at the influence of geraniol. With the investigation
of a total of 42 hop varieties, they found that many hop
varieties could be classified in two geraniol-rich "Flavour
Hop" groupings, which tend to contribute a large amount of
beta-citronellol to finished beer. The two types are designated
as "free geraniol dominant hops" and "geraniol precursor
dominant hops". Free geraniol dominant hops contain
mainly free geraniol at high levels along with some geraniol
precursors. These include varieties such as NZ Motueka, US
Bravo, US Cascade, US Citra, and US Mosaic. Conversely,
geraniol precursor dominant hops contain mainly the
geraniol precursors at high levels and to a lesser extent,
free geraniol. Examples here are AUS Vic Secret, D Comet,
D Hallertau Blanc, and D Polaris. Maybe something worth
looking into when you define your next beer recipe!

Canada: Malting barley crop “the best in the last decade” this year
|
Hot, dry weather before last fall’s harvest helped produce the best malting barley in the last decade in Western Canada, Kevin Sich, the supply chain director at Rahr Malting in Alix, Alberta, one of the country’s biggest processors, was quoted as saying by Bloomberg on April 5.
The high-quality crop has seen strong demand. From August through March, the nation’s exports surged 77 percent from a year earlier, industry data show.
“Everybody’s realizing the Canadian crops have high value this year,” Sich said by telephone. “There’s been a lot of appetite for Canadian barley” since it’s “a dream to work with” for brewers, he said.
Malt companies need barley to be dry so they can start and then halt the germination process, which changes the starches into sugars that can be used by distillers and brewers.
Canadian barley acres may rise 5 percent in 2018 as the grain is no longer the “forgotten stepchild” of crops amid steady prices and demand from beer makers, Sich said.

USA, WA: Lost Canoe Brewing buy neighboring Sound to Summit Brewing
|
The foursome who owns Snohomish’s Lost Canoe Brewing loves a big challenge. They recently made that clear by doubling down on their investment in the Snohomish beer scene, The Daily Herald reported on April 6.
This past week, Lost Canoe owners Will Hezlep, John Carruthers, Emily Longkow and Adam Hayes made a shocking acquisition in the local craft beer community: They bought neighboring Snohomish brewery Sound to Summit Brewing from original owners John and Stacey Sype.
The deal came together quickly. One of the Lost Canoe owners spied an innocuous anonymous listing for a brewery for sale in Snohomish County. Process of elimination helped the Lost Canoe folks realize it was Sound to Summit, the first brewery in Snohomish, that was up for sale.
“For an hour we joked about it,” Hezlep said of Lost Canoe purchasing Sound to Summit. “Then we were like, ‘How can we buy it?’ Then it was, ‘We should do this!’ ”
Carruthers called Sound to Summit owner John Sype and expressed interest in purchasing the brewery. They went to dinner that night to chat about the possibility, and both parties came away optimistic.
“When the brewery was first listed, we had several other suitors from breweries and groups in-state and

USA, CA: Mad Era Brewing to open as Simi Valley’s first craft brewery
|
Simi Valley will step into the craft brewery landscape, with the city’s first brewery opening in fall of 2018. Mad Era Brewing started demolition less than two weeks ago, in a shuttered Marie Callender’s. Plans for the 8,400 square feet space include a full-production brewery, taproom, bar, seating area, and an existing 1,000 square foot patio, along with a small kitchen, the Eater LA reported on April 4.
Husband and wife Adam and Christine Greenberg are Simi Valley residents, and this is their first craft beer venture. Local brewers Mike Stavrakis and Alex Khamudis also signed onto the project.
While breweries were not technically allowed in Simi Valley, the Greenbergs met with local officials and found them cooperative. “There were some breweries in the early 1990s, but not the kind we think of today. They didn’t last long,” explained Adam Greenberg. “We met with the city a year ago, and they told us their concerns. It’s an old code, and takes a lot to change it, but they want to work with us.”
The Greenbergs chose a Marie Callender’s that had been closed for seven years, where the property sat in disarray. The city required the brewery to maintain a certain distance away

USA, MT: Nordic Brew Works set to become Gallatin County’s 13th brewery
|
Gallatin County and craft beer are becoming quite the pairing.
The county is set to get its 13th brewery, this time on the west side of Bozeman, when Nordic Brew Works opens in the newest building taking shape at Ferguson Farm off Huffine Lane, The Bozeman Daily Chronicle reported on April 5.
Marked by a pair of grain elevator-style towers, the Market at Ferguson Farm is slowly taking shape just north of Sidewinders. Nordic Brew Works will occupy the west side of the 21,000-square-foot building around the same time it’s completed around July or August.
Matt Paine, founder and president of local real estate developer Paine Group, has been overseeing the buildout of both the Market and the adjacent office building in partnership with Delaney and Co., which is responsible for the entire Ferguson Farm development.
The Market has eight or nine spaces for businesses (two restaurants, a coffee shop and a flower shop are all confirmed tenants so far) and Paine has been actively recruiting owners to create what he calls a “local artisan space.”
One of the cornerstones of this vision was a brewery, but none of the local brewers Paine reached out to was willing to take on the project. So he

USA, NY: Small Craft Brewing Co. opens in Amityville
|
Amityville has gained a new microbrewery, and wedding beer is at least partly responsible, the Newsday reported on April 5.
During the summer of 2015, brothers (and longtime home brewers) Gerard and Greg Sims collaborated on two beers for Greg Sims’ wedding, and they were very well-received. “We looked at each other and said, ‘Are we going to do something about this?’ ” recalls Gerard Sims, who held a day job in network security.
Three years later, the Sims opened Small Craft Brewing Co. in a former CrossFit gym on Merrick Road, a few miles from where they grew up in Wantagh.
While part of the space is given over to a two-barrel brewery, another section is devoted to a tasting room that has Pindar barrels for tables and nine to 12 beers on tap offered by the glass, as part of a tasting flight ($8 for four samples) or in 32-ounce cans called crowlers. to take home.
Gerard Sims said Small Craft’s raft of beers don’t hew to any particular style. “Everything is IPA heavy these days, but we’re trying to also put out other styles for people to try,” he said.
The lineup includes those two original wedding beers — a Belgian witbier

USA, CA: San Diego’s Border X brewery coming to Bell this fall
|
A Latino-owned craft brewery and tasting room is expanding from San Diego to LA, and the destination is the City of Bell. Border X partners David Favela, his brother Marcelino and his sons, Martin and Ivan, opened the original San Diego location in 2014, which combines traditional brewing craft brewing methods with Mexican ingredients, the Eater LA reported on April 2.
Partner David Favela started out by making traditional beers like wheat and Belgian sours, but discovered their signature style accidentally. “We love those traditions, but is that really us?” asks Favela. “I didn’t grow up in those cultures. But my nephew made a combination of beer with jamaica (hibiscus flower). This was our first try at bat, and we hit a home run.”
The partners created beers like the pepino sour, which pairs lime and cucumber with sour beer. There is also a brew inspired by the Mexican candy Saladito, with dried prune and chile powder, along with a horchata stout. The brewery even uses hops from a relative’s San Diego backyard.
Border X made a conscious choice to head to Bell, which has a large Latino community. Real estate developers J. Alberto Lemus, and Diego Torres-Palma were also crucial to the

USA, NJ: Ghost Hawk Brewing Company hoping to get all required approvals soon
|
Two Clifton natives are looking to open Passaic County's first microbrewery this fall, aiming for a River Road site across from Rutt's Hut, NorthJersey.com reported on April 2.
But to get there they first need the blessings of the federal government, the state alcohol control board and Clifton's zoning board.
Ghost Hawk Brewing Company represents a collaboration between Tom Rachelski and Steve Bauer, who got together last summer after Rachelski responded to a Facebook post by Bauer.
"I was trying to figure out my next move," said Bauer, who has a background in marketing. "So I threw something out on Facebook."
Rachelski, an Army veteran who works in finance, contacted him the next day. The two knew each other through mutual friends, and Rachelski was looking to invest some money, Bauer said.
They hit on the microbrewery idea. As it turns out, Bauer said, New Jersey is underserved by microbreweries.
"We are coming in at a good time," he said.
Bauer said the name Ghost Hawk is in honor of his brother, Dan, who died in 2016 at age 35. As kids they would hike and watch for raptors. Now, he said, when he sees a hawk, he often feels

USA, VA: Green Flash Brewing sells Virginia assets to investor group
|
San Diego-based Green Flash has announced the sale of its assets to an investor group called WC IPA LLC after the brewery ceased production at its facility in Virginia and closed its barrel-ageing facility in California, The Drinks Business reported on April 4.
In a statement, the brewery announced that the investor group “includes a number of individuals with extensive experience in both the craft beer and food and beverage industries”.
It added that “Green Flash will return to its Southern California roots, while consolidating distribution of its beers and those of sister brand Alpine Beer Company to San Diego County and the greater Southwest”.
After it ceased operations at its facility in Virginia Beach last week, closed its barrel-ageing facility in Poway and transitioned from national to regional distribution, it is now hoping to build its beer brands in the “core markets” of California, Arizona, Colorado, Hawaii, Nevada, Texas, Utah and Nebraska.
The Green Flash and Alpine breweries will continue to operate in San Diego and Alpine respectively, the company confirmed.
It is set to open a Green Flash brewhouse and eatery in Lincoln, Nebraska in April which its says “will serve as the model for future customer connection points in the southwestern United
